Italian Spinach Egg Rolls
Need a recipe for hard-boiled eggs? Try this baked dish featuring lasagna noodle rolls filled with a mixture of chopped hard-boiled eggs, spinach, ricotta and mozzarella cheeses, topped with spaghetti sauce.

Recipe Ingredients:
6 lasagna noodles
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1/2 cup part-skim ricotta cheese
1/2 cup low-moisture part-skim shredded mozzarella cheese
4 large hard-boiled eggs, chopped
3 large eggs, beaten
1/2 cup chopped green onions with tops
1 1/2 teaspoons Italian seasoning, crushed
1 (14-ounce) jar spaghetti sauce
Freshly grated Parmesan cheese (optional)

Cooking Directions:
1 – Cook noodles according to package directions. Drain well. Set aside. In medium bowl, stir together remaining ingredients except spaghetti sauce and Parmesan cheese until well combined.
2 – Spread half of the spaghetti sauce over bottom of greased 11×7-inch baking dish. Spread a scant 2/3 cup of the spinach mixture over 1 of the cooked noodle strips. Starting at short end, roll up strip. Place roll, seam-side down, in baking dish. Repeat with remaining noodles and spinach mixture. Spoon remaining sauce over rolls. Cover tightly with aluminum foil.
3 – Bake in preheated 350°F (175°C) oven 20 minutes. Remove foil. Continue baking until heated throughout, about 15 to 20 minutes. Sprinkle with Parmesan cheese, if desired.

Classic Turkey Parmesan
With plenty of Parmesan, mozzarella and garlic, this classic Italian recipe doesn’t disappoint. Bake lean turkey breasts with Italian-seasoned breadcrumbs and olive oil. A delicious dinner at just 390 calories per serving.

INGREDIENTS
½ cup egg substitute or 2 eggs
2 tablespoons milk
1 cup Italian-seasoned dry breadcrumbs
¼ cup flour
¼ teaspoon pepper
1 (17.6-ounce) package JENNIE-O® Turkey Breast Cutlets
2 tablespoons olive oil
3 cloves garlic, peeled and halved
1½ cups prepared spaghetti sauce
1½ cups shredded mozzarella cheese
¼ cup grated Parmesan cheese
fresh basil, if desired

DIRECTIONS
1) Heat oven to 350°F. In shallow dish, beat together eggs and milk. Place breadcrumbs in separate shallow dish. In recloseable plastic food storage bag, combine flour and pepper. Add turkey cutlets to bag, one cutlet at a time; shake to coat lightly. Dip in egg mixture, letting excess drip off; roll in breadcrumbs to coat lightly.
2) In large non-stick skillet, heat oil over medium heat. Add garlic; cook 1 minute. Push garlic to edge of skillet. Add turkey to skillet in batches. Cook the cutlets as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Transfer cooked turkey to 13×9-inch baking dish. Repeat with remaining turkey.
3) Discard garlic; add spaghetti sauce to skillet. Simmer 2 minutes or until heated thoroughly. Spoon over turkey; top with mozzarella cheese and Parmesan cheese. Bake 15 minutes or until turkey is hot and cheese is melted. Sprinkle with basil, if desired.
* Always cook to an internal temperature of 165°F.

Spicy Turkey Lasagna Rollers
Why have big squares of lasagna when you can have fun little rollers? Think outside the square with this reimagined classic Italian recipe. Super kid-friendly and under 500 calories per serving.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 (24-ounce) jar prepared spaghetti sauce, divided
1 (8-ounce) can tomato sauce
½ cup chopped red pepper, roasted
¼ teaspoon dried Italian seasoning
½ teaspoon crushed red pepper flakes
1 (15-ounce) container ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
3 cups Italian blend cheese, divided into 3 parts
¼ cup egg substitute or 1 egg, lightly beaten
12 lasagna noodles, cooked, drained

DIRECTIONS
1) Heat oven to 350°F. Mist 13 x 9-inch baking pan with non-stick cooking spray; set aside. Cook turkey as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. Stir in half jar spaghetti sauce, tomato sauce, red pepper, Italian seasoning and red pepper flakes. Simmer 5 minutes.
2) In medium bowl, mix ricotta cheese, spinach, 2 cups cheese and egg. Spread ¼ cup ricotta mixture over each lasagna noodle. Top with ⅓ cup sausage mixture. Tightly roll up each lasagna noodle from short end. Place rolls, seam side down, in prepared pan. Pour remaining spaghetti sauce over rolls. Sprinkle with remaining cheese. Cover with foil. Bake 30 minutes. Remove foil and bake 15 minutes or until sauce is bubbly.
* Always cook to an internal temperature of 165°F.

