Italian Turkey Fettuccine
With a light, white wine based sauce, lean turkey tenderloins, and plenty of fresh veggies, this is a delicious Italian Turkey Fettuccine recipe that’s ready in under 30 minutes!

Total Time – 30 Minutes
Serving Size – 6 Servings

Ingredients
1 – (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins, cut into thin strips
1 – teaspoon olive oil
1 – cup shredded carrot
1 – cup shredded zucchini
1/2 – cup sliced green onion
1/2 – teaspoon dried oregano leaves
1/2 – cup cherry tomatoes, halved
1/2 – cup white wine
4 – cups fettuccine, cooked
1/4 – cup shredded Parmesan cheese

Directions
1) In skillet over medium-high heat, sauté turkey tenderloin strips in oil 8 to 10 minutes or until lightly browned. Always cook to well-done, 165°F. as measured by a meat thermometer.

2) Add carrot, zucchini, green onion and oregano. Cook 5 minutes, stirring frequently. Add tomatoes and wine. Simmer 2 to 3 minutes or until liquid has been reduced.

3) Toss with pasta. Sprinkle with cheese.

Asparagus and Scallion Omelet With Tortilla Wedges
Who says omelets are only for breakfast? This vegetarian meal is hearty enough for breakfast, lunch, or dinner!

Ingredients
8 ounces small asparagus spears, ends cut off
1/4 teaspoon black pepper, divided
1 teaspoon olive oil
5 large egg whites
1/8 teaspoon salt
1/16 teaspoon chipotle chili powder
2 tablespoons minced scallions
1/4 cup shredded parmesan cheese
1 (8-inch) whole wheat tortilla, heated and cut into wedges*

Directions
Yield: 2 servings
Serving size: 1/2 of total recipe

1. Preheat oven to 425°F. Place asparagus on baking sheet. Season with 1/8 teaspoon pepper and brush with oil. Roast 15 minutes, or until asparagus are golden brown and tender, shaking baking sheet occasionally. Remove and keep warm.

2. Beat egg whites together until foamy in large bowl. Mix in remaining 1/8 teaspoon pepper, salt, chili powder, scallions, and cheese.

3. Coat large skillet with nonstick cooking spray. Pour in egg white mixture. Cook over medium-high heat until edges of omelet are firm and lightly browned. Lift omelet at edges to allow uncooked mixture to pour to the bottom. Continue to cook until egg whites are firm and dry. Cut omelet in half and arrange each half on a plate. Top each with half of asparagus. Divide tortilla wedges between two plates.

Roasted Garlic-Parmesan Cauliflower
Following a ketogenic or otherwise low-carb diet? You’ll love this savory side! Made with cauliflower, extra-virgin olive oil, minced garlic, and shredded parmesan, it contains just 3

grams of carbs per serving, but is jam-packed with flavor!

Ingredients
Preparation time: 10 minutes
Baking time: 25 minutes

4 teaspoons (or 4 cloves) minced garlic
2 tablespoons extra virgin olive oil
1 large head cauliflower (about 2 3/4 pounds untrimmed), trimmed and separated into florets
Cooking spray
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup shredded Parmesan cheese

Directions
Yield: 6 cups
Serving size: 1/2 cup

1 – Preheat the oven to 425°F. Place garlic, olive oil, and cauliflower in a large zip-top bag; shake to coat cauliflower. Pour into a 9″ x 13″ glass baking dish or large casserole dish coated with cooking spray. Sprinkle evenly with salt and pepper. Bake for 20–25 minutes (or until tender when pierced with a fork); stir halfway through baking. Remove from the oven, sprinkle evenly with Parmesan cheese, and return to the oven for 1–2 minutes, or until cheese melts.

Mashed Potato Puffs
Low carb, fluffy, and the perfect accompaniment to meat or poultry!

Ingredients
1 cup prepared mashed potatoes
1/2 cup finely chopped broccoli or spinach
2 egg whites
4 tablespoons shredded Parmesan cheese, divided

Directions
Yield: 18 puffs
Serving size: 3 puffs

1 – Preheat oven to 400°F. Spray 18 mini (1 3/4-inch) muffin cups with nonstick cooking spray.

2 – Combine mashed potatoes, broccoli, egg whites and 2 tablespoons cheese in large bowl; mix well. Spoon evenly into prepared muffin cups. Top evenly with remaining 2 tablespoons cheese.

3 – Bake 20 to 23 minutes or until golden brown. To remove from pan, gently run knife around outer edges and lift out with fork. Serve warm.

Sara’s Guiltless Artichoke Dip
Low in calories, carbs, and fat, this artichoke dip pairs perfectly with veggies, pretzels, or crackers for a perfect pick-me-up!
Ingredients
8 light garlic-and-herb spreadable cheese wedges
1 can (about 14 ounces) artichokes packed in water, rinsed, drained, and coarsely chopped
1/2 cup (2 ounces) shredded reduced-fat mozzarella cheese
1/4 cup shredded Parmesan cheese
1 tablespoon light sour cream, plus additional if necessary
2 teaspoons fresh lemon juice
1/4 teaspoon ground red pepper
Assorted vegetable sticks, pretzel chips, and/or cracker

Directions
Yield: 2 cups
Serving size: 2 tablespoons

1 – Stir cheese wedges in medium microwavable bowl until smooth. Add artichokes, mozzarella cheese, Parmesan cheese, 1 tablespoon sour cream, lemon juice, and ground red pepper. Add additional sour cream, if necessary, to thin dip to desired consistency.

