Always marinate skirt or flank steaks

Steaks from the plate, like skirt or flank steak, are excellent choices for the grill and they’re available at budget prices. But, you always want to marinate them first. These steaks are filled with tough muscle fibers that break down nicely when they encounter the acidic ingredients in a marinade.

Old-Fashioned Meatloaf
Mushrooms, garlic and oats sneak some extra nutrients into this hearty and easy meatloaf. Serve with sweet potatoes and your favorite green vegetables for a super-satisfying comfort food dinner………………………………..

Chipotle Skirt Steak Tacos with Smoky Tomatillo Salsa
Here’s a pro tip from chef Rick Bayless, who shared this skirt steak taco recipe: puree a can of chipotles in adobo sauce and keep it in your fridge. Adobo is a vinegary tomato sauce, so along with the chipotles (smoked jalapeños), it becomes an all-purpose marinade that’s spicy, smoky and salty, all in one. In this recipe you brush it on the steak before grilling but Bayless also does the same move on eggplant, chicken and fish. And having the sauce on hand means you’re ready to whip up this easy grilled dinner at a moment’s notice……………………..

Grilled Beef and Vegetable Kebabs
These easy grilled beef & vegetable kebabs are not only delicious–they’re economical too. Tri-tip is an inexpensive and flavorful cut of beef that takes beautifully to cooking over an open flame. Thread it onto skewers with colorful veggies and marinate for up to eight hours before cooking on the grill or over your campfire. Either way, it’s a healthy and tasty summer meal………………………

Cilantro and Lime Skirt Steak Pita Bread 009

Today’s Menu: Cilantro Lime Buffalo Skirt Steak Pita Bread Wrap w/ Long Grain and Wild Rice

Dreary and rainy day today, and turning cooler! A while back I had ordered a 16 oz. Cilantro Lime Skirt Steak from Wild Idea Buffalo and I’ve finally got around to prepare it. For dinner tonight a Cilantro Lime Buffalo Skirt Steak Pita Bread Wrap w/ Long Grain and Wild Rice.

Cilantro and Lime Skirt Steak Pita Bread 002
First time I’ve used the Wild Idea Buffalo Cilantro Lime Skirt Steak. It’s a 16 oz. Skirt Steak and it comes marinated in a Cilantro Lime Marinade that’s made up with Tomatillo, Lime Juice, Cilantro, Garlic, Olive Oil, Salt, Cumin, Cardamon, Cayenne Pepper, and Black Pepper. Which all combines into one fine Marinade. it was sliced thin into several pieces. I pan fried it in Extar Virgin Olive Oil and seasoned with a couple of shakes of Sea Salt and Ground Black Pepper. Being cut so thin it fried up really quick, about 2 or 3 minutes per side. It really browned up nice and the flavor was incredible! The Marinade is a perfect one from Wild Idea Buffalo. After it was done I then sliced it into thin strips for the Pita Bread.

Cilantro and Lime Skirt Steak Pita Bread 008
I used Joseph’s Flax Oat Bran and Whole Wheat Pita Bread, my favorite by far with 60 calories and 4 net carbs. To assemble, besides my Cilantro and Lime Skirt Steak, I used Shredded Lettuce, fresh grated Monterey Jack Cheese, Sliced Black Olives, and a Freestone Peach and Mango Salsa. The Salsa was a Kroger Brand Private Selection, 20 calories and 4 carbs. Layered everything on the Pita Bread, which I folded into a Wrap. To go with the Wrap I heated a bag of Uncle Ben’s Long Grain and Wild Ready Rice. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

“Two thumbs up on the Cilantro Lime Skirt Steaks! I am happy to report you have another winner on your hands,” Kim Eslinger, editor of Mill City Times. A real fiesta of flavors. The cilantro lime skirt steak is perfect for grilling up some buffalo fajitas, or equally delicious on its own. Ole! 1 lb.

Buffalo Fajitas

By: Jill O’Brien

Serves 4
A great version of this TexMex favorite. This fajitas recipe is fun, easy, and will be a sure hit with the family. Its super quick to prepare and it will be sure to please.

INGREDIENTS:
FOR FAJITAS:

1 pound Buffalo Skirt or Flank Steak, rinsed and patted dry
1 tablespoon olive oil
1 large sweet onion, cut into strips
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
8 flour tortillas, warmed (best warmed over grill fire)
FOR MARINADE:

1 Anaheim chili, roasted and peeled
1 tablespoon garlic, chopped
2 tomatillos, quartered
¼ cup fresh cilantro, packed
½ teaspoon cumin
½ teaspoon cardamom
1 teaspoon salt
½ cup fresh lime juice, (2 limes)
2 teaspoons olive oil
*Optional: If you like more of a smoky tomato flavored fajita, add 2 chipotle peppers in adobo sauce to marinade ingredients. I like to do half with and half without. Nice contrast in taste and color!

PREPARATON:

Mix all ingredients in blender.
Place Buffalo steak and marinade in large zip lock bag. Massage marinade into meat. Refrigerate overnight.
Let meat rest on counter for 2 hours before cooking.
Heat cast iron skillet to medium high heat.
Remove steak from marinade and shake off excess over sink.
Place steak in hot skillet and sear for 2 minutes on each side.
Remove steak and place on cutting board, and cover tightly with foil. Let rest, while sautéing vegetables.
Add olive oil to pan and then vegetables. Sauté vegetables until lightly browned, stirring occasionally.
Remove pan from heat.
Slice seared steak into thin slices, against the grain.
Serve with warmed tortillas and pass with desired condiments.
