Today’s Menu: Penn Station Subs

 

 

To start this day off I Scrambled a couple of Eggs. I topped them with a sprinkle of Sargento Off the Block 4 State Cheddar Cheese and some Ortega Smoky Chipotle Taco Sauce, Served on a toasted Thomas English Muffin and also had a cup of Bigelow Decaf Green Tea. A high of 41 degrees and partly sunny. Did a load of laundry after Breakfast. Did a few chores around the house. After that I caught up some shows I had recorded. Not a lot to do. I decided to shut down the Kitchen for Dinner, Penn Station tonight!

 

 

We really enjoy Penn Station Subs! I ordered a couple of Subs for us. Mom had the Reuben Footlong with Fresh Cut Fries and I had the Dagwood on Multi Grain Bun with Turkey, Salami, Ham, and American Cheese. We’ll make this a regular stop, these are so Delicious! Mom’s Fresh Cut Fries were good too! Great Job as always Penn Station! For Dessert later aJello Sugar Free Dark Cherry Jello. Take Care and Stay Safe All!

Today’s Menu: Penn Station Subs

 

 

To start this day off I had a cup of Bigelow Decaf Green Tea. A high of 36 degrees and snow showers to start the day. The temps dropped through out the day to the 20’s with a wind chill in the teens. Good day to stay in and prep for Christmas Dinner. While Mom was doing that I cleaned the house, dusted and vacuumed. Later I made some Seafood Dip and BBQ Cocktail Sausages. Something for us to snack on the next few days. Later on I baked 14 mini loaves of 3 different kinds of Quick Bread. I then took them as gifts to many of my neighbors. I love doing stuff like this! So with everything going on I decided to shut down the Kitchen for Dinner, Penn Station tonight!

 

 

We really enjoy Penn Station Subs! I ordered a couple of Subs for us. Mom had the Reuben Footlong with Fresh Cut Fries and I had the Dagwood on Multi Grain Bun with Turkey, Salami, Ham, and American Cheese. We’ll make this a regular stop, these are so Delicious! Mom’s Fresh Cut Fries were good too! Great Job Penn Station! For Dessert later a Jello Sugar Free Dark Chocolate Pudding. Stay Safe and Take Care all, also Merry Christmas and a hopefully better 2021!

Today’s Menu: Penn Station Subs

 

To start this day off I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. 63 degrees and partly sunny out, not bad weather for December 11th! After Lunch I delivered some of Mom’s Fudge and Buckeyes to my a couple of cousins and to a friend of mine. Back home I cleaned the Kitchen. Then nothing, I was a slug! Enjoyed it too! Plus the Kitchen is Closed, Penn Station tonight!

 

 

We had ordered Penn Station Subs a while back and enjoyed them so much we are having them again! I ordered a couple of Subs for us. Mom had the Reuben Footlong with Fresh Cut Fries and I had the Dagwood on Multi Grain Bun with Turkey, Salami, Ham, and American Cheese. We’ll make this a regular stop, these are so Delicious! Today’s Menu: Penn Station Subs

 

 

I had a cup of Bigelow Decaf Green Tea to start the morning. Only 35 degrees out there this morning. We had a high of 47 degrees and sunny for the afternoon. Went to Meijer after my Tea about 7:00 this morning. I wanted to get there early, get what I needed and get out before it got crowded. With this Virus running wild it’s best to go early before a lot of people get there. I have 3 friends, 1 cousin, and Aunt and an Uncle all with the Virus. So I just stay in with my Mom. She’s 92 so I really can’t get out much and take a chance of passing something along to her. But she is in excellent health so that’s a plus for her. Anyway did some work around the house and watched some College Football. Kitchen Closed Again, Penn Station tonight!

 

 

I ordered a couple of Subs for us. Mom had the Reuben Footlong with Fresh Cut Fries and I had the Dagwood on Multi Grain Bun with Turkey, Salami, Ham, and American Cheese. First time in a very long time we had Penn Station. We’ll have to go back more often, they were Delicious! Mom’s Fresh Cut Fries were good too! Great Job Penn Station!

