Reuben from Katz’s Delicatessen

The Reuben sandwich is an American grilled sandwich composed of corned beef, Swiss cheese, sauerkraut, and Russian dressing, grilled between slices of rye bread. It is associated with kosher-style delicatessens, but it is not kosher, because it contains both meat and cheese.

Possible origins
Reuben Kulakofsky, Blackstone Hotel: Omaha, Nebraska
One origin story holds that Reuben Kulakofsky (his first name sometimes spelled Reubin; his last name sometimes shortened to Kay), a Jewish Lithuanian-born grocer residing in Omaha, Nebraska, was the inventor, perhaps as part of a group effort by members of Kulakofsky’s weekly poker game held in the Blackstone Hotel from around 1920 through 1935. The participants, who nicknamed themselves “the committee”, included the hotel’s owner, Charles Schimmel. The sandwich first gained local fame when Schimmel put it on the Blackstone’s lunch menu, and its fame spread when a former employee of the hotel won a national contest with the recipe. In Omaha, March 14 was proclaimed Reuben Sandwich Day. Mention is made of this sandwich in a scene within the movie Quiz Show, where Richard N. Goodwin (known as Dick) orders and eats one in a restaurant with Charles van Doren, and they discuss the sandwich’s origins.

Reuben’s Delicatessen: New York City, New York
Another account holds that the Reuben’s creator was Arnold Reuben, the German-Jewish owner of Reuben’s Delicatessen (1908–2001) in New York City. According to an interview with Craig Claiborne, Arnold Reuben invented the “Reuben Special” around 1914. The earliest references in print to the sandwich are New York–based, but that is not conclusive evidence, though the fact that the earliest, in a 1926 issue of Theatre Magazine, references a “Reuben Special”, does seem to take its cue from Arnold Reuben’s menu.
A variation of the above account is related by Bernard Sobel in his 1953 book, Broadway Heartbeat: Memoirs of a Press Agent. Sobel states that the sandwich was an extemporaneous creation for Marjorie Rambeau inaugurated when the famed Broadway actress visited the Reuben’s Delicatessen one night when the cupboards were particularly bare.
Some sources name the actress in the above account as Annette Seelos, not Marjorie Rambeau, while also noting that the original “Reuben Special” sandwich of 1926 did not contain corned beef or sauerkraut and was not grilled.
Still other versions give credit to Alfred Scheuing, a chef at Reuben’s Delicatessen, and say he created the sandwich for Reuben’s son, Arnold Jr., in the 1930s.

Variations

Montreal Reuben
The Montreal Reuben substitutes Montreal-style smoked meat for corned beef.

Thousand Island dressing
Thousand Island dressing is commonly used as a substitute for Russian dressing.

Walleye Reuben
The walleye Reuben features the freshwater fish (Sander vitreus) in place of the corned beef. It is eaten in Minnesota and Ohio.

Grouper Reuben
The grouper Reuben is a variation on the standard Reuben sandwich, substituting grouper for the corned beef, and sometimes coleslaw for the sauerkraut as well. This variation is often a menu item in restaurants in Florida.

Reuben egg rolls
Reuben egg rolls, sometimes called “Irish egg rolls” or “Reuben balls”, use the standard Reuben sandwich filling of corned beef, sauerkraut, and cheese inside a deep-fried egg roll wrapper. Typically served with Thousand Island dressing (instead of Russian dressing) as an appetizer or snack, they originated at Mader’s, a German restaurant in Milwaukee, Wisconsin, where chef Dennis Wegner created them for a summer festival circa 1990.

Rachel sandwich
The Rachel sandwich is a variation which substitutes pastrami or turkey for the corned beef, and coleslaw for the sauerkraut. Other recipes for the Rachel call for turkey instead of pastrami. In some parts of the United States, especially Michigan, this turkey variant is known as a “Georgia Reuben” or “California Reuben”, and it may also call for barbecue sauce or French dressing instead of Russian dressing. The name may have originated from the 1871 song “Reuben and Rachel”.

Vegetarian versions
Vegetarian versions, called “veggie Reubens”, omit the corned beef or substitute vegetarian ingredients for it, including zucchini, cucumbers, wheatmeat, mushrooms, tempeh, etc.

Kosher version
As the original Reuben contains both meat (corned beef) and dairy (Swiss cheese), it is not kosher. If kosher ingredients are used, a meat version can be made by omitting the cheese and any dairy ingredients in the dressing, and a dairy version can be made by omitting the meat.

Today’s Menu: Izzy’s Boneless Cod Sandwich

 

 

 

For Breakfast I had a fried Egg Sunny Side Up, Hash Browns, 2 Jennie – O Turkey Breakfast Sausage Links, and my morning cup of Bigelow Decaf Green Tea. Opened the door to go out and get the newspapers and it feels like you’re walking into a blast furnace! 97 degrees and humid outside today. We have an excessive heat warning out for the next few days. Highs in and around 100 degrees with the heat index up around 110 degrees and more! The over night low will be in the mid 80’s. Say hello to my air conditioner! Nothing going on outside at all today. It’s even so hot that I’m not even going to fire the Kitchen up for a second straight day. I shut the Kitchen down and went to Izzy’s!

