Today’s Menu: Pan-Fried Oysters Recipe w/ Roasted Baby Red Potatoes and Roasted Asparagus

 

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Well my hearing is finally starting to coming back! The swelling in right ear is almost completely gone and no more soreness. Sure glad, I was starting to get worried. But hopefully the worst is over. I went to the doctor at 1:30 this afternoon and he said there a vast improvement and I should be fine. So for Dinner tonight I’m having Pan-Fried Oysters Recipe w/ Roasted Baby Red Potatoes and Roasted Asparagus.

 

 

 

I said a while back I was going to start having Oysters more often, and I have been. So anyway to prepare my Fried Oysters I’ll need; 12 large-medium Oysters (shucked), 1 tablespoon Flour, 1/4 cup Egg Beaters, 1 cup Shake and Bake Seasoned Panko Bread Crumbs, Sea Salt and Pepper (to taste), 2 to 3 tablespoons Extra Light Olive Oil. Hot sauce, Seafood Cocktail Sauce are all optional.

 

 

I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters. To prepare them; Place shucked oysters in a colander rinse in cold water and drain. Dredge drained oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. An easy way to coat the oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

 

 

 

Next, heat Oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot. Fry oysters until golden brown on one side, then turn over each oysters carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately. Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce. I served mine with some Tarter Sauce with a side of my favorite hot sauce Frank’s Hot Sauce. I don’t know why I don’t have these more often! They’re so delicious, golden brown, and with an incredible fresh flavor.

 

 

For one side I prepared some Roasted Baby Red Potatoes. Preheated the oven on 400 degrees. Next, I washed and scrubbed the Potatoes off. To prepare them I needed; 1 tablespoon Extra Light Olive Oil, Dried Rosemary, Dried Thyme, McCormick Grinder Sea Salt and Peppercorn Medley. I start by heating up a Cast Iron Skillet on medium heat and as that’s heating up I cut the Baby Red Potatoes in half. Combined all ingredients in a large bowl and added the Potatoes. Toss to coat Potatoes and added them to the Skillet. Fry them about 4-5 minutes and transfer the Skillet to the oven, for about 15 – 20 minutes until they are fork tender. This is why I love using Cast Iron Skillets, from the stove to the oven, and then an easy clean up.

 

For another side I prepared some Roasted Asparagus. I love pairing Asparagus with Potatoes! To prepare it I’ll need; 1 bunch of Purple Asparagus (fibrous bases removed), 1 Tablespoon of Crumbled Bacon or Bacon Bits, Ground Garlic Salt, Sea Salt, Freshly Ground Black Pepper, and 1 tbsp Extra Light Olive Oil. To prepare it is easy; Preheat the oven to 400F. Place asparagus in a baking tray sheet. Add the bacon, garlic salt, salt, pepper, and olive oil and toss to coat. Bake for 12 minutes. Remove from oven. Cool a couple of minutes and serve! Comes out tender and delicious!

 

 

 

I also baked a slice of New York Bakery Lite Texas Toast, It’s fewer calories, carbs, and fat than normal Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

 

 

 

Pan-Fried Oysters Recipe:

Ingredients:

12 large-medium Oysters, shucked
1 tablespoon Flour
1 Eggs, beaten or 1/4 cup egg Beater’s
1 cup Shake and Bake Seasoned Panko Bread Crumbs
Sea Salt and Pepper, to taste
2 to 3 tablespoons Extra Light Olive Oil
Lemon Wedges, optional
Hot sauce, optional
Seafood Cocktail Sauce, optional

Preparation:

Place shucked oysters in a colander to drain.

1 – Dip drained oysters in flour, then beaten eggs, shake off excess, and in panko crumbs seasoned with salt and pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. NOTE: An easy way to coat the oysters with the panko crumbs is to place the crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

2 – Heat canola oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot.

3 – Fry oysters until golden brown on one side, then turn over each oysters carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately.

Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce.

Makes 2 servings.

