Today’s Menu: Egg Sandwich and Hash Browns

 

 

Just had a cup of Bigelow Decaf Green Tea for Breakfast this morning. Didn’t get a lot of sleep again due to the Sinus Infection. My left ear started swelling up so I had to go back to the Family Doctor. I have infected inner ear, and it is extremely painful! They have me on 3 prescriptions and if it swells anymore I have to go to the hospital for treatment, trying to avoid that! It does feel somewhat better and the swelling isn’t quite as bad. I still have very limited hearing in my right ear though. I go back to the Doctor’s on Monday to see if I need further work done on it at the hospital. For Dinner tonight I made a Fried Egg Sandwich along with some Hash Browns.

 

Wanted something Light, Easy to Chew, and a hot meal tonight. So I made an Egg Sandwich. I haven’t made these in years! To make it all I’ll need is 2 Eggs, Salt and Pepper, a slice of Kraft Sharp Cheddar, a bit of Blue Bonnet Light Butter, and 2 slices of Aunt Millie’s Light Whole Grain Bread. Just get a mixing cup or coffee cup and crack open both Eggs into it. Season it with the Salt and Pepper and whisk it all together.

 

 

 

Heat a small skillet on medium heat, I sprayed it with Pam Cooking Spray. I added the Butter, and when heated added the Egg Mixture. Fry it till the bottom browns and flip it. I then added my slice of Cheese on top of it. Cook until dome, and it’s ready! You can toast the Bread if you like, I didn’t toast mine.

 

 

 

 

To go with my Egg Sandwich I prepared some Simply Potatoes Shredded Hash Browns. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink. Hopefully I can a full night’s sleep tonight and feeling better tomorrow.

Today’s Menu: Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with some Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green. It’s another beautiful morning out there, 60 degrees and sunny. For the day it was 78 degrees and sunny for the day. After Breakfast I got the cart out, along with hedge clippers and leaf blower. Yard work today. Trimmed the bushes around the side and back. Also had to trim the vines along the driveway, the vines grow way too fast! Everything done I took a ride around the neighborhood and enjoyed the day. For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.

 

Nothing like a hearty, healthy, and delicious Breakfast for Dinner too! I’ll need one Egg, Simply Potatoes Shredded Hash Browns, a couple of Jennie – O Turkey Breakfast Sausage Links, and 2 slices of Aunt Millie’s Light Whole Grain Bread.

 

 

 

 

Simply Potatoes Hash Browns

So I got out a couple of small skillets and got the toaster fired up. Heated up both skillets, sprayed with Pam Cooking Spray in both and added Extra Light Olive Oil to one of them. In the skillet with no oil I started to fry the Jennie – O Turkey Sausage Links and the skillet with Oil, I prepared the Simply Potatoes Hash Browns. When both were cooked I put each one into separate bowls and set aside.

 

 

 

Then I started toasting the Bread. Next in the skillet that had the Hashbrowns I fried my Egg. Seasoning the Egg with Morton’s Lite Salt and Ground Black Pepper. When the Toast was done I buttered both slices with I Can’t Believe It’s Not Butter. As the Egg was ready I grabbed a plate and plated everything! And what a Breakfast Dinner! Eggs, Hash Browns, Turkey Sausage, and Toast. To drink I had a glass of Kroger Brand CarbMaster Chocolate Milk, I love this stuff! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and diet Peach Snapple to drink.

Today’s Menu: Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta

 

 

Woke up hungry so I wanted a good Breakfast. So I prepared; toasted a slice of Aunt Millie’s Light Whole Grain Bread (lightly buttered), made some Hash Browns using Simply Potatoes Shredded Hash Browns, and finally fried up some Gliers’s Turkey Goetta! Also had the morning cup of Bigelow Decaf Green Tea. I love that Turkey Goetta! Same old with our weather. Hot, humid , and rain on and off. After Breakfast I went Kroger for a few items for Mom and then stopped by McDonald’s to pick up Breakfast for them. After Lunch I went to the hospital to see a friend of mine, he’s waiting to have heart surgery. He’s got a couple of blockages that have clean out. Back home just did a few things around the house. For dinner tonight I prepared Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta.

