Today’s Menu: Slow Cooker Honey Chipotle Chicken Tacos

For Breakfast this morning I heated up the remainder of the Potato and Ham Skillet along with the morning cup of Bigelow Decaf Green Tea. After Breakfast i went to the local Kroger here up the road. Wanted to go early before the rain returned. I didn’t need much but as always I picked up a few extra items. Back home finished up some laundry for Mom. Then later I took everything out of the fridge and gave it a good cleaning. My how time flies when you’re having fun! For Dinner tonight a new Chicken Dish. I prepared Slow Cooker Honey Chipotle Chicken Tacos.

 
The minute I saw this recipe I knew I had to try it! I seen it on Facebook and after checking on the net I found slow-cooker-honey-chipotle-chicken-tacos-001various sites that had it, all basically the same. I’m using the one from the with salt and wit website (http://withsaltandwit.com/). A very good website with a load of great recipes, check it out! To make the dish I’ll need the following; For the Chicken: – 2 pounds skinless and boneless chicken breasts, ⅓ cup honey. For the Honey Chipotle Marinade: – 1½ teaspoons chili powder, 2 teaspoons chipotle in adobo sauce (or ground chipotle powder if gluten-free), 1 tablespoon ground cumin, 1½ teaspoons paprika, 1½ teaspoon garlic salt, 1 teaspoon onion powder, heaping ½ teaspoon ground coriander, and ½ teaspoon pepper. Just by the list of seasonings, you can tell that the Chicken will be packed with flavor!

 
I had the Chicken Breasts in the freezer so I sat them in the fridge and let them thaw overnight. To prepare the dish; slow-cooker-honey-chipotle-chicken-tacos-003Got the Slow Cooker out and lined it with a Slow Cooker Liner, then sprayed it with Pam Cooking Spray. Placed the chicken in the bottom of the Slow Cooker. Then mixed together the Chicken Rub Ingredients. Sprinkled the Rub evenly over the Chicken. Next take the Honey and pour over top the Chicken. Cover and cook on high for 3 – 3½ hours or low for 5-6 hours or until meat is cooked through and easily falls apart. I cooked mine on high for 4 hours. Once the Chicken was cooked, remove it from the slow cooker and shred it with two forks. Then return the shredded chicken back to the slow cooker to absorb the cooking liquid. Taste and seasoned it with salt and pepper.

 
To serve them; I used Old El Paso Flour Tortillas. I wrapped the Tortillas in a paper towel and heated them up in theslow-cooker-honey-chipotle-chicken-tacos-005 microwave, 30 seconds. In the center of each Tortilla, added the Chicken mixture and topped with the other toppings. Toppings I used; Red Cabbage, Kraft 2% Shredded Colby/Jack Cheese, sliced Black Olives, and a light touch of Ortega Smokey Chipotle Taco Sauce. And these Soft Tacos are ready to serve! One huge problem I came across with this recipe, when you shred the Chicken, trying not to eat it as you shred it! The Chicken is incredible, just bursting with flavor! You have all the Spices, with heat from the Chipotle, and then the Honey giving it a sweet taste. Truly a “Keeper Recipe”. So if you love Chicken and Soft Tacos, you have to try this one! For Dessert later a Jello Sugar Free Dark Chocolate Pudding. The original recipe and web link is below.

Slow Cooker Honey Chipotle Chicken Tacos

 

Slow Cooker Honey Chipotle Chicken Tacos are slightly sweet and slightly spicy! The slow cooked chicken is fall apart tender, juicy and full of chipotle and honey! Delicious in tacos or over lettuce for a lighter option!
Serves: 8 servings

Ingredients
2 pounds skinless, boneless chicken breasts
⅓ cup honey
Honey Chipotle Marinade:
1½ teaspoons chili powder
2 teaspoons chipotle in adobo sauce (or ground chipotle powder if gluten-free)
1 tablespoon ground cumin
1½ teaspoons paprika
1½ teaspoon garlic salt
1 teaspoon onion powder
heaping ½ teaspoon ground coriander
½ teaspoon pepper
Garnishes:
8 taco sized corn or flour tortillas
½ cup Pepper Jack cheese, shredded, if desired
Red Cabbage, diced
Avocados, sliced thin
Lime wedges

