Turkey Taco Chili
What happens when you bring two favorites—chili and tacos—together? Taste for yourself. This simple and hearty chili recipe will have your kids running to the table. Make it a new go-to weeknight dinner recipe.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
½ small yellow onion, chopped
1 tablespoon minced garlic
1 (1-ounce) low-sodium taco seasoning
1 (1-ounce) package ranch salad dressing and seasoning mix
4 cups water or low-sodium chicken broth
1 (10-ounce) can diced tomatoes and green chiles
1 (15.5-ounce) can black beans, drained and rinsed
1 (15.5-ounce) pinto beans, drained and rinsed
1 (14-ounce) can corn kernels, drained
corn muffins, if desired

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion, garlic, taco seasoning and ranch dressing; stir. Add water, tomatoes, beans and corn. Heat 20 to 30 minutes or until hot.
2) Serve with corn muffins, if desired.
* Always cook to an internal temperature of 165°F.

SOUTHWESTERN ROASTED VEGETABLES

Ingredients

4 cups peeled, cubed sweet potatoes (yams), cut in 1-inch cubes
1 1/2 cups zucchini, cut into small chunks
1 small red onion, cut into small chunks
1 6-ounce package portabella mushroom slices, halved
2 tablespoons olive oil
3 tablespoons reduced-sodium taco seasoning mix (about half a 1.25-ounce packet)
Salt to taste (optional)

Directions

Preheat oven to 425F. Coat baking sheet with nonstick cooking spray or line with foil.
In large bowl, combine sweet potatoes, zucchini, onion and mushrooms. Toss with olive oil to coat. Sprinkle with taco seasoning and spread vegetables on baking sheet.
Bake 40 minutes, shaking pan every 15 minutes, until vegetables are tender and roasted.

Recipe Yield: Yield: Makes 8 (1/2-cup) servings

This week’s Diabetic Dish of the Week is Spicy Baked Sweet Potato Fries. A perfect side for those Veggie Burgers! Ketchup or guacamole sauce would go great with these.

 
Spicy Baked Sweet Potato Fries

Ingredients
6 sweet potatoes, cut into French fries
2 tablespoons light olive oil
3 tablespoons low-sodium taco seasoning mix
1 teaspoon dried cilantro
1/4 teaspoon cayenne pepper

 
Directions
1 – Preheat the oven to 425 degrees F (220 degrees C).
2 – In a plastic bag, combine the sweet potatoes, olive oil, taco seasoning, cilantro, and cayenne pepper. Close and shake the bag until the fries are evenly coated. Spread the fries out in a single layer on two large baking sheets.
3 – Bake for 30 minutes, or until crispy and brown on one side. Turn the fries over using a spatula, and cook for another 30 minutes, or until they are all crispy on the outside and tender inside. Thinner fries may not take as long.

Prima Chili

A quick and easy chili with a simple flavor infusion of zesty salsa and taco seasoning mix.Cooksrecipes 2

Recipe Ingredients:

1 pound ground beef
1 small onion, chopped
1 (32-ounce) jar ORTEGA Salsa – Homestyle Recipe
1 (15-ounce) can kidney, pinto or black beans
1 cup water
1 (4-ounce) can ORTEGA Diced Green Chiles
1 (1.25-ounce) package ORTEGA Taco Seasoning Mix

Suggested Garnishes: diced jalapeños, shredded mild cheddar cheese or shredded Monterey Jack cheese, diced tomatoes, sliced ripe olives, sliced green onions, sour cream, chopped onion

Cooking Directions:

Cook beef and onion in large saucepan until beef is browned; drain. Stir in salsa, beans, water, chiles and seasoning mix. Bring to a boil. Reduce heat to low; cover. Cook, stirring occasionally, for 20 to 25 minutes. Garnish as desired.
Makes 6 servings.
