Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

 

Ham, Diced Potato, Egg, Hash 002
For Breakfast I had one of my favorites, Skillet Potatoes and Ham for Breakfast. As always I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. Just love this skillet meal!

Not sure if its Fall or Spring out there today. Mostly sunny and 82 degrees. Cleaned up around the house outside. Inside ran the vacuum, and done for the day! And it’s going to be an afternoon of NFL Football. Then for Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

I had purchased some Rainbow Trout Fillets at Meijer and had one left in the freezer. So I grabbed that last one and let it thaw overnight in the fridge. To prepare it all I’ll need is; 1 Rainbow Trout Fillet, 1 teaspoons Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Fish Dish. I also reheated up the Del Monte Cut Green Beans that I had leftover from last night’s meal. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

For Breakfast this I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also, as usual, had my morning cup of Bigelow Decaf Green Tea. Not being a Coffee drinker I really enjoy my Tea! After Breakfast I gave Mom a hand with a couple of loads of laundry. Humid and a high near 90 degrees, but we are finally getting some rain. In fact heavy rain with thunderstorms. We really needed the rain as everything is so dry, the yards are even turning brown. So it was another day indoors getting some things done around the house. For Dinner tonight I prepared Catfish Nuggets w/ Hash Browns and Cut Green Beans.

 
I had purchased the Catfish Nuggets from Kroger last week and had them in the freezer so I let them thaw in the Catfish Nuggets Rice 003fridge overnight. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Virgin Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish. I love using all these Zatarain’s Products!

Just had a cup of Bigelow Decaf Green Tea for Breakfast. I had to take my car to the shop early this morning. You might know the weather heats up and my air conditioner doesn’t work. The air conditioner actually works fine but for some reason I get no air out of the dash vents. Just another bill! So I was without a car today so I just puttered around the house. I would have like to get the cart out but the sun was just too hot today to be out a lot, especially with my history of Melanoma. So I got some things done around the house all day. For dinner tonight I’m having a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

 

While at Meijer last week they had some beautiful Rainbow Trout Fillets, and I just couldn’t pass it up! I purchased a couple of fillets and had them in the freezer. So I grabbed one of the fillets from the freezer and let it thaw overnight in the fridge. To start the day I prepared 2 Jennie – O Turkey Breakfast sausage Links, some Pioneer Peppered White Gravy, and a couple of slices toasted Healthy Life Whole Grain Bread. No matter what you put gravy on it makes it better! After Breakfast I went up to the hospital to see a friend of mine, he’s making progress! Cloudy and on the cool side, in the 60’s. Back home cleaned up around outside and finished up some laundry for Mom. For dinner tonight I prepared Catfish Nuggets w/ Hash Browns and Cut Green Beans.

Today’s Menu: Fried Red Snapper w/ Hash Browns and Sliced Carrots

For Breakfast I lightly fried up some thin slices of Boar’s Head Honey Smoked Ham. Then toasted a Healthy Life Whole Grain English Muffin, layered the Ham on a slice of the Muffin and topped it with a slice of Sargento Ultra Thin Longhorn Colby Cheese. Along with my morning cup of Bigelow Decaf Green Tea. Well it was above zero this morning, first time in a few days! Lot of sunshine today but not very warm, in the teens still. Indoors today not a lot going on. Finished up a load of laundry for Mom and did some light cleaning around the house. For dinner tonight it’s Fried Red Snapper w/ Hash Browns and Carrots.

My good friends (Jim and Linda) just returned from Florida and brought me a small cooler of Grouper and Red Snapper fillets they caught while down there, it doesn’t get much better! I love Gulf Coast Fish, always such a fresh taste to them. To prepare them, I first rinsed the Snapper off in cold water and patted dry with a paper towel. I seasoned it with McCormick Grinder Sea Salt. Then put the fillet in a Hefty Zip Plastic Bag and added Zatarain’s Lemon Pepper Breading Fish Fri. Then shook the bag until the Fillet was well covered, removed from the bag shaking off the excess. I then pan fried it in a Cast Iron Skillet, that I had preheated, in Canola Oil. I fried it skin side down for 4 minutes and then flipped it over to the flesh side and fried it another 3 minutes. Golden brown and nothing but delicious! The fresh taste of the Snapper combined with the Zatarain’s Lemon Pepper Breading Fish Fri is a perfect pairing. This ended up being some of the best tasting Red Snapper I’ve ever had, thanks again Jim!!