Instructions

Place chicken in the bottom of a slow-cooker.
Mix together the chicken rub ingredients. Sprinkle evenly over the chicken. Pour honey over top.
Cover and cook on high for 3 – 3½ hours or low for 5-6 hours or until meat is cooked through and easily falls apart.
Once the chicken is cooked, remove from the slow cooker and shred with two forks.
Return the shredded chicken back to the slow cooker to absorb the cooking liquid. Taste and season with salt and pepper, if desired.
You can either char your tortillas by placing over a gas grill until lightly charred or you can wrap them in a paper towel and microwave for 10 seconds.
In the center of each tortilla, add the chicken mixture and top with desired garnishes. Serve immediately.

Today’s Menu: BBQ Pork Shoulder Roast Sandwich w/ Baked Fries

 

 
For Breakfast I had a bowl of Kroger Brand Bran Flakes and the morning cup of Bigelow Decaf Green Tea. After bbq-pork-shoulder-roast-sandwich-w-baked-fries-010Breakfast I did some light house cleaning and then cleaned around the house outside. Everything done I had to go to the bank and back home. At noon I met some friends at the local B – W 3’s for lunch. I met up with my good friend who had the brain surgery earlier this year. He’s still struggling to get the everyday functions going but he’s alive and still trying! Once a week his daughters take him out to eat and they called me up and wanted me to join them. Had a great time with all, so good seeing my buddy out! Back at home settled in for an afternoon of College Football. For dinner I wanted a hot meal that was easy to prepare so I went with BBQ Pork Shoulder Roast Sandwich w/ Baked Fries.

A couple of days ago I tried the Swift Premium Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast , which was so good! Yesterday while at Kroger I picked up a couple more of these Roasts. I put one of them in the freezer and kept one out for tonight’s dinner, with plenty leftover for sandwiches for Lunch.

 

 

 

 
For the BBQ Pork Shoulder Roast Sandwiches I’ll be using Swift Premium Dry Rubbed Carnitas Boneless Petite Pork bbq-pork-shoulder-roast-sandwich-w-baked-fries-005Shoulder Roast again! And preparing it one of my favorite ways, the Slow Cooker. It’s a super easy recipe to make. Start by lining my Slow Cooker with a Reynolds Slow Cooker Liner. Using the liner makes for little or no clean up. Next, removing meat from package. Place the Roast in slow cooker with 1 inch of water in bottom. Cover and cook on HIGH for 4 hours or until fork tender. Then remove from slow cooker and allow to cool slightly. Next shred the meat with two forks, or a pair of Bear Claws which is what I used, in a large bowl and add the BBQ Sauce. You can add the BBQ Sauce now like I did or you can add the Sauce on to your Sandwich instead. I used Jack Daniel’s Honey SmokeHouse BBQ Sauce, you can always use your favorite. I served the sandwich on a Healthy Life Whole Grain Sandwich Bun The Pork comes out incredible! As the other Swift Premium product it came out moist, juicy, and delicious! These products are so easy to prepare and top quality. Another great product to have handy in the frig or freezer. And a special shout out to who ever invented the plastic Crockpot/Slow Cooker Liners! These make the cleanup so easy.

 

Grilled Cheese and Baked Fries 003
To go with the BBQ Pulled Pork sandwiches I baked some Alexia Organic Yukon Select Fries. I seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

 
Swift Premium Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast

Cooking Directions:
Slow Cooker (preferred method):swift-premium-dry-rubbed-carnitas-boneless-petite-pork-shoulder-roast

1 – Remove meat from package.
2 – Place in slow cooker with 1 inch of water in bottom.
3 – Cover and cook on HIGH for 4 hours or until fork tender. Increase cooking time to 6 hours if cooking from frozen.
4 – Remove from slow cooker and allow to cool slightly.
5 – Shred meat with two forks.
Oven:

1 – Preheat oven to 350°F.
2 – Remove meat from package.
3 – Place pan on stove top, add two tablespoons of oil and heat pot briefly on medium-high heat.
4 – When oil is hot, brown the roast on all sides.

