Chilled Bow Tie Pasta Salad
Jam-packed with veggies and perfectly seasoned with a homemade dressing, picnic fare doesn’t get any better than this! Eat as an appetizer or light lunch or, if desired, add grilled chicken strips for a filling main dish.

Ingredients
Preparation time: 50 minutes
Chilling time: 2 hours

1 cup sun-dried tomatoes
1 pound bow tie pasta, cooked
8 ounces fresh mushrooms, sliced
2 cups snow peas
2 cups broccoli florets
1/2 cup crumbled Feta cheese

Dressing:
1/2 cup red wine vinegar
3 tablespoons canola oil
2 teaspoons Dijon mustard
2 green onions, finely sliced
2 teaspoons (or 2 cloves) minced garlic
1 teaspoon dried parsley
1 1/2 teaspoons dried basil
1/2 teaspoon dried oregano
3/4 teaspoon dill weed
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon sugar
Garnish:
1/4 cup shredded fresh Parmesan cheese

Directions
Yield: 16 cups
Serving size: 1 cup

1 – Rehydrate sun-dried tomatoes according to package directions, then chop tomatoes and place them in a large salad bowl. Add cooked pasta and sliced mushrooms; set aside. Fill a large saucepan half full with water and bring to a boil. Add snow peas and broccoli; boil 1 minute. Remove snow peas and broccoli with a slotted spoon and add to the pasta mixture. Sprinkle Feta cheese over pasta mixture; toss well; set aside.

2 – Combine dressing ingredients in a jar, cover tightly, and shake well. Pour over pasta mixture and toss to coat. Chill at least 2 hours to allow flavors to blend. Toss well and garnish with shredded Parmesan cheese.

Note: If desired, add grilled chicken strips for a filling main dish.

Rustic Asiago Chicken Portobello Skillet
This rustic Italian-style chicken and portobello mushroom and orzo pasta dish makes a deliciously hearty one-skillet meal.

Recipe Ingredients:
2 tablespoons butter
1 cup onion, chopped
3 garlic cloves, minced
3 to 4 medium Portobello mushrooms, sliced
1 1/4 cups very hot water
1 teaspoon balsamic vinegar
1 chicken bouillon cube
1/4 cup sun-dried tomatoes, finely chopped (not packed in oil)
2 cups cooked chicken, diced
2 cups cooked orzo (or other tiny pasta)
2 tablespoons fresh basil, chopped
1 cup Wisconsin Mozzarella cheese, shredded
2 plum tomatoes, chopped
6 ounces Wisconsin Asiago cheese, shaved*

Cooking Directions:
1 – In a large 12-inch nonstick skillet over medium-high heat, melt butter. Add onion and garlic, and sauté 2 minutes.
2 – Add mushrooms to pan, stir and sauté for 3 more minutes.
3 – In a small bowl, combine water, vinegar, bouillon cube and sun dried tomatoes, stirring until bouillon cube is dissolved. Add this mixture to skillet.
4 – Stir in chicken and cooked orzo. Reduce heat to low and simmer 5 to 6 minutes until excess liquid is thickened.
5 – Stir in basil, Mozzarella cheese and plum tomatoes. Heat through an additional 2 minutes.
6 – Garnish each serving with shavings of Asiago cheese. Serve immediately.
Makes 6 servings.

*Use a vegetable peeler to shave the Asiago cheese.

Turkey, Pesto and Sun-Dried Tomato Pastries
Savory pastries are a great way to snack. Bake up these tasty, flaky cups of turkey, egg and pesto in just under 60 minutes that’s just 100 calories per serving!

INGREDIENTS
1 (17.3-ounce) package frozen puff pastry, thawed
⅔ cup finely chopped JENNIE-O® Tender Browned Turkey Breast
⅓ cup sun-dried tomatoes in oil, drained and chopped
2 tablespoons basil pesto
¾ cup egg substitute or 3 eggs
⅔ cup milk
⅓ cup finely grated fresh Parmesan cheese

DIRECTIONS
1) Grease mini-muffin pans (32 cups). Heat oven to 375°F.
2) Roll out half the pastry on lightly flour surface to 12-inch square. Using 3-inch round cutter, cut 16 pastry rounds. Press into prepared pans. Repeat with remaining pastry.
3) Divide turkey and tomato between pastry.
4) Whisk pesto, eggs and milk in a liquid measure. Carefully pour mixture into each pastry cup.
5) Sprinkle with cheese. Bake 25 minutes or until golden brown. Let stand 5 minutes before removing to a wire rack. Serve warm.

RECIPE FOR GARLIC PENNE PASTA

Recipe Ingredients:
1 package dry penne
1/4 cup olive oil
3 cloves garlic, minced
1 cup Sun Dried Tomatoes chopped
1 tbsp parsley
1 tsp Crushed Red Pepper
1/2 tsp black pepper
1/4 cup grated Parmesan cheese

Cooking Directions:
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain, and return to pot.
2. Heat 1 tablespoon olive oil in a skillet over medium heat. Saute garlic, sun-dried tomatoes and parsley for about 1 minute. Season with red pepper flakes and black pepper. Stir into cooked pasta, along with remaining olive oil. Top with Parmesan.

Crushed red pepper has an extremely fresh and strong flavor. It will excite any dish, from tomato sauces to stir fries to hamburger patties! Be prepared!

Today’s Menu: Sun-Dried Tomato Turkey Breast w/ Mashed Potatoes, Cut Green Beans, and Baked Rustic French Bread

 

 

Jennie O Sun-Dried Tomato Turkey Breast 002

Had a light Breakfast to start, a toasted buttered Thomas Light English Muffin and a hot cup of Bigelow Decaf Green Tea. Started an early load of laundry for Mom and I headed out to Walmart. I’ve been using Healthy Life Whole Grain Hamburger and Hot Dog Buns for a while now, but I’m switching to Aunt Millie’s Reduced Calorie Buns. For the last couple of months Healthy Life has been really dry and just didn’t have a fresh taste to them, so I switched to Aunt Millie’s. Healthy Life is produced by Aunt Millie’s, plus has a few more calories and carbs but the quality is better. For dinner tonight I prepared the Jennie – O Sun-Dried Tomato Premium Portion Turkey Breast that Jennie – O sent me last week to try. Tonight it’s Sun-Dried Tomato Turkey Breast w/ Mashed Potatoes, Cut Green Beans, and Baked Rustic French Bread.

Jennie – O had sent me this plus several other products to sample as part of being a part of their Switch Club. The Turkey Breast weighed close to 4 lbs., and it’s a fully cooked and ready to cut and serve, hot or cold. It’s seasoned with Sun-Dried Tomato. To prepare it just slice the amount you want and serve it cold or heat it up. Mom and Dad wanted it hot so I heated it up in the oven. It’s only 60 calories and 1 carbs per serving. If you come across this give it a try! The Turkey was moist, juicy, and the hint of the Sun-Dried Tomato is perfect. One tasty Turkey Breast! Perhaps one of the best tasting Turkey Breasts we’ve ever had, Mom and Dad agreed. I only prepared half of it, we gave the other half to my cousin to prepare.

 
For one side I heated up some of our favorite Mashed Potatoes, Bob Evan’s Mashed Potatoes, Just heat the package up in the microwave for 6 minutes total and serve! Hard to beat these. Then I also heated up a can of Del Monte Low Sodium Cut Green Beans and baked a loaf of Pillsbury Rustic French Bread. A very good hearty meal tonight! For dessert later a Jello Sugar Free Dark Chocolate Pudding.