2 – Microwave on high 1 minute; stir. Microwave at 30-second intervals until heated through, stirring after each interval.

3 – Serve with assorted vegetable sticks, pretzel chips, and/or crackers.

LEMONY ANGEL HAIR TOSS
Ingredients

1 box Dreamfields Angel Hair
1/3 cup olive oil
1/3 cup fresh lemon juice
1/4 teaspoon salt
2 cups packed baby arugula
2 cups halved cherry and/or grape tomatoes, assorted colors if possible
1/3 cup freshly shredded Parmesan cheese
1/3 cup toasted pine nuts (optional)
Salt and pepper (optional)

Directions

1 – Cook pasta according to package directions. Drain; rinse in cold water or in ice water until completely cooled and drain well.
2 – Meanwhile, in small bowl, whisk together olive oil, lemon juice and salt. Toss with pasta.
3 – Add arugula, tomatoes and cheese to pasta. Toss gently to combine. Sprinkle with pine nuts and season with salt and pepper, if desired. Serve at room temperature or chilled.

Egg and Bacon Brunch Wraps
Canadian bacon, hot pepper sauce, and baby spinach make for a winning way to start the day!

Ingredients
1 cup cholesterol-free egg substitute
1/4 cup shredded Parmesan cheese
2 slices Canadian bacon, diced
1/2 teaspoon hot red pepper sauce
1/4 teaspoon black pepper
4 (7-inch) red chile tortillas or whole wheat tortillas
1 cup baby spinach leaves

Directions
Yield: 4 servings

1 – Preheat oven to 325°F. Combine egg substitute, cheese, bacon, red pepper sauce, and pepper in bowl. Pour into 9-inch glass baking dish sprayed with butter-flavored cooking spray. Bake 15 minutes, or until egg substitute is set. Remove from oven.

2 – Place tortillas in oven 1 minute or until soft and pliable. Cut egg substitute into quarters. Place 1 wedge in center of each tortilla. Top with 1/4 cup spinach leaves. Fold bottom of tortilla to center; fold sides to center to enclose filling and serve immediately.

Note: Canadian bacon comes from the loin of the pig. It is much more meaty and has less fat than traditional bacon. As a result, it tastes more like ham in flavor. In order to reduce the sodium in this recipe, try meatless bacon which is usually made with soy products.

ROTINI WITH GROUND BEEF AND SPINACH
A 10-ounce package of frozen chopped spinach thawed and well-drained can be substituted for fresh spinach. Recipe for Rotini with Ground Beef and Spinach from our Main Courses recipe section.

Ingredients

1 box Dreamfields Rotini, Penne Rigate or Elbows
1 tablespoon olive oil
1 cup chopped onion
3 large cloves garlic, minced
1 pound (90%) lean ground beef
1 can (8 ounces) no salt added tomato sauce
1 teaspoon dried oregano
1 package (10 ounces) spinach leaves, shredded
1/4 cup shredded fresh basil or 1 tablespoon dried
1/2 teaspoon crushed red pepper flakes
Salt (optional)
1/3 cup shredded Parmesan cheese

Directions

1 – Cook pasta according to package directions.
2 – Meanwhile, heat oil in large heavy skillet over medium heat. Cook onion and garlic 5 minutes, stirring occasionally. Add beef; cook until no longer pink, stirring and breaking beef into pieces.
3 – Stir in tomato sauce and oregano. Continue cooking 5 minutes, stirring frequently. Add spinach, basil and red pepper flakes; continue cooking 3 minutes. Season with salt, if desired.
4 – Drain pasta. Add to skillet; toss with beef mixture. Sprinkle with Parmesan cheese.
NOTES:
A 10-ounce package of frozen chopped spinach thawed and well-drained can be substituted for fresh spinach.

This week’s “Meatless Monday” Recipe of the Week is a LEMONY ANGEL HAIR TOSS. Made using; Dreamfields Angel Hair Pasta, Olive Oil, Lemon Juice, Baby Arugula, Cherry Tomatoes, Shredded Parmesan Cheese, and Toasted Pine Nuts. LEMONY ANGEL HAIR TOSS
Ingredients

1 box Dreamfields Angel Hair
1/3 cup olive oil
1/3 cup fresh lemon juice
1/4 teaspoon salt
2 cups packed baby arugula
2 cups halved cherry and/or grape tomatoes, assorted colors if possible
1/3 cup freshly shredded Parmesan cheese
1/3 cup toasted pine nuts (optional)
Salt and pepper (optional)

Directions

1 – Cook pasta according to package directions. Drain; rinse in cold water or in ice water until completely cooled and drain well.
2 – Meanwhile, in small bowl, whisk together olive oil, lemon juice and salt. Toss with pasta.
3 – Add arugula, tomatoes and cheese to pasta. Toss gently to combine. Sprinkle with pine nuts and season with salt and pepper, if desired. Serve at room temperature or chilled.

Recipe Yield: Makes 8 servings.
