Today’s Menu: Pulled Chicken BBQ Sandwich w/ Baked Fries

 

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Love this Breakfast! It’s bitter cold this morning! It’s 4 degrees and the wind makes it feel like minus 8 degrees.Plus the high was only 18 degrees. Bitter Cold! It looks as though this weather is going to stick around for at least a week so we might as well adjust to it. Around noon I ventured out and went to the local Kroger up the road from us. Mom needed a few things so I went for her. That was it for being outside today! For Dinner tonight I prepared a Pulled Chicken BBQ Sandwich w/ Baked Fries.

 

 

While at Kroger earlier today I purchased a Simple Truth Rotisserie Chicken at the Deli. I love these Birds, there is so much meat on them and seasoned just right. So anyway I pulled all the Chicken Meat from it and cut off the Chicken Legs and Wings for Mom and Dad.

 

 

 

 

 

To make the Sandwich I took some of the Pulled Chicken and heated it up in a skillet on medium high heat. Next I grabbed a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and the bottle of Jack Daniel’s Honey Smokehouse BBQ Sauce. Piled my Chicken on the Bun and topped it with the BBQ Sauce. Easily made and delicious! The Jack Daniel’s Honey Smokehouse BBQ Sauce is perfect with Chicken. Just gives it an incredible flavor!

 

 

 

To go with my Sandwich I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Leftovers: Creamy Wild Rice, Chicken, and Mushroom Soup w/ Baked Multi Grain Bread

 

 

It’s been one sleepless and painful night and day. I have been suffering through some extremely painful Phantom Pains. It’s so frustrating because there is nothing you can do to stop them. There’s methods and medicine you can do or take that may work about 5% of the time but for the most part the only thing you can do is try to fight through them. I think I might have got about an hours worth of sleep overnight but that was it. I had nothing for Breakfast but a cup of Bigelow Decaf Green Tea. I went to McDonald’s to pick up Breakfast for Mom and Dad and I went back to bed for most of the Day. The Phantom Pains lessened around 2:00 this afternoon, finally. I’m hoping for a better night tonight! Thank goodness for leftovers, I reheated the Creamy Wild Rice, Chicken, and Mushroom Soup w/ Baked Multi Grain Bread. I’ve left the original post from yesterday below. Take care everyone.

 

I had purchased a bag of Bear Creek Creamy Wild Rice Soup Mix at Walmart a while back. So what better day to try it than a Fall day in November. The package contains the Soup Mix which is loaded with Long Grain Wild Rice. I’ll be adding 8 cups of Water, Pulled Chicken, and sliced Mushrooms. You can already tell this has the makings of one Hearty Comfort Food Soup!

 

 

 

For the Pulled Chicken; Yesterday I purchased a Kroger Simple Truth Rotisserie Whole Chicken. I pulled all the meat and put it in a sealable plastic container, which I put in the fridge to store until needed. I also purchased a small container of Mini Bella Mushrooms, from Meijer, that I sliced up.

 

 

 

 

To prepare the Soup; I brought 8 cups of water to a rolling boil. Whisked in Soup Mix. Reduce heat to medium and simmer uncovered 10 minutes, stirring occasionally. Sea Salt and Pepper to taste. When the Soup was ready I then added 1 cup of the Pulled Chicken and 1 cup of the sliced Mushrooms. Stirred until well blended, and served. One excellent Soup! The Soup came out smooth and creamy and the Long Grain Rice, Chicken, and Mushrooms worked perfect. Hearty and Delicious! I also baked a loaf La Brea Multi Grain Bread. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Toasted a Healthy Life Whole Grain English Muffin for Breakfast this morning. I topped with some Smucker’s Sugarless Blackberry Jam and served it with a cup of Bigelow Decaf Green Tea. Sort of foggy out this morning. It was cloudy all day and a high of 64 degrees. So it was a god day to stay in and clean the house, vacuum and dusted. Also gave the wooden floor area a good cleaning. After Lunch I got the leaf blower out and cleaned off the deck and driveway areas. Some of the trees this year in the neighborhood are beautiful! Orange, Yellow, Red, leaves and they look incredible as the sun is setting and hitting them just right. Had everything done by the afternoon and watched some College Football. For Dinner tonight a Comfort Food Dinner, Creamy Wild Rice, Chicken, and Mushroom Soup w/ Baked Multi Grain Bread.

Mushroom and Chicken Risotto

Today’s Menu: Mushroom and Chicken Risotto
For Breakfast this morning I had a bowl of Cheerios’s Cereal and also a cup of Bigelow Decaf Green Tea. Outside today about 86 degrees, humid, with showers later in the day. Right after Breakfast I headed up to the local Kroger to pick up a few items for tonight’s Dinner. Back home did some house cleaning. Then after Lunch headed out to go see Dad at the rehab unit. It’s been a rough day for him, having a lot of trouble breathing today. His breathing isn’t going to get any better, his lungs have about given up on him. I guess we can always hope! Back at home finished up a few things  around the house. For Dinner tonight I prepared Mushroom and Chicken Risotto with Baked French Bread.

 

 
I purchased a Simple Truth Rotisserie Whole Roaster Chicken while at Kroger this morning. I went ahead and pulled all the meat, one big roaster I ended up with 2 containers of Pulled Chicken. Set the Chicken aside until needed.
 