Quick and Easy Turkey Lasagna
Bake up this simple Italian lasagna recipe with lean, sweet Italian turkey sausage and three kinds of cheese. Less than 500 calories per serving, done in under 60 minutes and super kid-friendly!

INGREDIENTS
1 (19.5-ounce) package JENNIE-O® Lean Sweet Italian Turkey Sausage
1 (26-ounce) spaghetti sauce
8 no-boil lasagna noodles
1 (15-ounce) container ricotta cheese
¼ cup grated Parmesan cheese
2 cups shredded mozzarella cheese, divided

DIRECTIONS
1) Heat oven to 450ºF. Crumble turkey sausage into a large pre-heated saucepan; discard casings. Cook over medium-high heat 5 to 7 minutes, breaking sausage into chunks and stirring frequently. Always cook turkey to well-done, 165°F as measured by a meat thermometer.
2) Add spaghetti sauce; bring to a boil. Reduce heat; simmer uncovered 5 minutes, stirring occasionally. Place 2 noodles on bottom of 9-inch square baking dish. Spread ¼ of sauce on noodles. Combine ricotta and Parmesan cheese; spoon ⅓ of mixture over sauce. top with ⅓ cup mozzarella cheese. Repeat layering 2 more times and place last 2 noodles on top. Cover with remaining sauce.
3) Cover with foil; bake 25 minutes or until noodles are tender and sauce is bubbly. Uncover; top with remaining 1 cup mozzarella cheese. Return to oven; bake 5 minutes or until cheese is melted. Let stand 5 minutes before serving.
* Always cook to an internal temperature of 165°F.

INGREDIENTS
9 uncooked long lasagna noodles
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
2 teaspoons minced garlic
1 (26-ounce) jar low-sodium spaghetti sauce
1 (15-ounce) container ricotta cheese
2 cups shredded mozzarella cheese, divided
¼ cup egg substitute or 1 egg, slightly beaten
1 (10-ounce) package frozen spinach, thawed and drained
¼ teaspoon crushed red pepper flakes
⅛ teaspoon ground nutmeg

DIRECTIONS
1) Heat oven to 350ºF. Cook lasagna noodles according to package directions.
2) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add garlic and spaghetti sauce and simmer 10 minutes, stirring occasionally.
3) In medium bowl, combine ricotta cheese, 1 cup mozzarella cheese, egg, spinach, red pepper flakes and nutmeg; mix well. Spread ¾ cup spaghetti sauce mixture on bottom of a 13 x 9-inch baking pan. Layer 3 noodles over sauce, top with 1 cup sauce and half of cheese mixture. Repeat layers, ending with noodles and sauce. Cover with foil and bake 50 minutes or until bubbly. Remove foil and sprinkle with remaining mozzarella cheese. Return to oven and bake 5 minutes or until cheese is melted.
* Always cook to an internal temperature of 165°F.

Classic Turkey Lasagna
Made with lean ground turkey, this classic Italian comfort food recipe is a simple and delicious way to switch to turkey!

INGREDIENTS
6 lasagna noodles
1 (16-ounce) package JENNIE-O® Lean Italian Seasoned Ground Turkey
1 (28-ounce) jar spaghetti sauce
1 (15-ounce) package ricotta cheese
¼ cup chopped fresh basil
½ cup grated Parmesan cheese, divided
2 cups shredded mozzarella cheese, divided

DIRECTIONS
1) Heat oven to 350ºF. Cook noodles according to package directions. Cook ground turkey 14 to 16 minutes or until well-done, 165ºF as measured by a meat thermometer. Add spaghetti sauce; simmer uncovered 10 minutes. Combine ricotta cheese, basil and ¼ cup Parmesan cheese; mix well.
2) Spoon ¾ cup spaghetti sauce mixture over bottom of 13 x 9-inch baking dish. Layer half of cooked noodles over sauce; top with half of ricotta cheese mixture. Sprinkle with 1 cup mozzarella cheese; top with 1 cup spaghetti sauce. Repeat layering with remaining ricotta cheese mixture, 3 noodles and remaining spaghetti sauce. Top with remaining 1 cup mozzarella cheese and remaining ¼ cup Parmesan cheese. Cover with foil; bake 50 minutes. Uncover; continue baking 10 minutes or until bubbly.
* Always cook to an internal temperature of 165°F
