Today’s Menu: Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip

 

 

 

To start my Sunday morning off I prepared Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. After Breakfast I headed up to the local Kroger for a few items and picked up Breakfast for Mom at McDonald’s. Outside it’s mostly Sunny, humid, and 88 degrees. I got the cart out and did some yard work this afternoon.I had a few things to do in the front yard. The Landscaper is coming tomorrow to redo our front flower bed for us. More detail on that tomorrow. For Dinner tonight I prepared a Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip.

 

I’ve been wanting a Pastrami Sandwich so when I went to Kroger this morning I purchased some Boar’s Head Cap-Off Top Round Pastrami and Boar’s Head Imported Switzerland Swiss Cheese. Besides the Pastrami and Swiss Cheese I’ll need; Aunt Millie’s Light Whole Grain Bread, French’s Spicy Brown Mustard, and Blue Bonnet Light Butter.

 

 

 

 

To prepare it I used my flat top griddle. I gave it a light spray of Pam Non Stick Cooking Spray and a 1/2 tablespoon of the Blue Bonnet Butter. Heated the griddle on medium heat. Next I got 2 slices of the Aunt Millie’s Bread and spread the Brown Mustard on the inside of 1 slice. Added a slice of the Swiss Cheese and then the Pastrami. Top with another slice of bread. Finally I spread the Blue Bonnet Butter on the outside of both slices of Bread.

 

 

 

With the griddle heated and ready I grilled my Sandwich. Grilled each side until The Bread is toasted and the Cheese melted. Grilled and Ready! The Sandwich was delicious. The Pastrami and Swiss was so good, with the Spicy Brown Mustard adding all kinds of flavor. Swiss Cheese provides such great flavor, especially when it starts to melt. So Good!

 

 

 

 

To go with the Sandwich I had some Ruffle’s Reduced Fat Ruffle’s Potato Chips. I don’t have Potato Chips that often but with any Sandwich they go great! I also had a tablespoon of Lay’s Ranch Chip Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Mango Diet Snapple to drink.

Today’s Menu: Subway Forest Ham and Turkey Sub

 

 

For Breakfast on this Sunday Morning I made a Breakfast Sandwich. I first toasted a Healthy Life Whole Grain English Muffins. I love these Muffins, they’re a 100 calories and 16 net carbs per serving. Next I lightly fried up some slices of Boar’s Head Sweet Sliced Ham. As the Ham was almost done I added a slice of Boar’s Head Vermont Cheddar and served it all on the English Muffin. One delicious way to start my day! Outside mostly cloudy with a high of 65 degrees. I t was yard work out today, finally. It’s finally dried off enough to get some much needed yard work done. I had 5 bags of Red Wood Chips delivered yesterday. So today my Cousin’s husband and son came over to spread the Wood Chips for me along with a few jobs around the house for me. Then later on I got the 4 wheel cart out and went around the house and sprayed for weeds and pick up limbs and such. Feels good to get outside and do some work!

 

 

Well I had Dinner planned out but we had an emergency with Dad late this afternoon again. I feel so sorry for him, he’s mind is slowly going away due to the Dementia. He was really confused to day, he kept trying to get out of bed and leave. He fell while trying to get up. But he was okay, nothing broken. So we sat with him until he calmed down and finally going to sleep. Anything we can do to make him more comfortable. We miss him so much here at home.

 


So anyway when we finally got home and the last thing I wanted to do is put together Dinner. We had Subway the other night when we spent the afternoon over there. So it was Subway again tonight. I ordered Mom the Subway Club and I had the Subway 6″ Black Forest Ham and Turkey Sub on a 9 grain Wheat Bun w/ Black Olives, Lettuce. The total calories for the sub is 270 calories and 41 net carbs. I added Hellman’s Light Mayo and French’s Yellow Mustard to the Sandwich when I got home. I also had a side of Ruffle’s Reduced Fat Potato Chips and a bottle of Diet Dr. Pepper. For dessert later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Roast Beef and Vermont Cheddar on Whole Grain w/ Tossed Salad

 

 

It was a very long evening and morning for me. As I battled Phantom Pains throughout that time. I didn’t get much sleep if any overnight as the pains were very intense. Why can’t they come up with something to control them. But for now all I can do is grit my teeth and hope they pass. When they finally slowed and stopped I didn’t do a whole lot of anything today but try to catch up on some sleep and relaxation. For Dinner I wanted something that didn’t take a lot of effort to prepare so I went with a Roast Beef and Vermont Cheddar on Whole Grain with a Tossed Salad.

 

 

On our visit to Jungle Jim’s International Market I picked up a few Boar’s Head items from the Deli, Boar’s Head, Deluxe Roast Beef, Honey Smoked Turkey, Sweet Sliced Ham, and Vermont Cheddar Cheese (Yellow). I’m using the Roast Beef and Vermont Cheddar. I served it on Aunt Millie’s Light Whole Grain Bread, topped it with some French’s Yellow Mustard. I also had a small side of Ruffle’s Reduced Fat Potato Chips.

