Today’s Menu: Leftovers – Shrimp and Smoked Turkey Sausage Gumbo w/ Baked French Bread

 
2 of my 3 Meals today will be leftovers, love leftovers! For Breakfast I’ll be reheating the leftover Skillet Potatoes and Ham, Diced Potato, Egg, Hash 002Ham. to make this I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. It reheats perfect and tastes just as good! Only a high in the 50’s today and partly cloudy. After Breakfast I went to Home Depot to buy some wood stain. I plan on sprucing up the small shelf I got from my neighbor. Then after Lunch I headed up to the assisted living center to see a friend of mine. He’s really going downhill quick and it’s taking a toll on his wife also. Wish I could do something but I don’t guess no one can, just hope he doesn’t suffer. Back at home it’s going to be leftovers for Dinner I’m reheating the Shrimp and Smoked Turkey Sausage Gumbo.

This heats back up perfectly! The pasta holds up great and it maintains the flavor. It also freezes well also. But as good as this it rarely ever sees the freezer! I also heated up the Pillsbury French Bread and had a Diet Peach Snapple to drink. For Dessert later a bowl of Dole Sliced Peaches. I’ve left the original post from last night below, it has the ingredients and instructions. Enjoy!

What’s not to like with one of my meals; Gumbo, Shrimp, and Smoked Turkey Sausage! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Kroger Brand Jumbo Shrimp (that I precooked before adding to the Gumbo), and Frank’s Red Hot Sauce.

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! I also baked a loaf of Pillsbury French Bread.

Prep Time: 5 minutes

Makes 5 (1-cup) servings.

YOU WILL NEED:
1 package Zatarain’s® Gumbo Pasta Dinner Mix
1 tablespoon oil
1 pound andouille or other cooked sausage, cut into 1/2-inch slices
2 3/4 cups water

DIRECTIONS:
1. HEAT oil in large skillet (12-inch) on medium-high heat. Add sausage; cook and stir 5 minutes or until lightly browned.
2. STIR in water and Pasta Dinner Mix. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 15 minutes or until pasta is tender, stirring occasionally.
3. REMOVE from heat. Let stand 5 minutes. Sauce will thicken upon standing. Stir before serving.

VARIATIONS
Chicken Gumbo: Prepare as directed, using 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes, in place of the sausage. Cook and stir 5 minutes or until chicken is no longer pink.

Shrimp Gumbo: Prepare as directed in Step 1, using 1 pound medium shrimp, peeled and deveined, in place of the sausage. Cook and stir 3 minutes or just until shrimp turn pink. Remove shrimp from skillet. Continue as directed, stirring shrimp back into skillet after pasta is tender.

Today’s Menu: Leftovers – Shrimp and Smoked Turkey Sausage Gumbo w/ Baked Italian Loaf Bread

 
Just a cup of Bigelow Decaf Green Tea for Breakfast. Then about 7:30 Mom drove me over to pick my car up at the shop. Everything good to go again! From there we went to a Med Store and picked out a lift chair for Dad, it will be delivered Monday afternoon. Dad is doing better and slowly getting back on his feet. He’s having 2 a day therapy sessions.

 

Went to Kroger late this afternoon for a few items and got caught in one of the hardest rains I’ve ever been caught in! I was in an electric shopping cart bringing my groceries out, it was just a light sprinkle. As I was unlocking the car theShrimp and Smoked Turkey Sausage Gumbo w Cornbread Ears 008 monsoon came out of no where! In seconds I was drenched. It was coming down so hard cars were pulling off because they couldn’t see. I finally managed to get my groceries in the car and grabbed my walker and got in the car. I had a towel laying in the back seat so I was a few minutes attempting to dry off some. I live about 1 1/2 miles from Kroger and about a 1/4 mile from home the rain stopped and at the house it hadn’t rained a drop! I had to take my shirt, hat, shoes and socks off before going in the house. Threw everything in the washing machine and went ahead and did the laundry. Now are whole county is under a flood warning and still no rain here at the house, amazing! Anyway it’s leftovers for dinner tonight. I reheated the Shrimp and Smoked Turkey Sausage Gumbo for my Dinner tonight. I’ve left the original post from last night below. Later and stay dry!

