Today’s Menu: Lean Turkey Pastrami Sandwich w/ Baked Fingerling Potato Wedges

 

 

What a beautiful Morning Sky this morning! Bright Red, Orange, and Pink just filled the east Horizon. Started my Mom's Pineys 002day off with a new Breakfast Item, Eggo Bacon, Cheese, and Egg Sandwich. Just microwave for 1 minute and it’s ready. Nice tasting Breakfast Sandwich. It’s 210 calories and 21 net carbs, so not too bad. My Mom has a strain of Pineys (Flower) that were from my Grandmothers Flowers. So every Spring when they are in full bloom it brings back memories of my Grandmother. She always had a green thumb with anything she grew. Got the cordless leaf blower working, makes it a lot easier than sweeping around the outside. For dinner tonight I prepared a Lean Turkey Pastrami Sandwich w/ Baked Fingerling Potato Wedges.

 
To make my Sandwich I’ll need; Jennie – O Extra Lean Turkey Pastrami, Klosterman Wheat Bread, Simple Life Grilled Turkey Pastrami Sandwich and Fingerling Potatoes 006Muenster Cheese, and Litehouse Lite Thousand Island Dressing. I’ll be using my Flat Griddle Pan to prepare it. To start I got the griddle out, put a pat of Blue Bonnet Light Butter on it, and heated it up on medium heat. To prepare it; on one bread slice I layered the Cheese, Turkey Pastrami,and Dressing. Cover with remaining bread slice. Place Sandwich on the Griddle. Cook 4 to 6 minutes or until the bread was toasted and golden brown, turning once. Wow, One delicious Sandwich! The Muenster Cheese and Litehouse Lite Thousand Island Dressing works perfect with the Pastrami.

 
For a side to go with the Sandwich I prepared some fresh-cut Fingerling Wedges. I sliced the Potatoes into wedges Baked Fingerling Potato Wedgesand seasoned them with a light coat of Extra Virgin Olive Oil, Garlic Powder, Dried Thyme, and McCormick Grinder Sea Salt and Black Peppercorn. Spread them out on a small Cookie Sheet and baked at 400 degrees until fork tender, about 20 minutes. Put a light sprinkle of fresh shredded Sargento Asiago Cheese over top and served. I wonder why Fingerling Potatoes are so hard to find? Jungle Jim’s International Market is the only one to carry them around here, at least the only one that I have found. For dessert/snack later tonight some fresh sliced Smoked Mozzarella Cheese, Hormel Turkey Pepperoni Slices, on top of Ritz Wheat Crackers.

Not much going on today, very laid back. Did a small load of laundry and ran the sweeper. It’s so much easier to vacuum since I bought the Hoover Cordless Lightweight Vacuum! It only weighs about 10 lbs., Cordless, and has as much power as a normal size vacuum. Great investment! Had everything done early so it’s Couch Potato, Remote, and Football for the day. For dinner tonight it’s Chicken Fajitas w/ Refried Beans.

 

 

 

 

The other night I had Shrimp Fajitas and they were just so delicious I decided to have Chicken Fajitas for dinner tonight. I used Ortega Fajita Skillet Sauce for my Fajita Sauce Base, I love using the Ortega Sauces. To prepare I’ll need the following; the Ortega Fajita Skillet Sauce, a bag of Simple Truth Chicken Fajita Strips, Delallo Tri-Color Pepperazzi Spicy Sweet Peppers, Chopped Jalapeno slices, Daisy Reduced Fat Sour Cream, fresh Shredded Sargento Asiago Cheese, and Mission Flour Tortillas. Same ingredients as the other night except a different Ortega Sauce and I’m using Chicken instead of Shrimp.

 

 

 

 

First time using the Simple Truth Chicken Fajita Strips. This is a fantastic item to have in the fridge or freezer. They’re 99% Fat Free, already Seasoned, and cook up in 6-8 minutes. They came out well seasoned and the strips are nice and meaty.

I heated up a tablespoon of Extra Virgin Olive Oil in a medium size skillet over medium heat. I started by slicing the Sweet Peppers into strips and adding them to the skillet, stirring them and cooking until tender (about 4 minutes). Stirred in the Chicken Strips and sliced Jalapenos, stirred this for about 6 minutes. Then added the Ortega Fajita Skillet Sauce, cooking another 3 minutes till everything was heated through. Heated up the tortillas in the microwave for 20 seconds and topped them with a dab of the Daisy Reduced Fat Sour Cream and the Chicken Fajita Mixture. I also topped it some fresh grated Asiago Cheese, and served. I keep packets of the Ortega Skillet Sauces in stock, it makes on delicious Fajita! Had a nice heat to it but not overpowering and the taste of the Ortega Sauce is incredible!Served with a side of Old El Paso Fat Free Refried Beans. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Sweet Pepper, Cilantro and Green Chile Shrimp Fajitas

Another cold and windy day, but finally some sunshine mixed in! Busy most of the day. In the morning I went to Kroger for a few items. Then back home to get a few things done around the house. Back out then I had to do Mom’s Christmas Shopping for her, she’s still not up tp par. Doctor said it would just take time. For dinner tonight it’s Sweet Pepper, Cilantro and Green Chile Shrimp Fajitas.

 

I used a packet of the Ortega Cilantro and Green Chile Skillet Sauce. I’ve used this a few times now and love it! To prepare it I used a bag of Kroger Seafood Jumbo Shrimp along with the packet of Ortega Cilantro and Green Chile Skillet Sauce, Delallo Tri-Color Pepperazzi Spicy Sweet Peppers, Chopped Jalapeno slices, fresh Shredded Sargento Asiago Cheese, and Mission Flour Tortillas.

I keep packets of the Ortega Cilantro and Green Chile Skillet Sauce in stock, it makes on delicious Fajita! Had a nice heat to it but not overpowering and the taste of the Ortega Sauce is incredible! Today’s Menu: Italian Chicken Breast w/ Whole Wheat 3 Cheese Tortellini

I’d like to start off by saying my prayers and thoughts go out to the family and friends of American journalist James Foley, whose life was violently taken away by a bunch of cowards and animals. May they be brought to justice soon! It’s getting a little warmer and more humid here today and it’s going to get worse they say. Went to the store early for Mom and myself and then over to see my Dad. They moved him to a rehab center and he seems to be getting a little better now day by day. For dinner tonight I prepared an Italian Chicken Breast w/ Whole Wheat 3 Cheese Tortellini.

 

 

 

I used a Perdue Perfect Portions Italian Style Chicken Breast, which I love using. They’re individually wrapped and you can keep them in the fridge or freezer, then and just grab one when your ready to use it. I baked a couple of them, one for dinner and one for lunch tomorrow. I preheated the oven to 350 degrees and baked the breasts for about 24 minutes. Easy to fix and they always turns out perfect as these did!

 

 

 

I then used Buitoni Whole Wheat 3 Cheese Tortellini. It had been awhile since I prepared this, it’s a very good Tortellini and always fresh. To prepare it, just boil your water and add a 1/2 tablespoon of Extra Virgin Olive Oil to it. When it comes to a full boil add the Pasta and reduce heat to a gentle boil and boil for 6-8 minutes until done. When done I made a bed of the Pasta and added my Italian Chicken Breast on top. I then added some fresh grated Sargento Asiago Cheese and 2 tablespoons of Ragu Original Pasta Sauce to top everything off! I also had a slice of buttered Healthy Life Whole Grain Bread. For dessert/snack later a few slices of Turkey Spam and Ritz Whole Grain Crackers.
