Veggie Patch Pizza
Looking for a delicious, homemade vegetarian pizza? You’ll love this recipe!

Ingredients
Preparation time: 25 minutes
Baking time: 22–30 minutes

Cooking spray
1 tablespoon cornmeal
1 can (10 ounces) refrigerated pizza crust dough
2 teaspoons olive oil
1 cup shredded part-skim mozzarella cheese
3 plum tomatoes, thinly sliced
1 small onion, thinly sliced and separated into rings
3 large mushrooms, thinly sliced
Half a 13.75-ounce can artichoke hearts, drained and sliced
Half a 14-ounce can hearts of palm, drained and sliced
1/2 cup pickled banana pepper rings
2 ounces provolone cheese, shredded or sliced into thin strips
1/2 teaspoon Italian seasoning

Directions
Yield: 13-inch pizza
Serving size: 1/8 of pizza

1 – Preheat oven to 400°F. Coat a 13-inch pizza pan or baking stone with cooking spray and sprinkle evenly with cornmeal. Place pizza dough on pan and, starting at center, press dough out with hands to cover pan. Using your fingertips or a pastry brush, coat dough lightly with olive oil. Bake 5–8 minutes, or until light golden. Remove crust from the oven and sprinkle evenly with mozzarella cheese. Cover with tomato slices, onion rings, mushrooms, artichoke hearts, hearts of palm, and banana pepper rings. Top with provolone cheese and sprinkle with Italian seasoning. Return pizza to the oven and bake 17–22 minutes more, or until crust is deep golden.

VEGETABLE LASAGNA
This recipe may be doubled and made in a 9×13 baking dish for 12 servings. Recipe for Vegetable Lasagna from our Main Dishes recipe section.

Ingredients

6 pieces Dreamfields Lasagna
1 tablespoon olive oil
2 cloves garlic, minced
3/4 cup sliced mushrooms
3/4 cup chopped zucchini (1 small zucchini)
1/2 cup sliced carrot
1/2 cup chopped red bell pepper
1/2 cup thinly sliced red onion
1/4 teaspoon black pepper
1/4 cup dry red wine
2 cups tomato-basil pasta sauce
1 cup part-skim ricotta cheese
1/4 cup grated Parmesan cheese
2 tablespoons commercial basil pesto
Nonstick cooking spray
3/4 cup (3 ounces) shredded part-skim mozzarella cheese

Directions

1 – Preheat oven to 375ºF.
2 – Cook lasagna according to package directions. Drain and cut each piece in half.
3 – Meanwhile, heat olive oil in medium saucepan over medium heat. Cook garlic 2 minutes, stirring frequently. Add mushrooms, zucchini, carrot, bell pepper, red onion and black pepper; cook 5 minutes, stirring frequently. Add wine; cook 3 minutes or until wine has evaporated. Add pasta sauce; bring to a boil. Reduce heat; simmer 10 minutes.
4 – In a small bowl combine ricotta cheese, Parmesan cheese and pesto.
5 – Spray 8-inch square baking dish with cooking spray. Spread 3/4 cup vegetable-pasta sauce in bottom of baking dish. Arrange 4 noodle halves over sauce. Top with one-third of cheese-pesto mixture, then 1 cup sauce. Repeat layers twice, using any remaining sauce on top. Sprinkle with mozzarella.
6 – Cover and bake at 375°F 30 minutes. Uncover and bake an additional 20 minutes. Let stand 10 minutes.
NOTES:
This recipe may be doubled and made in a 9×13 baking dish for 12 servings.

Individual Tomato Florentine Stratas

Recipe Ingredients:
2 cups torn fresh spinach (about 4 ounces)
1 1/2 cups (1-inch) whole wheat bread cubes (about 2 slices)
1 medium tomato, chopped
1 teaspoon dried Italian seasoning
4 large eggs
1 cup milk
1/4 cup shredded part-skim mozzarella cheese (1 ounce)

Cooking Directions:
1 – Preheat oven to 350°F (175°C).
2 – Place 1/2 cup spinach in each of four greased 10-ounce custard cups. Top with bread, dividing evenly.
3 – Toss tomato with Italian seasoning; spoon evenly over bread.
4 – Beat eggs and milk in medium bowl until blended. Slowly pour scant 1/2 cup egg mixture over tomato in each cup. Sprinkle with cheese.
5 – Place cups in a shallow baking pan.
6 – Bake in center of 350°F (175°C) oven until custards are puffed and begin to pull away from sides of cups and knife inserted near centers comes out clean, about 30 minutes.
Makes 4 servings.

Easy Homemade Diabetic Pizza Recipe
Your guests will love this fresh pizza straight out of the oven!

Ingredients
Preparation time:
20 minutes
Nonstick cooking spray
1/4 cup onion, diced
1/4 cup green pepper, diced
1/2 cup sliced mushrooms
1 teaspoon olive oil
8-ounce thin and crispy pizza crust
1/2 cup prepared pizza sauce
2 ounces sliced Canadian bacon or lean ham, cut into half-inch pieces
1 cup shredded part-skim mozzarella cheese

Directions
Yield: 8 slices
Serving size: 2 slices

1 – Preheat oven to 425°F. Spray a large skillet with nonstick cooking spray. Add onion, green pepper, and mushrooms and sauté over medium heat until soft, about two to three minutes. Remove from heat.

2 – Brush the olive oil over the top of the pizza crust. Spread the pizza sauce over the crust up to half an inch from the edge. Evenly sprinkle the sautéed vegetables, Canadian bacon, and mozzarella over the crust. Place pizza crust on oven rack or cookie sheet in the middle position of the oven. Bake for 7–10 minutes.

3 – Remove from the oven and let sit for 3–5 minutes at room temperature, then cut into eight slices.
