Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

For Breakfast this morning I prepared a Breakfast sandwich. I heated up a al fresco Chicken Sausage Patty. As that was heating I toasted a Thomas Light 100% Multi Grain English Muffin. I took the Patty put it between the Muffin halves and topped the Patty with a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese. These are so good! After Breakfast I went to Kroger for Mom, she wanted some Lunch Meat. I stopped by McDonald’s to pick up her usual Breakfast of a Sausage, Egg, and Cheese on Bagel along with a medium Decaf Coffee. Got the cart out of the shed after Lunch along with a rake and the leaf blower. I went around the house and cleaned the flower beds and around the house. Not bad out today, mostly sunny and 50 degrees. For Dinner tonight its a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

 

 

I had fully intended to prepare a Pork Roast for Dinner tonight, until I went to Kroger. I had went to the Deli to purchase some Kahn’s Bologna and Boar’s Head Sweet Slice Ham, which I did. But I seen them slicing some Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef and it looked way to good to pass up! It was a beautiful Rare and it was on sale. So the menu changed tonight to a Roast Beef and Vermont Cheddar Sandwich! So for my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango Snapple to drink.

I had a Jimmy Dean Simple Scrambler Cup – Turkey Sausage Crumbles, Egg Whites, and Cheddar Cheese for Breakfast. I also had my morning cup of Bigelow Decaf Green Tea. 43 degrees and partly sunny outside today. After Breakfast did a load of laundry and cleaned the house this afternoon. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

 

 

 

 

I wanted something light for Dinner so a Sandwich seemed right, a Roast Beef and Vermont Cheddar Sandwich! I had picked up some Boar’s Head Rare London Broil at Jungle Jim’s yesterday. For my Sandwich I’ll be using the always delicious Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

Today’s Menu: Roast Beef and Cheddar on Whole Grain Bread w/ Chips and Dip

 

For Breakfast on this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. 51 degrees and cloudy outside today. I took Mom’s car to the Car Shop to have the oil changed and then stopped and had it washed. Then back home I then took my car up to have it washed. We now have 2 clean cars! Not much else going on today. For Dinner tonight its Roast Beef and Cheddar on Whole Grain Bread w/ Chips and Dip.

 

 

 

 

 

I was going to prepare Stir Fry tonight but me or Mom just wanted something a bit lighter tonight so we had Roast Beef and Cheddar on Whole Grain Bread w/ Chips and Dip. Just seemed like a good day for a Sandwich for Dinner! For my Sandwich I’ll be using the always delicious Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink. Till tomorrow!

I had a Jimmy Dean Simple Scrambler Cup – Turkey Sausage Crumbles, Egg Whites, and Cheddar Cheese for Breakfast. I also had my morning cup of Bigelow Decaf Green Tea. It is freezing cold outside this morning, minus 9 degrees below zero! We ended up with about 7 inches of snow overnight also with a high of just 16 degrees. So it’s cold , windy, and icy outside but warm and snug inside. We had about an inch of snow on the ramp leading outside. I had to wait for my neighbor to come over to dig me out before I ventured outside to try to clean up a bit. The same neighbor used his snow blower to get some of it off the driveway, so very cold out. Cleaned the house today and then watched the NFL Playoffs the rest of the afternoon. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

For Breakfast this morning it was Ham and Eggs. I had purchased a small Meijer Sliced Pepper Ham. So I sliced several pieces up and fried them in a small skillet until heated through. Then in another skillet I fried a Sunny Side Up Egg. Then I toasted 2 slices of Aunt Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. Good Breakfast to start an Icy and Cold morning. We got freezing rain overnight and snow on top of it, about 1/2 an itch. It all made for some slick roads out there, a lot of wrecks. It got to 40 degrees later and cloudy for the afternoon. I’m usually up by 6:00 am. or so but I slept in till 8:00 this morning! It felt good to get that extra sleep. Not much going on outside today so I did things around the house today. Cleaned the house and then some repairs. I replaced some of the lower wall trim around the house. I run into it sometimes in my Hoveround Mobility Chair and damage it. So a while back I bought a long strip of the wood trim at Home Depot. That way I have it on hand to replace it from time to time. So I stayed busy inside all day. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Another restless and sleepless night fighting with Phantom Pains. That’s twice this week I’ve had to deal withe Phantom Pains, twice too many! When I have these overnight it wipes my day out the next day. Outside it’s a hot one, 98 degrees with a heat index around 104. So not much going on outside today. So not much going on , even in the Kitchen. So the Kitchen is closed today and it’s Izzy’s Lean -Lean Corned Beef on Whole Grain and Ruffle’s Reduced Fat Potato Chips.

 

 

I would put Izzy’s Corned Beef up against any other. Plus with their “Lean’ version of the Corned Beef it makes it healthier also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full, as usual, along with a serving of Ruffle’s Reduced Fat Potato Chips and their 80 calories and 17 carbs per serving. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Dr. Pepper to drink.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

For Breakfast this morning I prepared 2 Eggs Scrambled, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated up some Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. I sprinkled some Sargento Reduced Fat Colby-Jack Shredded Cheese and Ortega Chipotle Taco Sauce on my Scrambled Eggs. I buttered the Toast with I Can’t Believe It’s Not Butter. Great Breakfast to start the day off with! Outside its Hot and Humid! A high of 98 degrees and the Heat Index had it over 100 degrees! They say we 4-5 days of this with each day getting hotter before cooling down a bit. But after last Winter I’m not complaining! Did some housework and cleaned up a bit outside. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

Really tired and stressed today, with a lot of running around. Dad is at a local assisted living center for 5 days and he’s taken a turn for the worse and now we are scrambling to find a permanent place for him to stay. There’s just no way we can handle him here at the house. I’m in a wheelchair and Mom is 90 and we are not able to properly care for all his needs now. We are heart broken and just nothing we can do. So the Kitchen is closed today and it’s Izzy’s Lean -Lean Corned Beef on Whole Grain and Ruffle’s Reduced Fat Potato Chips.

 

 


I would put Izzy’s Corned Beef up against any other. Plus with their “Lean’ version of the Corned Beef it makes it healthier also. To start the morning off I toasted a Healthy Life Whole Grain English Muffin and Poached an Egg. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I started a load of laundry for Mom and then it was on to house cleaning, vacuumed and dusted. Later on got the hand vacuum out and vacuumed my car and Mom’s car, both needed it! This morning it was about 32 degrees with a mix of rain and snow! Our first sign of the white 4 letter word! Only had a high today of 44 degrees. Did a few chores around the house and watched some College Football later in the afternoon. I’m shutting down the Kitchen today So with the Kitchen closed tonight it was Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Reduced Fat Chips.

 

I would put Izzy’s Corned Beef up against any other. Plus with their “Lean’ version of the Corned Beef it makes it healthier also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full, as usual, along with a serving of Ruffle’s Reduced Fat Potato Chips. Then to go along with it all I had an ice-cold Diet Dr. Pepper, 0 calories and 0 carbs. For dessert later a Jello Sugar Free Dark Chocolate Pudding.
