Today’s Menu: Turkey Tacos




This morning it was about 54 degrees, but I guess that was our high for the day as it’s been dropping ever since. rain on and off and windy, blowing in our winter storm I guess. We’re supposed to get 2″-4″, we’ll see though. Got my tests results back and my sugar looked real good they said as did everything else except for my thyroid, which it was a little off. I just have to adjust my medicine. As most former Cancer patients, you usually have a Thyroid trouble depending on your type of Cancer and treatment. For dinner tonight; it’s Turkey Tacos Night!

For the Turkey I used Jimmy Dean Fully Cooked Turkey Sausage Crumbles. Kroger had the bags on sale so I thought I would give it a try! It comes pre-cooked so all you have to do is heat it up for about 8 minutes. As it was heating I added Sea Salt, Cilantro Flakes, and a 1/2 packet of Old El Paso Low Sodium Taco Seasoning. I really liked this! Great taste and real easy to heat up and use. I’ll buy another bag and keep it in the freezer.





I used Ortega Whole Grain Corn Taco Shells. Their a good size Taco Shell with 110 calories and 12 Net carbs per serving (2 Shells). Then for my other Taco ingredients I used 2 tablespoons of Del Monte Summer Crisp Sweet Corn Kernels, sliced Black Olives, Shredded Lettuce, and Sargento Reduced Fat Mexican 4 Cheese. I topped them with Daisy Reduced Fat Sour Cream and Old El Paso Original Taco Sauce. When building my Tacos I always use the Shredded Lettuce as the first layer. The Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. I love Tacos, easy to make and always delicious! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Stove Top Instructions:

Remove sausage crumbles from package and place in a large skillet.
Heat and stir over MEDIUM heat for 6 to 8 minutes or until hot.
Serve as desired.
Microwave Instructions:

Place ½-cup sausage crumbles into a microwave-safe bowl; cover with plastic wrap.
Microwave on HIGH for 30-40 seconds or until hot. Stir before serving.
Serve as desired.
Once opened, use or freeze within 7 days.

Caution: Always follow preparation directions. For safety reasons, do not heat in packaging, on a plate or in paper products. Do not cover with a paper towel. Varying from these instructions may cause sparking hazards.

Oh as they say the “The Dog Days of Summer” are here! Rolled out to get the paper about 6:30 this morning and it was 73 degrees and humid! Along with the heat this time of year comes the Cicadas. I had read this year for this part of Ohio we are going to be invaded! They were at full force and really loud this morning. For my dinner I prepared a Turkey Sausage (On Bun) w/ Italian Pasta Salad.




I used my favorite Smoked Turkey Sausage Butterball Hardwood Smoked Turkey Sausage. The Butterball Hardwood Smoked Turkey Sausage has an incredible taste! I’ll put this up against any of the rest. I’ve grilled it many times but this time I prepared it in a skillet. I just cooked it on medium heat about 12 minutes, turning it quite often. I served it on a Healthy Life Whole Grain Hot Dog Bun and topped with some French’s Spicy Brown Mustard, a perfect topping for any Sausage or Frank.

For a side dish I kept it light by making an Italian Pasta Salad. A Light and tasty dish that included Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, fresh Shredded Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, and McCormick Grinder Italian Seasoning. Boiled the Pasta according to the box and add all the ingredients and refrigerated. Too Good! For dessert later tonight a bowl of Breyer’s Carb Smart Ice Cream topped with a bit of Smucker’s Sugar Free Hot Fudge Topping.

Whole Grain Penne Rigate and Smoked Turkey Sausage w/ Baked Mozza Parm Bread

I had made a small bowl of Italian Pasta Salad for lunch earlier today and the Pasta tasted so good I made another Pasta dish for dinner, Whole Grain Penne Rigate and Smoked Turkey Sausage w/ Baked Mozza Parm Bread.




To prepare it I used Ronzoni Healthy Harvest Whole Grain Penne Rigate, Eckrich Turkey Smoked Sausage, Bella Vita Low Carb Pasta Sauce (Meat Flavored), fresh Grated Mozzarella Cheese, Sea Salt, and McCormick Grinder Italian Seasoning. Turn the heat to low, and pour 1/2 cup water into the skillet with the Eckrich sausage. To prepare the Sausage just add 2/3 cup of water to a skillet and heat to a boil. Add the Sausage and cover the skillet with a lid and reduce the heat to a simmer. Simmer for 10 minutes until it’s heated through out. While that was cooking I took my Sauce and put that into a medium sauce pan, put the lid on, and heated on low. After the Sausage was done I sliced it into bite size pieces and added to the Pasta Sauce. I then boiled my Pasta by the box instructions. Boiled for 10 minutes and drained the water and added my Sausage and Pasta Sauce to the Pasta. Seasoned everything with Sea Salt and McCormick Grinder Italian Seasoning, mixed well and served topping it with freshly shredded Mozzarella Cheese. Makes a delicious and filling dinner! I love that Smoked Turkey Sausage! To prepare the Mozza Parm Bread just take 2 slices of bread, I used Aunt Millie’s Light Whole Grain Bread, butter both slices, add a light coating of Kraft Shredded Parmesan Cheese and sprinkle with freshly shredded Mozzarella Cheese. Bake at 400 degrees until Cheese has melted and served. For Dessert/Snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.





Eckrich Smoked Turkey Sausage

Fully cooked. Since 1894. Inspected for wholesomeness by US Department of Agriculture. 1/2 the fat than USDA data for pork & beef smoked sausage. (Fat grams reduced from 15 g to 7 g.) Naturally hardwood smoked.

Poultry Ingredients (Turkey, Mechanically Separated Turkey), Water, Corn Syrup, Contains 2% or Less of Dextrose, Flavorings, Modified Food Starch, Autolyzed Yeast, Monosodium Glutamate, Potassium and Sodium Lactate, Salt, Sodium Diacetate, Sodium Nitrite, Sodium Phosphate, Vitamin C (Ascorbic Acid).

Skillet: Bring 2/3 cup water to boil in skillet. Add sausage, cover and reduce heat. Simmer 8 to 10 minutes. Microwave: Place sausage in microwave-safe dish, add 1/2 cup water and cover. Heat on High (100% power) 2 pieces 5 to 6 minutes and 1 piece 3-3/4 to 4-1/4 minutes, or until hot. You may need to adjust the time for your microwave. After opening, use within 7 days. Keep refrigerated.
