Today’s Menu: Fried Okeechobee Crappie w/ Hash Browns and Sliced Carrots

A fairly nice day out today. The flowers and trees are really starting to come out now. The harsh Winter took its toll though on a lot plants here in the neighborhood. Woke up hungry and wanting some Turkey Goetta. Started frying some up and my Mom caught a whiff of them and she wanted some too. Good way to start the day with a little Goetta! For dinner tonight I prepared, Fried Okeechobee Crappie w/ Hash Browns and Sliced Carrots.

 

 

 
My Mom’s cousin and her husband brought me my annual supply of Okeechobee Crappie, or Specks as they call them in Florida! I laid a bag out in the fridge overnight to thaw. I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side.As always they came out Golden Brown and delicious! Oh my I can’t even describe how much I love eating Crappie.

I had been wanting some Hash Browns, so Potatoes are perfect with Fish and Hash Browns it is! I almost always use Simply potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Then I also heated up a small can of Walmart Brand Sliced Carrots along with a slice of Klosterman Wheat Bread. For dessert later something new, Fiber One 90 Calorie Chocolate Fudge Brownies. Tried these the other day and really like them. Good Chocolate Flavor, moist, and their only 90 calories 12 net carbs per serving (1 Brownie).

Breakfast – Turkey and Potato Hash w/ Sunny Side Up Egg

A beautiful sunny morning out this morning! Went out and grabbed the morning papers and came back in and prepared a Hearty and Turkey Potato Hash Egg 004Healthy Breakfast, Turkey and Potato Hash w/ Sunny Side Up Egg and a fresh brewed cup of Green Tea!

 
For the Hash I used some of the leftover Turkey Breast from dinner the other night. Reseasoned it a bit and fork shredded it. Using a small skillet, sprayed it with Pam Spray and added 1 tablespoon of Canola Oil and heated it on medium heat. When the Oil had heated up I added some Simply potatoes Hash Browns, seasoned them with Sea salt, Ground Black Pepper, and Parsley Flakes. As the Potatoes were frying in another skillet I fried one Egg Sunny Side Up. Then as the potatoes were almost done I added the shredded Turkey Breast. As the Hash finished I topped it my Sunny Side Up Egg. Breakfast was served! I also had 2 slices of Toast, a fresh brewed cup of Bigelow Green Tea. One great way to start the day!

Today’s Menu: Fried Walleye w/ Steakhouse Seasoned Diced Potatoes, Sliced Carrots, and French Bread

 

 

 

Well their saying we could get our first measurable snow fall of the season! Yes, they said that magic four letter word “Snow”! Myself I enjoy it and go on as normal but with a lot of the people in this area it puts them in panic mode! A friend of mine that works at Kroger already called me earlier and said that panic has already set in. There’s been lines all day at the check-outs, he said that people were buying items like they were going to be stranded for weeks! This area is so funny! Anyway I prepared Fried Walleye w/ Steakhouse Seasoned Diced Potatoes, Sliced Carrots, and French Bread.

I had a couple of Walleye Fillets in the freezer that I laid in the fridge to thaw overnight. I had purchased them from Costco a couple of weeks back. We had some already and they were incredible! I rinsed them off in cold water and patted dry with paper towel. Seasoned them with Sea Salt and Ground Black Pepper. Put them in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till all fillets were well coated. I then fried them in Canola Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Along with Crappie their my favorite Fresh Water Fish to eat.

 

 

 

For one side dish I prepared some of Simply Potatoes Steakhouse Seasoned Diced Potatoes. These are a perfect Potato Dish for any Seafood. They come Seasoned, just heat in a skillet about 10-12 minutes until heated through. I also heated up a can of Walmart Brand Sliced Carrots along with a slice of Pillsbury Rustic French Bread. For dessert later tonight a bowl of Del Monte No Sugar Added Peach Chunks.
