Wow, we’ve really been getting the rain and thunderstorms around here. One right after another for the past few of days. The morning, it wasn’t raining so i took advantage of it and went to Walmart and Kroger for a few items. It started raining as I left Kroger on my way home. Walmart is getting rid of more and more national brand grocery items and replacing it with their own brands, even worse than Kroger now. Got back home and put all the vittles away and went out to some shed cleaning, just needed straightened up from stuff being piled up from the Winter. Spent the rest of the afternoon watching some Baseball, Reds Game! For dinner tonight it was Comfort Food, Cajun Shrimp w/ Garlic Parmesan Mac & Cheese and Sour Dough Mini Boule Bread.

 

 
To make tonight’s dinner; I had a bag of Kroger Brand Jumbo Shrimp in the freezer which I let thCajun Shrimp w Garlic Parmesan Mac & Cheese 002aw in the fridge overnight. To prepare the Shrimp all I’ll need is a 1/2 tablespoon of Extra Virgin Olive Oil, 1 pat of Blue Bonnet Light Stick Butter, Zatarains Creole Seasoning, and the Shrimp. I preheated a medium size skillet on medium heat, added the Oil and Butter. As the skillet was heating I drained and rinsed the Shrimp in cold water. Patted dry with a ;paper towel and seasoned them with the Zatarain’s Creole Seasoning. Added the Shrimp to the skillet and cooked them for 3 minutes per side until the Shrimp turned opaque. Removed the Shrimp from the skillet and set aside.

 

 
As the Shrimp was cooking I prepared my Mac and Cheese and Baked the Bread. I used a new Mac and Cheese I came across at our local Kroger, Stouffer’s Garlic Parmesan Mac & Cheese. I love mac and Cheese but with Diabetes 2 I very rarely have it due to the carbs. But I came across this at Kroger and had to try it. Garlic Parmesan Mac & Cheese, what is not to like! I immediately thought of Cajun Shrimp and the Garlic Parmesan MaCajun Shrimp w Garlic Parmesan Mac & Cheese 009c & Cheese. Pairing the mac and Cheese with the Shrimp keeps the calories and carbs in check, Shrimp is only 120 calories and 1 carb. The Garlic Parmesan Mac & Cheese is 340 calories and 34 net carbs. To prepare it i microwaved it a total of 8 minutes. Stouffer’s has another winner in this! Mac and Cheese is good anytime but adding the Garlic Parmesan kicks it up another notch! Nice and Cheesy with incredible flavor. I topped the Mac and Cheese with Shrimp. As I said I also Baked the California Sour Dough Mini Boule as everything else was cooking. Perfect Bread to go with everything. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

 

 

 

Stouffer’s Garlic Parmesan Mac & Cheese
SINGLE SERVING, FAMILY SIZE, SIDE DISH
Freshly made pasta in a creamy garlic parmesan cheese sauce, topped with garlic seasoned bread crumbs.
Directions
Keep frozen. Cook thoroughly. For food safety and quality, follow these cooking instructions. Microwave Oven (1100 Watts): Prep: Leave film on tray. We had avoided the freezing rain they had predicted but about 8:00 this morning it started getting foggy and the fog mist started freezing on the roads. Did’t last long though, we ended up getting some rain later. Not having a lot of luck with my car. Just got it back from a small hose leak and now there’s a leak on the other side of the engine, guess it happens when the car has well over 140,000 miles on it. I need a new car or good used one, and SUV type so I can get my wheelchair in and out of the car easily by myself. But it costs money, which is tough to save when your on a fixed income. Anyway I had planned a new Chicken Dish for dinner but I failed to lay the Chicken out of the freezer to thaw in the fridge overnight. Good job Mark! But no problem because I have some incredible leftovers to reheat! Tonight it’s Leftover Shrimp and Andouille Sausage Gumbo w/ Wheat Bread.