Today’s Menu: Fried Oyster Mini Po’ Boy w/ Baked Fries

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. A bit hotter out there today, 88 degrees and humid. I guess our mild August days have ended, at least for now. After Breakfast i took my car up to get it washed and vacuumed on the inside. Laid back day, all caught up on cleaning. I did do a load of laundry and after Lunch I straightened up the Pantry. For Dinner tonight its a Fried Oyster Mini Po’ Boy w/ Baked Fries.

 

 

I love Fried Oysters, just can’t have them enough! To prepare them I’ll need; 1 container of Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, 1 tablespoon Flour, 1/4 cup Egg Beaters, 1 cup Shake and Bake Seasoned Panko Bread Crumbs, Sea Salt and Pepper (to taste), 2 to 3 tablespoons Extra Light Olive Oil. Louisiana Remoulade Sauce, Louisiana Tarter Sauce, Lettuce, and Aunt Millie’s Reduced Fat Hot Dog Buns. I’m making my Oysters the same way i usually do except I’m making a Mini Po’ Boy Sandwich out of them.

Fry Oysters until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and make your Po’Boy!

 

 

 

I took an Aunt Millie’s Reduced Fat Hot Dog Bun and split it open, length wise. On the bottom bun I spread a small amount of the Tarter Sauce on it. Next I layered my Fried Oysters, followed by the Shredded Lettuce, and then on the bottom of the top bun I spread the Remoulade Sauce. Just another way to serve these mouth-watering delicious Fried Oysters! The Oysters cam out delicious as always and the 2 Louisiana Sauces combined perfectly to kick this Po’ Boy up another notch! Excellent Sandwich.

 

 

To go with the Fried Oyster Po’ Boy I baked up some Alexia Organic Yukon Select Fries. Seasoned them with Morton’s Lite salt and Ground Black Pepper. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right.! Plus they are only 120 calories and 15 net carbs. Served with a side of my favorite Ketchup, Hunt’s Ketchup. I had a Diet Dr. Pepper to drink. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

I made some Waffles this morning for Breakfast I made them with Bisquick Heart Smart Mix, I also used Egg Beater’s in place of the Eggs. I used Maple Grove Farms Sugarless Maple Syrup to top them with. Then I also prepared a couple of Jennie – O Turkey Breakfast Sausage Links. Also had a cup of Bigelow Decaf Green Tea. I went out to get the Sunday Morning Papers this morning and it was already very humid out. For the day mostly sunny and 86 degrees, nice but hot and humid. Mom went to Church and I stayed home to keep an eye on Dad. It’s to the point now we can’t really leave him by himself. But its all worth it if we can keep him home instead of a Retirement or Assisted Living Home. Cleaned the house and cleaned up around outside. Had everything done after Lunch so I laid back and watched some TV. For Dinner tonight Pan-Fried Oysters Recipe w/ Roasted Baby Red Potatoes and Roasted Purple Asparagus.

For another side I picked up more of the Purple Asparagus at Mejier. It tastes like Green Asparagus but it’s less fibrous and sweeter due to a higher sugar content. I prepared it the same way as the Roasted Asparagus I’ve made before. I’ll need; 1 bunch of Purple Asparagus (fibrous bases removed), 1 Tablespoon of Crumbled Bacon or Bacon Bits, Ground Garlic Salt, Sea Salt, Freshly Ground Black Pepper, and 1 tbsp Extra Light Olive Oil. To prepare it is easy; Preheat the oven to 400F. Place asparagus in a baking tray sheet. Add the bacon, garlic salt, salt, pepper, and olive oil and toss to coat. Bake for 12 minutes. Remove from oven. Cool a couple of minutes and serve! Comes out tender and that slight sweet taste to it. Really like the Purple Asparagus over the Green Asparagus!

Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs

 

 

 

For Breakfast on this beautiful Sunday Morning I reheated 3 of the Potato Pancakes leftover from last night’s Dinner, love these things! I also toasted 2 slices of Healthy Life Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Another gorgeous day out there again. Sunny and 75 degrees, and no humidity. It’s unusual for this area to have weather like this at the end of June. Usually the high humidity has set in for the Summer and high temps. After Breakfast I headed to Meijer for a few items and picked up Breakfast for Mom and Dad at McDonald’s for them. Did a load of laundry and some light house cleaning, not a lot going on after that. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.