 

 

To make the dish I’ll need; 1 Box Betty Crocker Crispy Cheddar Bacon Chicken – Chicken Helper and 2 Perdue Perfect Portions Chicken Breasts.

 

 

 

 

 

 

I’ve always enjoyed the Betty Crocker Crispy Cheddar Bacon Chicken – Chicken Helper. I’ve tried a few of them now but this is my favorite by far. But like most items as it seems I can’t find it anywhere in my are so I have to order it online. Anyway this really turns out delicious and an easy meal to prepare! The Rotini and Cheese Sauce is excellent and the Seasoned Crumb Coating with Natural Bacon Flavor for the Chicken is one of the better Crumb Coatings I’ve had for Chicken. To prepare it first go ahead and make the Pasta, by the box directions. Just boil, stir, and season.

 

As the Pasta was cooking I prepared the Chicken, I used Perdue Perfect Portions Chicken Breasts. I cut each Breast into 3 pieces. Coated each piece with the provided Seasoned Crumbs and fried until done. The full instructions are at the end of the post. The Chicken Helper box contains Rotini Pasta with Naturally Flavored Cheesy Sauce Mix and Seasoned Crumb Coating with Natural Bacon Flavor. I added the Chicken, Water, 2% Milk, Extra Light Olive Oil, Sea Salt and Pepper.

 

 

 

 

It all comes together for one easily made and delicious dinner. I also baked a loaf of La Brea Multi Grain Bread and a Diet Peach Snapple to drink. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

 

 

 

Betty Crocker Crispy Cheddar Bacon Chicken – Chicken Helper
* Rotini pasta with naturally flavored cheesy sauce mix and seasoned crumb coating with natural bacon flavor

Chicken Helper
* Add chicken

Directions
For Pasta:
You Will Need: 1-1/2 cups water, 1/2 cup milk, 2 tbsp butter. For Chicken You Will Need: 1 lb uncooked boneless skinless chicken breasts, 1 tbsp milk, 2 tbsp butter, 2 tbsp vegetable oil. Success Tips: Start with completely thawed chicken. Adjust heat setting, cook times and amount of oil as needed. Pasta: 1 – Stir water, 1/2 cup milk, butter, sauce mix and pasta in 2-quart nonstick sauce pan. Heat just to boiling, stirring frequently. Reduce heat. Simmer uncovered about 17 minutes, stirring frequently, until pasta is tender. Meanwhile, continue with step 2.

Chicken:
2 – Cut each chicken breast into 3 to 5 slices, holding knife at an angle. (Slices should be about 1/2 inch thick). 3 – Coat, Place chicken in medium bowl. Add 1 tbsp milk to moisten. Add seasoned crumbs to coat chicken. 4 – Brown, Heat butter and oil in 10-inch nonstick skillet over medium heat until butter is melted. Carefully add chicken to hot butter and oil; cook 4 to 6 minutes or until golden brown. Reduce heat to medium-low. Turn chicken; cook 4 to 6 minutes longer or until golden brown and centers are no longer pink (165 degrees F). Serve with potatoes. Refrigerate leftovers. Add Your Own Twist: Stir 1/2 cup cooked broccoli or shredded cheddar cheese into the finished pasta. If you want a bit of crunch, top with 1/3 cup crushed garlic croutons!

Today’s Menu: Bison Chopped Sirloin Steak w/ Hash Browns and Cut Green Beans

 

 

 

For Breakfast this morning I prepared Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. Mom went to Church and I stayed home and did a few things around the house. Mom had some Homemade Chili Soup in the freezer she had prepared and froze. It’d Dad’s favorite so I grabbed a container and heated it up for Dad’s Dinner tonight. I took over to the rehab unit about 5:00 to him. Mom had some to and had Dinner over there with him. For my Dinner I prepared a Bison Chopped Sirloin Steak w/ Hash Browns and Cut Green Beans.

