Today’s Menu: Triple Decker Sandwich – Ham, Turkey Pastrami, Turkey Bacon, Swiss Cheese, Boston Bib Lettuce.

It’s the lazy, hazy, days of Summer, In May! Don’t mind the heat but the humidity, I can’t stand! We have another one of those days out again. After Breakfast I went to the local Meijer, they had a lot of good 2 Day Savings going on, 5% off every item was one of them! After Lunch I got the cart out for a bit and grabbed a weed puller and went around the yard and flower beds and got rid of some weeds, lot of Dandelions this year. For dinner tonight a Triple Decker Sandwich and a 1/2 of a Baked Potato.

 
I had something else planned but a good ole Triple Decker just sounded too good! For the Meat I used Boar’s Head Triple Decker Sandwich  Ham Turkey Pastrami 002Honey Smoked Ham, Jennie – O Turkey Pastrami, and Jennie – O Turkey Bacon. Using these Meats I save a lot of Calories and Carbs using Boar’s Head and Jennie – O Turkey Products. For additional toppings I used Kraft Reduced Fat Mayo w/ Olive Oil, Sweet Hot Stone Ground Mustard, Boston Bib Lettuce, Sargento Ultra Thin Swiss, and Klosterman Wheat Bread. To build this “Bad Boy of Sandwiches”; I first toasted my Bread (3 slices). Got the first slice and layered it the Kraft Mayo, then a layer of the Boar’s Head Ham, a slice of Swiss, and topped it with the second slice of Bread. On top of that the Boston Bib Lettuce, two pieces of Turkey Bacon, then I layered the Turkey Pastrami, spread the Stone Ground Mustard, a slice of Swiss Cheese, and the last slice of Bread. Now this is a Sandwich! This hit the spot, fresh, delicious, and not to filling. I also had a side of Ruffles Baked Cheddar and Sour Cream Chips and an ice-cold Diet Dr. Pepper that I had in the freezer for about 10 minutes! For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

We set a record day low this morning, minus 3 degrees, but help is on the horizon! In the 40’s over the weekend and 50’s and 60 degrees next week, a heat wave! With a whole lot of sunshine along with it. So that will be a nice change of pace. Laundry day and ran the vacuum. Not much going on after that. For dinner something new, I prepared a Ham, Turkey, and Swiss Pocket Sandwich w/ Potato Soup.

 

 

On my last visit to Kroger I searched around for some different things to have for dinner. I came across the Brownberry Pocket Thins Flatbread Healthy Multi-Grain in the Bread aisle. Then at the Deli I ordered some Boar’s Head Smoked Honey Ham and Boar’s Head Maple Glazed Honey Coat Cured Turkey Breast. I also grabbed a small head of Boston Bib Lettuce and a package of Sargento Ultra Thin Swiss Cheese. First time I’ve tried the Brownberry Pocket Thins Flatbread Healthy Multi-Grain. The Pocket Thin was very fresh and only 100 calories, 15 net carbs, and 1.5 g fat per serving (1/2 flatbread). Plus there’s 10 g of whole grains and 5 grams of fiber. Easy to use; Each piece comes pre-sliced in half. Just tear along the seam and open the pocket up and stuff with your ingredients.

So my stuffing ingredients are Boar’s Head Smoked Honey Ham, Boar’s Head Maple Glazed Honey Coat Cured Turkey Breast, Kroger Private Selection Sweet Hot Stone Ground Mustard, and Boston Bib Lettuce. So easy to prepare and makes one delicious sandwich! I love all the Boar’s Head meat and cheese products, always fresh. You can stuff these with any ingredients so there’s an endless variety of sandwiches.

To go with my Pocket Sandwich I heated up some Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits. Comes in a microwavable container, just microwave for 1 minute and 45 seconds and you have my favorite Chunky Soup! The homemade Potato Soup I made last week was good but the Campbell’s Chunky Baked Potato Soup with Cheddar and Bacon Bits is the best there is. For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

White Cheddar and Chive Potato Soup w/ Ham Sandwich

Started off the morning with some Simply Potatoes Hash Browns and a couple of Jennie – O Turkey Sausage Breakfast Links and a cup of Bigelow Decaf Green Tea. 12 degrees this morning but little to no wind chill. Mostly sunny but more snow coming in Sunday. Ran an errand for Mom and stopped off and got my Saturday Night Lotto Tickets. I’ll buy a couple every now and then and watch the Ohio Lottery Show on Saturday Evening. For dinner tonight a new recipe, (Home Made) White Cheddar and Chive Potato Soup w/ Ham Sandwich.

