Today’s Menu: Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs

 

 

For Breakfast I Poached an Egg and served it on a Thomas Light English Muffin. I also had a cup of Bigelow Decaf Green Tea. Light Rain and 48 degrees out today. Caught up on most everything, so not much to do. So I cleaned the Microwave, scrubbed all the Kitchen Counters, and straightened up the Pantry. That was it for the day. Well things are finally going to start opening up. Doctors Offices reopened Thursday. Churches, Retail Stores, Barbershops, and Beauty Salons are open next week. Hope all goes well and this virus goes away! For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni.

So for the Shrimp part of the dish I used Meijer Brand Frozen Jumbo Shrimp. This is my frozen Shrimp of choice, best I’ve found. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

I love having Shrimp with the Pasta Roni – Angel Hair Pasta with Herbs. It comes with the Pasta Special Seasonings Packet and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box, leftovers coming tomorrow. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one easily prepared and delicious Shrimp and Pasta Dish! For Dessert/Snack later a bowl of Smart Pop – Pop Corn with a Diet Dr. Pepper to drink.

 

 

 

 

 

Pasta Roni Angel Hair Pasta with Herbs

Our Pasta Roni Angel Hair Pasta with Herbs flavor blends delicate angel hair pasta in a creamy herb sauce with other natural flavors. This delicately flavored dish is the perfect complement to your family’s favorite Italian-inspired recipes.

What You’ll Do
1 – In a medium saucepan bring water, milk and butter or margarine to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil.

Fresh Garlic Shrimp Linguine
Shrimp add a hefty dose of high-quality protein to this traditional pasta dish!

Ingredients
6 ounces uncooked multigrain linguine or spaghetti, broken in half
1/2 pound raw shrimp, peeled and deveined
1/4 cup grated Parmesan cheese
3 tablespoons diet margarine
1 clove garlic, minced
1/2 teaspoon seafood seasoning
1/4 cup finely chopped fresh parsley (optional)
1/8 teaspoon salt (optional)

Directions
Yield: 4 servings
Serving size: 1 cup

1 – Cook linguine according to package directions, omitting salt and fat, about 7 minutes or until al dente. Add shrimp; cook 3 to 4 minutes or until shrimp are pink and opaque. Drain; transfer to medium bowl.

2 – Add cheese, margarine, garlic, and seafood seasoning; toss gently to coat. Add parsley and salt, if desired; toss to combine.

About that Shrimp……………..

 

Shrimp should have no black spots or melanosis on their shell, which indicates breakdown of the meat has begun. Likewise, avoid shrimp with yellowing shells or those that feel gritty as either may indicate the use of sodium bisulfite, a bleaching agent sometimes used to remove melanosis.

For maximum storage life and quality, freeze shrimp raw, with heads removed, but shells still on. Shrimp may also be frozen in water in a freezer container or wrap it well in plastic and place it in the coldest part of the freezer where it will keep for about one month.

Today’s Menu: Leftovers – Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread

 

 

To start the morning off I made a Breakfast Sandwich. I used Egg Beater’s Egg Whites, Johnsonville Turkey Sausage Patties, a slice of Boar’s Head Yellow Vermont Cheddar, and served it all on a toasted Thomas Light English Muffin. I also had my morning cup of Bigelow Decaf Green Tea. Very good Breakfast to start the day! Mostly sunny and 52 degrees out today, still windy. Did a load of laundry after Breakfast. Later I got my face cover on and got the cart out of the shed and took a quick ride around the neighborhood. I only saw 2 people out. I just hope this virus finally runs its course or they come up with a vaccine. For Dinner tonight I heated up the Leftover Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread. No way was I going to let these leftovers go to waste! 2nd time around was just as good! I’ve left the original post for description and directions of dish. Enjoy and Stay Safe Everyone!

Really looking forward to this meal tonight! So for Dinner tonight I’m preparing a Smoked Turkey Sausage and Shrimp Gumbo. Using the Zatrain’s Gumbo Mix, Butterball Hardwood Smoked Turkey Sausage, and a bag of Meijer Frozen Shrimp (Large Size). Add all together and I’ve one Delicious Meal coming!

 

To prepare it I got a large saucepan and sprayed it with Pam Non Stick Cooking Spray. Then added 6 cups of Water, bite sized sliced 1 1/2 Sausages of the Butterball Smoked Turkey Sausage, and the Gumbo Mix. Mixed until well blended together. I brought it to a boil; covered and simmered for 25 minutes.

 

 

 

 

Next as the Gumbo was cooking I got the Shrimp out of the fridge washed then and let then drain in a colander. Then with 15 minutes of cooking time left I added the Shrimp to the Gumbo, stirring again until well mixed. Continued for 15 minutes. Removed the pot from the heat and let it stand for 5 minutes before serving.

 

 

This made one excellent Gumbo Dish! The Mix itself was flavored perfect, spicy but not over powering. Then with the added Sausage and Shrimp, it just capped everything off! I added a few shakes of Frank’s Hot Sauce to the Dish also. Lots of delicious leftovers for tomorrow!

 

 

 

Then I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Perfect Bread with any Dish! For Dessert later a Sugar Free Dark Cherry Jello Cup.

 

 

 

 

 

 

 

 

 

ZATARAIN’S® GUMBO MIX WITH RICE

MICROWAVE DIRECTIONS
1. MIX 6 cups water and Gumbo Mix in 4-quart microwavable bowl until well blended.
2. For Chicken or Sausage Gumbo: Stir in chicken or sausage. Cover. Microwave on HIGH 30 minutes or until rice is tender, stirring occasionally.
For Seafood Gumbo: Cover. Microwave on HIGH 20 minutes, stirring occasionally. Stir in seafood. Cover. Microwave on HIGH 10 minutes longer or until rice is tender, stirring occasionally. Let stand in microwave 5 minutes.

For Breakfast I made a Ham and Cheese Egg White Omelet. I used Bob Evan’s Egg Whites, Meijer Cubed Ham, and Sargento Off the Block Cheddar Cheese. I also had a cup of my favorite Tea, Bigelow Decaf Green Tea. More rain today and every day until next Monday. So rain today and a high of 54 degrees. Well its week 2 of isolation. The Governor of Ohio has shutdown everything but Hospitals, Doctor’s Offices, Grocery Stores, essential Repair shops, and Drive Thru or Curb Side Restaurants. My cousin has been bringing us food and such when she ventures out. Also I’ve been ordering what food and needs on line but its tough finding it anymore. Most Stores are out of a lot of items but its starting to better. So wait is what we’ll do until the virus passes or a cure comes along. I hope all of you stay healthy! Pasta Roni Angel Hair Pasta with Herbs

1 – In a medium saucepan bring water, milk and butter or margarine to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil.
2 – Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently.
3 – Sauce will be thin. Let stand 3-5 min. to thicken.
