Spicy Turkey Lasagna Rollers
Why have big squares of lasagna when you can have fun little rollers? Think outside the square with this reimagined classic Italian recipe. Super kid-friendly and under 500 calories per serving.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 (24-ounce) jar prepared spaghetti sauce, divided
1 (8-ounce) can tomato sauce
½ cup chopped red pepper, roasted
¼ teaspoon dried Italian seasoning
½ teaspoon crushed red pepper flakes
1 (15-ounce) container ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
3 cups Italian blend cheese, divided into 3 parts
¼ cup egg substitute or 1 egg, lightly beaten
12 lasagna noodles, cooked, drained

DIRECTIONS
1) Heat oven to 350°F. Mist 13 x 9-inch baking pan with non-stick cooking spray; set aside. Cook turkey as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. Stir in half jar spaghetti sauce, tomato sauce, red pepper, Italian seasoning and red pepper flakes. Simmer 5 minutes.
2) In medium bowl, mix ricotta cheese, spinach, 2 cups cheese and egg. Spread ¼ cup ricotta mixture over each lasagna noodle. Top with ⅓ cup sausage mixture. Tightly roll up each lasagna noodle from short end. Place rolls, seam side down, in prepared pan. Pour remaining spaghetti sauce over rolls. Sprinkle with remaining cheese. Cover with foil. Bake 30 minutes. Remove foil and bake 15 minutes or until sauce is bubbly.
* Always cook to an internal temperature of 165°F.

BACON, MUSHROOM and SWISS KETO BURGER ON CREAMED SPINACH
You may say Keto-Diet, but we say Keto-licious!

Burger Ingredients: (per serving)

1 – 4oz. or 8oz. Wild Idea Keto Burger
1 – tablespoon olive oil
salt and pepper
3 – strips Wild Idea Bacon or other grass-fed/organic bacon
1 – cup sliced mushrooms
1 – oz. Swiss cheese, sliced

Preparation:

1 – Rub the pre-portioned burger with a little olive oil and season with salt and pepper.
2 – In a large, heavy skillet over medium high heat, heat the remaining oil.
3 – Add the bacon to the pan, and the mushrooms, keeping them separate. Add the prepped burger to the pan too, nestling it up against the edge of the pan.
4 – Turn the bacon as needed and cook until crispy. Remove once cooked and place on paper.
5 – Sauté the mushrooms and season them with a little salt and pepper to as they are sautéing.
6 – Turn the burger every minute, keeping the uncooked edge nestled to the side. Cook 4 oz. burgers for about two minutes each side and the 8 oz. burgers about 3 minutes each side for medium rare.
7 – While the burger is still in the pan, top with the mushrooms, the bacon and the slices of cheese. Add any mushrooms to the top of the burger.
8 – Transfer the burger to a plate and tent with foil.
Creamed Spinach Ingredients:

¼ – cup onion, chopped
2½ – ounces of fresh spinach
1 – tablespoon butter
¼ – cup cream
salt, pepper, chili flake

Preparation:

1 – Using the burger pan (or in a separate pan), over medium heat, add the butter and the onions. Sauté the onions for about 3 minutes, stirring occasionally.
2 – Add the spinach and stir to incorporate. Cook until the spinach has wilted.
3 – Add the cream and mix together. Cook until the cream stats to thicken about 3 minutes.
4 – Season the creamed spinach to taste.
5 – To serve, pile the creamed spinach in the center of the plate and top with the Bacon, Mushroom & Swiss Burger.

Slow Cooker Spinach Dip
Your can always judge a good spinach dip by the speed in which it disappears. And though this one is cooked in a slow cooker, it moves lightning fast! This creamy and delicious Spinach Dip has two different kinds of cheese, turkey bacon and artichoke hearts for a special, tangy zing. And because it’s in a slow cooker, you can set it and forget it!

