Mediterranean Orange Chicken
Mediterranean Orange ChickenUsing authentic ingredients such as pine nuts, roasted red peppers and capers this easy-to-prepare chicken recipe pairs a bold palate of international flavors with nutritious orange juice.

Recipe Ingredients:
4 teaspoons pine nuts, toasted and chopped
1 pound skinless chicken breasts, boned and trimmed
2 tablespoons all-purpose flour for dusting chicken
Canola oil spray
1/4 cup shallots or red onions, minced
1/4 cup red peppers roasted, chopped
2 tablespoons capers chopped
2 tablespoons olives chopped
2 tablespoons raisins chopped
3/4 cup Florida orange juice
1 tablespoon fresh lemon juice
1 cup low-sodium chicken stock
1/2 teaspoon salt (plus additional, to taste)
1/4 teaspoon black pepper (plus additional, to taste)
2 tablespoons fresh parsley, chopped

Cooking Directions:
1 – Toast pine nuts in a 350°F (175°C) oven for 3 to 4 minutes until golden. Remove, cool and chop.
2 – With a meat mallet, pound chicken breasts to 1/2-inch thick and season with salt and pepper.
3 – Dust both sides in flour, and pat so flour stays on.
4 – Heat sauté pan and coat with canola oil spray.
5 – Place chicken in hot sauté pan and spray uncooked side of chicken with canola oil in the pan. Sear chicken for one minute on both sides, and remove from pan.
6 – In the same sauté pan, add shallots and sauté briefly.
7 – Add roasted red peppers, capers, olives and raisins and sauté briefly until shallots are translucent.
8 – Deglaze pan with orange juice. Add chicken stock and lemon juice and reduce heat slightly when ingredients come to a boil.
9 – Add chicken back to the pan to cook until completely cooked through, and sauce is slightly thickened.
10 – Stir in salt, pepper and parsley.
11 – Top each serving with 1 teaspoon of chopped toasted pine nuts.
Makes 4 servings.

SANTA FE CHICKEN
Ingredients

2 teaspoons chili powder
1 teaspoon ground cumin
1 tablespoon vegetable oil
6 skinless, boneless chicken breast halves (about 1-3/4 pounds)
1 teaspoon minced garlic
4 green onions, minced (about 1/2 cup)
1 can (10 3/4 ounces) Campbell’s Healthy Request Condensed Healthy Request Tomato Soup
1/2 cup Pace Picante Sauce
1/2 cup water
1 can (about 15 ounces) black beans, rinsed and drained
1 cup whole kernel corn
2 tablespoons chopped fresh cilantro leaves

Directions

1 – Stir the chili powder and cumin in a small bowl. Season the chicken with the chili powder mixture.
2 – Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 6 minutes or until browned on both sides. Add the garlic and onions and cook and stir for 1 minute.
3 – Stir in the soup, picante sauce and water and heat to a boil. Reduce the heat to medium-low. Add the beans and corn. Cover and cook for 15 minutes or until the chicken is cooked through. Sprinkle with the cilantro.

NOTES:
This Santa Fe Chicken is a flavorful one-skillet dish and it’s a snap to make. Serving size is 1 piece of chicken and 3/4 cup sauce.

Louisiana Fried Chicken
Brining chicken in buttermilk tenderizes the chicken, enhances the flavor and reacts with the seasoned flour-cornmeal coating for an exceptionally crispy breading.

Recipe Ingredients:
2 1/2 pounds chicken parts, rinsed and patted dry
1 cup buttermilk
3/4 cup all-purpose flour
1/4 cup yellow cornmeal
1/2 teaspoon salt
1/2 teaspoon celery salt
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne
1 1/2 teaspoons paprika
4 cups vegetable oil, for frying
Pepper Sauce: (optional)
1 tablespoon butter
1 1/4 cups no-salt or low-sodium chicken broth
1 medium onion, finely chopped
1/2 green pepper, finely chopped
1/2 red pepper, finely chopped
2 tablespoons all-purpose flour
1/4 teaspoon cayenne
1/4 teaspoon salt

Cooking Directions:
1 – Place chicken in large, glass bowl or dish; pour buttermilk over it. Cover and refrigerate for 30 minutes.
2 – In medium bowl, whisk together flour, cornmeal, salt, celery salt, pepper, paprika and cayenne. Dredge chicken pieces in flour, two at a time, turning to coat all sides thoroughly. Set chicken on a rack and let sit for 30 minutes.
3 – In medium saucepan over medium heat, warm butter. Stir in onion, red pepper and green pepper. Stew peppers until soft, about 10 minutes, stirring occasionally. Stir in flour and cayenne. Cook for 2 minutes, stirring often. Gradually stir in chicken broth. Bring sauce to simmer; reduce heat to low and let cook until thickened, about 5 minutes. Add salt; remove from heat and set aside until needed.
4 – In large, cast iron skillet add oil to fill 3/4-inch deep. Over medium-high heat, warm oil to 350°F ( 175°C) using kitchen thermometer to test oil temperature. Carefully place chicken, skin-side-down in oil. Reduce heat to medium and cook chicken for 15 minutes until nicely browned. Turn chicken and cook for additional 10 minutes, until internal temperature registers 180°F (85°C) on thermometer. Remove chicken and drain on paper towels. Cook remaining chicken in same manner until done.
5 – Before serving, reheat sauce and pass separately.

