Today’s Menu: Baked Ham and Swiss Sliders w/ Baked Crinkle Fries

For Breakfast I had a toasted Healthy Life Whole Grain English Muffin, lightly buttered, and a cup of Bigelow Decaf Green Tea. After Breakfast I had to go to the local Kroger and pick up a couple of items for tonight’s Dinner. It’s another hot and humid day out there, so not a lot going on outside. Did a load of laundry and then it was some computer work. Ran the virus checks, deleted some old files and reinstalled a couple of programs. Everything done, kicked back and watched some programs I had recorded. For Dinner tonight I prepared a Family Favorite, Baked Ham and Swiss Sliders w/ Baked Crinkle Fries.

 
I hadn’t had these in quite a while and Mom and Dad had been wanting them so I went with this for tonight’s dinner. To make these delicious sliders I’ll need; Pepperidge Farm Wheat Slider Buns (12 ct.), Boar’s Head Deluxe Ham, Sargento Ultra Thin Swiss Cheese (6 slices divided in half) which is 40 calories and 1 carb per slice (but I’ll only be Baked Ham and Swiss Sliders w Baked Crinkle Fries 001adding a half a slice per sandwich), 4 Tbsp. butter melted (Blue Bonnet Light Stick Butter), 2 tsp. Onion Powder, 1 1/2 tsp. Worchestershire Sauce, 1 1/2 tsp. Ken’s Steak House Lite Poppy Seed Dressing, and 1/2 tsp. French’s Yellow Mustard. This recipe makes 12 servings. I’ve made this before making just 6 of them, cutting the Ingredient amounts in half and it came out perfect. By using Ken’s Steak House Lite Poppy Seed Dressing, Blue Bonnet Light Stick Butter, Ultra Thin Slice of Cheese or by going with low fat, reduced fat, low carb you can end up reducing the fat, calorie and carb count on the recipe. It all adds up!

 

 

 

Baked Ham and Swiss Sliders w Baked Crinkle Fries 005
To start; I preheated the oven at 350 degrees. Then to prepare them I started by placing the bottom half of the bun in a deep baking pan, about 11″ x 14″ pan. Topped the bottom half of the rolls in the pan with Ham Slices and then topped with the Swiss Cheese slices. Placed the top of the rolls on the sandwiches. Mixed together the Butter, Onion Powder, Worcestershire Sauce, Poppyseed Dressing, and Mustard. Then poured the mixture evenly over top the sandwiches. Covered the pan with foil and baked at 350 degrees for 15 minutes. Remove foil and bake an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve. You’ll love these Sliders! Ham and Swiss with the Mustard and Poppy Seed Dressing Mixture is just flat out delicious! Hard to beat these Sliders! Another Parent Approved Recipe, Mom and Dad loved them!

For breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and I reheated a slice of the Cubed Steak leftover from last night’s dinner. Made a great Breakfast Sandwich! Cold and overcast out today, just an overall dreary day. My back is still giving me problems but it is slowly getting better. Stayed busy today cleaning. Helped out with some laundry for Mom and then dusted and vacuumed the house. For dinner tonight it’s a Crab Cake Slider w/ Roasted Finger Potatoes.

I’m using the Kroger Private Selection Maryland Style Crab Cakes. They come frozen and there’s 2 to a box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Nothing beats a fresh made Crab Cake, but these are too good to be frozen! They’re just the right size, about 3.5 ounces each, and full of flavor. Baked them for about 30 minutes and they were done. Served then on a Pepperidge Farm Wheat Slider Buns. Topped them with Louisiana Remoulade Dressing. This makes one delicious Slider! The taste of the Crab Meat and Remoulade Sauce is perfect together! If you want one flavorful Remoulade Sauce you have to try the LOUISIANA Remoulade Dressing. This sauce is incredible and is good on about anything you put it on!

Then I also Baked some Fingerling Potatoes. I actually found some other than Jungle Jim’s Market, found them finally at the Kroger up the road from us! They come in a small bag, Melissa’s Fingerling Potato Medley. It’s a variety of 4-5 different Potatoes including Fingerling Potatoes, which I love using! To prepare them I started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Love those Potatoes! Perfect side dish for any dinner. Later for dessert I had a Healthy Life dark Fudge Swirl Frozen Greek Yogurt.