INGREDIENTS
1 (10-ounce) package frozen chopped spinach, thawed and drained
½ cup chopped green onions
2 garlic cloves, finely chopped
1 (15-ounce) can quartered artichoke hearts, rinsed and drained
1½ cups shredded white Cheddar cheese
1 cup grated Parmesan cheese
1 cup low-sodium vegetable broth
½ cup sour cream
½ cup mayonnaise
1½ teaspoons seasoned pepper
6 slices JENNIE-O® Lower Sodium Turkey Bacon made with Sea Salt
assorted sliced vegetables and crackers, if desired

DIRECTIONS
1) In lightly greased slow cooker, stir together spinach, green onions, garlic, artichoke, cheeses, vegetable broth, sour cream, mayonnaise and seasoned pepper. Cook on HIGH 4 hours.
2) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Finely chop bacon. Place bacon on top of spinach dip. Serve with sliced vegetables or crackers, if desired.
* Always cook to an internal temperature of 165°F.

Polenta Lasagna with Spinach

Traditional lasagna noodles are replaced with slices of firm polenta layered with a spinach-ricotta cheese mixture and an Italian tomato sauce.

Recipe Ingredients:
Polenta:
1 tablespoon olive oil
1 small onion, very finely chopped
1 garlic clove, minced
1/2 teaspoon salt
7 cups vegetable stock
2 cups instant polenta (13.2 ounce box)
3 tablespoons freshly grated Parmesan cheese

Tomato Sauce:
2 tablespoons olive or vegetable oil
1 large onion, chopped
1 (15-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1/2 cup dry red wine
1 teaspoon dry oregano leaves
1 teaspoon dry basil leaves
Salt to taste

Spinach-Ricotta Filling:
2 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry
2 (15-ounce) containers low-fat ricotta cheese
2 large eggs
2 tablespoons freshly grated Parmesan cheese
Salt and freshly ground pepper
Pinch of nutmeg

4 tablespoons freshly grated Parmesan cheese – divided use
2 cups shredded mozzarella cheese – divided use

Cooking Directions:
1 – Lightly spray a 13x9x2-inch baking dish with non-stick cooking spray.
2 – For Polenta: In a large saucepan, warm the olive oil over medium heat. Add the onion and sauté for 3 to 5 minutes or until softened. Add the garlic and sauté 1 minute more, making sure it doesn’t brown. Add salt and stock and bring to a rolling boil over medium heat.
3 – In a thin stream very slowly add the polenta stirring constantly with a wooden spoon. Reduce the heat to low and continue cooking for 3 to 5 minutes, stirring constantly to be sure it doesn’t stick, until it’s thick and creamy. Stir in 3 tablespoons of the Parmesan cheese.
4 – Pour polenta into the prepared baking dish, smoothing the top with a rubber spatula if necessary. Let polenta rest for at least 2 hours. (Can be made up to 3 days ahead however.)
5 – For Tomato Sauce: Heat oil in a wide frying pan over medium heat; add onion and cook, stirring often, until softened, about 5 minutes. Stir in tomato sauce, tomato paste, wine, oregano and basil. Bring to a simmer; then simmer, uncovered, for 10 minutes. Season to taste with salt. Makes about 4 cups sauce.
6 – For Spinach-Ricotta Filling: In a medium bowl combine spinach, ricotta, egg and Parmesan, mixing well. Season to taste with salt, pepper and nutmeg.
7 – Preheat oven to 375°F (190°C).
8 – Invert the polenta onto a cutting surface. Set the dish aside to use again. Cut the polenta rectangle in half to make 2 rectangles each measuring 9×6 1/2-inches. Slice each rectangle lengthwise in half again, using a long piece of dental floss or a serrated knife to make the job easiest, creating 4 layers (each 9×6 1/2-inches).
9 – Spoon prepared tomato sauce evenly on the bottom of the 13 x 9 x 2-inch baking dish. Place two of the polenta pieces in the dish to cover the bottom. Spoon half of the spinach ricotta mixture over the polenta, using the back of a spoon to spread it out, and then sprinkle with 1 cup mozzarella and 2 tablespoons Parmesan. Spoon 2 cups of sauce over cheese.
10 – Top with remaining polenta pieces and finish with remaining cheese.
11 – Place the lasagna dish on a baking sheet to catch any drips. Bake uncovered for 30 minutes. Remove from the oven and let sit for 10 minutes.
Makes 8 servings.

Tip: To prepare in advance the lasagna can be assembled and held up to 24 hours before baking. To cook, remove lasagna from refrigerator 1 hour before baking then cook as recipe directs.

Turkey Spinach Lasagna
Spinach and nutmeg add texture and flavor to this classic Italian comfort food recipe. less than 500 calories per serving, an amazing dinner is less than an hour away.