 
Came across the White Cheddar and Chive Potato Soup Recipe in an issue of Cooking Light. I love a good Thick Potato Soup. Actually Campbell’s Chunky Baked Potato with Cheddar and Bacon Bits is my favorite Potato Soup. So when I came across this one it seemed like a winner, and it was!

 

 

White Cheddar and Chive Potato Soup 001

Start with with Shallots and Garlic

The recipe calls for; 1 tablespoon Extra Virgin Olive Oil, 1/3 cup chopped Shallots, 2 Garlic Cloves (minced), 2 tablespoons All-Purpose Flour, 3 1/2 cups chopped Yukon Gold Potatoes (about 1 pound), 1 3/4 cups 1% Low-Fat Milk, 1 1/2 cups Organic Vegetable Broth (such as Swanson), 3/8 teaspoon Kosher Salt, 1/4 teaspoon Black Pepper, 2 ounces Sharp White Cheddar Cheese (shredded about 1/2 cup), 1/3 cup Fat-Free Sour Cream (divided), and 2 tablespoons minced fresh Chives.

 

 
To prepare it heat a medium saucepan over medium-high heat. Add oil; swirl to coat. Add shallots and garlic; sauté 1 1/2 minutes or until tender. Sprinkle flour over pan; cook 1 minute, stirring constantly with a White Cheddar and Chive Potato Soup 002whisk. Add potatoes, milk, broth, salt, and pepper to pan; bring to a boil. Cover, reduce heat, and simmer 10 minutes or until potatoes are tender. Remove pan from heat. Mash potato mixture with a potato masher to desired consistency. Stir in cheese until melted. Stir in 1 tablespoon sour cream. Place 1 cup soup in each of 4 bowls. Top each serving with about 1 tablespoon sour cream and 1 1/2 teaspoons minced chives and serve! Makes a delicious, thick, and chunky Potato Soup. If you like you can add some crumbled Jennie – O Turkey Bacon to it for even more flavor. Got one of those Keeper Recipes here.

To go with the Soup I made a Ham and Swiss Sandwich. Using; Boar’s Head Smoked Honey Ham, Sargento Ultra Thin Swiss Cheese, Kroger Brand Whole Grain Hamburger Buns, and topped with Kroger Private Selection Sweet Hot Stone Ground Mustard. (my favorite Mustard.) For a dessert/snack later Organic Whole Grain Tortilla Chips with Simple Truth Organic Black Bean and Corn Salsa.

 

 

 

 

White Cheddar and Chive Potato Soup
Luscious, creamy potato soup uses just one pan for fast weeknight comfort and even faster cleanup. We love the look and tang of sharp white cheddar.

Yield: Serves 4White Cheddar and Chive Potato Soup

Ingredients:

1 tablespoon canola oil
1/3 cup chopped shallots
2 garlic cloves, minced
2 tablespoons all-purpose flour
3 1/2 cups chopped Yukon gold potatoes (about 1 pound)

Made another thing I haven’t had for Breakfast in quite a while, Waffles. I used the leftover batter from the Pancakes from yesterday, got my Waffle Griddle out and made Waffles. Then along with the Waffle I had some Jimmy Dean Applewood Smoked Chicken Sausage. If you’ve never given these a try you need to, delicious! For dinner tonight, a Cold Cut Baked Mini Sub w/ Baked Fries

 

 

 

Baked Cold Cut Trio Mini Sub 008

I used Kroger Private Selection Smoked Off the Bone Sliced Ham, Boar’s Head Honey Smoked Turkey Breast, and Kahn’s Deluxe Bologna for my Baked Mini Sub. I had picked the Turkey up while at Jungle Jim’s Market yesterday. Then I used a Meijer Wheat Mini Sub Bun. Layered the Meats on the Bun and topped it with some Kraft Reduced Fat Mayo w/ Olive Oil and Sweet Hot Stone Ground Mustard and a thin slice of Sargento Ultra Thin Swiss Cheese. I brushed some Extra Virgin Olive Oil on the top bun, which makes it brown up better. I baked it in a shallow baking pan at 400 degrees until the Cheese started to melt and the Meats were heated. I love using these Meijer Wheat Mini Sub Buns, their just the right size and they toast up fantastic! I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup

I had to go back to my Family Doctor Today. My allergies or sinus was driving me crazy, wrote me a prescription. Later had the car washed and the inside swept out. Another hot and humid day out again, not much of an appetite in this weather. For dinner I prepared a Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup.

