Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs

 

 

 

For Breakfast I had a toasted Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and a cup of Bigelow Decaf Green Tea. Mostly cloudy and 82 degrees. More rain moving back in tonight. Along with that the pollen and spore count is high today, and I can tell it with my allergies! We had to have Dad at the optometrist at 9:00 this morning, he needs new glasses. Back home did a few things around the yard and shed and then took the cart out for a spin around the neighborhood. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.

 

Purchased the Cod Loin Fillets at Kroger and had them in the freezer. So I laid a fillet of it in the fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love having Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish.

 

I had some of the Alexia Potato Puffs leftover so I decided to have them as a side. To prepare them; Preheat the oven to 425 degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. They bake up perfect with excellent seasoning. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

 
Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Today’s Menu: Panko Crusted Cubed Pork Steak w/ Gravy, Mashed Potatoes, and Vegetarian Baked Beans

I fasted overnight I had to got the Urologist for my yearly checkup at 8:00 this morning. After that I headed off to Meijer, I just needed a few items. Back home I did some house cleaning and finished up a couple of loads of laundry for Mom. After Lunch I went to spend the afternoon with Dad at the rehab center. He’s taking therapy twice a day still and getting stronger!. So for dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Vegetarian Baked Beans.

 

 

I bought a of packages of Cubed Pork Steak at Kroger the other day. To prepare them, I got the big three out to bread it with; Flour,Egg Beater’s, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Cubed Pork Steak Sandwich Shake and Bake 001Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater’s shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered. I heated up a medium size skillet, that I drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes per side, till each side was golden brown. Topped it with some Pioneer Peppered White Gravy. The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika and all the other ingredients. As you can tell in the picture, the Steaks are huge so I cut them half, I’ll have the other half for Breakfast in the morning.

For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. Topanko-crusted-cubed-pork-steak-w-gravy-mashed-potatoes-and-gre-002 prepare it just heat it up in the microwave for 6 minutes and it’s ready. To top my Mashed Potatoes and Cubed Pork Steak I made some Pioneer Peppered White Gravy. Another quick and easy prep and comes out piping hot and delicious. I topped both my Mashed Potatoes and Cubed Steak with it.

Then for another side I prepared some Bush’s Reduced Sodium Vegetarian Baked Beans. I had tried these a while back and fell in love with the flavor and taste of the Vegetarian Beans! Only 130 calories, 0 fat, and 24 net carbs per serving. To prepare the; just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans! I also baked a loaf of LaBrea French Bread. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.

Today’s Menu: Panko Crusted Cubed Pork Steak w/ Gravy, Mashed Potatoes and Green Beans

 

 
For Breakfast this morning I made a packet of Pioneer Peppered Whit Gravy. Toasted a couple of slices of Healthy panko-crusted-cubed-pork-steak-gravy-mashed-potatoes-green-bn-002Life Whole Grain Bread and fried a couple of Jimmy Dean Turkey Sausage Patties. Topped all off with a cup of Bigelow Decaf Green Tea. And that’s the way to start off the 1st day of February! Wow, January flew by! Did some house cleaning and finished up a couple of loads of laundry for Mom. After Lunch I went to spend the afternoon with Dad at the rehab center. He’s taking therapy twice a day there. I think he’s making progress, I just hope he can get strong enough to come home. So for dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Green Beans.

Vegetable Shortening (Partially Hydrogenated Soybean and/or Cottonseed Oil), Bleached and Enriched Wheat Flour (Bleached Wheat Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Food Starch-modified, Corn Syrup Solids, Salt, Maltodextrin, Sodium Caseinate (A Milk Derivative), Mono and Diglycerides, Black Pepper, Sodium Citrate, Dipotassium Phosphate, Carrageenan, Artificial Flavor, Artificial Color.