6 – Remove from oven and allow to rest for 15 minutes.
7 – Shred meat with two forks.

Passing along a Slow Cooker Salisbury Steak recipe to everyone, Enjoy!

 
Slow Cooker Salisbury Steak
Ingredients
2 pounds lean ground beef, 90/10 or better
1 (1 ounce) envelope Lipton dry onion soup mix
1/2 cup Progresso Italian seasoned bread crumbs
1/4 cup 2% milk
1/4 cup all-purpose flour
2 tablespoons vegetable oil
2 (10.75 ounce) cans condensed low sodium cream of chicken soup
1 (1 ounce) packet dry au jus mix
3/4 cup water

 
Directions
1 – In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, and milk using your hands. Shape into 8 patties.
2 – Heat the oil in a large skillet over medium-high heat. Dredge the patties in flour just to coat, and quickly brown on both sides in the hot skillet. Place browned patties into the slow cooker stacking alternately like a pyramid. In a medium bowl, mix together the cream of chicken soup, au jus mix, and water. Pour over the meat. Cook on the Low setting for 4 or 5 hours, until ground beef is well done.

I had Scrambled Eggs and Toast for Breakfast. I used 2 small Eggs that I scrambled and toasted up 2 slices of Healthy Life Whole Grain Bread that I lightly buttered with I Can’t Believe It’s Not Butter. Also that morning cup of Bigelow Decaf Green Tea. Warm morning and day out to be the last day January, 40’s this morning and a high in the 50’s. Mom went to Church this morning and she left I went to Kroger for her, she only needed a few items. Back home did a load of laundry for Mom and straightened up around the house. For dinner tonight a classic Sunday Dinner, Tavern Style Pot Roast w/ Mashed Potatoes, Baby Carrots, and Cut Italian Green Beans.

It was time for a hearty comfort food dinner, so what better than a Tavern Style Pot Roast w/ Mashed Potatoes, Baby Carrots, Cut Italian Green Beans! Anyway she had a Tavern Style Pot Roast that looked and sounded too good to pass up! So I had to give it a try, and very glad I did! This makes one fine meal and quickly became a family favorite.

I got the Crock Pot and Chuck Roast ready this morning and started the dish. To prepare the dish I used; 1 – 3lb. Chuck Roast, I package of Campbell’s® Tavern Style Pot Roast Slow Cooker Sauce, Bob Evan’s Mashed Potatoes, Allens Cut Italian Green Beans, and 2 cans Kroger Brand Baby Carrots.

 

 

 
Just open the packet Campbell’s® Tavern Style Pot Roast Slow Cooker Sauce, I lined the Slow Cooker with a plastic Tavern Style Pot Roast w Mashed Potatoes and Baby Carrots 004Slow Cooker Liner and spray it with Pam Cooking Spray, add your Roast to the Slow Cooker, pour the Sauce over the Roast, turn on the Slow Cooker, put the lid on it, and as the info commercials say “Set it and forget it”. You’ll be cooking it on low 7 to 8 hours or until beef is fork-tender. (or cook on high 4 to 5 hours.) When done remove the Roast and cut into slices. Simple, easy clean up, and one delicious Roast! The Campbell’s® Tavern Style Pot Roast Slow Cooker Sauce gives it an incredible flavor and richness. You’ll have a new item for your Pantry along with a new “Keeper Recipe” after trying this! Fried Walleye w Cut Roma Beans and Baked Roasted Fingerling Pota 003
I served it with some Bob Evan’s Mashed Potatoes, which I just microwave and serve. Then I also heated up a can of Allens Cut Italian Beans and 2 cans of Kroger Brand Baby Carrots. I was just going to have the Potatoes and Beans but Mom and Dad both wanted some Carrots, so I added the Carrots. Then I also baked some Cornbread for Mom and Dad. Perfect sides for a perfect Roast. For dessert later a slice of Hill and Valley Sugar Free Angel Food Cake.