 
To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steak. I cooked each side 4 minutes.Then finished it in the oven, at 400 degrees for 5 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These have an excellent taste to them and cook up beautifully, another very good item from SayersBrook Ranch! I topped the Chopped Steak with some A-1 Sauce Thick/Hardy. Also cooked up some Sauteed Mushrooms.

 

 

As the Chopped Steak was cooking I heated up another skillet for my Hash Browns. Sprayed the skillet with Pam Cooking Spray and added a tablespoon of Olive Oil, I use Berolli Extra Light Olive Oil. With the skillet heated I fried up the Simply Potatoes Hash Browns. Seasoned them with Sea Salt and Ground Black Pepper. I love all the Simply Potatoes products! I topped these with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

 

 

 

 

 

For another side I heated a can of Del Monte Cut Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! Love these Bison Chopped Steaks from SayersBrook! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Elk Steak (8 oz.) w/ Hash Browns and Southern Style Blackeye Peas

 

 

 

For Breakfast this morning I Scrambled a couple of Eggs, toasted 2 slices of Healthy Life Whole Grain Bread (Lightly buttered w/ I Can’t Believe It’s Not Butter), and the morning cup of Bigelow Decaf Green Tea. Some rain overnight and an early morning passing shower outside. A bit warmer out today, 83 degrees. Had the outsides, deck, and driveway power washed so that’s out of the way. My cousin is going to repaint our deck for us, hopefully within a week. With that done everything is looking good outside! Lot of work and money to keep everything up. Cleaned the house today, vacuum and dusted. Full day today. For Dinner something new, Elk Sirloin Steak. I prepared a SayersBrook – Elk Strip Loin 8 oz. w/ Hash Browns and Blackeye Peas.

 

 

 

It’s my first time preparing an Elk Steak. Elk cooks quickly like Buffalo. Elk is so lean that it is more prone to overcooking and drying out than beef or chicken. The key to cooking Elk well is to either cook it hot and fast, or low and slow. I’m going low and slow with it.

 

 

 

 

 

 

I preheated the oven to 350°F. Then I grabbed a Cast Iron Skillet which I love using. You can take it from stove right into the oven and it holds heat evenly. I first pat the Steak dry with paper towel. Next heated 1 tablespoon Extra Light Olive Oil in Cast Iron Skillet on medium heat. I then seared tenderloins on both sides. From the stove to the preheated oven. Continued cooking it to around 135 to 130 F, medium rare.

 

 

 

 

 

It cooked up beautifully! Nice browning on the outside and slightly pink and juicy on the inside. The Elk has a fantastic flavor to it and very tender! I served it with a side of A-1 Thick and Hearty. Next I’ll be trying a Wild Boar Sirloin. I have a nice assortment of Steak now; Buffalo, Elk, and Wild Boar to choose from.

 

 

 

 

 

 

 

For one side dish I prepared some Simply Potatoes Shredded Hash Browns. Fried in Extra Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish.

 

 

 

The for another side dish I heated up a can of Margaret Holmes Seasoned Blackeye Peas. Haven’t had these in a while and they sounded good! If you are a fan of Blackeye Peas, like myself, you’ll love these! Just emptied the Peas into a small saucepan, covered, and heated to a boil. Reduced the heat, stirred. Simmer until ready to serve. Nice size Peas and Seasoned just right! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

The taste is similar to beef but with more flavor. It does not taste gamey. Substitute elk meat in any recipe calling for beef. Do not over cook elk meat. Because of it’s low fat content, elk cooks quickly and if overdone it will be dry and tough. Burgers, steaks and roasts should be pink in the center.

