Today’s Menu: Turkey Meatball Mini Sub w/ Baked Crinkle Fries

Turkey Meatball Mini Sub w Baked Crinkle Fries 007
To start the morning off I toasted a Healthy Life Whole Grain English Muffin that I topped with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to the local Kroger and picked up a few items for Mom and then went to McDonald’s and picked up Mom and Dad’s Breakfast. Had a thunderstorm about dawn and rain on and off during the day, so not a whole lot going on outside. Finished up some chores herein the house and then kicked back for afternoon of College Football. So for Dinner tonight I prepared a Turkey Meatball Mini Sub w/ Baked Crinkle Fries.

Turkey Meatball Mini Sub w Baked Crinkle Fries 001
I had used Honeysuckle White Fresh Italian Style Turkey Meatballs yesterday for my Spaghetti and Meatballs. I’ve been using the Honeysuckle White Fresh Italian Style Turkey Meatballs for quite a few years now. The Meatballs are good size, always fresh, meaty, and have a fantastic taste and they’re 190 calories and 5 net carbs for 3 Meatballs. Plus they’re a perfect size for Hoagie or Hot Dog Buns, I used the Hot Dog Buns.

Turkey Meatball Mini Sub w Baked Crinkle Fries 004
For my Pasta Sauce I used the LaRosa’s Original Sauce. A local favorite and mine, it’s got a perfect combination of a robust sauce with a hint of sweetness to it. To prepare it I took a medium size sauce pan and sprayed it with Pam Cooking Spray. Emptied the can of Sauce in the pan and turned the heat on medium. Then I added my Turkey Meatballs and covered the pan and let it simmer until both the Sauce and Meatballs were heated through.

Turkey Meatball Mini Sub w Baked Crinkle Fries 003
For my Cheese I used a slice of Sargento Ultra Thin Provolone Cheese and for the Bun I used a Aunt Millie’s Reduced Fat Whole Grain Hot Dog Bun. You can use Hoagie Buns but to save on calories and carbs I usually just use Whole Grain Hot Dog Buns. To assemble; open the Bun up, put the slice of Provolone Cheese on it, the Meatballs and Sauce, and top it with a few shakes of McCormick Grinder Italian Seasoning. Love these Meatball Sandwiches! The Larosa’s Sauce just seems to bring the Sandwich together! Sauce is incredible, Turkey Meatballs flavorful and meaty, and the Provolone is perfect with Pasta sauces.

For a side I baked some Ore Ida Crinkle Fries and had a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Steak Hoagie Patties w/ Baked Crinkle Fries

Steak Hoagie Patties w Baked Crinkle Fries 010
For Breakfast this morning I fried up a couple of Jennie – O Turkey Breakfast Sausage Links. Love these Sausage Links, only 65 calories for 2 links. Then I made some Simply Potatoes Hash Browns, toasted 2 slices of healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Another really humid day out there again! Not quite as hot, 84 degrees, but it was humid early in the morning and had a couple of passing showers. Not a whole lot to do today, just got caught up on some small jobs around the house. So for Dinner tonight I prepared Steak Hoagie Patties w/ Baked Crinkle Fries.

Steak Hoagie Patties w Baked Crinkle Fries 002

While at Kroger yesterday I was in the frozen foods and spotted some J.T.M. Beef Hoagie Patties. It had been quite some time since I’ve had these and they looked good and I grabbed a package of them. Growing up we would have the J.T.M. Burger Patties all the time, and it’s been even longer since I’ve had the Burgers. So after getting a package of the Hoagie Patties I picked up a package of Kroger Whole Wheat Hoagie Rolls. I’ll also need some Baby Bella Mushrooms, Sargento Ultra Thin Sliced Provolone Cheese, and Ragu Original Pizza Sauce. I’ll also be baking some Ore Ida Crinkle Fries.

I started by preheating the oven at 400 degrees, I’ll be baking the Fries and toasting the Hoagie Buns. The Fries take 18 minutes and the Buns about 3 minutes.

Steak Hoagie Patties w Baked Crinkle Fries 003
As I said I’ll be using the J.T.M. Beef Steak Hoagies. They come pre-cooked and frozen so all you have to do is warm them back up. You can bake them, pan fry them, or grill them, I pan fried mine. It took about 3– 4 minutes per side, after flipping them over I added the Provolone Cheese with a minute of cooking time left. As the Hoagies were cooking I sliced up some Mushrooms and sauteed them and in a small sauce pan and I heated up the Sauce in another small sauce pan on medium low.

With everything getting done at the same time I assembled the Hoagie. Started by placing the Cheese covered Hoagie Pattie on the bottom Bun. Next added the Sauce and topped it with the Mushrooms and the top half of the Bun. I’m not a big Beef eater anymore but these are really good! Nice flavor and cook up very easy.

Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, Provolone, Baked Hoagie w/…

Today’s Menu: Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, Provolone, Baked Hoagie w/ Baked Crinkle Fries

I picked up some Glier’s Turkey Goetta at Kroger yesterday. I hadn’t had Goetta in a while and was really looking forward to having some! So for Breakfast this morning I sliced off a couple of patties for the Goetta and I prepared some Simply Potatoes Shredded Hash Browns and toasted a slice of Healthy Life Whole Grain Bread. As always the Goetta was incredible! It fries up so good and the Turkey Goetta I use has fewer calories and carbs than the regular Goetta. Love this stuff!

After Breakfast I did some cleaning outside. Got the leaf blower out and cleaned around our deck and around the Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, P 016driveway area. After that I had to make a minor repair to the wooden deck that leads into the shed, had a couple of boards that loosened up. Then it was inside cleaning; vacuumed and dusted. After lunch I took the car up to be washed and inside cleaned. Went on over from there to go see Dad at the rehab center. He finally comes home after being there and the hospital for over 2 months. Just hope he can remain home, he’s still so weak. Another hot and humid day out there again. For dinner tonight a Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, and Provolone, Baked Hoagie w/ Baked Crinkle Fries.

Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, P 001

I was at Kroger yesterday afternoon and loaded up on some Boar’s Head cold cuts from the Deli. And put 2 of those to use tonight for Dinner. I prepared a Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, Swiss, Baked Hoagie w/ Baked Potato Puffs. To make the Hoagie I’ll be using; Boar’s Head Smokemaster Beechwood Smoked Black Forest Ham, Boar’s Head Bold Blackened Oven Roasted Turkey Breast, Sargento Ultra Thin Provolone Cheese, Kraft Zesty Lite Italian Dressing, Kraft Reduced Fat Mayo w/ Olive Oil, and Kroger Bakery Sub Buns.

To prepare it I preheated the oven on 400 degrees. I grabbed a small baking sheet. Lined it with foil and lightly sprayed with Pam Cooking Spray. I then took one of the Sub Buns, then using the bottom haf Bun I spread the Kraft Mayo on the top half of it. I then layered my Black Forest Ham, Blackened Oven Roasted Turkey Breast, Provolone, Smoked Black Forest Ham, Blackened Oven Roasted Turkey Breast, P 009_cropand covered it all with the Italian Dressing. Added just a bit of the Kraft Mayo to the bottom of the top Bun and topped the sandwich with Bun. With my oven preheated I laid the Sub on the Baking sheet. I lightly sprayed the top of the Sub with Pam Cooking Spray, that helps it brown a bit. Slid the sheet in the oven and baked until the Cheese was melting and the Sub Bun was slightly toasted. What a Sub! The Boar’s Head Meats both were delicious, as always, and the Mayo and Provolone Cheese were perfect toppings. But that Kraft Zesty Lite Italian Dressing just bursts the Sub with flavor! That was the first time I had tried the Kroger Bakery Sub Buns, excellent Bun but a little higher in calories than I normally have.

Then for a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

I had a Simple Truth Breakfast Sandwich w/ Canadian Bacon for Breakfast and then I had an early Dermatologist appointment. My 6 month check up. Not a bad check up but now I have to back in next Thursday and have a mole removed he was concerned about, hopefully it will come back negative for any type cancer. I always panic a bit when they find something, especially with my past history of Melanoma Cancer. Hoping for the best! Back home finished up some laundry for Mom and then I went to the hospital to see a friend of mine. He had a series of Mini Strokes and he’s not doing too good. So I spent most of the afternoon with him and his family. For dinner tonight I prepared a Turkey Meatball Mini Sub w/ Baked Crinkle Fries.

Today’s Menu: Baked Italian Hoagie w/ Baked Crinkle FriesBaked Italian Hoagie w Baked Crinkle Fries 006

We have another miserable day out there again! It rained overnight and all it did was make it that much more humid. Hopefully it’s the last day of the high humidity, still hot but without this humidity. Not feeling up to par today. Went to bed last night and I wasn’t feeling all that good and this morning awoke with a headache and upset stomach. Took it easy today and didn’t do a lot of anything but rest. For dinner tonight I prepared a Baked Italian Hoagie w/ Baked Crinkle Fries.

Baked Italian Hoagie w Baked Crinkle Fries 001
To make this bad boy of Baked Hoagies I’ll need the following; 2 slices of Sargento Ultra Thin Provolone Cheese, Private Selection Old World Prosciutto, Boar’s Head Honey Smoked Ham, Boar’s Head Sandwich Style Pepperoni, Kraft Lite Zesty Italian Dressing, and all on a Perfection Deli Mini Wheat Sub Bun.

To prepare it I preheated the oven on 400 degrees. Started with the bottom half of the Bun and layered the ingredients; Provolone Cheese, Prosciutto, Ham, and Pepperoni. I then took the Italian Dressing and lightly poured the Dressing over top everything. I didn’t add the top half of the Mini Sub Bun until after it baked. I used a small foil lined cookie sheet and placed the Hoagie and the top half of the Bun on it. I then baked it until the Provolone was starting to melt and the other ingredients heated through. We have a winner! The Italian Dressing made this a perfect Hoagie. Along with the 3 meats I used and Provolone Cheese, it was delicious!

