Today’s Menu: Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and Turkey Stuffing

 

 

 

So for Breakfast this morning I had some more of the Artisan Crafted Kentucky Legend Hickory Smoked Ham. I sliced off a few slices and heated it up in a skillet. Served it with a Sunnyside Up fried Egg and 2 slices of toasted Aunt Millie’s Bread (lightly buttered). Also had my morning cup of Bigelow Decaf Green Tea. I would like to thank all of you for your emails and prayers for the passing of my Dad, very much appreciated! Busy day getting everything done, and very sad. I invited a couple of my Cousins over for Dinner tonight. I prepared a Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and Stove Top Stuffing.

 

 


I had purchased the Jennie – O Applewood Smoke Flavor Turkey Breast Tenderloin from Meijer and had it in the freezer. Sat it in fridge to thaw overnight. Meijer is the only store that carries this and most of the other Jennie – O Turkey Products. The Turkey Tenderloin comes pre-seasoned and is 100 calories, 4 carbs, and 99% fat free. Besides this beautiful Tenderloin all I’ll need to prepare it is some McCormick Grinders of Sea Salt and Peppercorn Medley, Blackberry Glaze, and Extra Light Olive Oil. To make the Blackberry Glaze I’ll need Smucker’s Sugarless Blackberry Jam, Red Wine Vinegar, Splenda Sugar, and Ground Cinnamon.

 


First I mixed my Blackberry Glaze and set it aside until ready to use. I left the recipe for this at the end of the post. To prepare the Tenderloin I’ll be baking it. Preheat the oven to 350°F. Next sprayed a shallow baking pan with Pam Non Stick Cooking Spray and add a tablespoon of the Extra Light Olive Oil to it. Then place the Tenderloins in the baking pan. With about 10 minutes of cooking time left I Glazed on of the Tenderloins. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 62 minutes. Remove from the oven, cover and let rest 5-10 minutes before slicing.

 


Started slicing it and it’s so very tender and moist. It has a fantastic taste. The Applewood Smoke and combination of Spices it was marinated in was perfect! Good job Jennie- O. For the added Blackberry Glaze , it was perfect! It went with the Turkey perfectly.

 

 

 

 

To go with the Turkey Tenderloin I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

 

 

 

 

 

 

I also heated up a can of Del Monte Cut Green Beans. Then I also made a box of Kraft Stove Top Lower Sodium Chicken Stuffing. Mom loves Stuffing so I made some for her. For Dessert later a bowl of Skinny Pop – Pop Corn along with a Diet Dr. Pepper to drink.

 

 

 

 

 

 


BLACKBERRY GLAZE
INGREDIENTS Nutrition
1⁄2 cup Smucker’s Sugarfree Blackberry Jam
2 tablespoons Red Wine Vinegar
1 tablespoon Splenda sugar substitute
1⁄4 teaspoon Ground Cinnamon

DIRECTIONS
Whisk Blackberry Jam, Red Wine Vinegar, Splenda, and Cinnamon,in small bowl until blended, set aside.

SLOW COOKER:
Peel back and remove packaging. Place tenderloins (two in each packet) in slow cooker, add ½ cup water, and cover with lid. Cook according to chart below AND until internal temperature reaches 165°F. as measured by a meat thermometer. Remove and serve. Slow cookers may vary in cooking performance.* Always cook to an internal temperature of 165°F.

To start my morning off I prepared a package of Tennessee Pride Turkey Sausage and Biscuit. They come 2 to a package and are frozen. Just microwave the package for 50 seconds and done. they are 200 calories and 26 carbs for the 2 snack size sandwiches. Also had a cup of Bigelow Decaf Green Tea. 58 degrees to start the morning off and had a high of 75 degrees! 2nd day in a row of Spring like weather temperatures. After Breakfast I started a load of laundry and then went to McDonald’s to pick up Breakfast for Mom and Dad. Afterward I went to pick up some Prescriptions at Kroger for Dad. Then on to the Post Office and Bank. Good to be out in this weather! For Dinner tonight I prepared a Blackberry Glazed Roasted Applewood Smoke Flavor Turkey Breast Tenderloin w/ Mashed Potatoes, Cut Green Beans, and Stove Top Stuffing.

Started the morning off with a Breakfast Burrito! For the ingredients I used; I Scrambled medium size Egg, 2 slices Jennie – O Turkey Bacon (Crumbled), sliced Olives, Sargento Shredded Reduced Fat Sharp Cheddar, Ortega Smoky Chipotle Taco Sauce, and Old El Paso Soft Flour Tortillas. Tooo good! That Ortega Smoky Chipotle Taco Sauce is the best taco Sauce I’ve ever had! Nice heat to it but not over powering, and it takes the flavor level of any dish you add to off the chart! Love this. After Breakfast had my morning workout and hit the shower.

 

 

BBQ Glazed Chicken Thighs  Stuffing 010
Anything you needed done today out side you better get it done early! We have us a Mid- Summer day out there today! It was in the 70’s at 6:30 this morning and a high in the mid 90’s , and of course high humidity. Went out and swept the deck and driveway off. Rest of the day I did some cleaning inside and since I was staying in today I shredded old bills and such. For dinner tonight I prepared BBQ Glazed Chicken Thighs w/ Mashed Potatoes, Cut Italian Beans, and Whole Wheat Stuffing.

