Freeze Leftover Soups………….

Freeze soups after they have been chilled overnight in the fridge. Soups will last up to two months in the freezer. Works great with Chili also!

Soups on…………………..

Soups are easy to make in large batches, and are one of the most freezer-friendly dishes around. So, double up on ingredients, grab a larger pot and make two meals instead of one. Let hot soups cool at room temperature, uncovered for 1 to 1/2 hours — or until almost at room temperature. Cover and refrigerate until cold. Soups can last in the fridge for up to three days. Freeze soups after they have been chilled overnight in the fridge. Soups will last up to two months in the freezer.

Fiesta Pasta Soup
Recipe Ingredients:
3 ounces vermicelli pasta, uncooked
1/2 pound sausage, sliced thin
2 (14.5-ounce) cans chicken broth
1 cup water
1 (10-ounce) can diced tomatoes with green chilies
1 tablespoon fresh cilantro, minced
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1 (14.5-ounce) can Mexi-corn, drained
1 (14.5-ounce) can black beans, drained and rinsed
1 tablespoon lime juice

Cooking Directions:
1 – In kettle, simmer sausage in 1 cup boiling water for 10 minutes.
2 -Drain water, cook meat over medium heat until browned. Cut meat into pieces.
3 – Add broth, tomatoes, and spices to sausage; simmer 10 minutes.
4 – Add pasta, corn, beans; cover and simmer 10 minutes until pasta is cooked.
5 – Stir in lime juice.
6 – Garnish each serving with minced fresh cilantro, sliced avocado and shredded cheddar or Monterey Jack cheese.
Makes 6 servings.

Refrigerate soups, stews and gravy. Skim the fat off the surface before serving. Plus by letting your soup or stew sit in the fridge overnight it will taste even better the next day!

Thicken the stew……………

An easy method of thickening stews, soups, or creamed vegetables is to add a small amount of quick-cooking oats, a grated potato,or some instant potatoes. Never add flour directly, as it will clump. However, you can mix the flour with melted butter and add that mixture to your dish.

Slow Cookers………

Avoid overcrowding when using your slow cooker. For the best results, fill a slow cooker between one-half and two-thirds full. Go ahead and cook big roasts and whole chickens; just make sure you use a large crock and that the lid fits snugly on top. Set it and forget it!