Easy South-of-the-Border Grilled Chicken for Diabetics
Preparation time: 5 minutes. Cooking time: 20 minutes.

Ingredients
1/2 cup reduced-fat sour cream
2 teaspoons lemon juice
1 packet taco seasoning (If watching sodium, look for reduced-sodium taco seasoning.)
4 small skinless, boneless, chicken breasts

Directions
In a medium bowl, mix together sour cream, lemon juice, and taco seasoning with a wire whisk. Rinse chicken breasts and pat dry. Dip chicken breasts in sour cream mixture and coat evenly. Grill breasts for about 10 minutes on each side or until done. Serve. If a grill is not available, you can also sauté the chicken breasts on the stovetop in a skillet coated with nonstick cooking spray over medium to medium-low heat.

Yield: 4 servings.

Serving size: 1 breast.

MOROCCAN CHICKEN WITH EGGPLANT-ZUCCHINI RAGOUT

Ingredients

1-1/2 to 2 pounds chicken leg quarters
3 tablespoons olive oil, divided
1 teaspoon salt, divided
1 teaspoon freshly ground black pepper, divided
1 small eggplant, cut into 1/2-inch dice
1 medium zucchini, cut into 1/2-inch dice
1 small onion, diced
2 cloves garlic, minced
1/4 cup white wine or water
1 (14.5 ounce) can diced tomatoes with juices
1/4 cup pimento-stuffed green olives, roughly chopped
2 tablespoons capers, rinsed
2 tablespoons red wine vinegar
1 teaspoon sugar
2 tablespoons parsley, minced

Directions

1 – In large skillet over medium high-heat, warm 2 tablespoons olive oil. Season leg quarters with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Add leg quarters to pan, skin-side down. Brown chicken, turning once, 8 to 10 minutes per side. Remove chicken to plate and drain off all but 2 tablespoons oil.
2 – Add eggplant to hot pan and cook, stirring, 5 minutes. Add remaining tablespoon olive oil, along with zucchini, onion and garlic. Cook 5 minutes, stirring occasionally.
3 – Raise heat to high and add white wine to pan, stirring to scrape up any browned bits. Add all other ingredients, except parsley, and place chicken legs in mixture. Bring to boil, reduce heat to medium-low, cover and simmer for 35 to 40 minutes or until cooked through or until an instant read thermometer reads 170F.
4 – To serve, place some of the eggplant ragout onto plates, top with a leg quarter and sprinkle with parsley.

NOTES:
The word ragout refers to a main dish, French-style stew. It is typically hearty and features well-seasoned meat or fish, often stewed along with vegetables. This is a very flavorful ragout which features chicken, eggplant, zucchini, tomatoes and olives.

Chicken Cacciatore
Ingredients
2 cups All-Purpose Flour for coating
1/2 teaspoon Sea Salt
1/4 teaspoon Ground Black Pepper
2 Chicken Breasts and 4 Chicken Thighs, cut into pieces
2 tablespoons Extra Light Olive Oil
1 Onion, chopped
2 cloves Garlic, minced
1 Red Bell Pepper, chopped
1 (14.5 ounce) can Diced Italian Tomatoes
1/2 teaspoon dried Oregano
1 teaspoon dried Rosemary, crushed
1/4 cup coarsely chopped fresh Basil Leaves
1/2 cup White Wine
2 cups fresh Mushrooms, quartered
Sea Salt and Pepper to taste

Directions
1 – Combine the flour, salt and pepper in a plastic bag. Shake the chicken pieces in flour until coated. Heat the oil in a large skillet (one that has a cover/lid). Fry the chicken pieces until they are browned on both sides. Remove from skillet.
2 – Add the onion, garlic and bell pepper to the skillet and saute until the onion is slightly browned. Return the chicken to the skillet and add the tomatoes, oregano, rosemary, basil, and wine. Cover and simmer for 30 minutes over medium low heat.
3 – Add the mushrooms and salt and pepper to taste. Simmer for 10 more minutes. Dinner is served!

Moroccan Lemon Chicken with Olives
Preparation time: 20 minutes. Cooking time: 1 hour.

