Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. I had to be at the Optometrist for my yearly checkup. Afterward I stopped by McDonald’s and picked up Breakfast for Mom. I’m not sure what’s wrong, just not feeling up to par. Did a few things outside and then rested the rest of the afternoon. For Dinner tonight I prepared Turkey and Black Bean Mini Street Tacos and Refried Beans.

 

When making my Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie –O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have a good selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. 100 degrees and sunny out today, and the humidity was terrible! Not a good day to be outside working so, I cleaned the house today, dusted and ran the sweeper. For Dinner tonight I prepared Turkey and Black Bean Mini Street Tacos and Refried Beans.

 

 

When making my Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie –O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have a good selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Sprite Zero to drink.

Today’s Menu: Leftover Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. Another repeat in our weather except its more humid! High of 94 degrees and real humid! After Breakfast I got some yard work done. I wanted to get it done before the heat and humidity got too bad. Not much else going on, stayed in and kept cool! For Dinner tonight, Leftover Turkey and Black Bean Street Tacos and Refried Beans. I reheated everything. I was going to prepare something else but Mom insisted on these leftovers. This is one of her favorites! I left the original post from yesterday below for instructions and description of the recipe. Had to move the cars out of the driveway and all outdoor furniture off the deck this morning. We are having our house sprayed down and cleaned. We get it done once a year in early Spring. They also spray down and scrub the driveway and shed. We might as well get everything in shape while we are in isolation! For Dinner tonight, Leftover Turkey and Black Bean Street Tacos and Refried Beans. I reheated some of items for this and cooked the remaining Ground Turkey. For Breakfast I toasted a Thomas Light English Muffin, fried some slices of Boar’s Head Sweet Slice Ham and topped that with a 1/2 slice of Boar’s Head Swiss Cheese. I love Breakfast Sandwiches! Also had a cup of Bigelow Decaf Green Tea. Mostly sunny and 42 degrees out. Not much going on, did a few things around the house just to try to stay busy. Still in house isolation. For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans. We are having the leftover Turkey and Black Bean Tacos from Thursday night, that we served on the Old El Paso Stand n’Stuff Taco Shell. Well tonight I’m having Turkey Tacos but served in the Mission Street Taco Flour Tortillas. Anymore I prefer these over the Hard Shells. So I just reheated everything for my Dinner tonight. Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Kroger up the road for a couple of items. Then stopped by a ATM and then picked up Breakfast at McDonald’s for Mom. Sunny and 73 degrees out, a perfect Autumn Day! Did some things around the house and then a little yard work. For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans.

 

 

When making Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

For Breakfast this morning I had a Poached Egg that I served on a toasted Thomas Light English Muffin. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s to pick up Breakfast for Mom. Its 85 degrees and partly sunny out today, humid also. Today was my Aunt’s Funeral. Its a shame that we don’t see a lot our relation except for Funerals. But everyone is all spread out through Ohio, Indiana, and Kentuckey so it makes it tough to see everyone. Feeling down today. For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans.

These are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert later a bowl of sliced South Carolina Peaches, love these Peaches!

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Another day of 95 degrees and humid weather outdoors today. 81 degrees and sunny, low humidity and a pollen alert out for our area. I have to wear a surgical mask if the pollen count gets real high if I’m outside. Here the last few years my allergies have gotten worse. After Breakfast I went to McDonald’s to pick up Breakfast for Mom. All caught up on everything I loafed all day, and it felt great! For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans.
