Another perfect day outside, hope our streak continues! Moving sort of slow earlier today, stayed up late watching the Cincinnati Reds and Cardinals play a 16 inning ball game last night. Managed to go to the store and picked up a few items to make a Cheesecake for dessert tonight. For dinner it’s one of my favorites, Black Bean and Turkey Tacos.

 

 

I used the leftover Jennie – O Extra Lean Ground Turkey Breast from last night when I made a Turkey Burger. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. I love pairing the Black Beans with Ground Turkey. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 

For my other toppings I used 1 can Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn, 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, a bag of Dole Shredded Lettuce, and all in a Ortega Whole Grain Corn Taco Shells. I love these Tacos! The crunch of the shells and all the different flavors and spices make a perfect Taco. For dessert later Cheesecake. A perfect day out today. It’s been 77 degrees, a slight cool breeze, and sunny. They say in the morning a low in the mid 40’s! Just spent the day outside enjoying the weather. For dinner it was Pizza Night, Turkey Sausage and Turkey Pepperoni Pizza.

 

 

I tried a new Pizza Crust (Pie), Meijer Pizza Thin Crusts. Their 130 calories and 19 net carbs for a half Pizza. So eating a full one would only be 260 calories and 38 carbs, not too bad. For my toppings I used Jennie – O Lean Breakfast Sausage (Which I fried ahead of time), Hormel Turkey Pepperoni, Sargento Reduced Fat Shredded Mozzarella, Ragu Original Pizza Sauce, Sliced Baby Bella Mushrooms, 1/2 (Small) Can Sliced Black Olives, and 3 Thin Slices of Anchovies (Chopped).

 

 

I preheated the oven on 425 degrees. I then brushed a light coating of Extra Virgin Olive Oil and then added my toppings. Baked for about 7 minutes and then turned the broiler on and baked it an additional 1 minute. By using the broiler for a minute or so it crisped the crust a little and browned the cheese a bit, perfect! Great call on dinner tonight as it the spot, made 2 of them one for my dinner and one for Mom and Dad to snack on later tonight. For dessert later a Del Monte Mango Chunk Cup.

Happy Labor Day everyone, hope you had a fun one! It’s been real muggy out today, and a rain shower late afternoon which made it worse. Not much going on, went to the store early and that was about it. For dinner tonight I prepared a Baked Ham and Swiss Hoagie w/ Baked Fries.

 

 

I used Aunt Millie’s Deli Style Whole Grain Mini Sub Buns and then for the Ham I used Kroger Brand Private Selection Oven Roasted Rosemary Ham. This has become my favorite packaged Hams incredible taste and it’s 70 calories and 1 carb per serving. The slices are very thin so I used a double serving of it on the Hoagie. I topped it with a new spread/dressing, Hidden Valley Smoked Bacon Ranch Sandwich Spread. Word of caution, this stuff is so good you’ll get a spoon and just eat from the jar! I think it’s new, I had a coupon I got from Sunday’s Paper and that’s how I found out about it. When at Walmart earlier I seen they had it in stock. They had about 4 different varieties of it and I went with the Smoked Bacon Ranch Dressing. I also topped it with 2 slices of Sargento Ultra Thin Swiss Cheese.

 

 

I preheated the oven to 350 degrees and while that was heating up I combined tbsp. of Blue Bonnet Light Butter (Melted) , 1/2 tsp. dried onion, 1 tsp. Worchestershire sauce, 1 1/2 tsp. Poppy Seed dressing, and 1/2 tsp. yellow mustard. Mixed it to it was well combined. Poured the mixture over the sandwich. Covered it with foil and baked at 350 degrees for 15 minutes then remove foil and bake an additional 10 minutes to allow the rolls to crisp. Remove from oven to cool and served. Great recipe for Baked Ham and Swiss Sandwiches! The Poppy Seed Dressing Mixture that tops the Hoagie pulls everything together, all kinds of flavor! I also baked some of the Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, love these fries! For dessert later a bowl of fresh sliced Peaches.

While at Walmart the other day I wanted to buy a package of Ball Park Smoked White Turkey Franks but they were out of stock on it, or they failed to restock it, so I picked up a package of Oscar Mayer Extra Lean Turkey Franks. I’m back up to par today! My voice is back and full of energy. Well we’ve ben lucky avoiding the heat and humidity for the most part this Summer but our luck has run out. High 80’s to low 90’s and very humid most of this week, thank goodness for air – conditioning. For dinner I prepared Turkey and Black Bean Tacos w/ Refried Beans.

 

 

I love Tacos! So versatile, you can put about anything you want in them and so many varieties of Taco Shells. For my Tacos I used Jennie – O Extra Lean Ground Turkey Breast, 120 calories and 0 carbs. My favorite Ground Turkey there is. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As i added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, i drained and rinsed them before I added them. I’ve found Black Beans are a perfect pairing with Ground Turkey.

