Vanilla Soufflé Cakes with Molten Chocolate
Looking for a dessert the whole family will love? You’ve come to the right place. These delightful golden brown cakes are bursting with a rich chocolate sauce. And with six

individual cakes created, there will plenty for everyone at the table.

Ingredients
Preparation time: 1 hour and 30 minutes

Butter and sugar to coat ramekins
2 ounces semisweet or bittersweet chocolate, chopped
2 tablespoons water
1 cup low-fat (2%) cottage cheese
3 eggs, separated
1/3 cup flour
1/8 teaspoon salt
1 teaspoon pure vanilla extract
1/8 teaspoon cream of tartar
1/3 cup plus 6 pinches sugar

Directions
Yield: 6 servings
Serving size: 1 ramekin
Equipment: 6 six-ounce ramekins or custard cups

1. Butter the ramekins and coat with sugar, shaking out the excess.

2. To make the sauce: Combine the chocolate and water in a small heatproof bowl set in a skillet of barely simmering water. Stir frequently until the chocolate is melted and the mixture is smooth. Place the bowl in the freezer for 30 minutes or more to firm up the sauce while you make the soufflé cakes.

3. To make the soufflé cakes (up to 3 hours in advance): In bowl of food processor, combine cottage cheese, egg yolks, flour, salt, and vanilla extract. Process until the cheese is perfectly smooth, 2–3 minutes. Scrape the mixture into a medium bowl. Set aside.

4. In a clean, dry mixer bowl, combine egg whites and cream of tartar. Beat with an electric mixer on medium to high speed until soft peaks form when the beaters are lifted. Add sugar gradually and beat until stiff and glossy but not dry. Fold one-quarter of the egg whites into the cheese mixture. Fold in remaining egg whites. Pour batter into ramekins. Chill until ready to bake.

5. When the chocolate mixture is firm, use a teaspoon or a tiny scoop to form 6 chocolate balls. Refrigerate the balls on a saucer until needed.

6. To bake: Position a rack in the lower third of the oven. Preheat the oven to 375°F. Just before baking, sprinkle the top of each soufflé cake evenly with a pinch of sugar. Center a ball of chocolate sauce on top of each cake (the chocolate will sink part way into the cake while baking). Place the ramekins on a baking sheet and bake 13–15 minutes until the soufflé cakes are puffed golden brown on top. Remove from the oven and serve immediately.

Flourless Chocolate Cake
Get all the chocolatey flavor you love without any of the flour! This decadent gluten-free cake is sure to delight.

Ingredients
3 squares (1 ounce each) semisweet chocolate, chopped
3 tablespoons margarine
1 tablespoon espresso powder or instant coffee granules
2 tablespoons hot water
4 eggs, separated
2 egg whites
2/3 cup sugar, divided
3 tablespoons unsweetened cocoa powder, sifted
1 teaspoon vanilla
1/2 teaspoon salt
Thawed fat-free whipped topping (optional)
Fresh raspberries (optional)
Fresh mint leaves (optional)

Directions
Yield: 10 servings
Serving size: 1/10 of cake

1. Preheat oven to 300°F. Grease 9-inch springform pan; line bottom of pan with parchment paper.

2. Melt chocolate and margarine in small heavy saucepan over low heat, stirring frequently; cool. Dissolve espresso powder in hot water in small bowl.

3. Place 6 egg whites in large bowl; set aside. Beat egg yolks in medium bowl with electric mixer at high speed about 5 minutes, or until pale yellow in color. Add 1/3 cup sugar; beat about 4 minutes, or until mixture falls in ribbons from beaters. Slowly beat in melted chocolate mixture and espresso mixture at low speed just until blended. Beat in cocoa and vanilla just until blended.

4. Add salt to egg whites; beat at high speed 2 minutes or until soft peaks form. Beat in remaining 1/3 cup sugar until stiff peaks form. Stir large spoonful of egg whites into chocolate mixture. Fold chocolate mixture into egg whites until almost blended. Spoon batter into prepared pan.

5. Bake 1 hour, or until cake begins to pull away from side of pan. Cool on wire rack 10 minutes; run thin spatula around edge of cake. Carefully remove side of pan. Cool completely. Invert cake; remove bottom of pan and paper from cake. Cover and refrigerate at least 4 hours. Serve chilled with whipped topping, raspberries and mint, if desired.

Mint Chocolate Fudge Squares
This is one recipe chocolate lovers won’t want to miss! The no-bake combination of chocolate, white chocolate, and peppermint make this an unbeatable treat!

