Today’s Menu: Baked Salmon Fillets w/ Multi-Grain Medley and Sliced Carrots

 

 

 

I had a Scrambled Egg and a cup of Bigelow Decaf Green Tea for Breakfast. I had to be at the Dentist at 8:45 yesterday morning. I dread going to a Dentist more than anything but I’ve got a bad tooth and later I need more work done. I also had to go back to the family Doctor the day before and he increased my Metformin from 1 to 2 pills daily. So much stress lately he wanted me to increase for 3 months. After that we’ll do the checks again. He thinks that it’s all the stress I’ve been having for my elevated blood work. Another wait and see. For Dinner tonight I prepared Baked Salmon Fillets w/ Multi-Grain Medley and Sliced Carrots.

 


I purchased a package of North Atlantic Salmon from Meijer and had it in the freezer. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.

 

 

 

 


To prepare it; I preheated the oven on 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Lined the Fillet in the pan and baked. I baked it for 8 minutes, and done. Excellent Salmon!

 

 

 

I really enjoy the combo of Rice or Grain and Carrots with Salmon For one side to go with the Salmon I prepared a packet of the Minute Rice – Multi-Grain Medley.First time I’ve prepared this in a while. It has Brown Rice, Thai red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! The box contains 4 – 2 Serving Packets and easy to prepare. Combine water and the contents of one bag in medium saucepan and stir. Add oil if desired. Or, if desired, to add more flavor, substitute broth, fruit or vegetable juice for water. Bring to a boil, reduce heat, cover and simmer 10 MINUTES or until water is absorbed. Remove from heat. Fluff with fork and serve! Easy to prepare and makes one excellent side dish.

 

 

 

I also heated up a can of Del Monte Sliced Carrots. Just empty the contents into a small sauce pan , bring it to a boil, reduce the heat and simmer until heated through. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Baked Salmon Fillets w/ Multi-Grain Medley and Sliced Carrots

 

 

For Breakfast I Scrambled a couple of Eggs, fried 2 Jennie – O Turkey Breakfast Sausage Links, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Good way to start off a cold morning. How cold is it you ask, 18 degrees! Wasted no time going out to grab the morning papers! Partly cloudy and 33 degrees for a high. Cleaned the oven and did some cleaning and straightening up of all the shelves and drawers in the Kitchen. Wish I could afford new cabinets but it’s just not in the budget. For Dinner tonight I prepared Baked Salmon Fillets w/ Multi-Grain Medley and Sliced Carrots.

 

 

I purchased a package of North Atlantic Salmon, there was 2 small Fillets in the package. With the Fillets being small I prepared both of them for Dinner tonight. Today’s Menu: Seasoned Haddock w/ Creamy Parmesan Risotto and Sliced Carrots

 

 

 

For Breakfast this morning I prepared a packet of Pioneer Peppered White Gravy, toasted 2 slices of Healthy Life seasoned-haddock-w-creamy-parmesan-risotto-and-sliced-carrots-006Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After a night of heavy rain and thunder storms, the morning was quiet but a lot cooler. We had a record high of 76 degrees yesterday and a high of 41 degrees today! There goes my Sinuses again!Just as soon as they get adjusted to warm weather, here comes the cool weather back. Cloudy and breezy out. After Lunch I went up to see Dad for a while at the rehab center. Back home took a quick nap and watched some College Basketball. For Dinner tonight its a Seasoned Haddock w/ Creamy Parmesan Risotto and Sliced Carrots.

 
I had purchased 2 Haddock fillets from Kroger the day before. I rinsed both fillets and cut into smaller pieces. I froze Seasoned Haddock w Green Beans and Fried Polenta 002one bag and kept the other one out for my Dinner tonight. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is. These make a great Fish Sandwich also!

For one side dish I made some Creamy Parmesan Risotto. As always I used Lundberg Creamy Parmesan Risotto. Quick, easy, and delicious Risotto dish. Ready in about 25 – 30 minutes.

 

 

 

Chicken ‘n’ Noodles w Sliced Carrots and Whole Grain Bread 003

Then I also heated up a can of Del Monte Sliced carrots. These are so much easier to prepare than boiling fresh Carrots, and they taste just as fresh and good. I also baked a 1/2 loaf of LaBrea Whole Grain Loaf Bread. For dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.

 

 

 

 
Lundberg Creamy Parmesan Risotto

To start my morning off I made a Ham, Cheese, and Egg Breakfast Sandwich and my morning cup of Bigelow Decaf Green Tea. I used Boar’s Head Black Forest Ham, a slice of Sargento Ultra Thin Sharp Cheddar Cheese, Scrambled 1 medium size Egg, and used Healthy Life Whole Grain Bread. After Breakfast I did some cleaning around the house. Then after a light lunch I headed over to spend the afternoon with Dad. My Dad is not looking good at all. I don’t know if he’s going to recover from this, we can only pray and hope. Back home I did some laundry for Mom. So for dinner tonight I prepared a Pan Seared Oven Roasted Skinless Boneless Chicken Breast w/ Red Beans & Rice and Sliced Carrots.