 

 

 
I used Kroger Brand Private Selection Off- the Bone Smoked Ham. One of my favorite packaged sliced Hams. It has a really great taste to it and only 70 calories per serving. I also used Sargento Ultra Thin Swiss Cheese which is only 40 calories per slice. Topped it with Kraft Reduced Fat Mayo w/ Olive Oil. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Subs!

 

 

 

Amy's Tomato Soup
Then I also heated up some Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using this a couple of years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Today’s Menu: Smoked Cajun Turkey, Rosemary Ham, and Swiss Grilled Sandwich w/ Baked Fries

Our nice weather left real quickly, snow flurries and a wind chill in the 20’s. Went to the grocery early and then spent most of the afternoon cleaning my Hoveround Chair and then catching up on laundry. For dinner tonight, Smoked Cajun Turkey, Rosemary Ham, and Swiss Grilled Sandwich w/ Baked Fries.

 

 

 

I picked up a Jennie – O Premium Portions Hickory Smoked Cajun Style Turkey Breast, try saying that five times real fast! I love these, great sliced, for sandwiches, and just the right size for 1 or 2 people (1.39 lbs). Plus it’s only it’s only 50 calories and 1 carb per serving! It comes already seasoned and precooked. Just serve cold or heated up. I heated up a few slices in the oven for the sandwich. So I had the Turkey and I also had a couple of slices of Kroger Private Selection Oven Roasted Rosemary Ham. Topped it with Sargento Ultra Thin Swiss Cheese and Hidden Valley Spicy Chipotle Spread. Served it on a couple of slices of Klosterman Wheat Bread and then grilled in a medium size skillet with a 1/2 Tbs of Blue Bonnet Light Stick Butter.

 

 

 

Then for a side I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served with a side of Hunt’s Ketchup. For dessert later a Del Monte No Sugar Added Pech Chunk Cup.

Happy Labor Day everyone, hope you had a fun one! It’s been real muggy out today, and a rain shower late afternoon which made it worse. Not much going on, went to the store early and that was about it. For dinner tonight I prepared a Baked Ham and Swiss Hoagie w/ Baked Fries.

 

 

I used Aunt Millie’s Deli Style Whole Grain Mini Sub Buns and then for the Ham I used Kroger Brand Private Selection Oven Roasted Rosemary Ham. This has become my favorite packaged Hams incredible taste and it’s 70 calories and 1 carb per serving. The slices are very thin so I used a double serving of it on the Hoagie. I topped it with a new spread/dressing, Hidden Valley Smoked Bacon Ranch Sandwich Spread. Word of caution, this stuff is so good you’ll get a spoon and just eat from the jar! I think it’s new, I had a coupon I got from Sunday’s Paper and that’s how I found out about it. When at Walmart earlier I seen they had it in stock. They had about 4 different varieties of it and I went with the Smoked Bacon Ranch Dressing. I also topped it with 2 slices of Sargento Ultra Thin Swiss Cheese.

 

 

I preheated the oven to 350 degrees and while that was heating up I combined tbsp. of Blue Bonnet Light Butter (Melted) , 1/2 tsp. dried onion, 1 tsp. Worchestershire sauce, 1 1/2 tsp. Poppy Seed dressing, and 1/2 tsp. yellow mustard. Mixed it to it was well combined. Poured the mixture over the sandwich. Covered it with foil and baked at 350 degrees for 15 minutes then remove foil and bake an additional 10 minutes to allow the rolls to crisp. Remove from oven to cool and served. Great recipe for Baked Ham and Swiss Sandwiches! The Poppy Seed Dressing Mixture that tops the Hoagie pulls everything together, all kinds of flavor! An easy made and healthy lunch. Heated up my Panini Grill and made a Ham & Turkey and Swiss Panini. I used a half serving Oscar Mayer Carver Board Sliced Turkey Breast, a full serving of thin sliced Ham, a slice of Sargento Ultra Thin Swiss Cheese, and a Flatout Whole Wheat Flatbread. I also added French’s Mustard to top it. All for under 250 calories and made in about 15 minutes!