 

Purchased the Cod Loin Fillets at Kroger and had them in the freezer. So I laid a fillet in the fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish.

 

Then for a side dish I prepared I had some Alexia Potato Puffs, that I had leftover in the freezer. To prepare them; Preheat the oven to 425 degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. Excellent Potato Product, browned up perfect with excellent seasoning. For dessert later a 100 Calorie Breyer’s Vanilla Ice Cream Cup that I topped with some Smucker’s Sugar Free Hot Fudge Topping.

 

 

 

Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

More rain moving back in tonight. Along with that the pollen and spore count is high today, and I can tell it with my allergies! We had to have Dad at the optometrist at 9:00 this morning, he needs new glasses. Back home did a few things around the yard and shed and then took the cart out for a spin around the neighborhood. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.

Today’s Menu: Panko Crusted Cubed Pork Steak w/ Gravy, Mashed Potatoes, and Vegetarian Baked Beans

I fasted overnight I had to got the Urologist for my yearly checkup at 8:00 this morning. After that I headed off to Meijer, I just needed a few items. Back home I did some house cleaning and finished up a couple of loads of laundry for Mom. After Lunch I went to spend the afternoon with Dad at the rehab center. He’s taking therapy twice a day still and getting stronger!. So for dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Vegetarian Baked Beans.

 

 

I bought a of packages of Cubed Pork Steak at Kroger the other day. To prepare them, I got the big three out to bread it with; Flour,Egg Beater’s, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Cubed Pork Steak Sandwich Shake and Bake 001Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater’s shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered. I heated up a medium size skillet, that I drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes per side, till each side was golden brown. Topped it with some Pioneer Peppered White Gravy. The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika and all the other ingredients. As you can tell in the picture, the Steaks are huge so I cut them half, I’ll have the other half for Breakfast in the morning.

For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. Topanko-crusted-cubed-pork-steak-w-gravy-mashed-potatoes-and-gre-002 prepare it just heat it up in the microwave for 6 minutes and it’s ready. To top my Mashed Potatoes and Cubed Pork Steak I made some Pioneer Peppered White Gravy. Another quick and easy prep and comes out piping hot and delicious. I topped both my Mashed Potatoes and Cubed Steak with it.

Then for another side I prepared some Bush’s Reduced Sodium Vegetarian Baked Beans. I had tried these a while back and fell in love with the flavor and taste of the Vegetarian Beans! Only 130 calories, 0 fat, and 24 net carbs per serving. To prepare the; just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans! I also baked a loaf of LaBrea French Bread. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

For Breakfast I had a toasted Healthy Life Whole Grain English Muffin that I topped with I Can’t Believe It’s Not Butter and a cup of Bigelow Decaf Green Tea. Did some light house cleaning and gave Mom a hand with a couple of loads of laundry. Then after Lunch headed over to see Dad. He’s showing improvement, it’s just wait and see now. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.

 

 

Purchased the Cod Loin Fillets at Kroger the other day and had them in the freezer. So I laid a fillet of it in the fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with Panko Crusted Cod Fish Sandwich w Baked Crinkle Fries 001McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish.

 

Alexia Potato Puffs

Then for a side dish I prepared some Alexia Potato Puffs. To prepare them; Preheat the oven to 425 degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. And we have another Keeper Potato Product! Browned up perfect with excellent seasoning. For dessert later a 100 Calorie Breyer’s Vanilla Ice Cream Cup.

 

 

 

 

 
Panko Crusted Cod Fish Sandwich

Ingredients:Panko Crusted Cod Fish Sandwich w Baked Potato 002

(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.