Today’s Menu: Fried Walleye w/ Hash Browns and Cut Green Beans

 

 

For Breakfast this morning I toasted a couple of slices of Healthy Life Whole Grain Bread and Scrambled a couple of Eggs. Also had my morning cup of Bigelow Decaf Green Tea. Outside we have rain showers, cloudy, and a high in the 40’s. I had planned to do some things around the house then go to see Dad but late yesterday I was making a pot of the Bear Creek Creamy Potato Soup and as I was ladling it out into a plastic container, the container started to turnover. I stopped it from turning over but the ladle was full and went on to my left thumb area. I burned my thumb pretty good. I went to the Emergency Care this morning to get it checked out. They said I did burn it pretty bad but I had done everything right to prevent infection and such. So spent most of the day relaxing with my left hand elevated. Anyway for Dinner tonight I prepared Fried Walleye w/ Hash Browns and Cut Green Beans.

 

I had purchased a of large Walleye Fillet at Kroger Wednesday. Cleaned it and sliced into 6 pieces. I froze 3 pieces and kept the other 3 out for my Dinner tonight. I love Walleye we had not had some in a while now, so couldn’t wait to have these. I rinsed them off in cold water and patted them dry with a paper towel. Seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Light Olive Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor. Along with Crappie their my favorite Fresh Water Fish to eat.

Today’s Menu: Fried Walleye w/ Hash Browns and Cut Green Beans

 

 
No Breakfast this morning as I had to fast since 11:00 last night. I had to be at the Hospital at 7:00 this morning for fried-walleye-hash-browns-cut-green-beans-007my yearly scans for my Cancer Checkup. I still see the Oncologist twice a year and go for the scans once a year. I’ve been having the scans for a lot of years and they have always come back clean, Cancer Free, but it’s still always a worrisome and nervous time until I hear that I’m still Cancer Free. I go next Monday to the Oncologist so I’ll hear the results then. Always hoping and praying for the best! About Noon I had a light lunch of some Campbell’s Chicken Noodle Soup. Took it easy the rest of the day and caught up on some programs I had recorded. For Dinner tonight, Fried Walleye w/ Hash Browns and Cut Green Beans.

Today’s Menu: Bison Chopped Sirloin Steak w/ Hash Browns and Cut Italian Green Beans

I just had a cup of Bigelow Decaf Green Tea for Breakfast. I then started a load of laundry and then it was off to the markets. Today is grocery day. Meijer and then Kroger. Meijer has several good buys going on starting today. After Meijer it was on to Kroger for a few items for Mom. Nice Fall day out there. Mostly Sunny and 71 degrees. Back home we have 3 smoke alerts and I changed the batteries in all 3. Everything done so I got the cart out and took a spin around the neighborhood, really nice out! Anyway for Dinner tonight I prepared a Bison Chopped Sirloin Steak w/ Hash Browns and Cut Italian Green Beans.

 
I had this for the first time a few weeks ago and couldn’t wait any longer to have it again, Bison Chopped Sirloin sayersbrookSteak! I had ordered from SayersBrook Bison Ranch along with a few other items. They are nice size patties at 8 oz. each. They come in packs of 2, I prepared both 1 for dinner and cut the other one in half and had a couple of Lunches out of it.

 
I preheated the oven on 400 degrees. To prepare them I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, andchopped-bison-sirloin-ital-bns-mash-pot-004 McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare these. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Virgin Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steaks. I cooked each side 4 minutes.Then finished it in the oven, at 400 degrees for 5 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These have an excellent taste to them, another very good item from SayersBrook Ranch! I topped the Chopped Steak with some Sauteed Mushrooms and had a side of A-1 Sauce Thick/Hardy for dipping.

As the Chopped Steak was cooking I heated up another skillet for my Hash Browns. Sprayed the skillet with Pam Cooking Spray and added a tablespoon of Olive Oil, I use Berolli Extra Light Olive Oil. With the skillet heated I fried up the Simply Potatoes Hash Browns. Seasoned them with Sea Salt and Ground Black Pepper. I love all the Simply Potatoes products! I topped these with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

Then I also heated up a can of Allens Cut Italian Green Beans and had a slice of Healthy Life Whole Grain Bread lightly buttered with I Can’t Believe It’s Not Butter. Then for dessert later I had a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Light.