 

 

 

 

 

Well they say if you can’t take the heat, get out of the Kitchen! And that is what I’m doing tonight! So I’m having the Izzy’s Boneless Cod Sandwich. I love these always so good and you can’t get mush easier for clean up! Plus we are only 3 miles from the Izzy’s Deli. The Sandwich is huge! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I could only eat 1/2 of it, I’ll have the other half for Lunch tomorrow. It came with a Potato Pancake which I gave to Mom. Mom had the Izzy’s Reuben, her favorite. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Coke Zero to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. I’ve had another rough morning dealing with Phantom Pains. 2 days in a row is very unusual. They started about 5:00 this morning and continued until about 3:00 this afternoon. So another day of not doing much besides sleeping and resting. Hopefully pain free tomorrow. For Dinner tonight an Izzy’s Boneless Cod Sandwich.

 

 

 

 

 

Really didn’t feel like cooking after the day I’ve had so I’m having the Izzy’s Boneless Cod Sandwich. I love these always so good and you can’t get mush easier for clean up! The Sandwich was huge! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I could only eat 1/2 of it, I’ll have the other half for Lunch tomorrow. It came with a Potato Pancake which I gave to Mom. Mom had the Izzy’s Reuben. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Peach Snapple to drink.

Cucumber and Turkey Ham on Rye
Mini sandwiches win over any party. Ready in just under 15 minutes, you’ll want to keep this turkey appetizer recipe handy for your next gathering.

INGREDIENTS
8 ounces sliced JENNIE-O® Extra Lean Turkey Ham, 25% water added, from the service deli
32 small slices rye bread
6 ounces cream cheese, softened
1 small cucumber, peeled and sliced
fresh dill, if desired

DIRECTIONS
1) Cut each slice of turkey ham into quarters; set aside. Spread bread pieces with cream cheese. Fold turkey quarters in half. Place turkey on cream cheese.
2) Top each piece with cucumber slice and garnish with fresh dill, if desired

Today’s Menu: Izzy’s Boneless Cod Sandwich

 

 

For Breakfast this morning I prepared some Simply Potatoes Garlic and Herb Hash Browns, 2 Johnsonville Turkey Sausage Links, and toasted a slice of Aunt Millie’s Light Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Great way to start my day! Sunny and 43 degrees out today. After Breakfast I went and picked up Breakfast for Mom at McDonald’s. Then later I drove Mom over to the bank and and took her to run a couple of errands. For Dinner tonight one of my favorites, Izzy’s Boneless Cod Sandwich.

 

 

 

 

Well I had my Dinner planned out but I received an email from Izzy’s Deli that a coupon for $2.00 off for their Boneless Cod Sandwich, my Dinner plans just changed! So tonight’s Dinner I had planned will be tomorrow night’s Dinner and tonight I’m having the Izzy’s Boneless Cod Sandwich. The Sandwich was huge and as good as always! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I could only eat 1/2 of it, I’ll have the other half for Lunch tomorrow. It came with a small Pasta Salad Cup and Potato Pancake, which I gave to Mom. Mom had the Izzy’s Reuben. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Dr. Pepper to drink.

For Breakfast this morning I Scrambled a couple of Eggs, topped them with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a few shakes of Frank’s Hot Sauce. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and a cup of Bigelow Decaf Green Tea. Outside another day of rain and clouds, high of 79 degrees. Cleaned the house and kitchen yesterday so today it was the junk closet, freezers and the pantry. For Dinner tonight it’s Izzy’s, Boneless Cod Sandwich.

After Breakfast I went to Kroger and picked up a Prescription for Mom and then picked up Breakfast for her at McDonald’s. Another sunny and humid day out today, a high of 90 degrees. Rain moving in later tonight. Got the cart out and did some yard work and then took a spin around the neighborhood, enjoying the day! For Dinner tonight it’s Izzy’s, Boneless Cod Sandwich.

Today’s Menu: Izzy’s Boneless Cod Sandwich

 

Had a late Breakfast this morning, I had to be at the Family Doctor for my 4 month checkup on Sugar, Cholesterol, and such. Back home I Poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. After Breakfast me and Mom went over to spend some time with Dad. His weight is down and has no energy what so ever. I feel sorry for him, just wish I could do something for him. For Dinner tonight the Kitchen is closed and it was Izzy’s Boneless Cod Sandwich.

 

 

For Dinner tonight it’s Izzy’s, so the Kitchen is closed! I couldn’t decide to go with their Cod Sandwich or the Corned Beef – Izzy’s Lean. I went with the Cod for tonight and I’ll have the Lean another time. I love all the Izzy’s Sandwiches!

The Sandwich is huge and so delicious! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I could only eat 1/2 of it, I’ll have the other half for Lunch tomorrow. This is one of the best Fish Sandwiches I have ever had! It came with a Potato Pancake which I gave to Mom. Today’s Menu: Izzy’s Boneless Cod Sandwich

 

 

For Breakfast this morning I Poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. Had a light rain early this morning and it was 50 by noon. A bit cooler as the day went on, into the low 40’s.Went to Meijer and Walmart got Dad a couple of Flannel Shirts and Pajamas for Christmas. Mom is a bit tougher to buy for. Stopped by the ATM and got gas before heading home. This area has been hit hard with what they call “skimmers”. They put the devices on gas pumps to hope to steal credit card info. You can’t even get gas safely anymore! So for Dinner tonight the Kitchen is closed and it was Izzy’s Boneless Cod Sandwich.