This is the post from last night’s dinner on how to prepare this dish. To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, Johnsonville Andouille Sausage, and a bag of Kroger Brand Jumbo Shrimp. The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. I just boil the stock that’s in the packet, sliced the Johnsonville Andouille Sausage into bite size pieces and added them to the stock along with a few shakes of Frank’s Red Hot Sauce for 10-15 minutes. Then I added Extra Large Shrimp and simmered another 3-6 minutes. And the Gumbo is ready to serve and It turned out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Enough leftover for my dinner tonight! I also had a slice of Klosterman Wheat Bread. For dessert later a Healthy Choice Dark Fudge Frozen Greek Yogurt.

1. HEAT oil in large skillet (12-inch) on medium-high heat. Add sausage; cook and stir 5 minutes or until lightly browned.
2. STIR in water and Pasta Dinner Mix. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 15 minutes or until pasta is tender, stirring occasionally.
3. REMOVE from heat. Let stand 5 minutes. Sauce will thicken upon standing. Stir before serving.

VARIATIONS
Chicken Gumbo: Prepare as directed, using 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes, in place of the sausage. Cook and stir 5 minutes or until chicken is no longer pink.

Shrimp Gumbo: Prepare as directed in Step 1, using 1 pound medium shrimp, peeled and deveined, in place of the sausage. Cook and stir 3 minutes or just until shrimp turn pink. Remove shrimp from skillet. Continue as directed, stirring shrimp back into skillet after pasta is tender.

A fairly mild morning compared to what we’ve been having, about 26 with no wind. Warming up to rain they say, with freezing rain overnight. Did some house cleaning and a load of laundry for Mom while she was at Church. Settled in to watch the NFL Playoffs for the afternoon. For dinner tonight a real favorite of mine, Shrimp and Andouille Sausage Gumbo w/ Sour Dough Mini Boule.

For dessert later Breyer’s Carb Smart Vanilla Bean Ice Cream in a Waffle Bowl topped with Smucker’s Sugar Free Hot Fudge Chocolate Topping. Came across the Keebler Waffle Bowls at Kroger the other day. They’re Waffle Cones shaped into a bowl, you can eat the bowl as your eating the Ice Cream, love these!

A cold morning to start the first day of Winter, but a high around 40 for the afternoon with a little sunshine! Made Mom and Dad Breakfast this morning before they left for Church. Dad rarely gets out anymore, breathing problems and he has trouble walking. So it was good to see they were able to get out. While they were out I gave the Kitchen a good cleaning and other house cleaning. Then an afternoon of some NFL Football. For dinner tonight I prepared a Buffalo Bone in Ribeye Steak w/ Green Beans & Potatoes and Sliced Carrots.

 

 

 

 

I had ordered a Wild Idea Holiday Package of Buffalo, which included 2 – 16 oz. Bone-In Buffalo Ribeye Steaks, And Buffalo Bone In Ribeye Steak 003what a beautiful cut of meat these Ribeye are! It’s about 1 1/2″ thick with just enough of marbling to make it perfect. To prepare it I preheated the oven on 400 degrees. I then rubbed the Ribeye with a light coat of Extra Virgin Olive Oil and then seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. To start I pan fried it, using a Cast Iron Skillet on medium heat about 3 minutes per side. Then I put the Skillet in the oven and roasted it until it had internal temperature of 150 degrees for a medium rare, and it came out perfect. After removing it from the oven I put the Ribeye on a plate and lest it rest for 5 minutes before serving. These Steaks are so moist and tender and with that distinct Wild idea Buffalo flavor. Way to big for one meal, I’ll have the leftover for breakfast or lunch tomorrow. Love that Buffalo!

 

 

 
For one side dish I heated up a can of Del Monte Cut Green Beans and Potatoes. I really like using the Del Monte Cut Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). Then I also heated up some Del Monte Sliced Carrots and baked the remaining Sour Dough Mini Boule Bread. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn, hadn’t had that in a while.