Mint Chocolate Fudge Squares

Ingredients
8 squares (1 ounce each) semisweet chocolate, divided
6 squares (1 ounce each) white chocolate, chopped
1 container (16 ounces) vanilla frosting, divided
4 to 6 drops peppermint extract, divided
3 drops red or green food coloring
1/2 teaspoon vegetable oil

Directions
Yield: 64 squares
Serving size: 2 squares

1 – Spray 8-inch square baking pan with nonstick cooking spray. Press parchment paper or waxed paper over bottom and up sides of pan. Coarsely chop 1 square semisweet chocolate; set aside for garnish. Coarsely chop remaining semisweet chocolate.

2 – Combine white chocolate and half of frosting in medium microwavable bowl. Microwave on HIGH 1 1/2 minutes, stirring every 30 seconds, until melted and smooth. Add 2 to 3 drops peppermint extract and food coloring; mix well. Spread evenly in prepared pan. Refrigerate 15 minutes or until set.

3 – Combine remaining semisweet chocolate and frosting in medium microwavable bowl. Microwave on HIGH 1 1/2 to 2 minutes, stirring every 30 seconds, until melted and smooth. Add remaining 2 to 3 drops peppermint extract; mix well. Stir 1 to 2 minutes, allowing mixture to cool. Carefully pour semisweet chocolate mixture over white chocolate layer; spread evenly. Cover and refrigerate 30 minutes or until set.

4 – Lift fudge from pan using parchment paper; carefully invert onto cutting board and remove paper. Place reserved semisweet chocolate and oil in small microwavable bowl. Microwave on HIGH 1 minute or until melted, stirring every 30 seconds. Drizzle melted chocolate over fudge.

5 – Cover and refrigerate 20 to 30 minutes or until firm. Cut into 1-inch squares. Store in airtight container in refrigerator.

I have another Diabetic Friendly Dessert to pass along, S’more Treats. These are made using Cocoa Flavored Sweetened Cereal, Margarine, Sucralose-Brown Sugar Blend Sweetener, Mini Marshmallows, and Semisweet Chocolate. This Treat is 89 calories and 16 carbs per S’more Square. S’more Treats
With just 16 grams of carbohydrate per serving, this traditional summer treat is sure to hit the spot without sending your blood glucose skyrocketing. For a slightly thicker treat, use an 8-inch square baking pan. Campfire optional!

Ingredients
2 1/2 cups cocoa-flavored sweetened rice cereal
6 low-fat honey graham crackers, broken into 1/4-inch pieces
3 tablespoons margarine
1 tablespoon sucralose-brown sugar blend sweetener
3 1/2 cups mini marshmallows, divided
1 square (1 ounce) semisweet or milk chocolate, melted (optional)

Directions
Yield:
16 servings

Serving size:
1 square

1 – Spray 9-inch square baking pan with nonstick cooking spray. Combine cereal and graham cracker pieces in large bowl.

2 – Combine margarine and sucralose–brown sugar blend in large microwavable bowl; microwave on HIGH 25 to 30 seconds or until margarine is melted. Add 2 1/2 cups marshmallows; microwave on HIGH 1 1/2 to 2 minutes, stirring after 1 minute, or until marshmallows are melted and smooth.

3 – Add marshmallow mixture to cereal mixture; stir to coat. Add remaining 1 cup marshmallows; stir until blended. Press evenly into prepared pan using waxed paper. Cool completely. Drizzle with chocolate, if desired. Cut into squares to serve.

Tip: For a slightly thicker treat, use an 8-inch square baking pan.

MINT CHEESECAKE BARS

Recipe Yield: 20 Servings

Ingredients

Crust

2 tablespoons SPLENDA® No Calorie Sweetener, Granulated
1-1/4 cups graham cracker crumbs
1/3 cup light butter, melted
Filling

12 ounces reduced fat cream cheese
1/3 cup SPLENDA® No Calorie Sweetener, Granulated
2 large eggs
2 teaspoons vanilla extract
1/4 teaspoon mint extract
2 drops green food color
Chocolate Drizzle
12 (1 ounce) squares semisweet chocolate

Directions

1 – Preheat oven to 350 degrees F.
2 – Spray one eight-inch square pan with baking spray. Set aside
3 – Mix crust ingredients together in a mixing bowl. Mix well. Press into prepared pan. Bake 8 minutes or until firm.
4 – Mix cream cheese and SPLENDA® Granulated Sweetener together until smooth. Add eggs, one at a time, mixing well after each addition. Add vanilla, mint extract and green food coloring; mix well.
5 – Pour over prepared crust.
6 – Bake in preheated oven for 30 minutes, or until firm.
7 – Refrigerate cheesecake bars 2 hours or until chilled and firm. Melt chocolate and drizzle over the top.