While at Meijer a while back I came across some beautiful huge Chicken Breasts. They were so good the first time around I couldn’t wait to use them again. I prepared them like I did last week, Pan Seared Oven Roasted Skinless Boneless Chicken Breast. To season them I‘ll need McCormick Grinder Sea Salt and Peppercorn Medley along with Litehouse Poultry Herb Blend. I love the Litehouse Poultry Herb Blend it’s a blend of Herbs; Onions, Thyme, Sage, Marjoram, Spring Onions, Garlic, and Rosemary. I had the Chicken in the freezer so I laid it out overnight in the fridge to thaw.

 

 

To prepare; I preheated the oven on 400 degrees and I got my favorite skillet out, the Cast Iron Skillet. Sprayed a Pan Seared Oven Roasted Skinless Boneless Chicken Breast w Red B 001light coat of Pam Cooking Spray w/ Olive Oil on it and added 1 tablespoon of Extra Virgin Olive Oil to it. Heated it on the stove on medium high. I then seasoned the Chicken Breasts with my 3 seasonings. With the skillet and oil heated I added my Chicken. Browned both sides for 3 minutes. Transferred the skillet to the preheated oven. Baked for 15-20 minutes until a 165 internal temperature.

And like the first time I made these, the Chicken Breast came out perfect! Moist and full of flavor. I served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce. The Cast Iron Skillet is perfect to use when starting a dish on the stove and finishing in the oven!

 

 

 

 

Red Beans and Rice
For one side dish I prepared a can of Glory Foods Seasoned New Orleans Style Red Beans and Rice. First time I’ve tried this item and was really pleased! To prepare it just empty the contents into a medium sauce pan. Cover and bring to a boil. Stir and reduce heat. Simmered gently until hot and served. The Beans and Rice were both good with excellent seasoning. Another item for the pantry.

For a second side I heated up a can of Kroger Brand Sliced Carrots, same preparation as the Beans and Rice. i also had a couple of slices of Healthy Life Whole Grain Bread topped with I Can’t Believe It’s Not Butter. For dessert later a Skinny Cow Chocolate Truffle Ice cream Bar.

Not a bad day here in west Chester today, partly sunny and a high in the upper 40’s. I had a doctor’s appointment at 10:30 this morning. My 2 year checkup to make sure my Hip Replacement is doing good on the inside, a couple of x-rays and a physical exam and done. Everything looked great! Then later ran Mom and Dad for a checkup at their Family Doctor. Too many Doctors today! For dinner some Gulf Coast Grouper!, I prepared Blackened Grouper w/ Grain Medley and Sliced Carrots.

 

 

Yesterday some good friends of mine returned from Florida and brought me some Gulf Coast Grouper that they had just caught days before there in Florida. They have a home in Southern Florida along the Gulf Coast and go down quite often. And they usually bring me back some Grouper or Snapper on their return. Thank goodness they love fishing!

They had frozen the Grouper so I left it in the fridge overnight to thaw. To prepare it I rinsed the fillets off in cold water and patting dry and cut it into smaller pieces. I melted a tablespoon of butter, Blue Bonnet Light Stick Butter. I then brushed both sides of the fillets with the Butter and seasoned them with Sea Salt and then with Zatarain’s Blackened Seasoning. Then I got out my favorite skillet, The Cast Iron Skillet. When the pan was fully heated, on medium heat, I added my Grouper. Cooked it about 4 minutes per side, and it was ready for the table! Cast Iron Skillets are perfect to use for any cooking but especially when Blacken something. The Skillet heats up and holds it heat and the heat evenly distributes across the Skillet, perfect for Blackening Meats. This fish turned out so good, hard to describe! Moist and bursting with flavor. Just something about Gulf Seafood. The Zatarain’s Seasonings are perfect for any Seafood.

 
For one side I prepared some Minute Multi Grain Medley. I love the Multi Grain, It has Brown Rice, Thai Red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! Plus it’s only 160 calories and 31 net carbs per serving, which isn’t bad for a Grain Dish. Then I also heated up a small can of Del Mote Sliced Carrots along with a slice of Pillsbury Rustic French Bread, which was leftover from last night’s meal. For dessert later a Healthy Choice dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: White Turkey & Gravy w/ Mashed Potatoes, Sliced Carrots, and Baked Harvest Grain Bread

Beautiful morning out, Sunny and about 57 degrees to start the day! Still a little sore from the tumble I took yesterday. Had a light Breakfast and then off to Meijer. Meijer had some good buys that i seen on-line and in Sunday’s ads in the paper. I’m real glad I went, Meijer now carries a fantastic selection of various Jennie- O Turkey products! Plus they had 20% off on all Jennie – O Products! Stocked up the Turkey Breast Tenderloins and Turkey Breakfast Sausage Links. Love those Sausage Links, 65 calories for two links! I also bought a new Jennie – O Product I had not tried before, Jennie – O White Turkey & Gravy. Dad is better and may be released soon, be nice to have him home. For dinner tonight I prepared the Jennie – O White Turkey & Gravy w/ Mashed Potatoes, Sliced Carrots, and Baked Harvest Grain Bread.