Directions
1. Blend Peppered Gravy Mix with 1/2 cup cool water. Mix or whisk until lump free. Set Gravy Mix blend aside. 2. Bring 1-1/2 cups water to a full rolling boil. 3. Pour the Gravy Mix Blend into the boiling water. Stir vigorously with a fork or whisk until thickened. Remove from heat.

It was Jennie -O Turkey Sausage Links, Simply Potatoes Shredded Hash Browns, and a slice of toasted Healthy Life panko-crusted-cubed-pork-steak-gravy-mashed-potatoes-green-bn-002Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Meijer had been out of the Jennie – O Turkey Sausage links for quite a while but they finally had them back stock the other day. Right after Breakfast I had to go to Walmart for a couple of items, ended up with more than what I went for! I noticed Walmart had added quite a few new items, that’s a good thing. Not too bad out there today, 42 degrees and partly sunny. Cleaned the house today, ran the vacuum, dusted, etc. After Lunch I was in a Boggle Word Tournament online. Love playing Boggle. Ended up finishing in the top ten out of 72 people, not too bad. So for dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Green Beans.

Today’s Menu: Cubed Pork Steak Sandwich w/ Baked Crinkle Fries

 

 
For Breakfast this morning I reheated the Skillet Potatoes and Ham leftover from Breakfast yesterday. I used 1 Cubed Pork Steak Sandwich w Baked Fries 007package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped everything with a fried Sunny Side Up Egg and a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar. I went out to get the Sunday Morning Papers and it is down right cold out there! About 24 degrees with one cold wind blowing, chill factor in the teens. Had a of 40 degrees and cloudy out for the day. After I had Breakfast I went to McDonald’s to pick up Breakfast for Mom and Dad. Not a lot to do today so I got the paper shredder out and shredded a few months of past bills and old insurance statements. After that it was an afternoon of NFL Football. For Dinner tonight I prepared a Cubed Pork Steak Sandwich w/ Baked Fries.

The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika and all the other ingredients. Served it on a Aunt Millie’s Reduced Calorie Hamburger Bun and topped with some French’s Brown Spicy Brown Mustard. I fried both patties in the package, I’ll have the other one for Lunch tomorrow. The Pork and Panko are a perfect match and the Spicy Brown Mustard tops everything off. First time I had tried the Walmart Cubed Pork Steaks. They were very good, tender and moist.

For a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. For dessert later a Weigh Watchers Divine Triple Chocolate Ice Cream Bars.

It was Jennie -O Turkey Sausage Links, Simply Potatoes Hash Browns, and a slice of toasted Healthy Life Whole Grain Bread. After Breakfast I got the leaf blower out, amazing how quickly leaves and twigs gather around our deck and driveway! So I cleaned off those areas. Inside I put up some new plastic molding on the corners of room entrances. Having a Hoveround mobility chair in close quarters the molding is a must! After that watched some College Football up until Dinner. And for dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Green Beans.

 

 
I bought a of packages of Cubed Pork Steak at Kroger the other day. So I got the big three out to bread it with; Flour, Panko Crusted Cubed Pork Steak 001Egg Beater’s, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater’s shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered. I heated up a medium size skillet, that I drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes per side, till each side was golden brown. Topped it with some Pioneer Peppered White Gravy. The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika and all the other ingredients. As you can tell in the picture, the Steaks are huge so I cut them half, Mom and Dad split one of them and I’ll have the other half for Breakfast in the morning.

Mashed Potatoes
For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. To top my Mashed Potatoes and Cubed Pork Steak I made some Pioneer Peppered White Gravy. Another quick and easy prep and comes out piping hot and delicious. I topped both my Mashed Potatoes and Cubed Steak with it. Then I also heated up a small can of Del Monte Cut Green Beans. One delicious Country Comfort Food Dinner tonight! For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

 

 

 

 

 

Pioneer
Pioneer Brand Peppered White Gravy

Ingredients
Vegetable Shortening (Partially Hydrogenated Soybean and/or Cottonseed Oil), Bleached and Enriched Wheat Flour (Bleached Wheat Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Food Starch-modified, Corn Syrup Solids, Salt, Maltodextrin, Sodium Caseinate (A Milk Derivative), Mono and Diglycerides, Black Pepper, Sodium Citrate, Dipotassium Phosphate, Carrageenan, Artificial Flavor, Artificial Color.

