Today’s Menu: Boneless Pork Ribeye w/ Diced Potatoes, Mini Sweet Ears of Corn, and Baked French Bread

For Breakfast I toasted Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Another nice day out there. 86 degrees and sunny, low humidity. After Breakfast I went to Kroger for Mom and stopped by McDonald’s and picked up Breakfast for her. I picked another 10 Roma Tomatoes and 5 Bell Peppers this morning. The plants have really produced this year! Later raked the yard and sprayed for weeds. I have to get that tree in our front yard cut down, all I do is rake leaves year around! Hopefully soon! For Dinner tonight I prepared Boneless Pork Ribeyes w/ Diced Potatoes, Mini Sweet Ears of Corn, and Baked French Bread.

I bought another of the AdapTable Pork Products at my last visit to Meijer. This on is the Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying the AdapTable Products!

I’ll be preparing them on the stove in a Cast Ron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high. Cooked the Chops in a covered skillet for 8-9 minutes per side until product reaches 145°F on a meat thermometer. Removed them from heat, and let them rest for 3 minutes. And serve!

These were as just as Delicious as the other ones we tried! Seasoned just right and the Chops came out moist and juicy! You have to give the AdapTable Products a try!

For one side I prepared some Simply Potatoes Seasoned Diced Potatoes. Just love using all the Simply Potatoes Products, always easy to prepare, fresh and delicious Potato Dishes. These come seasoned with Seasoning, I added some Sea Salt.

For another side dish I boiled some Green Giant Mini Ears of Sweet Corn. It’s frozen Mini Ears of Sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! I also baked a loaf of Pillsbury French Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Sea Salt Herb Rubbed Tri-Tip Buffalo Steak w/ Seasoned Diced Potatoes and Green Beans

For Breakfast I prepared a Jimmy Dean Simple Scrambler – Egg Whites, Crumbled Turkey Sausage and Cheddar Cheese. Also had my morning cup of Bigelow Decaf Green Tea. Partly cloudy and 60 degrees out today. I cleaned the house today, dusted and ran the vacuum. Cleaned and straightened the spare room closet, and it needed it! For Dinner tonight I prepared a Sea Salt Herb Rubbed Tri-Tip Buffalo Steak w/ Seasoned Diced Potatoes and Green Beans. We had this trio of Buffalo Steak, Seasoned Diced Potatoes and Green Beans a while back and they were so good together we are having them again!

I had the Steaks in the freezer so I sat them in the fridge to thaw all night. To prepare the Steak I preheated the oven to 400°. Then I took a Cast Iron Skillet that I sprayed with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil to, I heated it over medium high heat. When ready I added my Steaks to it. I cooked the Steaks 1 minute on each side. I just wanted a light sear on both sides. Then I moved the Skillet on to the preheated Oven and Roasted it for about 4 minutes. Removed the Skillet from the Oven and placed the Steaks on a plate and let them rest for 5 minutes before cutting. The Tri -Tip Steak was super tender and juicy. I cooked it to medium rare and it came perfect!

For a side I prepared some Simply Potatoes Seasoned Diced Potatoes. Just love using all the Simply Potatoes Products, always easy to prepare, fresh and delicious Potato Dishes. These come seasoned with Steakhouse type of Seasoning, I added some Sea Salt.

Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I just love Green Beans, all Beans! For Dessert/Snack  later a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Dr. Pepper to drink.

Cumin Spiced Pork Chop w/ Seasoned Diced Potatoes and Shellie Beans

Today’s Menu: Cumin Spiced Pork Chop w/ Seasoned Diced Potatoes, Shellie Beans and Baked Crescent Rolls

For Breakfast on this Chilly Saturday Morning I prepared a Breakfast Sandwich. I lightly fried several slices of Boar’s Head Sweet Sliced Ham, Scrambled 1 Egg, a 1/2 slice of Boar’s Head Swiss Cheese, Ortega Smoky Chipotle Taco Sauce and served it on a Thomas Light English Muffin. One tasty Breakfast Sandwich! We started out in the low 20’s with the wind chill this morning. Then a high of 35 degrees and partly cloudy, we actually saw some sunshine! I didn’t do a whole lot today my leg and hip was giving me problems. I was on it quite a bit yesterday so today I tried staying off it. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Seasoned Diced Potatoes, Shellie Beans, and Baked Crescent Rolls.

I had picked some Pork Chops a while back at Meijer. Had them in the freezer so I grabbed one of the Chops from the freezer last night and let it thaw overnight in the fridge. Then to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of 1 tbsp. Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chop to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 160°, turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible tasty Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

For a side I prepared some Simply Potatoes Steakhouse Seasoned Diced Potatoes. Just love using all the Simply Potatoes Products, always easy to prepare, fresh and delicious Potato Dishes. These come seasoned with Steakhouse Seasoning, I added some Sea Salt.

For a 2nd side I prepared a can of Libby’s Shellie Beans. I had picked up a couple of cans at Meijer. I opened 1 can and added them to a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. I brought the beans to a rolling boil and reduced the heat to low until heated through. These are so good, it’s been a while since I’ve had any. Shellie Beans are Green Beans with added Pinto Beans.

I also baked a small can of Pillsbury Crescent Rolls. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Pork Facts….
One serving of pork is 3 ounces, or about the size of a deck of cards, according to the National Heart, Lung and Blood Institute. An image of the portion size is important because a thick pork chop can be twice that size and without realizing it you can eat double the calories. You’ll get 137 calories and 4 grams of fat from a 3-ounce pork chop. Pork is similar to chicken, with 3 ounces of chicken breast containing 140 calories and 3 grams of fat. A pork chop has 65 milligrams of cholesterol, compared to 72 grams in chicken breast, but they both have just 1 gram of saturated fat.
