Oven-Baked Chicken Drumsticks with Potatoes
Use your favorite dried herb blend to season both the drumsticks and the sauce in this healthy sheet-pan dinner. A garlic-and-herb mix is crowd-pleasing, but something with a little more heat, like Cajun seasoning, would be delicious too. Whichever way you go, opt for a salt-free version to keep the sodium down in this quick and easy chicken recipe…………………

Butternut Squash Ravioli with Chicken Sausage and Kale
What’s the secret to making store-bought butternut squash ravioli even more delicious? Add apple-chicken sausage, tender greens and lots of caramelized onions. We add a bit of sugar to help the onions caramelize faster, but feel free to omit it (just cook the onions a bit longer if you do). Buy prewashed chopped kale to cut down on prep time. It all adds up to an easy dinner that’s ready in just 20 minutes…………..

Kung Pao Chicken with Bell Peppers
Here’s an easy chicken recipe you’ll definitely want to add to your dinner repertoire. A quick marinade tenderizes the chicken and infuses flavor in this healthy version of a take-out favorite. Adding a little oil to finish the marinade coats the chicken and helps keep it from sticking to the pan…………………

Turkey Enchilada Poblano Peppers
In this healthy take on a turkey enchilada recipe, we stuff everything into a roasted poblano pepper shell rather than tortillas to pack an extra serving of veggies into this meal. If you can’t find poblano peppers, you can substitute green bell peppers instead……………..

Squash-Stuffed Roasted Poblano Peppers
When fresh, poblanos have a wonderful, somewhat sweet heat that makes a terrific vessel for rich-tasting butternut squash stuffing. Accompanied by corn tortillas or rice and beans, this makes a special vegetarian entree. Most of the preparation can be done in advance and the recipe can easily be doubled. Look for dark green poblanos about 5 inches long, with broad shoulders at the stem, tapering to a pointy tip. Wash your hands thoroughly after removing the seeds or wear rubber gloves; most of the chile oils are found in the seeds and connective membranes………………..

Tuna-Stuffed Peppers
These tuna-stuffed peppers are ubiquitous in delis all over Susa, Italy………..

Freeze…………

Once a squash fruit is cut open, you can wrap the unused portion in plastic and store in refrigerator for up to a week, or cut it into cubes and place in a freezer bag to freeze.

Buying Squash……..

If you will be eating your squash right away, the dented or bruised ones are fine. The small dents and bruises are purely cosmetic and the flavor is unaffected by them and you can often get a great price on squash that may look unattractive. Just cut out any bad spots when you’re prepping the squash and removing the seeds. If there are too many bruises to deal with, peel the squash with a potato peeler and cut it into chunks and cook it that way. If a squash feels soft it is ready to be tossed.

Squash can be tough to work with……

Pierce hard squash with a sharp knife two or three times then microwave for 1 – 1-1/2 minutes to make it easier to slice open and deseed. We tried this with a Butternut Squash and it made it much to cut and peel.

It’s Squash time……

There are many more types of winter squash than summer squash. Some more common varieties include pumpkin, acorn, butternut, buttercup, spaghetti, delicata, and carnival. All have slightly different colors, textures, and or flavors. They all cook the same way and can for the most part be readily interchanged in recipes. My favorite is Butternut Squash, we have when ever we can!