I came across this at Meijer this morning and couldn’t wait to try it, Jennie – O White Turkey & Gravy. Comes in bake-ready foil pan, just bake at 350 degrees for 2.5 – 3 hours (165 degree internal temp.). As all Jennie – O Turkey Products it’s low in calories, only 130 per serving. So I grabbed a small cookie sheet and let it bake. I kept in about 3 hours and it came out piping hot with an incredible aroma. Came out absolutely delicious! The Brown Gravy was well seasoned and delicious while the White Turkey Roast was moist and delicious. Another great item to keep handy in the freezer.

 

 

 

For one side I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. I used the Brown Gravy from the Turkey to top the Mashed Potatoes with. Then i heated up a can of walmart Brand Sliced Carrots. I also baked a loaf of Kroger Private Selection Harvest Grain Loaf Bread. For dessert/snack later some fresh sliced Mozzarella with Ritz Whole Grain Crackers.

Today’s Menu: Blackened Mahi Mahi and Mango Salsa w/ Long Grain and Wild Rice and Sliced Carrots

Back down to 14 degrees this morning with a cold breeze. They say back up to the 50’s tomorrow, I guess we’ll wait and see. My Dad is still in the Hospital, he’s really weak. They’ll be moving him to rehab sometime today though. They told us he’ll be there for a at least a weak, to build his strength back up. Hope to see him home soon! Mom had dinner with Dad tonight so it was dinner for one tonight. I prepared a Blackened Mahi Mahi and Mango Salsa w/ Long Grain and Wild Rice and Sliced Carrots.

 

 

 
I had bought a huge Mahi Mahi Fillet at Kroger a while back and had cut it into 4 smaller fillets and froze them. I laid one of the fillets out in the fridge to thaw overnight. To prepare it I melted a tablespoon of butter, Blue Bonnet Light Stick Butter. I then brushed both sides of the fillet with the Butter and then rubbed the fillet with Zatarain’s Blackened Seasoning. Then I got out my favorite skillet, The Cast Iron Skillet. When the pan was fully heated, on medium heat, I added my Mahi Mahi Fillet. Cooked it about 4 minutes per side, and it was ready for the table! It’s just so good, hard to describe! Moist and bursting with flavor. The Zatarain’s Seasonings are perfect for any Fish.

 

 

 
Mahi Mahi always seems to go good with fruits like Mano and Pineapple so I also prepared a Mango salsa to top it with. To prepare it I heated 2 tablespoons of Extra Virgin Olive Oil in a skillet over medium heat. Then stirred in 1 1/2 tablespoons of Splenda Brown Sugar; and cooked it until the Sugar dissolves, about 1 minute or so. I then added a bag of Dole Chef Cuts Mango and Pineapple, Cilantro, and Red Wine. Simmered that until hot, about 3-5 minutes. transferred to a bowl when done. A perfect Salsa to go with Mahi Mahi.

 

 

 
Then for 1 side dish I prepared a bag of Uncle Ben’s Long Grain and Wild Ready Rice, just microwave and serve. Then I heated up a small can of Sliced carrots along with a slice of Klosterman Wheat Bread. Then for dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Today’s Menu: Fried Walleye w/ Steakhouse Seasoned Diced Potatoes, Sliced Carrots, and French Bread

 

 

 

Well their saying we could get our first measurable snow fall of the season! Yes, they said that magic four letter word “Snow”! Myself I enjoy it and go on as normal but with a lot of the people in this area it puts them in panic mode! A friend of mine that works at Kroger already called me earlier and said that panic has already set in. There’s been lines all day at the check-outs, he said that people were buying items like they were going to be stranded for weeks! This area is so funny! Anyway I prepared Fried Walleye w/ Steakhouse Seasoned Diced Potatoes, Sliced Carrots, and French Bread.

I had a couple of Walleye Fillets in the freezer that I laid in the fridge to thaw overnight. I had purchased them from Costco a couple of weeks back. We had some already and they were incredible! I rinsed them off in cold water and patted dry with paper towel. Seasoned them with Sea Salt and Ground Black Pepper. Put them in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till all fillets were well coated. I then fried them in Canola Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Along with Crappie their my favorite Fresh Water Fish to eat.

 

 

 

For one side dish I prepared some of Simply Potatoes Steakhouse Seasoned Diced Potatoes. These are a perfect Potato Dish for any Seafood. They come Seasoned, just heat in a skillet about 10-12 minutes until heated through. I also heated up a can of Walmart Brand Sliced Carrots along with a slice of Pillsbury Rustic French Bread. For dessert later tonight a bowl of Del Monte No Sugar Added Peach Chunks.