To start my day I made one our favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. After Breakfast headed over to pick my car up from the repair shop and back home. Then on the way home, the same problem occurred. The air conditioner blower went out again. So I made a u-turn and took it back in to be repaired. This time it’s something else that kicked it out, they told me not to worry about it that they would take care of everything at no cost! Very good people there. Good day to stay in the a/c today, hot and humid. For Dinner tonight its Shrimp and Smoked Turkey Sausage Gumbo.

No Breakfast for me this morning! I’ve been fasting since 11:00 last night. I have a doctor’s appointment at 9:15 this morning. It’s my 4 month check up at the family doctor, checking blood, cholesterol, etc.. After the doctor visit I headed to Kriger for a few items for myself and Mom. We had a real light snow this morning that turned to a light mist of rain. Cloudy and cool out today. We are being invaded by Squirrels, Racoons, Rabbits, and such. They are tearing down most of the woods behind us for Duke Energy to replace the power lines. The animals are scrambling to find new homes. For dinner tonight a favorite Gumbo Dish, I prepared Shrimp and Smoked Turkey Sausage Gumbo.

Had a light Breakfast this morning and then on to my morning workout. After that I went to Kroger for a few items, picked up a Pork Shoulder for tomorrow’s dinner. Back home finished up some laundry for Mom and cleaned the house today. Beautiful and sunny day outside, high of 84 degrees but very little humidity. Got the cart out late afternoon and rode for a while. Trying to stay busy as I can to keep my mind off the possible health problems. For dinner tonight a personal comfort food for me. I prepared Shrimp and Smoked Turkey Sausage Gumbo with baked Multi – Grain Bread.

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. Then I added Extra Large Shrimp and simmered another 3-6 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! I also baked a half loaf of Multi – Grain Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Shrimp and Smoked Turkey Sausage Gumbo  w Cornbread Ears 008

Lot of rain overnight again and more late afternoon or early evening on the way. Very humid out there today. Went to Walmart and Meijer early this morning. Walmart is starting to be a waste of time! All their electric carts are in bad shape and more and more name brand items are being replaced with Walmart brand items. They no longer carry any Ronzoni Healthy Harvest Pastas and found out today they no longer carry any Jennie – O Turkey Products. So it’s Meijer and Kroger from now on. Back at home did the usual, tidy up the house inside and out. Too humid by noon to do much of anything outside. For dinner tonight a personal favorite, Shrimp and Smoked Turkey Sausage Gumbo.

 

 

I have a lot of favorite meals but this one is near or at the top. To make it I used a box of Zatarain’s Gumbo Pasta Shrimp and Smoked Turkey Sausage Gumbo  w Cornbread Ears 003Dinner Mix for the Gumbo base, 1 Johnsonville Hardwood Smoked Turkey Sausage (sliced into bite size slices), a bag of Kroger Brand Jumbo Shrimp, and Frank’s Red Hot Sauce. The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. I just boil the stock that’s in the packet, add the sliced the Johnsonville Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added Extra Large Shrimp and simmered another 3-6 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! I also had a slice of Klosterman Wheat Bread. For dessert later bowl of Del Monte Sliced Peaches.

2. STIR in water and Pasta Dinner Mix. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 15 minutes or until pasta is tender, stirring occasionally.
3. REMOVE from heat. Let stand 5 minutes. Sauce will thicken upon standing. Stir before serving.

VARIATIONS
Chicken Gumbo: Prepare as directed, using 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes, in place of the sausage. Cook and stir 5 minutes or until chicken is no longer pink.

Not much going on today. I had to take the car to the shop, needed new brakes. I got lucky though, only the front pads and rotors. Could have been worse I guess. Ran some virus checks and deleted some old files on the computer for most of the afternoon. For dinner tonight Leftovers! Reheated the Leftovers from last night’s dinner, Shrimp and Smoked Turkey Sausage Gumbo.

 

 
No way I was going to let this leftover go to waste! This is one of my favorite dishes. It’s got Pasta, Shrimp, Smoked Turkey Sausage, and incredible flavor. As far as reheating it I just put the leftovers in a small sauce pan and reheated it on medium low, till heated through. The dish is every bit as good the second time around! Added a few shakes of the Frank’s Red Hot Sauce for a little heat. I also had a slice of Klosterman Wheat Bread. Below I’ve posted last night’s description of dinner that includes how to prepare the dish and the ingredients. Love those leftovers! For dessert later a SO Delicious Dairy Free Minis Vanilla Sandwiches.