Today’s Menu: Panko Crusted Cubed Pork Steak w/ Gravy, Mashed Potatoes and Green Beans

 

 
For Breakfast this morning I made a packet of Pioneer Peppered Whit Gravy. Toasted a couple of slices of Healthy panko-crusted-cubed-pork-steak-gravy-mashed-potatoes-green-bn-002Life Whole Grain Bread and fried a couple of Jimmy Dean Turkey Sausage Patties. Topped all off with a cup of Bigelow Decaf Green Tea. And that’s the way to start off the 1st day of February! Wow, January flew by! Did some house cleaning and finished up a couple of loads of laundry for Mom. After Lunch I went to spend the afternoon with Dad at the rehab center. He’s taking therapy twice a day there. I think he’s making progress, I just hope he can get strong enough to come home. So for dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Green Beans.

Pioneer Brand Peppered White Gravypioneer

IngredientsPioneer
Vegetable Shortening (Partially Hydrogenated Soybean and/or Cottonseed Oil), Bleached and Enriched Wheat Flour (Bleached Wheat Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Food Starch-modified, Corn Syrup Solids, Salt, Maltodextrin, Sodium Caseinate (A Milk Derivative), Mono and Diglycerides, Black Pepper, Sodium Citrate, Dipotassium Phosphate, Carrageenan, Artificial Flavor, Artificial Color.

Directions
1. Blend Peppered Gravy Mix with 1/2 cup cool water. Mix or whisk until lump free. Set Gravy Mix blend aside. 2. Bring 1-1/2 cups water to a full rolling boil. 3. Pour the Gravy Mix Blend into the boiling water. Stir vigorously with a fork or whisk until thickened. Remove from heat.

It was Jennie -O Turkey Sausage Links, Simply Potatoes Shredded Hash Browns, and a slice of toasted Healthy Life panko-crusted-cubed-pork-steak-gravy-mashed-potatoes-green-bn-002Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Meijer had been out of the Jennie – O Turkey Sausage links for quite a while but they finally had them back stock the other day. Right after Breakfast I had to go to Walmart for a couple of items, ended up with more than what I went for! I noticed Walmart had added quite a few new items, that’s a good thing. Not too bad out there today, 42 degrees and partly sunny. Cleaned the house today, ran the vacuum, dusted, etc. After Lunch I was in a Boggle Word Tournament online. Love playing Boggle. Ended up finishing in the top ten out of 72 people, not too bad. So for dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Green Beans.

Today’s Menu: Cubed Pork Steak Sandwich w/ Baked Crinkle Fries

 

 
For Breakfast this morning I reheated the Skillet Potatoes and Ham leftover from Breakfast yesterday. I used 1 Cubed Pork Steak Sandwich w Baked Fries 007package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped everything with a fried Sunny Side Up Egg and a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar. I went out to get the Sunday Morning Papers and it is down right cold out there! About 24 degrees with one cold wind blowing, chill factor in the teens. Had a of 40 degrees and cloudy out for the day. After I had Breakfast I went to McDonald’s to pick up Breakfast for Mom and Dad. Not a lot to do today so I got the paper shredder out and shredded a few months of past bills and old insurance statements. After that it was an afternoon of NFL Football. For Dinner tonight I prepared a Cubed Pork Steak Sandwich w/ Baked Fries.

 
I had a of package of Cubed Pork Steak that I purchased from Walmart a day ago. To prepare it I got the big three of Cubed Pork Steak Sandwich Shake and Bake 001breading out to bread it with; Flour, Egg Beater’s, and Panko Bread Crumbs. The Walmart Cubed Pork Steaks were very good, tender and moist.

The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika and all the other ingredients. Served it on a Aunt Millie’s Reduced Calorie Hamburger Bun and topped with some French’s Brown Spicy Brown Mustard. I fried both patties in the package, I’ll have the other one for Lunch tomorrow. The Pork and Panko are a perfect match and the Spicy Brown Mustard tops everything off. First time I had tried the Walmart Cubed Pork Steaks. They were very good, tender and moist.

For a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. For dessert later a Weigh Watchers Divine Triple Chocolate Ice Cream Bars.