Next, I had picked up a small container of fresh Mushrooms at Kroger also. Wiped them off with a paper towel and sliced them up. Setting them aside also.
For the Risotto I used a box of Lundberg Creamy Risotto. Love using the Lundberg Risotto Products, always turns out great. To prepare it is quick and easy. In a 2 qt. saucepan, sauté the Rice in ½ Tbsp. Extra Light Olive Oil over medium heat for 2 minutes. Add 2½ cups water and contents of Seasoning Pouch. Stir well and bring to a boil. Reduce heat to simmer, cook uncovered for 20 minutes stirring occasionally until rice is tender. With about 8 minutes of cooking time left I added the Chicken and Mushrooms. Stirred until both were well mixed in the Risotto.
 
Topped it with some Kraft Reduced Fat Parmesan Grated Cheese, and done! The Mushroom and Chicken blended with Risotto perfectly and Parmesan Cheese on anything makes it better! I baked a loaf of Pillsbury French Bread to go with everything. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a small can of Coke Zero to drink.

Lundberg Creamy Parmesan Risotto

Reduce heat to simmer, cook uncovered for 20 minutes stirring occasionally until rice is tender. Garnish with grated Parmesan cheese is desired. Serve piping hot.

Today’s Menu: Chicken, Potatoes, Asparagus, and Baked French Bread

 

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and lightly buttered it with I Can’t Believe It’s Not Butter. And as every morning I also had the morning cup of Bigelow Decaf Green Tea. I spent a very restless night last night, fighting with Phantom Pains most of the night. When they finally stopped it dawn. So after doing a few things around the house I went back to bed to catch up on some much needed sleep! For Dinner tonight it’s Chicken, Potatoes, Asparagus, and Baked French Bread.

 

 

 

Yesterday I bought a Simple Truth Rotisserie Whole Roaster at the Kroger Deli. Love these Simple Truth Chickens, they are huge and delicious! I pulled all the meat and had them in a plastic container in the fridge. To reheat it I put the Chicken on a micro wave plate with a steamer lid and reheated it. I served it with some Hidden Valley Ranch Buffalo Dressing.

 

 

 

For one side I prepared a package of the Little Potato Company – Savory Herb. I always pick up at Meijer. I have these quite often and really enjoy them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

 

 

 

Then for another side I prepared some Roasted Asparagus. To prepare the Asparagus I just needed Extra Light Olive Oil, Garlic (minced), Sea Salt, Freshly grated Black Peppercorn, Lemon Juice, and Kraft Reduced Fat Grated Parmesan Cheese. To prepare it; Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in the preheated 400 degree oven and roast for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Microwave

1. Simply remove the cardboard sleeve and seasoning pack. The plastic film stays on to aid in steaming the potatoes.
2. Place the convenience tray in the microwave. Cook on high for 5 minutes*.
3. Let the tray rest for 2 minutes then carefully remove plastic film and stir in seasoning pack. Caution – the contents will be very hot. If desired, add 1 tbsp. of butter or olive oil.

Serve and enjoy!

Today’s Menu: Buffalo Ranch Pulled Chicken Sandwich w/ Baked Fries

 
For Breakfast I made a Breakfast Sandwich, I had this yesterday and it was so good I had to have another! I toasted a Healthy Life Whole Grain English Muffin, fried up some Boar’s Head Deluxe Ham, and topped the Ham with a slice Buffalo Ranch Pulled Chicken Sandwich w Baked Fries 015of Sargento Ultra Thin Swiss Cheese. And as always my morning cup of Bigelow Decaf Green Tea. After Breakfast I headed out to Walmart. If you rely on Electric Carts, like myself, when going to Walmart you have to go early to assure you get a cart that works or even get one before the few that they have are all gone! Picked up some Bigelow Tea and a few items in the hardware and yard sections. Stopped Kroger to pick up a Rotisserie Whole Roaster from the Deli. Plus I wanted to early and get back home before the heat and humidity kicks in along with passing showers. Got the cart out and finished off some yard work in between rain showers. We really need the rain, everything is too dry around the area. So for Dinner tonight its a Buffalo Ranch Pulled Chicken Sandwich w/ Baked Fries.

To make Dinner tonight I’ll need the Pulled Chicken from a Simple Truth Rotisserie Whole Roaster, Sargento Ultra Thin Swiss Cheese, Hidden Valley Buffalo Ranch Dressing, and Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun.

 

 

 

 
As I said I had purchased a Simple Truth Rotisserie Whole Roaster from the Kroger Deli earlier today. Love these Simple Truth Roasters, delicious and twice the size than most Deli Rotisserie Whole Roasters. The first thing I did Buffalo Ranch Pulled Chicken Sandwich w Baked Fries 003was pull all the Chicken Meat; removing the skin and any bones. Put the Chicken in a bowl and set aside. I then grabbed a small skillet and heated it on medium heat. Added just enough of the Pulled Chicken to make the Sandwich. As the Chicken was heating I piled it up in the skillet and topped it with a slice of Swiss Cheese. As it melted I removed it from the skillet to the Bun. Topped it with Hidden Valley Buffalo Ranch, and done! The Hidden Valley Buffalo Ranch is a new item out, and it’s fantastic! Creamy with nice heat, another item to keep in stock! The sandwich turned out a winner. Chicken, Swiss and the Dressing are a great trio. I left more info on Hidden Valley Buffalo Ranch at the end of the post, give it a try!

To go with the Sandwich I baked some Alexia 98% Fat Free Roasted Straight Cut Fries with Sea Salt. To prepare them I baked them at 425 degrees for 17 minutes. They bake up beautifully and seasoned just right, another excellent Fry from Alexia! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.
