Make scrambled eggs in the microwave…..

Grab a mug and spritz it with nonstick spray. Crack a couple eggs inside. Top with a splash of milk or water, sprinkle with some salt and pepper, then stir with a fork to combine. Microwave at 30-second intervals, stirring after each, for a total of 90 seconds and a 12-grams-of-protein-strong breakfast is served! You can also add crumbled cheese or bacon pieces, just stir those in as well before cooking.

Turn the stove off before eggs are done……….

Whether you scramble, fry, or poach, always turn off the stove a few minutes before the eggs look done—even when they seem a bit runny. The remainder of the heat will cook them to fluffy perfection. Nothing like a good Breakfast to start the day!

For extra-creamy scrambled eggs…………

When making Scrambled Eggs be sure to stir them constantly while they’re on the pan. Constantly stirring will homogenize the texture, break up pockets of uncooked egg, and make for a restaurant-style creamy scramble. Just make sure the heat isn’t too high!

Kicking up the Scrambled Eggs……….

For big, fluffy scrambled eggs, try adding some club soda or baking soda. Add 1 tablespoon of club soda for every 2 eggs you’re cooking, or 1/8 teaspoon of baking soda for every 4 eggs you’re cooking. Just whisk it right into your egg mixture, and enjoy your soft and fluffy eggs!

Clean Up Hint……………

Cleaning up after a delicious scrambled egg breakfast? Use cold water. It cleans dried egg off pans and utensils better than hot water, which causes the protein to bind to surfaces and harden.

Honey Mustard Vegetable Scramble
Delicious, wholesome honey-mustard flavored scrambled eggs, loaded with sautéed vegetables, served in warm whole wheat pita bread.

Recipe Ingredients:

1 teaspoon butter or cooking oil or cooking spray
1/2 cup shredded carrots
1/3 cup chopped onions
1/3 cup chopped sweet red pepper
1/4 cup chopped green pepper
4 large eggs
1 tablespoon skim milk
1 tablespoon honey mustard
1/4 teaspoon salt (optional)
1/8 teaspoon ground black pepper
2 whole wheat pita breads, halved
Additional honey mustard
Lettuce leaves for accompaniment

Cooking Directions:

1 – In 10-inch omelet pan or skillet, heat butter until just hot enough to sizzle a drop of water. Add carrots, onions, and peppers. Cook over medium heat, stirring occasionally, until vegetables are tender but not brown.
2 – In medium bowl, beat together eggs, milk, mustard, salt, if desired, and pepper until blended. Pour over vegetables. Continue cooking over medium heat. As mixture begins to set, gently draw an inverted pancake turner completely across bottom and sides of pan, forming large soft curds. Continue until eggs are thickened and no visible liquid egg remains.
3 – To serve, spread each pita half with mustard, line with lettuce leaves, and spoon in about 1/2 cup of egg mixture.