 

 

 

I also had a Tossed Salad. I had a bag of Dole Greener Selection Salad. For the Salad Dressing I used Kraft Fat Free Classic Catalina Dressing along with a sprinkle of Oscar Mayer Real Bacon Pieces. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Subway 6″ Sub and Chips

 

For Breakfast this morning I prepared Skillet Diced Potatoes and Ham for Breakfast. In the 20’s this morning and a cold wind blowing! We only had a high of 36 degrees. So not a lot going on outside. Cleaned the fridge out, then the stove and oven, then on to the pantry. Took the brushes out of the vacuum and cleaned them. Well I got everything done so I watched some TV and read a couple of Food Magazines. Tonight I’m having a Subway 6″ Sub on 9 Grain Bun w/ Turkey and Black Forest Ham.

 

 

Didn’t feel like cooking tonight and I hadn’t had Subway in a while so it just sounded good for dinner! I had a 6″ Black Forest Ham and Turkey Sub on a 9 grain Wheat Bun w/ Black Olives, Lettuce. Today’s Menu: Roast Beef, Ham, Bacon, and Cheddar Cheese Double Decker w/ Chips

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. One of my favorite Breakfasts! After Breakfast I went up to the local Kroger for a couple of items and stopped by the ATM machine at the Bank on the way back home. Cloudy and a high of 48 degrees out. Got the leaf blower out and did the usual cleaning of the deck and driveway areas. Trimmed down Mom’s Rose Bushes and gave a final trim to a couple of the hedges. Not a whole lot else going on today. For Dinner tonight its Sandwich Night, I prepared a Roast Beef, Ham, Bacon, and Cheddar Cheese Double Decker w/ Chips.

 

 

I went to Jungle Jim’s International Market yesterday and purchased several Boar’s Head Meats and Cheese. Jungle Jim’s carries all of Boar’s Head products along with some test items from Boar’s Head. I purchased Boar’s Head London Broil Roast Beef (Rare), Sweet Sliced Ham, and Boar’s Head Vermont Cheddar (sliced). I used these3 items along with Simple Truth Hickory Smoked Bacon, Bib Lettuce, Kraft Reduced Fat Mayo w/ Olive Oil, Emeril’s Deli Style Mustard, and Aunt Millie’s Light Whole Grain Bread (3 slices) to make my Double Decker.

 

 

 

To start I gathered everything up. I first fried my Bacon 4 slices. And as always when frying Bacon you always make double the amount you need because it’s near impossible not to snack on it as your making it! With the Bacon fried I started making my Double Decker. I first toasted my 3 slices of Bread. On the bottom slice of Toast I first spread Mayo across it, next a slice of the Vermont Cheddar, 2 slices of Bacon, Bib Lettuce, then slices of the Sweet Sliced Ham, topped it with the Deli Mustard, and my bottom half of the Decker was done.

 

 

Topped everything with another slice of the Toast. I then topped that with Mayo, a slice of the Cheese, 2 slices of Bacon, Bib Lettuce, next slices of the Roast Beef, Deli Mustard, and the last slice of Toast. And the Double Decker is ready! Wow, what a Sandwich! Love the Boar’s Head Meat and Cheese. Then the Mayo and Mustard give perfect flavor. Excellent Sandwich!

 

 

 

 

 

I had some Ruffle’s Reduced Fat Potato Chips to go with the Sandwich I also had a Diet Dr. Pepper to drink. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Cheese and Turkey Chili Dogs

 

 

For Breakfast this morning I made a 2 Egg Cheese Omelet along with 2 Jennie – O Turkey Breakfast Patties, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Outside it’s a bit cooler, 47 degrees this morning and a high of 73 degrees. It looks like more of Fall like weather has moved in finally! Cleaned the brushes of our vacuum then cleaned the house, dusted and vacuum. Then outside got my handy leaf blower out and cleaned the deck and driveway off. After Lunch I repotted a couple of flowers for Mom, sure is nice out! Then got the cart out and enjoyed the rest of the afternoon. Went around the neighborhood and down to the lake. For Dinner tonight Cheese and Turkey Chili Dogs.

 

I had just enough of my 2 Bean Turkey Chili leftover to make some Cheese and Turkey Chili Dogs. To make them I’ll need; 3 Bean Turkey Chili, Ball Park Smoked Turkey Franks, Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns, French’s Yellow Mustard, and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Them are some good fixings to make some Coneys with!

 

 

 

 

To prepare them; Heat the Chili in a medium saucepan until just heated through. Next I cooked the Hot Dogs. I used a medium size sauce pan, filled 3/4 full of water and heated to a boil. When water was boiling I added the Franks, boiled for 5 minutes. Removed the pan from the heat, drained the water, and prepared the Cheddar Chili Dogs. Spread each Bun with Mustard. Place a Hot Dog in each Bun and top with Beans. Sprinkle each with Cheese. These turned out fantastic, love the Chili and Cheddar toppings.