As the Hoagie was baking I also baked some Ore Ida Crinkle Fries, seasoned them with Sea salt and Ground black Pepper. Had a side of Hunt’s Ketchup for dipping the Fries. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Baked Ham, Pepperoni, and Swiss Mini Sub w/ Baked Fries

Today’s Menu: Baked Ham, Pepperoni, and Swiss Mini Sub w/ Baked Fries

Baked Ham, Pepperoni, and Swiss Mini Sub 014
I’d like to start off by saying congratulation to my Mom and Dad, today is their 67th Wedding Anniversary! Wow, 67 years! Love you both and hope you have many more. We have another humid day out again. They say we’ll have this humidity around for several more days before it ends. Lot of heavy rain again with more on the way. I went to Kroger early this morning for a few items and then stopped by McDonald’s and picked up Mom and Dad’s favorite Breakfast Sandwiches. For dinner tonight I prepared Baked Ham, Pepperoni, and Swiss Mini Sub w/ Baked Fries for everyone.

Baked Ham, Pepperoni, and Swiss Mini Sub 001
Bummed around the kitchen and pantry and nothing sounded good. Finally settled on a Baked Ham, Pepperoni, and Swiss Mini Subs. I used Smithfield Anytime Hickory Smoked Boneless Sliced Ham. The Ham is precooked so it’s a breeze to prepare. Heat it up for 30 seconds and it’s ready! Then I also used Kroger Brand Private Selection Old World Deli Sliced Pepperoni, Sargento Ultra Thin Swiss Cheese, LaRosa Sauce, and a Perfection Deli Mini Wheat Sub Bun.

Ready for the oven!

Ready for the oven!

To assemble the Sub I started by preheating the oven to 400 degrees. I grabbed a small cookie sheet and lined it with foil. I wrapped the Sub Bun in foil and heated it up in the oven for 5 minutes, just to get it a bit crispy. To start I spread LaRosa Sauce on the bottom bun. Then I layered 3 slices of the Pepperoni, followed by the Sliced Ham, and the Swiss Cheese and top Bun. Put the Sub on the pan and baked it for about 8 minutes. One good Sub Sandwich! Both Meats were perfect, then the LaRosa Sauce added the fantastic flavor, and topped with that melted Swiss Cheese! Sometimes it’s a good thing to have no dinner plans and then throw something together!

I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup

Baked Salami Pepperoni Ham 007

It’s been a long day! Dealing with my Sinuses all day, as has everyone in the area I hear. Mom had some errands and the went to see Dad at the rehab center and I stayed home and caught up on all the house work and laundry. It’s a real pain trying to put sheets on the bed with one leg, Ugh! But I managed to get everything done. For dinner tonight I prepared a Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup.

I used a Trio of Cold Cuts for my Baked Mini Sub; Kroger Private Selection Old World Hard Salami, Kroger Private Selection Off – the Bone Smokehouse Ham, and Kroger Private Selection Old World Pepperoni. For toppings Sargento’s Ultra Thin Provolone Cheese and Kraft Reduced fat Mayo w/ Olive Oil. For the Bun I used Perfection Deli Mini Wheat Sub Buns, I buy these at Meijer. To prepare it I spread the Mayo on the bottom bun and layered my Cold Cuts on top of that. Topped that with Cheese and spread more Mayo on the bottom of the top bun. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was nice and melted. Now tis is a Baked Sub! The trio of Cold Cuts, Provolone Cheese, and the Mayo all work perfectly!

Amy's Tomato Soup

Then I also heated up some Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using this a couple of years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert/snack later some slices of fresh Mozzarella Cheese and Ritz Whole Grain Crackers.

Italian Style Chicken Hoagie 002
Long day today doing one of my least favorite things to do, Shredding bills! It wouldn’t be so bad if I would do it every month or so but as usual I let them back up for months and months. So the biggest part of my day was shredding my bills and my parents. It would help also to have a better paper shredder, that didn’t overheat and stop every few minutes. Finally got through it though! For dinner I prepared an Italian Style Chicken Breast Hoagie w/ Baked Crinkle Fries.

I used Perdue Perfect Portions Italian Style Skinless and Boneless Chicken Breasts. Love these, just grab one from the freezer and prepare it! Already marinated and cooks up super quick. They have a few different types but the Italian Style is the only one I’ve seen sold around here. I baked mine, at 350 degrees for about 26 minutes. The internal temp read 170 degrees. Seasoned almost perfect, added a shake of Sea Salt to it. Served it on a Aunt Millie’s Deli Style Whole Grain Mini Sub Bun and topped it with a slice of Sargento Ultra Thin Provolone Cheese, sliced Black Olives, and Sauteed Baby Bella Mushrooms. For sides I had a few of the Dill Pickled Carrots and baked some Ore Ida Crinkle Fries with an Ice – Cold Diet Dr. Pepper to drink. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.
