Today’s Menu: Bison Steak, Eggs, Hash Browns, and Toast Breakfast

 

 

To start my Sunday off I just had a cup of Bigelow Decaf Green Tea. After my Tea I went and picked up Breakfast for Mom at McDonald’s. Finished up some light cleaning around the house. Then after Lunch went and got gas and went to the ATM. On the way home I stopped by a friend of mine I hadn’t seen in a while, good catching up! Lot of rain on and off throughout the day. Felt like having a Big Breakfast for Dinner tonight. I prepared a Bison Fillet, an Egg Sunny Side Up, Hash Browns, and Toast!

 

 

For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy.

 

 

 

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

 

 

 

 

 

Simply Potatoes Hash Browns

As the the Steak and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. When done I sprinkled some Sargento Reduced Fat Shredded Sharp Cheddar Cheese.

 

 

 

 


Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Topped them with some I Can’t Believe It’s Not Butter. Had a glass of 2% White Milk to drink. I had one hearty Comfort Food Dinner tonight! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Ham, Eggs, Hash Browns, and Toast

 

 


For Breakfast this Morning I had a cup of Bigelow Decaf Green Tea. At 10:30 this morning we had to be over at the office of where Dad is staying. We are applying for Medicade for Dad. They seem to want everything you have but your first-born children. Hope we get it worked out, very stressful! Rain showers this morning and very windy. There’s a lot of flooding all over the area, even had a Tornado watch last night. Very windy and a of 40 today, but the wind chill made it about 30. For Dinner tonight I wanted some Breakfast! So Breakfast it is, I prepared Ham, Eggs, Hash Browns, and Toast.

 

 

Breakfast for Dinner sounded perfect for Dinner tonight! I sliced up the rest of our Ham off the bone, I had prepared the Ham the day before. The Ham is so moist and delicious! We used Cook’s Bone In Ham. To prepare it I used a small skillet, sprayed it with Pam Cooking Spray, and heated it on medium heat. I then took a few slices of it and reheated it i tin the skillet for about 5 minutes. I love this Ham! It has such good flavor, perfect for Breakfast or Dinner.

 

 

 

Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.

 

 

 

As the the Ham and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. Today’s Menu: Egg Sandwich and Hash Browns

 

 


For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with some Smucker’s Sugar Free Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 45 degrees for a high outside today. After Breakfast I went to Meijer for a few items. On the way back I stopped by the ATM and stopped and got gas. Back home I was all caught up on everything. Did some work on the computer for a while. For Dinner tonight it’s an Egg Sandwich and Hash Browns.

 

 


I love Egg Sandwiches! hadn’t made these in years until a while back and enjoyed it so much I’m going to have it more often. To make it all I’ll need is 2 Eggs, Salt and Pepper, a slice of Kraft Sharp Cheddar, a bit of Blue Bonnet Light Butter, and 2 slices of Aunt Millie’s Light Whole Grain Bread. Just get a mixing cup or coffee cup and crack open both Eggs into it. Season it with the Salt and Pepper and whisk it all together.

 

 

 


I heated a small skillet on medium heat, I sprayed it with Pam Cooking Spray. I added the Butter, and when heated added the Egg Mixture. Fry it till the bottom browns and flip it. I then added my slice of Kraft Deluxe Sharp Cheddar Cheese on top of it. Cook until done, and it’s ready! You can toast the Bread if you like, I didn’t toast mine.

 

 

 

 

Simply Potatoes Hash Browns

To go with my Egg Sandwich I prepared some Simply Potatoes Shredded Hash Browns, which I love having any meal. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Egg Sandwich and Hash Browns

 

 

For Breakfast this morning I had a bowl of Honey Nut Cheerios. Also had my morning cup of Bigelow Decaf Green Tea. Had a sleepless night dealing with those Phantom Pains! These are so aggravating. They hurt so bad and not a thing you can do! Outside we got a little over an inch of new snow and 16 degrees. We had a high of 30 degrees and more snow this afternoon. Can’t do anything outside so I tried catching up on some sleep after the Phantom Pains stopped around noon. For Dinner tonight it’s an Egg Sandwich and Hash Browns.

Today’s Menu: Catfish Nuggets w/ Hash Browns and Cut Green Beans

 

 

 

To start the day I prepared a Poached Egg that I served on a toasted Healthy Life Whole Grain English Muffin. Cloudy with a high of 28 degrees and snow flurries. Finished cleaning the house after Lunch and cleaned the fridge. For dinner tonight I prepared Catfish Nuggets w/ Hash Browns and Cut Green Beans.