Directions
1. Blend Peppered Gravy Mix with 1/2 cup cool water. Mix or whisk until lump free. Set Gravy Mix blend aside. 2. Bring 1-1/2 cups water to a full rolling boil. 3. Pour the Gravy Mix Blend into the boiling water. Stir vigorously with a fork or whisk until thickened. Remove from heat.

I toasted a Healthy Life Whole Grain English Muffin that I lightly Buttered with I Can’t Believe It’s Not Butter for Breakfast this morning. I also had my morning cup of Bigelow Decaf Green Tea. Cleaned the house today from top to bottom. Expecting company later in the day Wednesday. Still in the hot, humid, and showers weather pattern outside. For Dinner tonight I prepared Cubed Pork Steak Sandwich w/ Baked Fries.

 

 

 

Cubed Pork Steak Sandwich Shake and Bake 001

I had a of package of Cubed Pork Steak that I purchased from Kroger in the freezer. I sat it in the fridge to thaw overnight. To prepare it I got the big three of breading out to bread it with; Flour, Egg Beater’s, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Served it on a Aunt Millie’s Reduced Calorie Hamburger Bun and topped with some French’s Brown Spicy Brown Mustard. I fried both patties in the package, I’ll have the other one for Lunch tomorrow. The Pork and Panko are a perfect match and the Spicy Brown Mustard tops everything off.

Then for a side I baked some Alexia 98% Fat Free Roasted Straight Cut Fries with Sea Salt. First time trying these. I’ve been using the Alexia Organic Yukon Select Fries but came across these at Jungle Jim’s Market last week and wanted to give them a try! To prepare them I baked them at 425 degrees for 17 minutes. They bake up beautifully and seasoned just right, another excellent Fry from Alexia! For dessert later a SO Delicious Mini Ice Cream Sandwich.

Happy 4th of July everyone! Hope you have a fun one and safe one. I started my day off by Scrambling 2 Eggs and Cubed Pork Steak Sandwich w Baked Fries 007Toasted a couple of slices of Healthy Life Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Well I was caught up on all the house work, inside and outside. So it was a kick back day around the house today. I was a slug all day! Played around on the computer, got in an online Boggle Game. Then got caught up on some programs that I had recorded. Relaxed, kickback day. For Dinner tonight I prepared a Cubed Pork Steak Sandwich w/ Baked Fries.

For Breakfast I had a toasted Healthy Life Whole Grain English Muffin that I topped with I Can’t Believe It’s Not Butter and a cup of Bigelow Decaf Green Tea. Then about 11:00 Dad finally made it back home! It’s been a struggle for him since the collapsed lung, he was in rehab over 2 months. But at almost 95 years old it’s tough to come back. Good to have him home. Not as hot and a lot less humid out today. Sunny and 84 degrees out. Did some cleaning on the outside of the house and got the cart out for a spin around the neighborhood. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.

 

 

I had the Cod in the freezer. So I laid a package of it in the fridge overnight to thaw. To prepare thePanko Crusted Cod Fish Sandwich w Baked Crinkle Fries 001 Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish.

 

Alexia Potato Puffs
Then for a side dish I prepared some Alexia Potato Puffs. Second time I’ve had these and really like them! To prepare them; Preheat the oven to 425 degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. And we have another Keeper Potato Product! Browned up perfect with excellent seasoning. For dessert later a bowl of Breyer’s Low Carb Vanilla Ice Cream.

 

 

 

 

Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Orange Roughy or Cod FilletsPanko Crusted Cod Fish Sandwich w Baked Potato 002
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.