Today’s Menu: Black Forest Ham, Black Forest Turkey, Bacon, and Swiss Cheese Baked Mini Sub w/ Baked Fries

 

 

Just a cup of Bigelow Decaf Green Tea to start this chilly morning off. 32 degrees this morning with a heavy frost. 60 degrees and sunny for the afternoon. After my Tea Mom wanted me to go to the grocery store and she gave me a list of things to make different treats for Thanksgiving and Christmas. I was able to get a few things she needed from Meijer, but Chex Cereals to make the Holiday Chex Mix with. So I went to Kroger and they didn’t have any. Next I tried Walmart and found it there along with a few other things that she needed. Got to keep Mom happy! Back home did laundry. I always wash the clothes that I wore to the grocery as soon as I get home. I guess you can’t be too careful now days.  I have to start fasting at 11:00 tonight. I have to be at the Doctor’s office at 7:30 in the morning. For Dinner tonight I prepared a Black Forest Ham, Black Forest Turkey, Bacon, and Swiss Cheese Baked Mini Sub w/ Baked Fries.

 

I purchased the Swiss Cheese, Black Forest Ham and Turkey all from Meijer and all Dietz and Watson Brand Deli items. For topping ingredients I’ll be using Emeril’s Deli Style Mustard, Kraft Light Mayo w/ Olive Oil, and Kraft Fat Free Zesty Italian Dressing. For the Sub Buns I’ll be using Perfection Mini Sub Buns. The Ingredients of one Delicious Mini Sub!

 

I first turned the oven on 400 degrees. To make my Sub I took the bottom half of the Bun and added the Kraft Mayo, next I added the Ham, topped that with the 2 slices of Swiss Cheese, And topped it with the top half of the Bun.

 

I then laid the Sub on a small baking sheet and topped the Sub with the Kraft Lite Italian Dressing. And then it baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Baked Ham and Swiss Subs!

 

 

 

 

 

 

To go with my Sub I had some Mike Sells Green Onion Potato Chips, love these Chips. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Half and Half (Tea and Lemonade) Snapple to drink.

Made another thing I haven’t had for Breakfast in quite a while, Waffles. I used the leftover batter from the Pancakes from yesterday, got my Waffle Griddle out and made Waffles. Then along with the Waffle I had some Jimmy Dean Applewood Smoked Chicken Sausage. If you’ve never given these a try you need to, delicious! For dinner tonight, a Cold Cut Baked Mini Sub w/ Baked Fries

 

 

 

Baked Cold Cut Trio Mini Sub 008

I used Kroger Private Selection Smoked Off the Bone Sliced Ham, Boar’s Head Honey Smoked Turkey Breast, and Kahn’s Deluxe Bologna for my Baked Mini Sub. I had picked the Turkey up while at Jungle Jim’s Market yesterday. Then I used a Meijer Wheat Mini Sub Bun. Layered the Meats on the Bun and topped it with some Kraft Reduced Fat Mayo w/ Olive Oil and Sweet Hot Stone Ground Mustard and a thin slice of Sargento Ultra Thin Swiss Cheese. I brushed some Extra Virgin Olive Oil on the top bun, which makes it brown up better. I baked it in a shallow baking pan at 400 degrees until the Cheese started to melt and the Meats were heated. I love using these Meijer Wheat Mini Sub Buns, their just the right size and they toast up fantastic! I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Another beautiful Spring Day out again. Went and got Mom’s car washed for her and stopped at the bank. Later took my Mom to Home Depot, we needed some new shades for the living room windows and picked up 5 bags of fresh mulch. For dinner tonight I prepared Turkey Meatball Mini Sub w/ Baked Fries.

 

 

 

 

I reheated the Turkey Meatballs leftover from dinner a couple of nights ago. I had used Honeysuckle White Fresh Italian Style Turkey Meatballs. I’ve tried many different Turkey Meatballs and these are the best tasting I’ve found. Their 190 calories and 5 net carbs per serving (3 Meatballs ). And three is plenty as these are good size Meatballs. They were marinated in Ragu Chunky Mushroom Pasta Sauce. When Meatballs are completely heated through I served them on an Meijer Bakery Perfection Deli Mini Wheat Sub Buns and topped with Sargento Reduced fat Shredded Mozzarella Cheese. Makes one fine Turkey Meatball Hogie! I served it with a side of Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, my favorite fries! Later tonight for dessert a Jello Sugar Free Black Cherry Jello.