 

 

 

 

Picked up the Catfish Nuggets at Meijer the other day. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish.

 

Simply Potatoes Hash Browns

For one side I prepared some Simply Potatoes Hash Browns, which I always use when making Hash Browns. Fried them in Extra Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Just love Potatoes with Fish. I also heated up a can of Del Monte Low Sodium Cut Green Beans. For Dessert later a Del Monte Sugar Free Diced Peach Cup.

Breakfast for Dinner sounded perfect for Dinner tonight! I sliced up the rest of our Thanksgiving Ham off the bone. The Ham, as it is most years, was moist and delicious! We used Cook’s Bone In Ham. To prepare it I used a small skillet, sprayed it with Pam Cooking Spray, and heated it on medium heat. I then took a few slices of it and reheated it i tin the skillet for about 5 minutes. I love this Ham! It has such good flavor, perfect for Breakfast or Dinner.

For Breakfast this Sunday morning I prepared some Simply Potatoes Hash Browns. fried up 3 slices of Simple Truth Canadian Bacon, toasted 2 slices of Aunt Millies Light Whole Grain Bread (Lightly Buttered), and had my morning cup of Bigelow Decaf Green Tea. In the 40’s this morning and 74 degrees and mostly sunny for the day. Cleaned the house today, did a load of laundry, and after Lunch cleaned up the deck and driveway areas. It’s a beautiful Fall Day for sure out there! Still a little sore from the tumble I took the other night but feeling a lot better than yesterday. For Dinner tonight I made a Fried Egg Sandwich along with some Hash Browns.

Today’s Menu: Egg Sandwich and Hash Browns

 

 

Just had a cup of Bigelow Decaf Green Tea for Breakfast this morning. Didn’t get a lot of sleep again due to the Sinus Infection. My left ear started swelling up so I had to go back to the Family Doctor. I have infected inner ear, and it is extremely painful! They have me on 3 prescriptions and if it swells anymore I have to go to the hospital for treatment, trying to avoid that! It does feel somewhat better and the swelling isn’t quite as bad. I still have very limited hearing in my right ear though. I go back to the Doctor’s on Monday to see if I need further work done on it at the hospital. For Dinner tonight I made a Fried Egg Sandwich along with some Hash Browns.

 

Wanted something Light, Easy to Chew, and a hot meal tonight. So I made an Egg Sandwich. I haven’t made these in years! To make it all I’ll need is 2 Eggs, Salt and Pepper, a slice of Kraft Sharp Cheddar, a bit of Blue Bonnet Light Butter, and 2 slices of Aunt Millie’s Light Whole Grain Bread. Just get a mixing cup or coffee cup and crack open both Eggs into it. Season it with the Salt and Pepper and whisk it all together.

Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

Today’s Menu: Breakfast for Dinner w/ Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with some Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green. It’s another beautiful morning out there, 60 degrees and sunny. For the day it was 78 degrees and sunny for the day. After Breakfast I got the cart out, along with hedge clippers and leaf blower. Yard work today. Trimmed the bushes around the side and back. Also had to trim the vines along the driveway, the vines grow way too fast! Everything done I took a ride around the neighborhood and enjoyed the day. For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.

 

Nothing like a hearty, healthy, and delicious Breakfast for Dinner too! I’ll need one Egg, Simply Potatoes Shredded Hash Browns, a couple of Jennie – O Turkey Breakfast Sausage Links, and 2 slices of Aunt Millie’s Light Whole Grain Bread.

 

 

 

 

Simply Potatoes Hash Browns

So I got out a couple of small skillets and got the toaster fired up. Heated up both skillets, sprayed with Pam Cooking Spray in both and added Extra Light Olive Oil to one of them. In the skillet with no oil I started to fry the Jennie – O Turkey Sausage Links and the skillet with Oil, I prepared the Simply Potatoes Hash Browns. When both were cooked I put each one into separate bowls and set aside.

 

 

 

Then I started toasting the Bread. Next in the skillet that had the Hashbrowns I fried my Egg. Seasoning the Egg with Morton’s Lite Salt and Ground Black Pepper. When the Toast was done I buttered both slices with I Can’t Believe It’s Not Butter. As the Egg was ready I grabbed a plate and plated everything! And what a Breakfast Dinner! Eggs, Hash Browns, Turkey Sausage, and Toast. To drink I had a glass of Kroger Brand CarbMaster Chocolate Milk, I love this stuff! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and diet Peach Snapple to drink.