It’s been a dreary and rainy out today. About 8:00 this morning I went to McDonald’s to get MBaked Ham & Swiss Sliders w Baked Steak Fries 005om and Dad’s Breakfast for them. I was going through the drive – thru and I noticed the car ahead of me the, man in the car got out and looked as though he was counting the cars in line behind us. I got up to the pay window and the server said your meal is paid for. The car ahead of me gave the girl $200 and said just keep paying for the meals until you run out. So thank you to the gentlemen in front of me, a very nice gesture and I hope the nice gesture comes back your way! Ran a couple of errands for Mom and that was about it for my day today. For dinner tonight I prepared Baked Ham & Swiss Sliders w/ Baked Steak Fries.

Another cloudy and cool Spring Day here. It was in the 40’s this morning with a cool breeze blowing. I went out to Egg Beater's Egg Whites OMELET 003get the Morning Papers and my neighbor was out getting his and he said he has the Spring Flu that’s going around the area, a lot of people are down with it. I started my day off with one delicious Breakfast. I prepared a Egg Beater’s Whites Cheese Omelette, used Sargento Reduced Fat Shredded Sharp Cheddar for the filling. Then I also prepared some Eckrich Smoked Turkey breakfast Links, and these were really good and easy to prepare, with 2 slices of Klosterman Wheat Bread and a cup of Bigelow Decaf Green Tea! Really enjoyed this! Helped Mom with some more of her Spring Cleaning most of the afternoon. For dinner tonight, Leftovers! I prepared Honey-Garlic Slow Cooker Chicken Thigh Slider w/ Sugar Snap Peas and Carrots.

Tonight it all leftovers! No way was I going to let any of last night’s dinner go to waste. The Honey-Garlic Slow Cooker Chicken Thighs are just the right size for a Slider. So I warmed up everything in the microwave. For the Slider Bun I used a Kroger Whole Wheat Mini Slider Bun. As good as last night’s meal was, tonight’s was just as good. Everything reheated great. I’ve left last night’s original post that has the prep for everything when made fresh. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

Came across this in an email from http://allrecipes.com/ and couldn’t wait to try it! So tonight it’s Honey-Garlic Slow Cooker Chicken Thighs. It’s really an easy recipe to make. I’ll need the following; 4 skiHoney-Garlic Slow Cooker Chicken Thighs 002nless, boneless Chicken Thighs, 1/2 cup Soy Sauce (reduced sodium), 1/2 cup Hunt’s Ketchup, 1/3 cup Honey, 3 cloves Garlic (minced), and 1 teaspoon Dried Basil.

To prepare it as I said was very easy! To start Lay Chicken Thighs into the bottom of a 4-quart slow cooker. Whisk Soy Sauce, Ketchup, Honey, Garlic, and Basil together in a bowl; pour over the Chicken. Put the lid on the slow cooker and cook on Low for 6 hours. After 6 hours you have some incredible tasting Chicken Thighs! The combination of all 5 ingredients works perfectly with the Chicken. I especially like that hint of Honey flavor.That “Keeper Recipe” collection just keeps growing with this addition to it! Look no further for that next Chicken Recipe.

Then I also had some Sugar Snap Peas and Carrots. I buy this from the Kroger Produce Department. The Sugar Snap Peas and Carrots come in sealed plastic tray and all you have to do is prepare it the way you want. I pan fried mine in a tablespoon of Extra Virgin Olive Oil. In a medium size skillet just fry on medium heat until vegetables are fork tender.

 

 

 

 

 

Honey-Garlic Slow Cooker Chicken Thighs

INGREDIENTS:
4 skinless, boneless chicken thighsAll Recipes
1/2 cup soy sauce
1/2 cup ketchup
1/3 cup honey
3 cloves garlic, minced
1 teaspoon dried basil
DIRECTIONS:
1.- Lay chicken thighs into the bottom of a 4-quart slow cooker.
2. – Whisk soy sauce, ketchup, honey, garlic, and basil together in a bowl; pour over the chicken.
3. – Cook on Low for 6 hours.