Ingredients
1 tablespoon olive oil
6 skinless, boneless chicken breasts (approximately 4 ounces per breast)
1 large onion, chopped
2 cloves garlic, minced
2 sticks whole cinnamon
2 teaspoons ground cumin
2 teaspoons ground turmeric
1/2 teaspoon freshly ground black pepper
2 lemons
2 small plum tomatoes, chopped
1 cup water
18 large green olives

Directions
Heat olive oil in a large pan. Place chicken breasts in hot oil and cook on all sides until slightly browned on surface. Remove from pan and set aside. To pan add onion, garlic, cinnamon sticks, cumin, turmeric, and black pepper. Cook about 5 minutes, stirring, until onion is cooked. Return chicken to pan and cover. Squeeze the juice of two lemons, reserving lemon peels. Add lemon juice to pan. Slice lemon peels into strips and add to pan with chopped tomatoes, water, and olives. Cover the pan and bring contents to a boil, then reduce heat to low and allow the mixture to simmer for about 45 minutes, until chicken is tender, occasionally lifting the lid to stir mixture and check that liquid available in pot is adequate to avoid burning. When chicken is done, arrange contents on a platter, discarding cinnamon sticks. Serve immediately. (This dish is excellent served with couscous.)

Yield: 6 servings.

Serving size: 1 chicken breast with 3 green olives.

Diabetic Lemon Chicken Recipe
Preparation time: 5 minutes. Cooking time: 30 minutes.

Ingredients
Nonstick cooking spray
1 pound boneless, skinless chicken breast (4 pieces)
1 tablespoon olive oil
1 large lemon
1/2 teaspoon onion powder
1/2 teaspoon white pepper
1 1/2 teaspoons oregano

Directions
Preheat oven to 375˚F. Tear off a piece of aluminum foil that’s large enough wrap up all four pieces of chicken. Spray the aluminum foil with nonstick cooking spray (on one side only), and lay the chicken breasts on the sprayed foil. Drizzle with olive oil. Grate 1 tablespoon of lemon zest and set aside. Juice the lemon, removing the seeds. Pour lemon juice over chicken, then sprinkle chicken with lemon zest, onion powder, white pepper, and oregano. Fold the aluminum foil over the chicken and roll the edges of the foil together to make a sealed packet. Place packet on a jelly roll pan or in a large, shallow casserole dish. Bake 30 minutes. Remove from oven and carefully open foil, using tongs to remove chicken to serving plate.

Yield: 4 servings.

Serving size: One 4-ounce breast.

Cuban-Style Chicken
A flavorful and economical dish made with chicken drumsticks simmered in a perfectly seasoned citrus sauce.

Recipe Ingredients:
1 small onion, quartered
5 cloves garlic
3 MAGGI Cumin Flavor Seasoning Cubes
1 teaspoon dried oregano
3/4 cup orange juice
1/4 cup lemon juice
1/4 cup plus 2 tablespoons vegetable or olive oil – divided use
10 chicken drumsticks
Hot, cooked rice
Chopped fresh cilantro or parsley

Cooking Directions:
1 – Place onion, garlic, seasoning cubes, oregano, orange juice, lemon juice and 1/4 cup oil in blender; cover. Blend until smooth.
2 – Combine chicken and sauce in plastic bag; close bag and marinate in refrigerator for about 4 hours. Remove chicken from marinade; reserve marinade.
3 – Heat remaining 2 tablespoons oil in large skillet over medium heat. Cook chicken, turning frequently, for 5 minutes or until golden. Add reserved marinade. Cook, stirring frequently, until it reaches a boil. Reduce heat to low; cover. Cook for 25 minutes or until chicken is cooked through and sauce has thickened. Serve with rice; sprinkle with cilantro.

Makes 5 (2 drumstick) servings.

Roasted Chicken with Apple Stuffing

Recipe Ingredients:
1 whole (3 to 4-pound) chicken, trimmed of excess fat

Garlic Butter Rub:
2 cloves garlic, minced
2 tablespoons butter or margarine, softened
1/2 teaspoon lemon juice
Salt and freshly ground pepper to taste

Apple Stuffing:
2 cups firm white bread, cubed
1/2 to 3/4 cup chicken broth
1 large tart Michigan apple, peeled and chopped
1/4 cup dried cherries
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
Salt and ground black pepper to taste
3 tablespoons butter
1/2 cup minced onion
1/2 cup sliced celery
1/2 cup dry white wine
1 large tart Michigan apple, cored and cut into wedges
1 large sweet onion, cut into wedges

Cooking Directions:
1 – Preheat oven to 400°F (205°C).
2 – Rinse chicken with cold water and pat dry with paper towels inside and out. Place in roasting pan.
3 – In small bowl, combine garlic, butter, lemon juice, salt and pepper.
4 – Loosen skin of chicken wherever possible, and spread half of the butter/garlic mixture under skin. Sprinkle additional salt and pepper over skin. Put remaining butter in roasting pan.
5 – Place bread cubes in mixing bowl. Toss with apples, cherries, thyme, sage, salt and pepper. Moisten with chicken broth.
6 – Melt butter in large skillet; add onion and celery and sauté until softened, 3 to 4 minutes. Add to stuffing and toss. Stuff chicken loosely with mixture. Tie legs together and roast 40 minutes.
7 – Add white wine, to deglaze the pan along with apples and onions to pan and continue roasting about 40 minutes, until thermometer inserted into thickest part of thigh registers 160°F (71.1°C) to 165°F (73.8°C). Remove bird to platter and let rest 5 minutes before carving.
Makes 4 servings.

Note: Drippings from pan may be used as an excellent base for gravy.
