Sugar Burns……..

Sugar burns at 265 degrees F (130 degrees C). If you are cooking foods with sauces or rubs that contain sugar you need to keep your grilling temperature below this temperature or your food will burn and blacken. Or don’t add those sauces until the end of the cooking time.

Today’s Menu: Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Green Beans

Crock Pot Pork Back Ribs w Potatoes Au Gratin and Cut Italian Gr 006
Started my Sunday morning off with a toasted Healthy Life Whole Grain English Muffin that I lightly buttered with I Can’t Belive It’s Not Butter. Also so had a cup of Bigelow Decaf Green Tea. After I had Breakfast I went to McDonald’s and picked Mom and Dad’s Breakfast up for them, they love McD’s Breakfasts. Mom went on to Church and I stayed home with Dad. We can’t leave him home by himself for very long anymore. So I did some heavy-duty house cleaning. Everything done I got the cart out for an afternoon ride. Nice day out, mostly sunny and 72 degrees. Later on it was NFL Football for the day! For Dinner tonight it’s Moms favorite, Crock Pot Pork Back Ribs. I prepared Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Green Beans.

Crock Pot Pork Back Ribs Seasoning
I was planning to have a Bison Chopped Steak but Mom came in from going to the local Kroger and had a slab of Pork Back Ribs. So the menu changed from Chopped Steak to Ribs! Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and then seasoned them with JB Fat Boy Premium All-Purpose Rub. Put each half in a Hefty Gallon Plastic Bag and then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge.

Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low, for about 8 hours. Long up in the afternoon you can start smelling the aroma of the Ribs, intoxicating! After 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For all of us, JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time.

Idahoan Au Graten Potatoes 002
For side dishes I prepared some Idahoan Au Gratin Homestyle Casserole. I left the Idahoan Product info and instructions at the end of the post. Then I heated up a can Del Monte Cut Green Beans and baked some Pillsbury Reduced Calorie Crescent Rolls. For dessert a bowl of Dole Sliced Peaches.

Today’s Menu: Cumin Spiced Pork Chops w/ Savory Herb Potatoes and Cut Green Beans

Cumin Spiced Pork Chops w Savory Herb Potatoes and Cut Green Bea 016

Wow what a beautiful full moon last night and a total lunar eclipse on top of it! We were able to watch the whole thing as the clouds cleared up about an hour before it started. Started my day off with a Healthy Life Whole Grain English Muffin topped with 2 servings of Egg Beater’s Egg Whites. Good little sandwich, also had a cup of Bigelow Decaf Green Tea to get me started. Didn’t get a chance to go see Dad at rehab today but he’s doing a lot better, hopefully back home before long. Stayed home and got caught up on some house cleaning and yard work. Had to get the 4 wheel mobility cart out and the leaf blower and do a little yard work. For dinner tonight, Cumin Spiced Pork Chops w/ Savory Herb Potatoes and (Fresh) Cut Green Beans.

On my last visit to Costco I picked up a huge package of Pork Chops and had them in the freezer. I got 2 of the Chops from the freezer and let it thaw overnight in the fridge. Then to prepare my Chop I’ll need; The Cumin Spiced Rub Cumin Spiced Pork Chops w Golden Hominy and Cut Green Beans and 005which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork. Hard to beat these Costco Pork Chops, always top quality.

While at Jungle Jim’s I was going through the their huge Produce Department and came across a new Potato Product, the Little Potato Company Savory Herb Potatoes. I also picked up a package of the Italian seasoned Potatoes. I prepared the Savory Herb Potatoes tonight. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good to have in the pantry! So easy to prepare and no clean up.

Then for another side I also picked up a beautiful mess of Green Beans while at Jungle Jim’s. This afternoon Mom and myself broke the Beans up and then I prepared them. Just use a large kettle or sauce pan. Fill it with water add the Beans, add Sea Salt and 2 tablespoons of Extra Virgin Olive Oil (cover), and heat on high until a boil. Then turn the heat to medium and cook until tender. A really delicious mess of Green Beans! Canned Green Beans are great but nothing beats the fresh Green Beans! I also baked a loaf of Pillsbury Rustic French Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Crock Pot BBQ Pork Shoulder Sandwiches w/ Baked Crinkle Fries

Crock Pot BBQ Pork Shoulder Sandwiches 004
Up bright and early this morning. For Breakfast I prepared some Pillsbury Buttermilk Biscuit Waffles and a couple of slices of Smithfield Ham. I use the small Pillsbury Biscuits, fewer calories and carbs. I just put in 1 Biscuit in the Waffle Maker and cook for 2 1/2 minutes and done! Makes a god little Waffle. After Breakfast I got my Pork Shoulder in the Crock Pot and started. From there outside, leaves everywhere. Got the leaf blower out and got that all cleaned up. Then got the cart out for the afternoon. Finally some nice weather out there. Less humid and high around 80 degrees. Rode around the neighborhood and spent some time down by the lake, just enjoying the day! So for dinner tonight I prepared Crock Pot BBQ Pork Shoulder Sandwiches w/ Baked Crinkle Fries.

Crockpot BBQ Pork Shoulder 005

I had a Pork Shoulder (Boston Roast) in the freezer so I pulled it out yesterday morning and let it thaw in the fridge. I used a real easily prepared recipe for it. Using one of my favorite cooking vessels, the Crock Pot. To make this I’ll need the following; Pork Shoulder or Boston Roast (about 4 to 7 pounds, bone-in or boneless), 1/4 cup of Water, JB’s Fat Boy Premium All-Purpose Rub, and JB’s Fat Boy HaugWaush BBQ Sauce.

Last night before I went to bed I applied the Rub all over Pork Shoulder and sealed it in a plastic bag. Let it Refrigerate until ready to use the next day. Pulled the Pork Shoulder from the fridge, shaking off any excess Rub. Crock Pot BBQ Pork Shoulder SandwichesThen to prepare it I lined my Crock Pot with a Reynolds Crock Pot Plastic Bag Liner and sprayed that with Pam Cooking Spray w/ Olive Oil. Love these Crock Pot Liners, makes for an easy cleanup! Turned the Crock Pot on High. Placed the Meat in the slow cooker with Water. Covered and cooked on High for 1 hour. Turned it to Low and cooked 7 to 9 hours longer, until very tender. Removed the Roast and discarded the fat and juices. Shredded the Pork; returned it to slow cooker. Mixing a little BBQ Sauce into the Meat for more flavor. Cover and cooked on Low for about 1 hour longer, until hot. Served on a Kroger Lite Wheat Bun. With Coleslaw (Optional) and extra BBQ Sauce on the side. Nothing but a winning Pork Shoulder Dish! So tender and seasoned just right with Rub and BBQ Sauce. A lot of leftovers for some delicious Sandwiches!

For a side I baked some Ore Ida Crinkle Fries, love those Potatoes! For dessert later tonight a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