Today’s Menu: Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta

 

 

Woke up hungry so I wanted a good Breakfast. So I prepared; toasted a slice of Aunt Millie’s Light Whole Grain Bread (lightly buttered), made some Hash Browns using Simply Potatoes Shredded Hash Browns, and finally fried up some Gliers’s Turkey Goetta! Also had the morning cup of Bigelow Decaf Green Tea. I love that Turkey Goetta! Same old with our weather. Hot, humid , and rain on and off. After Breakfast I went Kroger for a few items for Mom and then stopped by McDonald’s to pick up Breakfast for them. After Lunch I went to the hospital to see a friend of mine, he’s waiting to have heart surgery. He’s got a couple of blockages that have clean out. Back home just did a few things around the house. For dinner tonight I prepared Crispy Cheddar Bacon Chicken w/ Cheesy Rotini Pasta.

 

 

To make the dish I’ll need; 1 Box Betty Crocker Crispy Cheddar Bacon Chicken – Chicken Helper and 2 Perdue Perfect Portions Chicken Breasts.

 

 

 

 

 

 

I’ve always enjoyed the Betty Crocker Crispy Cheddar Bacon Chicken – Chicken Helper. I’ve tried a few of them now but this is my favorite by far. But like most items as it seems I can’t find it anywhere in my are so I have to order it online. Anyway this really turns out delicious and an easy meal to prepare! The Rotini and Cheese Sauce is excellent and the Seasoned Crumb Coating with Natural Bacon Flavor for the Chicken is one of the better Crumb Coatings I’ve had for Chicken. To prepare it first go ahead and make the Pasta, by the box directions. Just boil, stir, and season.

 

As the Pasta was cooking I prepared the Chicken, I used Perdue Perfect Portions Chicken Breasts. I cut each Breast into 3 pieces. Coated each piece with the provided Seasoned Crumbs and fried until done. The full instructions are at the end of the post. The Chicken Helper box contains Rotini Pasta with Naturally Flavored Cheesy Sauce Mix and Seasoned Crumb Coating with Natural Bacon Flavor. I added the Chicken, Water, 2% Milk, Extra Light Olive Oil, Sea Salt and Pepper.

 

 

 

 

It all comes together for one easily made and delicious dinner. I also baked a loaf of La Brea Multi Grain Bread and a Diet Peach Snapple to drink. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

 

 

 

Betty Crocker Crispy Cheddar Bacon Chicken – Chicken Helper
* Rotini pasta with naturally flavored cheesy sauce mix and seasoned crumb coating with natural bacon flavor

Chicken Helper
* Add chicken
* Pasta side dish included
Directions
For Pasta:
You Will Need: 1-1/2 cups water, 1/2 cup milk, 2 tbsp butter. For Chicken You Will Need: 1 lb uncooked boneless skinless chicken breasts, 1 tbsp milk, 2 tbsp butter, 2 tbsp vegetable oil. Success Tips: Start with completely thawed chicken. Adjust heat setting, cook times and amount of oil as needed. Pasta: 1 – Stir water, 1/2 cup milk, butter, sauce mix and pasta in 2-quart nonstick sauce pan. Heat just to boiling, stirring frequently. Reduce heat. Simmer uncovered about 17 minutes, stirring frequently, until pasta is tender. Meanwhile, continue with step 2.

Chicken:
2 – Cut each chicken breast into 3 to 5 slices, holding knife at an angle. (Slices should be about 1/2 inch thick). 3 – Coat, Place chicken in medium bowl. Add 1 tbsp milk to moisten. Add seasoned crumbs to coat chicken. 4 – Brown, Heat butter and oil in 10-inch nonstick skillet over medium heat until butter is melted. Carefully add chicken to hot butter and oil; cook 4 to 6 minutes or until golden brown. Reduce heat to medium-low. Turn chicken; cook 4 to 6 minutes longer or until golden brown and centers are no longer pink (165 degrees F). Serve with potatoes. Refrigerate leftovers. Add Your Own Twist: Stir 1/2 cup cooked broccoli or shredded cheddar cheese into the finished pasta. If you want a bit of crunch, top with 1/3 cup crushed garlic croutons!