Another chilly morning, 41 degrees. Cloudy and in the 50’s for the day. Still a cool breeze blowing so I couldn’t get the cart out. So stayed in and got some odd and ends jobs done around the house. Also did some updating on the computer. For dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

It’s been a rainy, windy, cool day here in West Chester, almost feels like an early Winter’s day instead of Fall! Not much going on outside in this weather. Went to see dad in rehab for a while, he’s getting a lot stronger and wanting to come home. He should be released by next Friday they told us. Back at home did some light cleaning and then hit my easy chair with the remote for an afternoon of College Football. For dinner tonight it’s my favorite fish, Crappie. I prepared Fried Okeechobee Crappie w/ Hash Browns, Cut Green Beans, and Cornbread.

It’s been too long between Crappie Dinners! So I got in the freezer and grabbed a couple of bags of Okeechobee Crappie, or Specks as they call them in Florida, and let them thaw overnight in the fridge. To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Extra Virgin Olive Oil about 3 minutes per side. As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie, especially the Lake Okeechobee Crappie.

To go with the Crappie I prepared some Hash Browns, Potatoes are perfect with Fish. I always use Simply Potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Then I heated up a can of Del Monte Cut Green Beans, Green Beans go well with any meal as far as I’m concerned. Green Beans was my favorite Vegetable growing up even.

 

 

 

I also baked a small skillet of Martha White Cornbread. Cornbread is something I think I could eat every meal. I like Cornbreada nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Catfish Nuggets w/ Hash Browns and Cut Green Beans

Up early, spent a restless night for some reason. Had a Healthy Life Whole Grain English Muffin topped with Smucker’s Sugarless Blackberry Jam for Breakfast. Had my morning workout and then started some laundry for Mom. Outside the high humidity finally let up and it’s a warm and sunny day, with no humidity! Got the cart for most of the afternoon, doing a few things around the outside and enjoying the day. For dinner tonight I prepared Catfish Nuggets w/ Hash Browns and Cut Green Beans.

 

 

Picked up the Catfish Nuggets at Kroger yesterday. Rinsed the Catfish Nuggets off in cold water and patted dry with aCatfish Nuggets Rice 003 paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Virgin Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish. I love using all these Zatarain’s Products! Also had a side of McCormick Tarter Sauce for dipping.

I love the combination of Catfish Nuggets and Hash Browns, so for one side I prepared some Simply Potatoes Hash Browns. Which I always use when making Hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I also heated up a can of Del Monte Low Sodium Cut Green Beans. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Started the morning off with an Egg White (Egg Beater’s), Turkey Bacon (Jennie – O), English Whole Grain Muffin (Healthy Life) Breakfast Sandwich! Not a whole lot going on outside, still extremely humid! I think yesterday was one of the most humid days I had ever seen, open the door to out and it hit you like opening an oven door. From what they say we could have a week more of this, not much you can do. Did a load of laundry for Mom and cleaned up around the house. For dinner tonight I prepared one of Mom and Dad’s favorites, Catfish Nuggets. Tonight it’s Catfish Nuggets w/ Hash Browns and Cut Green Beans.

Today’s Menu Breakfast – Sunnyside Up Egg, Hash Browns, Turkey Sausage Breakfast Patties, and Wheat Toast.

Started my day off with an Egg White, Canadian Bacon, and English Muffin Breakfast Sandwich! Used Egg Beater’s Egg Whites. Finished up laundry for my Mom and then outside into a beautiful Spring Day. Got the cart out and did a few things around the house then rode down to the neighborhood lake for a while. Beautiful day out, sunny and high near 70 degrees! For dinner tonight a real comfort food Breakfast! I prepared; a Sunnyside Up Egg, Hash Browns, Turkey Sausage Breakfast Patties, and Wheat Toast.

It’s Breakfast Prime Time Tonight! In one small skillet I prepared Egg Sunnyside Up, seasoned with Sea Salt and Ground Black Pepper and pan fried using Extra Virgin Olive Oil. I then prepared a couple of Jennie – O Turkey Breakfast Sausage Patties in a second small skillet. Just as delicious as Pork Sausage but healthier, try the Jennie – O Turkey and you’ll never go back! While the Sausage Patties were cooking in another skillet I prepared some Hashbrowns that I topped with a bit of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I used Simply Potatoes Hash Browns, the only brand other than Bob Evans that I use for Hash Browns. I like Simply Potatoes Hashbrowns over Bob Evans because they have fewer calories and seem to fry up better. The last item for my Breakfast Dinner was what else but Toast! I toasted up a couple of slices of Klosterman Wheat Bread. So I toasted 2 slices and buttered them with I Can’t Believe It’s Not Butter. I also had a cold glass of 2% White Milk. A Breakfast proudly served for any meal! Breakfast Food items might be the most filling and hardy foods of any other, for some reason. Nothing like a good Breakfast anytime, any meal! For dessert later tonight a Jello Sugar Free Double Chocolate Pudding.