Winter is here, I’m here to tell you! Went out to get the morning papers and it was 21 degrees with a wind chill of 15 degrees! Oh where are those beautiful sunny days of Fall. Still no snow but they say there’s a chance overnight and Sunday to get some. Snow is no fun if your an amputee like myself, makes it a bit rough! Stopped by Kroger to pick up a few items for Mom and myself and back home for the day. For dinner tonight another favorite, Crab Cake Slider w/ Baked Fries.

We’re getting a one day break from the humid weather, the humidity returns tomorrow they say though. Ran some errands for Mom and caught up on some things around the house. Dad is doing a lot better it seems, making a slow but sure progress. Fired up the grill for lunch, grilled a Bluegrass Lean Brat. Then for dinner tonight I had a Crab Cake Slider w/ Baked Fries.

I’m using Kroger Private Selection Maryland Style Crab Cakes. They come frozen and there’s 2 to a box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Nothing beats a fresh made Crab Cake, but these are too good to be frozen! They’re just the right size, about 3.5 ounces each, and full of flavor. Baked them for about 30 minutes and they were done. Served then on a Pepperidge Farm Wheat Slider Buns. Topped them with Louisiana Remoulade Dressing and Arugula. This makes one delicious Slider! The taste of the Crab Meat and Remoulade Sauce, then the Peppery taste of the Arugula is perfect together! If you want one flavorful Remoulade Sauce you have to try the LOUISIANA Remoulade Dressing. This sauce is incredible and is good on about anything you put it on!

Another beautiful day out again! We set a record low for the morning, 51 degrees. For Breakfast I got the Goetta out, Glier’s Turkey Goetta. I had a Sunny Side Up Egg, Turkey Goetta, and Whole Wheat Toast. Nice start to any day. Got the cart out and went fishing today. Didn’t catch a whole lot but caught some fantastic Sun all day. For dinner tonight I prepared BBQ Turkey Sliders w/ Jalapeno Cheddar Fried Potatoes.

 

 
If you’re having Sliders they might as well be healthy Sliders. The Jennie – O Turkey is only 120 calories with the Buns being 100 calories. To prepare them I formed the Ground Turkey into Slider Bun size patties. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn with just a pinch of Sage in each. I pan fried them in Canola Oil. Served them on the Pepperidge Farm Wheat Slider Buns and topped with JB’s Fat Boy Sticky Stuff BBQ Sauce. Now this a slider, the Sauce just sets everything off. I could eat a plate full of these.

 

 

Jalapeno Cheddar Fried Potatoes
For a side dish for the Sliders I prepared Jalapeno Cheddar Fried Potatoes. Came across this a while back in an issue of Cuisine at Home Magazine. Made some changes from the original recipe. I used Simply Potatoes Steakhouse Seasoned Diced Potatoes, Canola Oil instead of Peanut Oil, Scallions, 1 Jalapeno (sliced), Sea Salt and Ground Pepper, Sargento Reduced Fat Mexican Style Shredded Cheese, and I also added some diced Red Onion. To prepare it; Add the Canola Oil to a Cast Iron Skillet and heat on medium. Prepare the Diced potatoes according to the package instructions. About midway through the cooking process add the Diced Red Onion and continue cooking. Then Scallions and Jalapeno; saute 2 more minutes, then season with Sea Salt & Pepper. Off the heat sprinkle with the Sargento Reduced Fat Mexican Style Shredded Cheese. And another keeper Potato Dish! This has turned out to be one of my favorite Potato Side Dishes. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

1 -Package Simply Potatoes Steakhouse Seasoned Diced Potatoes
2 T. Canola Oil
1/4 cup chopped Scallions
1 Jalapeno, sliced
1/2 Medium sized Red Onion, diced
Sea Salt & Pepper to taste
1/2 cup Sargento Reduced Fat Mexican Style Shredded Cheese
Directions:

To prepare it; Add the Canola Oil to a Cast Iron Skillet and heat on medium. Add the Potatoes and prepare the Diced potatoes according to the package instructions. About midway through the cooking process add the Diced Red Onion and continue cooking. Then Scallions and Jalapeno; saute 2 more minutes, then season with Sea Salt & Pepper. Off the heat sprinkle with the Sargento Reduced Fat Mexican Style Shredded Cheese.