Another cold morning and afternoon around here, 26 degrees with a slight wind chill. Ran a couple of errands for Mom and then stopped by a couple of friends house, Wishing them a Merry Christmas. Back home and did a few odds and ends jobs around the house. For dinner tonight nothing but comfort food, Salmon Patties w/ Mac & Cheese and Sour Dough Mini Boule.

 

 

To make the Salmon Patties I used Kroger Low Fat Saltine Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved a total of 20 calories and 2 full grams of fat. Make cuts where you can, it all adds up.

I had made some Salmon Patties a couple of weeks of ago, and they were so good I’m having them again. I’m using a can of Kroger Brand Pink Salmon, Egg Beater’s, a couple of shakes of Frank’s Hot Sauce, Dried Parsley, and Kroger Low Fat Saltine Crackers. In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Virgin Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. I’m going to have to have these more often, they came out golden brown and delicious!

For one side I heated up a Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. Then I baked the rest of the Sour Dough Bread Mini Boule leftover from last night’s dinner. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Got up early made a light Breakfast and took off for Walmart. Finished off some Christmas shopping and solved my vacuum cleaner problems! In a Wheel Chair little things you need to do can become a challenge, like vacuuming the floor. The cord is a pain when your moving and cleaning. So I finally invested in a Hoover Stand Up Cordless Vacuum. Just charge the battery pack and go! It only weighs about 10 lbs., very mobile, and like I said it’s cordless. I’m letting it charge now and I’ll give it a try tomorrow, Merry Christmas to me! Mom and Dad both still improving, slowly but improving! For dinner tonight I prepared a Fried Walleye w/ Multi – Grain Medley and Boiled Baby Carrots.

 

 

 

 

I had some Walleye that I had purchased from Kroger a couple of weeks ago in the freezer. I laid one fillet in the fridge to thaw overnight. Walleye is such a flavorful and meaty Fish so it doesn’t need much breading, just enough to give it a nice crust. I rinsed the fillets off in water and patted dry with a paper towel. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then dusted them with a light coat of Flour. I panned fried them in Extra Virgin Olive Oil about 3 1/2 minutes per side, to a nice golden brown. Walleye has that wild fresh taste about it, just a naturally delicious Fish.

For one side I prepared a bag of the Minute Whole-Grain Medley. I used this for the first time a while back and it instantly became one of my favorites. It has Brown Rice, Thai Red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! The box contains 4 – 2 Serving Packets and easy to prepare. Combine water and the contents of one bag in medium saucepan and stir. Add oil if desired. Or, if desired, to add more flavor, substitute broth, fruit or vegetable juice for water. Bring to a boil, reduce heat, cover and simmer 10 MINUTES or until water is absorbed. Remove from heat. Fluff with fork and serve! Easy to prepare and makes one excellent side dish. Also this time I added some Sliced Mushrooms too it that just added a perfect addition to the dish. I also had of side of boiled Baby Carrots and a baked Sour Dough Mini Boule. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Chicken ‘n’ Noodles w/ Sliced Carrots and Sour Dough Mini Boule

Still not at full strength after my bout with the flu. Made a light Breakfast and then headed out to Kroger and to run a couple of errands for Mom. Mom’s somewhat better but still not feeling good at all. Dad will be in the hospital another 2-3 days, has some fluid around his lungs that they want cleared up. For dinner tonight I prepared Chicken ‘n’ Noodles w/ Sliced Carrots and a Sour Dough Mini Boule.

I used Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. Another of my favorite Comfort Foods! I used to buy this at Walmart all the time but Margaret Holmes no longer makes it, lack of sales they say. So now I purchase it on-line from different sites, last of their stock. Anyway it comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Perdue Perfect Portions Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right.

I also had of side of boiled Baby Carrots and baked a Sour Dough Mini Boule. This dinner was just what the doctor ordered, Mom had 2 bowls of it! Most she’s had to eat in quite a while! For dessert later a Jello Sugar Free Dark Chocolate Pudding.