 

 

BBQ Glazed Chicken Thighs  Stuffing 002
To make the dish I’ll need; 1/2 cup Smucker’s Sugarless Peach Preserves, 1/4 cup Kraft Sweet Honey BBQ Sauce, 1/2 tsp. Garlic Powder, Sea Salt (to taste), 1 small Red Onion finely chopped), and 8 small Boneless Skinless Chicken Thighs. BBQ Glazed Chicken Thighs, just the name alone sends the taste buds a watering! What makes that Glaze so good is the combinations of Smucker’s Sugarless Peach Preserves and Kraft Sweet Honey BBQ Sauce. Then add in the Garlic Powder and chopped Red Onion, you have a winning Glaze!

 

 

BBQ Glazed Chicken Thighs  Stuffing 004

To prepare it I preheated oven to 400ºF. Seasoned Chicken Thighs with Sea Salt. Then mixed the 1/2 cup Smucker’s Sugarless Peach Preserves, 1/4 cup Kraft Sweet Brown Sugar BBQ Sauce, and a 1/2 tsp. Garlic Powder in large bowl until blended. Stirred in onions. Added the chicken; turned to evenly coat. Placed Chicken in single layer in 8-inch square baking dish; cover with sauce. Then bake 30 min. and Chicken read 165ºF by an inserted thermometer. Then what you have is a Winner, Winner, Chicken Dinner! Chicken is moist and juicy and all the ingredients combine to give it an incredible taste. The BBQ Sauce and Peach Preserves makes a perfect Glaze for Chicken.

 

 

Fried Walleye w Cut Roma Beans and Baked Roasted Fingerling Pota 002
For one side I made some of my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then I also heated up a can of Allens Cut Italian Green Beans. Then Mom loves the Stove Top Dressing so I made a box of the Stove Top Stuffing made with Whole Wheat for Chicken. Very good dressing and made in 10 minutes. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 
BBQ Glazed Chicken Thighs

What You Need

1/2 cup Smucker’s Sugarless Peach PreservesBBQ Glazed Chicken Thighs  Stuffing 005

1/4 cup Kraft Sweet Brown Sugar BBQ Sauce
1/2 tsp. Garlic Powder
Sea Salt, to taste
1 small Red Onion, finely chopped
8 small Boneless Skinless Chicken Thighs

Make It
1 – Heat oven to 375ºF.
2 – Season Chicken Thighs with Sea Salt
2 – Mix first 3 ingredients in large bowl until blended. Stir in onions. Add chicken; turn to evenly coat.
3 – Place chicken in single layer in 8-inch square baking dish; cover with sauce.
4 – Bake 25 to 30 min. or until chicken is done (165ºF)

Our morning started off sunny and humid but as the morning went on the clouds started rolling in and we had rain coming in for the day. Layed back day, not a lot going on. After Breakfast and the morning workout I went outside and did some cleaning and sweeping. Then back inside pulled everything out of the fridge and gave it a good cleaning and straightened up a couple of storage cabnets for my day. For dinner tonight a favorite of mine, Cumin Spiced Boneless Pork Loin Roast w/ Cut Green Beans & Potatoes and Savory Herb Stuffing.

 

 

I’ve been using the Cumin Spice Rub for a while now, my favorite Rub for Pork. I had come across the recipe a while Cumin Spiced Boneless Pork Loin Roast 001back on-line, and use it all the time now. It gives the Pork a fantastic crust and great seasoning. I purchased the Pork Tenderloin Boneless Roast from Kroger yesterday. To prepare it I’ll need; 1 Pork Tenderloin Roast, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combined all the ingredients; rub it all over the Pork. Let stand 20 minutes. To Roast it I used a mall Broiler Pan with a Wire Rack in it. Sprayed the Rack with Pam Cooking Spray and put the Pork on it. I baked it for about 1 hour, until my thermometer registered 145° (slightly pink) Let stand 10 minutes before slicing. Then got ready to enjoy one delicious Pork Tenderloin Roast! Fantastic combo of Spices, which made one incredible Crust on the Pork with the inside being so tender and moist!

For one side I heated up a can of Del Monte Cut Green Beans and Potatoes. A combination of two of my favorite Vegetables all in one can! Then for another side I prepared a box of Stove Top Savory Herbs Stuffing. So easy to make and love the Stuffing. For dessert later a bowl of Del Monte Sliced Peaches.

Today’s Menu: Baked Jennie – O Whole Turkey Breast w/ Cut Green Beans and New Potatoes, Mini ears of Sweet Corn, and Whole Grain Bread

Another chilly morning to start but it turned into a sunny Spring Day, had a high in the 50’s. Ran a couple of errands for Mom and back home for the day. Took the 4 wheel cart out for a spin down by the neighborhood lake, be fishing before long! For dinner tonight, Baked Jennie – O Whole Turkey Breast w/ Cut Green Beans and New Potatoes, Mini ears of Sweet Corn, and Whole Grain Bread.