INGREDIENTS
9 uncooked long lasagna noodles
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
2 teaspoons minced garlic
1 (26-ounce) jar low-sodium spaghetti sauce
1 (15-ounce) container ricotta cheese
2 cups shredded mozzarella cheese, divided
¼ cup egg substitute or 1 egg, slightly beaten
1 (10-ounce) package frozen spinach, thawed and drained
¼ teaspoon crushed red pepper flakes
⅛ teaspoon ground nutmeg

DIRECTIONS
1) Heat oven to 350ºF. Cook lasagna noodles according to package directions.
2) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add garlic and spaghetti sauce and simmer 10 minutes, stirring occasionally.
3) In medium bowl, combine ricotta cheese, 1 cup mozzarella cheese, egg, spinach, red pepper flakes and nutmeg; mix well. Spread ¾ cup spaghetti sauce mixture on bottom of a 13 x 9-inch baking pan. Layer 3 noodles over sauce, top with 1 cup sauce and half of cheese mixture. Repeat layers, ending with noodles and sauce. Cover with foil and bake 50 minutes or until bubbly. Remove foil and sprinkle with remaining mozzarella cheese. Return to oven and bake 5 minutes or until cheese is melted.
* Always cook to an internal temperature of 165°F.

Easy Turkey Sausage Egg Bake
Treat yourself to breakfast by prepping this hearty, carb-conscious bake the night before — then just hop out of bed and pop it in the oven. Under 300 calories per serving!

INGREDIENTS
1 (16-ounce) package JENNIE-O® All Natural* Turkey Sausage
1 (15-ounce) carton Florentine flavored cholesterol-free real egg product
1 cup chopped spinach
2 cups skim milk
½ teaspoon ground mustard
5 slices whole grain 100% whole wheat bread, cut into cubes
1 cup shredded reduced-fat Cheddar cheese

DIRECTIONS
1) Cook sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Drain and set aside. Whisk together eggs, spinach, milk and mustard.
2) Lightly spray 8 ramekins or 10-ounce custard cups with non-stick cooking spray. Divide the bread among the ramekins. Top with sausage and pour egg mixture (about ½ cup) into each cup. Cover and refrigerate several hours or overnight. To bake, heat oven to 350°F. Place ramekins or cups on baking sheet. Bake, uncovered, 30 minutes or until a knife inserted into the center comes out clean.

Directions

2 – Combine artichoke hearts, spinach, yogurt, cheese, onion and garlic; mix well.
3 – Pour mixture into 1-quart casserole dish or 9-inch pie plate.
4 – Bake 20-25 minutes, or until heated through.
5 – Sprinkle with red peppers.

SPINACH, FETA AND GRAPE TOMATO OMELET

Ingredients

2 cups egg substitute (500 mL)
3 Tbsp fat-free milk (45 mL)
2 cups (2oz/60 g) loosely packed baby spinach (500 mL)
2 Tbsp chopped fresh basil leaves (30 mL)
1 Tbsp canola oil (15 mL)
1 cup grape tomatoes, quartered (250 mL)
1/2 tsp chopped fresh rosemary leaves (2 mL)
1/2 cup (2 oz/60 g) reduced-fat feta cheese (125 mL)

Directions

1 – Combine egg substitute and milk in a medium bowl and whisk until well blended.
2 – Place spinach and basil in another medium bowl; set aside.
3 – Heat canola oil in a small nonstick skillet over medium-high heat. Add tomatoes and rosemary, and cook 2 minutes or until soft, stirring frequently. Add to bowl with spinach and basil, toss, and cover to allow spinach to wilt slightly and flavors to blend while preparing omelets.
4 – Reduce heat to medium. Wipe skillet clean with a damp paper towel. Coat skillet with canola oil cooking spray and place over medium heat until hot. Pour half of egg mixture into skillet. Cook 5 minutes; as eggs begin to set, gently lift edge of omelet with a spatula and tilt skillet so uncooked portion flows underneath.
5 – When egg mixture is set, spoon half of tomato mixture over half of omelet. Top with half of feta cheese. Loosen omelet with a spatula and fold in half. Slide omelet onto serving plate and cover with foil to keep warm. Repeat with remaining ingredients.

Recipe Yield: Yield: 4 servings. Serving size: 1/2 omelet.
