Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

 

For Breakfast it was a cup of Bigelow Decaf Green Tea. 93 degrees, humid and partly sunny out there today. After Tea I had to follow Mom and she dropped her car off to get the oil changed and to check out a noise it’s been making. Hopefully nothing major! We stopped by Kroger afterward. Not a lot going on. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

I had the Rainbow Trout Fillet, that I had purchased from Meijer, in the freezer. I’m glad I bought as much Rainbow Trout and Walleye as I could because it’s tough to find some now. So I laid the package of 1 fillet in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish! I also heated up a can of Del Monte Cut Green Beans. I just love the trio of the Cajun Rainbow Trout, Hash Browns, and Green Beans, one of my favorites for sure! For Dessert later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.

Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

 

 

For Breakfast it was Skillet Diced Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. I also had a cup of Bigelow Decaf Green Tea. 77 degrees and partly sunny out there today. After Breakfast I went to Walmart. I bought some Throw rugs for in front of the couch and chairs. Also for the bathrooms. I also bought 3 Tomato plants and a couple of Herb plants. Got the cart out and planted all of them on the side of the shed. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

 

For Breakfast it was Skillet Diced Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a an Egg Sunny Side Up and sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. I also had a cup of Bigelow Decaf Green Tea. Good Breakfast! Mostly cloudy with a passing light shower, 57 degrees out today. After Lunch I went to the Dollar Tree for a gift card and Birthday Card for my cousin, turning 13. She loves the Dollar Tree so we got a gift card for there for her. Nothing else going on today, boring day! For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

So another day of moving slow and resting. Just as well with the weather outside! For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

Today’s Menu: Bacon, Blue, Cheese, and Egg Buffalo Burger w/ Hash Browns

 

 

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, fried an Egg Sunnyside Up, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and made a cup of Bigelow Decaf Green Tea. Mostly cloudy today and a high around 75 degrees. Not feeling up to par today, had those Phantom Pains throughout the night. They finally ended around 10:00 this morning. Got a few things done around the house then I caught up on some sleep. For Dinner tonight a new Buffalo Burger from Wild Idea Buffalo! I prepared a Bacon, Blue, Cheese, and Egg Buffalo Burger w/ Hash Browns.

 

 

I’m having another of the Wild Idea Buffalo – BACON BLUE BURGER. I tried this for the first time last week and could not wait to this Buffalo Burger again! This time I’m dressing it up a bit more. Adding Cheese, a fried Egg, and A-1 Sauce! It’s another new Wild Idea Buffalo Product. It comes frozen and there’s 3 – 1/3 lb. Burger Patties. The Premium Ground Buffalo is mixed with Wild Idea Buffalo Bacon, Blue Cheese, and seasoning. I’ll be preparing it as I do all Wild Idea Buffalo Burgers.

 

 

 

To prepare it I’ll need McCormick Grinder Sea Salt and Black Peppercorn, a slice of Kraft Deli Deluxe Sharp Cheddar Cheese, 1 Egg, Jack Daniel’s Honey Smokehouse BBQ Sauce, and a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun.

 

 

 

 

To start it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn, lightly seasoned. I then pan fried it, on medium heat, in Extra Light Virgin Olive Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. After flipping it I added the slice of Sharp Cheddar with about 1 minute of cooking time left. As the Burger was cooking I fried my Egg in another skillet. The Egg got done as the Burger was finishing.

 

 

 

To serve the Burger I grabbed the Bun and on the bottom Bun added the Burger, topped it with some of the BBQ Sauce, and topped it with the Egg and the top Bun. This Burger is loaded and ready! Like the first time I tried this Burger there was nice bites containing the Blue Cheese and there was bits of the Buffalo Bacon throughout the Burger. The added Cheese, Egg, and BBQ Sauce sent this one into another level!It’s a bit messy after the Egg Yoke starts to flow but well worth it! First time I prepared a Buffalo Burger topped with an Egg, and not the last! I love all the Wild Idea Buffalo Products but this one is quickly becoming a favorite! Just a flat out excellent Burger!

 

Then for a side I prepared some Simply Potatoes Shredded Hash Browns. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

Today’s Menu: Catfish Nuggets w/ Hash Browns and Cut Green Beans

 


No Breakfast or even Green Tea this morning! I’ve been fasting since 10:00 last night. I had to be at my Family Doctor this morning at 8:15 for my 4 month check up for sugar, cholesterol, etc. I’ll have the results in about 5 days they say. Hopefully I’ll get a good report on all. I also did the Cologaurd test for Colon Cancer. Another beautiful day out, 86 and mostly sunny but a bit humid. Ran a couple of errands for Mom later in the day. Still not sure if Dad is going to make it or not. We may have to put him in assisted living, he’s so weak at times. Just praying for the best. For dinner tonight I prepared Catfish Nuggets w/ Hash Browns and Cut Green Beans.

 

Picked up the Catfish Nuggets at Kroger yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish. I love using all these Zatarain’s Products!

 

Simply Potatoes Hash Browns

For one side I prepared some Simply Potatoes Hash Browns, which I always use when making Hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Just love Potatoes with Fish. I also heated up a can of Del Monte Low Sodium Cut Green Beans. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

 

Ham, Diced Potato, Egg, Hash 002
For Breakfast I had one of my favorites, Skillet Potatoes and Ham for Breakfast. As always I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. Just love this skillet meal!

Not sure if its Fall or Spring out there today. Mostly sunny and 82 degrees. Cleaned up around the house outside. Inside ran the vacuum, and done for the day! And it’s going to be an afternoon of NFL Football. Then for Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

I had purchased some Rainbow Trout Fillets at Meijer and had one left in the freezer. So I grabbed that last one and let it thaw overnight in the fridge. To prepare it all I’ll need is; 1 Rainbow Trout Fillet, 1 teaspoons Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

I love Hash Browns, they make the perfect side for any Fish Dish. I also reheated up the Del Monte Cut Green Beans that I had leftover from last night’s meal.