 

 

 

 

Yesterday I believe I said the Turkey Breast weighed 1.79 lb. but it weighs 4.79 lb. First time I prepared a Jennie – O Fresh Premium Basted Young Turkey Breast. I seen this at Walmart while there yesterday so I thought I would give it a try. I originally thought about having it for Easter but my Mom wanted Veal Shoulder instead, as I always say “What Mom wants my Mom gets”.

To prepare it, as all Jennie – O Turkey products, was very easy. Preheat your oven to 325°F. Place the turkey breast on rack in shallow pan. Roast at 325°F. approximately 30 minutes per pound, or until meat thermometer inserted into the thickest part of the breast registered 170°F. (Juices should run clear). Let turkey breast stand for 15 minutes before carving and enjoy! it took about 3 hours to get done and it was worth the wait! It came out moist, well-seasoned, and delicious! Really some fine tasting Turkey. I would highly recommend giving this a try. More than enough for three of us and plenty of leftovers for some Turkey Sandwiches.

 

 

 
Mom and Dad are big on the side dishes so for one side I prepared some Del Monte Cut Green Beans and New Potatoes. Very good del Monte Product, combines two of my favorites, Green Beans and New Potatoes. Just heat and serve. I also boiled some Green Giant Mimi Ears of Sweet Corn. Also opened up a small can of Jellied Cranberry and prepared a box of Stove Top Low Sodium Turkey Stuffing. It’s your basic Thanksgiving Day Dinner! Fantastic Meal tonight, everyone enjoyed it. For dessert later a bowl of Breyer’s Low Carb Vanilla Bean Ice Cream.

Cooking Instructions:
PROPER HANDLING RECOMMENDATIONS:

Not much going on today. A little hotter and a bit more humid but not real bad out. I did go to Meijer to see if I could find what to have for dinner, When in doubt, Turkey! I bought a Jennie-O Oven Ready Turkey Breast and dinner was set! I prepared a Roasted Turkey Breast and Stuffing w/ Mashed Potatoes and Cut Green Beans.

 

 

 

As I said I used a Jennie – O Oven Ready Skinless Boneless Turkey Breast. I love using the Jennie – O Oven Ready Boneless Skinless Turkey Breast. It’s an easy and delicious way to get your Turkey on! It was a very early Thanksgiving Dinner here today! For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Cooking Instructions:

 

OVEN COOKING METHOD:
Preheat oven to 375 °F.
Remove frozen turkey from white outer package.
Do not remove turkey from FOOL PROOF. cooking bag.
Place in a roasting pan with at least 2″ high sides.
Note – Do not increase oven temperature, cooking bag may melt at higher temperatures.
Cut three 1/2 inch slits in top of FOOL PROOF. cooking bag.
Place pan in oven, allowing room for bag to expand without touching the oven racks or walls.
Roast the turkey until a meat thermometer reaches 170°F.
Note – Meat temperature increases rapidly during last hour of cooking.
Let turkey rest 10 minutes, cut open top of oven bag.
Watch out for hot steam and juices.
Heat gravy as directed on pouch.

Busy day of canning 14 qts. of Half Runner Green Beans! Nothing better than fresh canned beans and with 14 qts. that should last a while (Hopefully). I’ll have pictures and instructions on how we canned the beans tomorrow. Having 2 stoves on day like this would be nice as the canner took up half the stove top area, the last batch of beans weren’t done after 7:00 pm. It made dinner prep cramped but still was able to cook. Mom was real tired so her and my Dad went out to eat as for me I prepared a Fried Pork Chop w/ Pork Stuffing, Au Gratin Casserole, and Sugar Snap Peas.

 

 
To prepare my Chop I seasoned it with Sea Salt and Ground Black Pepper and then dusted it with a bit of flour, to give it a slight crust. I pan fried it in Canola Oil about minutes per side. Comes out browned and moist.

 

 

 

For side dishes I prepared a box of Stove Top Dressing (Pork). I wasn’t a big fan of any stuffing until last week when I made some Stove Top Stuffing for dinner last week and I couldn’t get enough of it! That was the Chicken Stove Top so I thought I would give the Pork a try and it was just as delicious! I am a fan of Stuffing, at least Stove Top Stuffing, now. I also baked a Idahoan Au Gratin Homestyle Casserole. A breeze to prepare and always a perfect Potato dish. I also microwaved a bag of Walmart Marketside Sugar Snap Peas. A perfect meal to end a productive day! For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Wow, another hot and humid day around here. They say this coming week it will be worse, thank goodness for air conditioning! It’s the first few days of Summer and we have a thief in the neighborhood. Their not taking anything of much value but it’s just the point of it! They got a small chase chair and a yard item from us last night. I was sent an email the Neighborhood Watch was going to expand so hopefully that will put a stop to it. For dinner Mom wanted Turkey ans as we all know “What Mom wants Mom gets”. I roasted a Turkey Breast along with Stuffing, Mashed Potatoes, Cut Green Beans, and Baked French Bread.
