Almond Turkey Cups
Almonds, veggies and lean turkey…oh my! Chock full of delectable Asian flavors, these crispy cups of joy make a great brunch at under 300 calories per serving. Done in under 30 minutes!

INGREDIENTS
1 tablespoon vegetable oil
½ cup chopped red bell pepper
½ cup chopped green onion
2 cups cubed JENNIE-O® Oven Roasted Turkey Breast
½ cup sweet-and-sour sauce
½ cup chopped almonds
2 tablespoons soy sauce
12 wonton wrappers

DIRECTIONS
Heat oven to 400°F.
1) In small skillet, heat oil over medium heat until hot. Add bell pepper and onion. Cook and stir 3 minutes or until crisply-tender.
2) In medium bowl, combine vegetables, turkey, sweet-and-sour sauce, almonds and soy sauce; mix well.
3) Place wonton wrappers in muffin cups. Fill each with about ¼ cup turkey mixture. Bake 15 to 18 minutes or until wonton edges are crisp and filling is hot.

Not much happening in the kitchen today but the microwave! It was leftovers for dinner tonight, Sweet & Sour Pork w/ Sliced Chestnuts, Mini Carrots, and Diced Pineapple. Every Monday is clear the Fridge Day of leftovers around here. The garbage runs early Tuesday mornings so anything not bottled, canned, or sealed is out of there on Monday. Everything warmed up great and tasted as good as the first time. Anyway below is a repost of Sweet & Sour Pork w/ Sliced Chestnuts, Mini Carrots, and Diced Pineapple dinner from the other day, Later!

 
What better way to warm up a snowy day than a big serving of Sweet & Sour Pork w/ Sliced Chestnuts, Mini Carrots, and Diced Pineapple. I prepared a La Choy Creations Sweet & Sour Chicken Dinner Kit, but I substituted Pork for the Chicken.
The dinner kit comes; with 1 can pineapple and red peppers in a sweet & sour sauce, and 1 packet pre-measured long grain rice. I added 1 lb. of boneless Pork Chops (trimmed of fat and cut into 1/2″ pieces), 2 tbsp Canola Oil (for cooking Pork), and 1 1/2 cups water. Boil the rice, fry the Pork in 1 tablespoon of Canola Oil, add your sauces, fix any sides you would like, and serve the Pork on top of the bed of rice. I’ve left the full instructions at the end of the post. It came out delicious! The Sweet &Sour Sauce is just flat out fantastic. It has a perfect blending of spices, pineapple, and red peppers. It makes 5-6 servings and it’s 320 calories and 45 carbs.
I used Boneless Pork Chops, purchased from Walmart, that I trimmed the fat from and then cut into 1/2″ cubes. Along with the Sweet & Sour Pork I added 1 can of Sliced Water Chestnuts with the Pork and Sauce and sides of Dole Diced Pineapple, and boiled Mini Carrots. The Pork was just as good, if not better, than the Chicken. Pork and pineapple are a great combo, but what doesn’t go good with pineapple! I’m hooked on these La Choy Creations Dinners! Excellent and filling dinner! I left the original recipe, with the Chicken, below. For dessert/snack later I made some Hidden Valley Ranch Chip Dip using 1 packet of Hidden Valley Ranch Mix and Daisy Reduced Fat Sour Cream. I used Ruffles Light Fat Free Chips.

Ingredients:

1 Sweet & Sour La Choy Dinner Kit
1 Can Sliced Water Chestnuts
1 lb. boneless, skinless chicken breast
2 tablespoons cooking oil, Canola oil
1 1/2 cups water
Any side dishes of your choice

Instructions:

* Bring 1 1/2 cups water to a boil in a small saucepan over high heat. Add Rice. Cover and reduce heat to low and cook 10 minutes or until Rice is tender and water absorbed.

* Cut 1 lb. boneless skinless Chicken into 1/2″ pieces.

* Heat 10 inch non-stick skillet over medium high heat

* Add 2 tablespoons oil to skillet. Add Pork and cook 6 – 7 minutes or until Chicken reaches temperature of 165 * F.

* Add Sauce to Chicken, heat 1 minute or until sauce is warmed. Serve over prepared Rice.

* Serve with your favorite Asian side dish. I with Dole Diced Pineapples and a small package of Mini Carrots

Woke up to a Winter Wonderland this morning! A fresh 3 ” on the ground and more to come. So what better way to warm up on the inside than a big serving of Sweet & Sour Pork w/ Sliced Chestnuts, Mini Carrots, and Diced Pineapple. With everyone healthy, hibernating, and hungry I prepared a La Choy Creations Sweet & Sour Chicken Dinner Kit, but I substituted Pork for the Chicken.