I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base. Very easy to prepare, takes about 25-30 minutes. I just boiled the stock that was in the packet, Jalapeno Slices, sliced Butterball Hardwood Smoked Turkey Sausage, and a few shakes of the Frank’s Red Hot Sauce for 15 minutes. Then I added Extra Large Shrimp and simmered another 5 minutes. Said and done the Gumbo is ready to serve and It turned out fantastic! To serve I added a couple, well a few, shakes of Frank’s Hot Sauce. Nice flavor, a little heat from the Hot Sauce, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one nice hearty and delicious dinner.

Sort of a long night. Had the Phantom Pains for a while but they weren’t real bad, just enough to be annoying and keep me awake for a while. Made some Pancakes using Bisquick Heart Healthy and Maple Grove Farms Sugarless Maple Syrup. The Maple Grove is really a good Sugarless Syrup, if you’re looking for one. Been busy taking care of Dad, he’s not been doing too good lately. really weak and on Oxygen all the time now. My Aunt and Uncle, my Dad’s Brother, stopped by today for a visit. Always good catching up with them. For dinner tonight I prepared Shrimp and Smoked Turkey Sausage Gumbo w/ Cornbread Ears.

Beautiful morning out today. Started the day off by making Pancakes and Turkey Bacon! I used the Bisquick Heart Smart. It’s a Low Fat and 0 Cholesterol pancake mix. There are 190 calories and 32 net carbs per serving, 3 Pancakes per serving. I used Egg Beater’s instead of 1 Egg to prepare the mix with. To top the Pancakes I used Maple Grove Farms Sugar Free Maple Flavor Syrup. Then I also had some Jennie – O Turkey Bacon. Spent most of the afternoon with Dad at the rehab center, today is his Birthday. He turned 93 today. We had a Birthday Cake and 11 people showed up, he was really surprised. Hopefully he’ll be home soon. Thank goodness for leftovers! Because I really didn’t feel like cooking and besides that the dinner last night was fantastic! So tonight I warmed up the Leftover Shrimp and Smoked Turkey Sausage Gumbo w/ Cornbread Ears.

 
To make last night’s dinner and turn it into tonight’s dinner I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base. First time used this with the Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. I just boiled the stock that was in the packet, Jalapeno Slices, sliced Butterball Hardwood Smoked Turkey Sausage, and a few shakes of the Frank’s Red Hot Sauce for 15 minutes. Then I added Extra Large Shrimp and simmered another 10 minutes. Said and done the Gumbo is ready to serve and It turned out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one nice hearty and delicious dinner.

It was one foggy morning out this morning! Looking out the window you could barely see our next door neighbor’s house. Went to Kroger this morning as the fog was breaking to pick up some items for tonight’s dinner and back home. Was able to get some yard work done before it got to hot and humid. It’s a pain trying to get stuff done in a wheelchair or motorized cart, but you have to do what you have to do to get things done. Then later I went and picked my Dad’s Birthday Cake up for his Birthday party tomorrow at the rehab center. He’ll be 93! I was watching a Cooking Show last night and they were making Gumbo and it looked too good! So for dinner tonight I made some Shrimp and Smoked Turkey Sausage Gumbo w/ Cornbread Ears.

Cook Time: 30 minutes
Makes 5 (1-cup) servings.

YOU WILL NEED:
1 package Zatarain’s® Gumbo Pasta Dinner Mix
1 tablespoon oil
1 pound andouille or other cooked sausage, cut into 1/2-inch slices
2 3/4 cups water

DIRECTIONS:
1. HEAT oil in large skillet (12-inch) on medium-high heat. Add sausage; cook and stir 5 minutes or until lightly browned.
2. STIR in water and Pasta Dinner Mix. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 15 minutes or until pasta is tender, stirring occasionally.
3. REMOVE from heat. Let stand 5 minutes. Sauce will thicken upon standing. Stir before serving.

VARIATIONS
Chicken Gumbo: Prepare as directed, using 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes, in place of the sausage. Cook and stir 5 minutes or until chicken is no longer pink.

Shrimp Gumbo: Prepare as directed in Step 1, using 1 pound medium shrimp, peeled and deveined, in place of the sausage. Cook and stir 3 minutes or just until shrimp turn pink. Remove shrimp from skillet. Continue as directed, stirring shrimp back into skillet after pasta is tender.