Went to the store early this morning to pick up some Turkey Meatballs for tonight’s dinner. They say lows in the 50’s in the mornings and highs in the 70’s during the day! Incredible August weather. For dinner a classic comfort food, Spaghetti and Turkey Meatballs.

 

Spaghetti and Turkey Meatballs just sounded good for dinner. I used Ronzoni Healthy Harvest Whole Wheat Spaghetti and Turkey Meatballs along with Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I’ve found, fantastic taste and their 190 calories and 6 carbs for 3 Meatballs. Topped everything with some fresh grated Parmesan Cheese and Bella Vita Low Carb Pasta Sauce (Meat Flavored). I added a few sliced Baby Bella Mushrooms to the Sauce. Along with the great taste the Sauce is only 70 Calories and 6 Carbs! At the end of the post I left the product description for the Ronzoni Spaghetti and the Bella Vita Pasta Sauce. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Today’s Menu: Progresso Kitchen Favorites Classic Lasagna w/ Baked Artisan Multi Grain Breadlasagna

 

 

 

Another Spring like day in August, we’ll take it! I rarely play the lottery but had to take a chance on it today, Powerball topping out at $400 Million! Odds are against you winning it but as they say someone has to win it, so it might as well be me! For dinner tonight a family favorite, Progresso Kitchen Favorites Classic Lasagna w/ Baked Artisan Multi Grain Bread.

 

 

This has become one of our favorite Lasagna recipes, Progresso Kitchen Favorites Classic Lasagna! It’s very easy to make as the dinner kit contains the Lasagna Pasta, Tomato Herb sauce, Ricotta Sauce Mix, and Grated Parmesan Cheese. I added 1 lb. Jennie – O Lean Ground Turkey, 1 Cup water, Sliced Baby Bella Mushrooms, 2/3 Cup 2% Milk, 1 (8 oz.) Shredded Mozzarella Cheese (2 Cups), 1/2 cup Shredded dutch Gouda, and I also added a bit more seasoning (McCormick Grinder Italian Herb). I combined the Mozzarella and Goda Cheese. Gouda is such a great tasting Cheese and is a perfect melting Cheese. Basically you just layer your ingredients in a 8″ square baking dish and cover and bake at 425 degrees for 30 minutes and bake an additional 10 minutes uncovered. Prepared by the instructions it was 390 calories but I cut that and the carb count down by using Honeysuckle White Extra Lean Ground Turkey instead of Beef and Sargento Reduced Fat 2% Mozzarella Cheese. The Lasagna came out delicious every time! Everyone really loves this. The flavor as always is excellent. The Sauce was thick and well seasoned and the same for the pasta, perfect, plus plenty leftovers to freeze for later. I also baked a loaf of the La Brea Bakery Take and Bake Artisan Multi Grain Loaf for Mom and Dad and I had Healthy Life Whole Grain Bread. For dessert later a Jello Sugarless Double Chocolate Pudding.

 

 

 

 

 

Progresso Kitchen Favorites Classic LasagnaLasagna 001

 

Directions
Ready to bake in about 20 minutes. You Will Need: 1 lb lean ground beef; 1 cup water; 2/3 cup milk; 1 bag (8 oz) shredded mozzarella  (2 cups); nonstick cooking spray and foil.

 
Sauce:Heat oven to 425 degrees F. Brown beef in 10-inch skillet, breaking up beef into small pieces; drain. Stir Tomato Herb Sauce and water into beef; heat to boiling. Reduce heat; simmer 3 to 5 minutes, stirring occasionally. Meanwhile, mix Ricotta Sauce Mix and milk in liquid measuring cup or small bowl, using whisk or fork.

 

Layer: Spray 8-inch square glass baking dish with cooking spray. Layer lasagna: Spread about 2/3 cup beef sauce in dish. Layer with 2 uncooked Pasta sheets (side by side), 2/3 cup beef sauce (cover Pasta with sauce), 1/4 cup ricotta sauce and 1/2 cup mozzarella. Repeat layers twice, starting with Pasta. Add remaining Pasta, beef sauce and mozzarella. Sprinkle with Parmesan Cheese. Kitchen Tip: Substitute 1/4 cup dry red wine for 1/4 cup of the water.

 

Bake: Cover and bake for 30 minutes, uncover and bake for another 10 minutes.

Spent the better part of the day cleaning the kitchen. Pulled the stove out and cleaned behind it, straightened shelves, and gave the fridge and freezer a good cleaning. While cleaning the freezer I came across tonight’s dinner! I thought I had used all the Okeechobee Crappie that was given to me but I found 4 bags of it in the back of the freezer. So for dinner tonight I prepared Fried Crappie w/ Red Beans and Rice, Boiled Mini Ears of Corn, and Corn Bread. I prepared the Cornbread for Mom and Dad, I had Whole Grain Bread.