I picked up another La Choy Creations Sweet & Sour Chicken Dinner Kit while at Kroger earlier today. But this time I’m using Pork instead of Chicken. I went to the store early this morning just looking for something that I had never made before. Nothing really didn’t appeal to me until I came across La Choy Creations Sweet & Sour Chicken! I had dinner! I had seen reviews of the La Choy dinners and they were all positive.

 

The dinner kit came; with 1 can pineapple and red peppers in a sweet & sour sauce, and 1 packet pre-measured long grain rice. I added 1 lb. thawed boneless, skinless chicken breast (cut into 1/2″ pieces), 2 tbsp Extra Virgin Olive Oil (for cooking chicken), and 1 1/2 cups water. Boil the rice, fry the chicken, add your sauces, fix any sides you would like, and serve the chicken on top of the bed of rice. I’ve left the full instructions at the end of the post. It came out delicious! The Sweet &Sour Sauce is just flat out fantastic. It has a perfect blending of spices, pineapple, and red peppers. Also it’s 320 calories and 45 carbs.

 

Along with the Sweet & Sour Chicken I prepared a side of Sliced Chestnuts that I added with the Chicken and Sauce, some Dole Diced Pineapple, and boiled Mini Carrots. Excellent and filling dinner! I’m looking forward to trying the boxed dinners. You can purchase La Choy Creations in three different flavors, Asian Fried Rice, Teriyaki Chicken and Sweet and Sour Chicken.

 

This dinner is nothing but GOOD! My parents aren’t big on meals like this but they both really enjoyed it and said they wanted to try the other meals also! The Sweet &Sour Sauce is just incredible! I think some time soon I’m going to try this with Pork instead of Chicken. As you can tell by the picture the 1 box makes a huge amount of food. Lots left for some great leftovers for lunch tomorrow. For dessert later a Jello Sugar Free Chocolate Pudding.

Sweet and Sour Short Ribs – Diabetic Friendly

Thank you Amy and Jeff for passing this one along to share! I’ve never tried this one but they say it’s the only Short Ribs they prepare. Plus another good recipe for those with Diabetes.
DIABETIC SWEET & SOUR SHORT RIBS
INGREDIENTS
– 6 lb Beef Short Ribs
– 1/2 tsp Sea Salt
– 1/2 tsp freshly Cracked Black Peppercorn
– 1 tsp Roasted Ground Cumin
– 1 Clove Garlic, minced
– 3  Tbsp Splenda Brown Sugar Blend
– 2 1/2 Tbsp Corn Starch
– 1 tsp Ground Ginger
– 1 3/4 c Water
– 1/3 c Low Sodium Soy Sauce
 – 1 teaspoon Beef base
– 1/2 c Rice Wine Vinegar
– 2 c Crushed Pineapple
DIRECTIONS
1.   Preheat oven to 400
2.   Spray a baking dish with Pam, place ribs in pan, sprinkle with seasonings
3.   Bake at 400 for 30 minutes, pour off excess fat. Reduce heat to 350 bake 20 minutes longer, pour off excess fat.
4.   In a saucepan dissolve splenda cornstarch and ginger in water
5.   Add soy sauce,  beef base, and vinegar. Cook until sauce thickens, stirring frequently
6.   Stir in pineapple and bring to a boil. After sauce come to a boil remove from heat
7.   Pour sauce over ribs
8.   Bake at 350 for 90 minutes basting occasionally
9.   Skim off excess fat before serving

Shrimp Chow Mein Stir Fry

Today’s Menu: Shrimp Chow Mein Stir Fry

It was Shrimp Chow Mein Stir-Fry tonight!. I used Kroger Brand Jumbo White Jumbo Shrimp, La Choy Sweet and Sour Sauce, Dynasty Baby Corn, Kroger Brand Sliced Water Chestnuts, Ichiban Chow Mein Noodles, Mini Carrots, and sliced Mushrooms. I precooked the Shrimp about 3 minutes adding La Choy Sweet and Sour Sauce the last 1 minute. I also precooked the Baby Corn and Mini Carrots. I then fired the wok up and cooked the Chow Mein Noodles and then added all the ingredients. I also added a little Low Sodium Soy Sauce as every thing was cooking. Looks like Jolly Time Mini Bag of Pop Corn for a dessert/snack later.