Today’s Menu: Buffalo Steak, Scrambled Eggs, and Hash Browns

 

 
For Breakfast this morning I made a bowl of Kroger Brand Instant Grits (Butter Flavor) and toasted a couple of slicesbuffalo-steak-scrambled-eggs-and-hash-browns-009 of Healthy Life Whole Grain Bread, buttered with I Can’t Believe It’s Not Butter. Also had that every morning cup of Bigelow Decaf Green Tea and also a glass of Kroger Brand Carb Master Chocolate Milk. Sunny, 88 degrees, and low humidity outside today.After Breakfast, as I do every Tuesday morning, I go around 4 of neighbors and take their trash bins from the street back up to their house for them. It’s not a lot but its a little something I can do for my neighbors that are always there when I need help with things. Being in a wheelchair its a lot off your mind when you can rely on neighbors to help you from time to time to get things done around the house. Got a couple of things done around the house and then got the cart out for a while and rode around the neighborhood. For dinner tonight its Breakfast! I prepared Buffalo Steak, Scrambled Eggs,Hash Browns, and Toast.

I was going to have this yesterday but I wanted to try the Swift Premium Boneless Ribs, which I loved. For this Breakfast/Dinner I’ll be using; Wild Idea Buffalo – 5 oz. Petite Top Sirloin Steak, 2 medium size Eggs, Simply Potatoes Shredded Hash Browns, Healthy Life Whole Grain Bread, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and A-1 Sauce Thick and Hearty.

As I said I’ll be using the Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a 1/2 teaspoon of Extra Virgin Olive Oil. Then seasoned it with McCormick’s Grinder Sea Salt and Peppercorn Medley. I then preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So tender, juicy, and the best flavor of any Steak. I topped the Steak with a bit of A-1 Sauce Thick and Hearty.

As both the Steak and Hash Browns were finishing I then made the Scrambled Eggs. As soon as the Hash Browns were done I removed them from the skillet and used this skillet for my Eggs. I used 2 Medium Size Eggs; also Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Sea Salt, and Ground Black Pepper. To prepare them In a small bowl, whisked the Eggs and add just a splash of water. Added the Eggs, to the all ready heated skillet and cooked. Flipped the Eggs a couple of times and turned the heat off and finished the Eggs. When done I sprinkled the Scramble with some of the Sargento Cheese.

Finally just as the Scrambled Eggs were finishing I toasted 2 slices of Healthy Life Whole Grain Bread. I buttered the slices with I Can’t Believe It’s Not Butter. I had a glass of the carb Master Chocolate Milk to drink. I’ve been having the Carb Master Chocolate Drink for a while now. Tastes incredible and its only 80 calories, 7 net carbs, and 11 grams of protein. For Dessert later a bowl of Dole Sliced Peaches. Nothing like a good Breakfast, for Dinner!

Today’s Menu: Bob Evan’s Sausage Patty Burger w/ Hash Browns

For Breakfast toasted a couple Eggo Waffles and a cup of Bigelow Decaf Green Tea. After Breakfast I went to the local Kroger for a few items and stopped by McDonald’s to pick up Breakfast for Mom and Dad. Back home got the leaf blower out and cleaned on and around the deck and driveway areas. Did a load of laundry and I’m done for the day and ready for an afternoon of NFL Football! For Dinner tonight it’s a Bob Evan’s Sausage Patty Burger w/ Hash Browns.

I used Bob Evan’s Sausage Patties for my burger. I enjoy these but they are very difficult to find. Anymore we can only find them at Jungle Jim’s and they sell out of them as quick as they get them. They are a Pork Sausage Patty and they come 6 to a box (1 lb.box).

They fry up real easy. Just add them to a cold skillet and fry 7 minutes per side. After flipping the patty I added a slice of Kraft Sharp Cheddar. Excellent taste, as all Bob Evan’s products, and only 140 calories per patty. I served it on a Healthy Life Whole Grain Hamburger Bun. Topped it with the Kraft Cheese and Lettuce.
