Today’s Menu: Bison Chopped Steak and Sauteed Mushrooms w/ Roasted Butternut Squash and Cut Green Beans

 

 

For Breakfast this morning I prepared a Poached Egg and served it on a Thomas Light English Muffin. Also had a cup of Bigelow Decaf Green Tea. 83 degrees, mostly cloudy, and a passing shower. Slow day today, just not a lot to do or going on. Just did a few chores around the house. For Dinner tonight I prepared a Bison Chopped Steak and Sauteed Mushrooms w/ Roasted Butternut Squash and Cut Green Beans.

 

For Dinner tonight it’s one of our favorites, SayersBrook Ranch Bison Chopped Sirloin Steak. But sadly the place that I order these from will no longer have these in stock. Sad, Sad, Sad! We love these Chopped Steaks. To start I preheated the oven to 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steak. I cooked each side 2 minutes.Then finished it in the oven, at 400 degrees for 7 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These are so tender you could slice them with a spoon and have an excellent taste to them.

 

I topped the Chopped Steak with some A-1 Sauce Thick/Hardy. Also prepared some Sauteed Mushrooms.

 

 

 

 

 

 

Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! And this too has quickly become a favorite. I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Crumbled Bacon Bits, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

 

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash!

 

Next I heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. Also baked up a couple of slices New York Bakery Texas Toast – Light. For Dessert I had a Jello Sugar Free Dark Cherry Jello.

For Breakfast this morning I had a Fried Egg Sunny Side Up, fried 2 Jennie – O Turkey Breakfast Sausage Links, and toasted 2 slices of Aunt Millie’s Light Whole Grain Bread. I also had my morning cup of Bigelow Decaf Green Tea. 46 degrees and partly cloudy out today. Cleaned the house today, dusted and ran the vacuum. With everything done I caught up on some shows I had recorded. For Dinner tonight I prepared a Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato.

 

 

For Dinner tonight it’s Mom’s favorite Meal, SayersBrook Ranch Bison Chopped Sirloin Steak. We love this Chopped Steak! To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I also baked a slice of the New York Bakery Garlic Texas Toast Light. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

For Breakfast this morning I Scrambled a couple of Eggs and topped them with Sargento Shredded Reduced Calorie Sharp Cheddar Cheese. Next I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, topped those with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. Sunny and 87 degrees outside today. Went to Meijer after I had Breakfast. Then stopped by McDonald’s and picked up Breakfast for Mom. Later on took Mom’s car to the shop and had the oil changed. For Dinner tonight I prepared a Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato.

 

 

 

For Dinner tonight it’s the always delicious SayersBrook Ranch Bison Chopped Sirloin Steak. I love this Chopped Steak. To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steak. I cooked each side 2 minutes.Then finished it in the oven, at 400 degrees for 7 minutes. It cooked up beautifully, perfect medium rare! I was starved this morning! 94 degrees and partly cloudy today, and very humid with rain showers moving in later. My allergies kept me in most of the day. Sneezing along with one bad headache. For Dinner tonight I prepared a Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato.

Had a few flurries out today, nothing major. High of 33 degrees and cloudy. After Breakfast I went to the new Kroger up the road, really like the bigger store and added selections just wish the prices were lower. For Dinner tonight I prepared a Bison Chopped Steak w/ Cut Green Beans – Potatoes and Light Texas Toast.

 

 

 

 

For Dinner tonight it’s one of my favorites, the SayersBrook Ranch Bison Chopped Sirloin Steak. I love this Chopped Steak. To start I preheated the oven on 400 degrees. I really like using the Del Monte Cut Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). Plus both work perfect with the Bison! To prepare it just empty the can into a small sauce pan and heat until heated through. I also baked a slice of the New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

To start my Sunday morning off I Poached an Egg and served it on a slice of toasted Aunt Millie’s Light Whole Grain Bread. I also had a cup of Bigelow Decaf Green Tea. Partly cloudy and 63 degrees out today, rain showers moved back in early evening. I went to Church this morning with Mom. It was so good seeing everyone, it had been a while since I had been. The reason I don’t go more often is the seating and my back issues. But it wasn’t too bad today. Back home not much going on so it was an afternoon of NFL Football. For Dinner tonight I prepared a Chopped Bison Sirloin Steak w/ Cut Green Beans, Baked Potato, and Texas Toast.

 

 

 

 

For Dinner tonight it’s one of my favorites, SayersBrook Ranch Bison Chopped Sirloin Steak. I love this Chopped Steak. To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). For a side I heated up a small can of Del Monte Cut Green Beans. Used a small sauce pan and heated them on medium heat to a boil and turned the heat down until the Beans were on a light simmer. I could have Green Beans every meal!

 

 

 

 

 

 


I also prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. I also baked a slice of New York Bakery Lite Texas Toast, One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Partly cloudy and 82 degrees out today. Had a few errands to run, got the car washed, went to the Post Office, stopped by the ATM, and got gas. Did a few things outside around the house. For Dinner tonight I prepared a Chopped Bison Sirloin Steak w/ Cut Green Beans, Baked Potato, and Texas Toast.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Outside it was partly cloudy and a high around 85 degrees. After I had my Tea I went to the local Kroger for a couple of items and then stopped at McDonald’s and picked up Breakfast for Mom. She went to Church afterward. Not feeling real good today, Sinus Headache. I got out the leaf blower and cleaned off the deck and driveway. Really a nice day out today. Took it easy the rest of the day. For Dinner tonight I prepared a Chopped Bison Sirloin Steak w/ Fresh Green Beans, Baked Potato, and Texas Toast.

Started my day off with a Poached Egg, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread (lightly buttered), and a cup of Bigelow Decaf Green Tea. Still adjusting to our life without Dad around. It seems to hurt less each day. I had to have Mom at her family doctor at 9:15 this morning. She had to get a check up and an EKG. Mom goes next week to have Cataract Removal on her left eye. She goes back in 2 weeks to have the right eye done. Afterward I took Mom to the Gordon Food Service Store. Back home I did some work around the yard and shed. For Dinner tonight I prepared a Bison Chopped Steak w/ Cut Green Beans – Potatoes and Light Texas Toast.

When the pan was heated I added the Chopped Steak. I cooked each side 2 minutes.Then finished it in the oven, at 400 degrees for 7 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These are so tender you could slice them with a spoon and have an excellent taste to them.

 


For one side I heated up a can of Del Monte Cut Green Beans and Potatoes. I really like using the Del Monte Cut Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). Just empty the can into a small sauce pan and heat until heated through. I also baked a slice of the New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Green Tea Snapple to drink.

Today’s Menu: Bison Chopped Steak w/ Cut Green Beans – Potatoes and Light Texas Toast

 

 

Started my day off with a Poached Egg, heated up a couple of Johnsonville Turkey Breakfast Sausage Links, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread (lightly buttered), and a cup of Bigelow Decaf Green Tea. Just wondering if Spring will ever stay in Ohio! We had about 3 or 4 days of 70 degrees plus and now it’s around 32 degrees with a light snow and rain mix! Everyone is ready for that Spring Time Weather! So not much I can do outside so I cleaned the house. Then later cleaned the refrigerator, microwave, and stove. Wasn’t able to go see Dad today with the rain and light snow out. For Dinner tonight I prepared a Bison Chopped Steak w/ Cut Green Beans – Potatoes and Light Texas Toast.

 

 

For Dinner tonight it’s one of my favorites, SayersBrook Ranch Bison Chopped Sirloin Steak. I love this Chopped Steak. To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat.
