Pimento cheese on crackers

In the cuisine of the Southern United States, pimento cheese is a spread or relish made with cheese, mayonnaise and pimentos. Elsewhere, different ingredients may be used. It is served on bread, crackers and vegetables, or in sandwiches.

Pimento cheese has been referred to as the “pâté of the south”, “Carolina caviar” and “the caviar of the South.”

The basic recipe has few ingredients: sharp cheddar cheese or processed cheese (such as Velveeta or American cheese), mayonnaise or salad dressing, and pimentos, blended to either a smooth or chunky paste. Regional ingredients include horseradish, cream cheese, salt and pepper, Louisiana-style hot sauce, Worcestershire sauce, cayenne pepper, paprika, jalapeños, onions, garlic, and dill pickles.

Pimento cheese can be served as a spread on crackers or celery, scooped onto corn chips or tortilla chips, mixed in with mashed yolks for deviled eggs, added to grits, or slathered over hamburgers or hotdogs.

A pimento cheese sandwich can be a quick and inexpensive lunch, or it can be served as a cocktail finger food (with crusts trimmed, garnished with watercress, and cut into triangles) or rolled up and cut into pinwheels. It is also a common snack in the Philippines, where it is referred to as cheese pimiento.

Pimento cheese sandwiches are a popular item at the Masters Tournament. Minor controversy ensued in 2013 when the Augusta National Golf Club switched food suppliers for the Masters and the new supplier was unable to duplicate the recipe used by the previous supplier, resulting in a sandwich with a markedly different taste.

8 ounce tub of original Beer Cheese

Beer cheese is a cheese spread most commonly found in Kentucky. Similarly named cheese products can be found in other regions of the United States, but beer cheese spread itself is not widely distributed. There are a number of different brands that are popular, most are similar in taste and texture.

Commercially produced beer cheese spread usually consists of a processed cheese base with a sharp cheddar flavor, while homemade varieties almost always start with sharp cheddar cheese. To this, enough beer is added to provide flavor and texture, as well as garlic, and a variety of spices including dry mustard, horseradish and cayenne pepper. Most varieties come in “mild” and “hot” versions, but all tend to have a strong garlic flavor. Beer cheese is traditionally served with saltine crackers, though it can be found served with various other crackers and crudités, most often as an appetizer.

While there are conflicting stories about beer cheese’s origins, it appears to have first been served in the 1940s at a restaurant in Clark County, Kentucky known as Johnny Allman’s. The owner of the restaurant, John Allman, credited the invention of the cheese spread to his cousin, Joe Allman, a chef in Phoenix, Arizona. Joe’s Southwestern influence is said by some to explain the spread’s spicy nature. The original Johnny Allman’s restaurant has changed ownership a couple of times since the 1940’s and is currently Hall’s on the River, located on the Kentucky River in Winchester, KY. The original beer cheese is still served at Hall’s on the River.

On February 21, 2013, the Kentucky Legislature decreed Clark County as the birthplace of beer cheese.

An annual Beer Cheese Festival is held in downtown Winchester, Kentucky (the county seat of Clark County) featuring local arts & crafts vendors as well as both commercial and amateur recipe contests.

Turkey Chili Con Queso
This hearty chip dip comes with all the cheesy, meaty goodness you love, without all the guilt. That’s the power of swapping in ground turkey for ground beef.

1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast – Raised without Antibiotics
3 tablespoons olive oil, divided
¼ cup finely chopped onion
2 cloves garlic, minced
2 teaspoons ground chili powder
1 teaspoon ground cumin
½ teaspoon kosher salt
1 (14.5-ounce) can diced tomatoes and green chilies, drained
3 tablespoons flour
2 cups milk
1½ cups sharp Cheddar cheese, shredded
serve with chips, if desired

1) In skillet cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add 1 tablespoon oil, onion and garlic cook over medium heat 5 minutes or until softened. Add chili powder, cumin, salt and drained tomatoes; stir. Remove from skillet and set aside. Wipe skillet clean.
2) Heat remaining 2 tablespoons oil. Whisk in flour until smooth and cook 1 minute. Gradually add milk, whisking constantly. Bring mixture to a boil. Reduce heat and gradually stir in cheese, stirring until smooth. Stir in reserved turkey mixture until thoroughly combined. Serve with chips, if desired.