INGREDIENTS

INSTRUCTIONS

Beautiful morning out there today. Chilly but sunny, we had a high in the 50’s. had a light Breakfast and after my morning workout and a shower I had to get the Pot Roast started in the Slow Cooker. That done I moved on to some house cleaning, dust and vacuum. Then outside I got the leaf blower out, cleaned the deck and the driveway of the last remaining leaves. Still a few left but not many, finally! I was wanting to get the cart out for a spin but the wind had picked up in the afternoon and it was a bit chilly to be on the cart. Tried a new recipe for dinner tonight using Campbell’s® Tavern Style Pot Roast Slow Cooker Sauce. Tonight I prepared Tavern Style Pot Roast w/ Mashed Potatoes and Baby Carrots.

Perfect sides for a perfect Roast. For dessert later a Jello Sugarless Dark Chocolate Mousse.

Today’s Menu: Honey-Garlic Slow Cooker Chicken Thighs w/ Mashed Potatoes, Sugar Snap Peas and Carrots

 
A sunny but coll morning, 40 degrees, to start. But clouds kept rolling in as the day went on. Had a light Breakfast Honey-Garlic Slow Cooker Chicken Thighs 006and my morning workout, then off to Meijer. Mom wanted some Beef Cube Steak and Meijer has the best around. Very lean and tender unlike other places where it’s sometimes tough and stringy. Picked up a few other items while there, I wanted some Jennie – O Sweet Italian Turkey Sausages and the Jennie – O Turkey Breakfast Sausage Links but as usual they were out of stock on them. Puzzling why it’s so tough to find Jennie – O Turkey Products around here! Meijer and Walmart are the only ones to carry multiple items and they aren’t very consistent with keeping it in stock. Anyway back home did some housecleaning inside and out. For dinner tonight a new recipe, Honey-Garlic Slow Cooker Chicken Thighs. Tonight’s it’s Honey-Garlic Slow Cooker Chicken Thighs w/ Mashed Potatoes, Sugar Snap Peas and Carrots.

 

 
Came across this in an email from http://allrecipes.com/ and couldn’t wait to try it! So tonight it’s Honey-Garlic Slow Cooker Chicken Thighs. It’s really an easy recipe to make. I’ll need the following; 4 skinless, boneless Chicken Thighs, 1/2 cup Soy Sauce (reduced sodium), 1/2 cup Hunt’s Ketchup, 1/3 cup Honey, 3 cloves Garlic (minced), and 1 teaspoon Dried Basil.

To prepare it as I said was very easy! To start Lay Chicken Thighs into the bottom of a 4-quart slow cooker. Whisk Soy Sauce, Ketchup, Honey, Garlic, and Basil together in a bowl; pour over the Chicken. Put the lid on the slow cooker and cook on Low for 6 hours. After 6 hours you have some incredible tasting Chicken Thighs! The combination of all 5 ingredients works perfectly with the Chicken. I especially like that hint of Honey flavor.That “Keeper Recipe” collection just keeps growing with this addition to it! Look no further for that next Chicken Recipe.

 

 

 
For one side I made some Bob Evan’s Mashed Potatoes, just microwave for a total of 6 minutes and serve. Then I Honey-Garlic Slow Cooker Chicken Thighs 001also had some Sugar Snap Peas and Carrots. I buy this from the Kroger Produce Department. The Sugar Snap Peas and Carrots come in sealed plastic tray and all you have to do is prepare it the way you want. I pan fried mine in a tablespoon of Extra Virgin Olive Oil. In a medium size skillet just fry on medium heat until vegetables are fork tender. I also baked Multi Grain Baguette Bread. For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

 

 

 

 
Honey-Garlic Slow Cooker Chicken ThighsAll Recipes

INGREDIENTS:
4 skinless, boneless chicken thighs
1/2 cup soy sauce
1/2 cup ketchup
1/3 cup honey
3 cloves garlic, minced
1 teaspoon dried basil
DIRECTIONS:
1.- Lay chicken thighs into the bottom of a 4-quart slow cooker.
2. – Whisk soy sauce, ketchup, honey, garlic, and basil together in a bowl; pour over the chicken.
3. – Cook on Low for 6 hours.