 

 

Served it with some Ruffles Reduced Fat Potato Chips and some Lay’s Ranch Dip. Also had a Caffeine Free Diet Coke. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Izzy’s Lean Corned Beef Sandwich w/ Potato Chips

 

 

For Breakfast I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a Sunnyside Up Fried Egg. Just love these skillet Meals! It was another night of little to no sleep again. Dealing with the Phantom Pains again. I usually don’t have them so close together like this. But they started late last night and continued till about 10:00 this morning. So not a lot got done today. Not that a lot would get done outside in that humidity! Showers in the morning then partly cloudy, 89 degrees and HUMID. After Lunch I laid back down in bed to catch up on some sleep. So the kitchen is shutdown tonight and its an Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Reduced Fat Chips.

 

After catching up on some sleep I didn’t feel like cooking tonight so it was Izzy’s! I had an Izzy’s famous corned beef, 96% lean cut, on whole wheat bread. I also had some Ruffle’s Reduced Fat Chips along with a Diet Peach Snapple. There’s 360 calories and 32 carbs for a full sandwich. I had half of it and saved the other half for lunch tomorrow, half sandwich 170 calories and 16 carbs. Not only does it look delicious, it is delicious! Izzy’s by far has the best and most tender Corned Beef there is! I bought Mom a Reuben and Potato Pancake. For dessert later a Weight watcher’s Cookies and Cream Ice Cream Bar. The Kitchen will reopen tomorrow!

For Breakfast this morning I prepared a Poached Egg that I served on a toasted Healthy Life Whole Grain English Muffin. Topped it off with my morning cup of Bigelow Decaf Green Tea. Good light and healthy Breakfast! I enjoy Poached Eggs more and more. It was 86 degrees yesterday and 64 degrees today, a bit cooler and it really got windy as the day went on. It was laundry and house cleaning today, all day. For Dinner tonight an Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Reduced Fat Chips. I shut the kitchen down for tonight!

Today’s Menu: BBQ Shredded Pork Sandwiches w/ Potato Chips

 

 

 


For Breakfast this morning I fried up a couple of Jennie – O Turkey Breakfast Sausage Links along with some Simply Potatoes Shredded Hash Browns. Also had that morning cup of Bigelow Decaf Green Tea. Lot of rain out there today. Showers on and off all day, had a high of 55 degrees. Good day to stay in and I did! So today I cleaned the house, vacuum and dusted. Then cleaned the fridge and oven in the Kitchen. Later on caught up on some shows I had recorded. For Dinner tonight i prepared BBQ Shredded Pork Sandwiches w/ Potato Chips.

 

 

 

I had used the Hormel Slow Simmered Pork Roast Au Jus but it had been a while since I’ve used it. It comes fully cooked in a sealed microwavable plastic tray. To prepare it first remove the outer sleeve and place vacuum-sealed tray in microwave, do not pierce or vent film. Then heat on high for 4 minutes. Self-venting film expands as it heats, forming a bubble to lock in flavor and juiciness. Let stand for 2 minutes. Peel back film and serve! Excellent Pork!

 

 


I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. I topped the Pork with some Jack Daniel’s Honey Smokehouse BBQ Sauce. For a side I had some Ruffle’s Reduced Fat Potato Chips. Also had an Ice-Cold Diet Dr. Pepper to drink. For Dessert later a Breyer’s 100 Calorie Vanilla Ice Cream Cup.

Today’s Menu: Roast Beef and Sharp Cheddar Sandwich w/ Chips

 

 

Just had a cup of Bigelow Decaf Green Tea for Breakfast. Then about 8:00 I took Mom over to the hospital and we checked in on Dad and then on to Jungle Jim’s International Grocery. This store is one of a kind! You could spend all day in there looking at everything. I noticed in the Meat Department they had a special going on for their Ground Kangaroo. Then in the Seafood Department they had Blue Crab in! Passed on getting some for now, maybe next week. I ended up getting several things including something for Dinner tonight. Back at home I got the 4 wheel cart out and got a little yard work done. Looks as though I’m going to have to have our wooden deck painted. There goes $400 or more. We have a huge deck that wraps around 1/2 the house. Lot of money, but it has to be done. For Dinner tonight my favorite Boar’s Head Meat, the Rare Roast Beef. Tonight its a Roast Beef and Sharp Cheddar Sandwich w/ Chips.

 

 

While at Jungle Jim’s earlier today, of course I had to hit that incredible Deli Department! They carry any Boar’s Head Meat, Cheese, or Sauces that Boar’s Head makes! And as always I picked up some of my favorite Lunch Meat, Boar’s Head Rare Roast Beef. Besides all Boar’s Head Products in the Deli they have a large selection of other Cold Cuts, a huge selection of any Cheese you could want, Pickles, and an Olive Bar that is unmatched. I also picked up some Anti Pasta Salad.

 

 

 

 

So now about this Sandwich – I’ll be using the Boar’s Head Roast Beef, a slice of Kraft Sharp Cheddar, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Healthy Life Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffles Reduced Fat Potato Chips. And to drink a 7.5 Mini Can of Coke Zero, love these little Mini Cans. For Dessert later a Jello Sugar Free Dar Chocolate Pudding.