 
After the bags of Crappie thawed out I rinsed them with water and patted dry with paper towel. I seasoned them with just a bit of Sea Salt and put them into a gallon size Hefty Freezer Bag and added Zatarain’s Lemon Pepper Breading Mix to the bag. Zipped shut the bag and shook it until the fillets were well covered. Pan fried them in Canola Oil, about 2-3 minutes per side, until they were golden brown. And what a taste, the best tasting Crappie there is! Crappie is Crappie but the ones from Lake Okeechobee have no rivals!

 

 

For sides for this delicious Crappie I prepared some of Grandma Maud’s Red Bean and Rice. I had prepared the Black Beans and Rice several times, and love it, so I thought I would try the Red Beans and Rice. Just follow the easy instructions on the package and you have some great Red Beans and Rice! It had a good Cajun Seasoning to it and was only 100 calories and 16 net carbs. This would go great with a Blackened Chicken or Shrimp. I also boiled some Green Giant Mini Ears of Sweet Corn and I baked a Cat Iron Skillet of Martha White Cornbread. The Cornbread was for Mom and Dad, I had a slice of Healthy Life Whole Grain Bread. For dessert later a bowl Breyer’s Carb Smart Vanilla Ice Cream topped with Dole Chef Cuts Mango Pineapple.

A perfect day outside, sunny and 78 degrees! Took a ride to a local Park and did some reading and crossword puzzles while relaxing in one of the Picnic Shelters. Finally was able to get the grill going again, for how long who knows, and grilled some Smoked Turkey Sausages. For dinner; Grilled Smoked Turkey Sausage w/ Whole Grain Penne Rigate Pasta, Low Carb Pasta Sauce, and Baked Cheese Toast.

 

 

I was finally able to grt the gas grill going again, trying to hold out until next Spring to buy a new one. Cleaned and got it fired up for the Smoked Turkey Sausages. I used Butterball Hardwood Smoked Turkey Sausages. My favorite Smoked Turkey Sausages, very lean and always cooks up perfectly. They are 100 calories and 4 carbs. Before grilling them I brushed some Extra Virgin Olive Oil on them and then grilled them for about 10 minutes while turning them several times. Oh the aroma as they were grilling, my next door neighbor got a whiff and had to come over and see what it was! Golden brown, juicy and full of flavor, I love these!

 

 

After grilling the Turkey Sausages I sliced them into smaller pieces. I then started preparing my Pasta. I used Ronzoni Healthy Harvest Whole Grain Penne Rigate Pasta. I’ve been using Whole Grain Pasta for quite some time now. I switched over from regular pasta back when I was first diagnosed with Diabetes 2. When my Pasta was done I drained it and put it back in the pan and added the sliced grilled Turkey Sausage and Bella Vita Low Carb Pasta Sauce. Heated util the Sauce just started to bubble and removed from the heat and served. I topped with a bit of Parsley and grated fresh Asiago Cheese. I also made some Baked Cheese Bread. I used Healthy Life Whole Grain Bread, a small amount of I Can’t Believe It’s Not Butter, Kraft Shredded Parmesan Cheese, and Sargento reduced Fat Shredded Mozzarella Cheese. Just butter the bread, sprinkle with the Parm Cheese, and top with the Mozzarella Cheese. Lay the slices on a baking sheet and bake at 400 degrees for about 10 minutes or until the cheese has started to melt. A very good and hearty meal! For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Busy afternoon as I went for my 6 month check-up at my Oncologist. I’m very lucky to have found not only one the finest Oncologist but one of the friendliest and with a super staff! I’ve been seeing him since November of 1998. He’s helped through some really difficult times with not only Melanoma Cancer but a variety of aches and illnesses, proud to call him a friend. Anyway he read my scan reports and everything was negative on the Cancer front! This month almost to the very day marks my Anniversary of being Cancer Free also, 9 years! It’s been a struggle but I’m still here! For dinner, a very light dinner. I prepared a Oven Roasted Rosemary Ham Sandwich w/ Creamy Tomato Soup.

 

 

I used Kroger Brand Sliced Oven Roasted Rosemary Ham. I had never tried this Ham until last week, sorry it took me so long to try it! It’s sliced really thin and the Ham just melts in your mouth. Nice flavor and it’s only 70 calories 0 carbs per serving. I served it on a Healthy Life Whole Grain Hamburger Bun and topped it with a slice of Sargento Ultra Thin Swiss Cheese, which is only 40 calories and 0 carbs. So the Sandwich is a total of only 190 calories and 16 carbs.

 

 

I also heated up a can of my favorite Tomato Soup, Amy’s Organic Creamy Tomato Soup. I’ve been using this a couple of years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I added a half serving of Skyline Oyster Crackers, what’s Tomato Soup without Crackers! A light, low calorie, low carb, delicious dinner. For dessert a bowl of Del Monte No Sugar Added Peach Chunks.