Turkey Bacon Summer Salad


6 slices JENNIE-O® Turkey Bacon, crumbleTurkey Bacon Summer Salad
1 head fresh broccoli, diced
1 small head cauliflower, chopped
¾ cup shredded sharp Cheddar cheese
¼ red onion, chopped
½ cup creamy salad dressing
½ cup white sugar
2 tablespoons white vinegar


1) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.
2) In large bowl, add broccoli, cauliflower, cheese and onion; mix together. In small bowl, whisk salad dressing, sugar and vinegar until sugar is dissolved; pour over broccoli mixture and toss to coat. Refrigerate at least 30 minutes.
3) Stir crumbled bacon into salad just before serving.

* Always cook to an internal temperature of 165°F.

Today’s Menu: Jimmy Dean Delights Hickory Smoked Turkey Breast Sandwich w/ Campbell’s Creamy Tomato Soup

It was a cloudy and rainy day out today, still warm though it got up to 75 degrees. Cooler weather on the way though. Had to pick Mom up after she dropped her car off for some new tires. From there I ran her to Meijer so she could pick up a few items and back home. Besides that not much going on. I’m still enjoying this year’s crop on Washington State Honeycrisp Apples. Best year for Apples that I can remember, so big and juicy! Dinner tonight it’s Jimmy Dean Delights Hickory Smoked Turkey Breast Sandwich w/ Campbell’s Creamy Tomato Soup.





A while back I had tried the new Jimmy Dean Delights Smoked Ham Sandwich. I enjoyed it so much I went back and purchased another one and also picked up the Jimmy Dean Delights Hickory Smoked Turkey Breast Sandwich, which is what I had for dinner tonight. As the other one just microwave and it’s done. Easily fixed and delicious, plus it’s only 290 calories and 31 net carbs for 2 mini sandwiches. Topping the Hickory Smoked Turkey Breast is Applewood Smoked Bacon and Sharp Cheddar Cheese on a Honey Wheat Bun. Sounds good, it tastes even better! Jimmy Dean has another winner of a Sandwich along with the Smoked Ham Sandwich. The Bun stayed nice and fresh and all the ingredients worked perfectly and made one delicious sandwich. These are great items to have in your freezer.


Campbell's Creamy Tomato Soup


Then to go with the Smoked Turkey Sandwich I made some Campbell’s Creamy Tomato Soup. Another microwave product, just heat for 1 minute and 30 seconds and serve. Raised on Campbell’s Soup and still love the products. So for 2 minutes and 45 seconds of microwave I had my dinner, plus no cleanup! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.








Jimmy Dean Delights Hickory Smoked Turkey Breast Sandwich

A delicious hickory smoked turkey and applewood smoked bacon sandwich makes a stomach happy. Getting two for 290 calories will make you feel over the moon.

Jimmy Dean Delight's Smoked Turkey
* Sharp cheddar cheese and sliced applewood smoked bacon on a country bun
* 24 grams protein
* Fully cooked



Remove sandwiches from carton. DO NOT REMOVE FROM POUCH! Place Sandwiches in pouch, flat side (white side) down near edge of microwave turntable.
Microwave on HIGH as follows: If you don’t know the wattage of your microwave start with 1100 watts and add time if needed. Heating time: 1100 watts: 65-75 seconds; 700 watts: 1 minute 50 seconds 2 minutes.
Let stand 1 minute, before serving.
Caution: Product will be hot.



To heat one sandwich: Remove sandwich from pouch and wrap in a paper towel. Microwave on HIGH for 35 to 40 seconds or until hot.

For food safety and quality purposes, this product must be cooked to a minimum internal temperature of 160°F prior to eating. Due to differences in cooking equipment, cook times may require adjustment.
