Healthy Winter Side Dish Recipes

Find healthy, delicious winter side dish recipes, from the food and nutrition experts at EatingWell.

Balsamic and Parmesan Roasted Cauliflower
Roasting isn’t usually the first cooking method you think of for cauliflower but the results are quite delicious. The florets are cut into thick slices and tossed with extra-virgin olive oil and herbs. Wherever the flat surfaces come into contact with the hot roasting pan, a deep browning occurs that results in a sweet, nutty flavor…………..

Sheet-Pan Roasted Root Vegetables
One pan is all you need for a heaping pile of nutritious, tender and colorful root vegetables. Whip up this large-batch recipe at the beginning of the week to use in easy, healthy dinners all week long………………..

Easy Brown Rice
Here’s the only recipe you need to make perfect brown rice every time! This healthy whole grain is great on its own as a side dish, or use it in your favorite recipes calling for cooked brown rice…………………………

Kitchen Hint of the Day!

When using your slow cooker…………………..

Place hard vegetables, like potatoes, carrots, and other root vegetables at the bottom of the slow cooker where they will have more moisture and cook swiftly.

Stew Vegetables……………….

When you’re picking vegetables for your stew, think hearty. Root vegetables like potatoes, turnips and rutabaga are all good options; they can take the prolonged cooking and still hold their shape.

Mushrooms also hold up well. More tender vegetables like snow peas, spinach, and other leafy greens can certainly have their place in the slow cooker, but you may want to add them later on; they can disintegrate if they spend too much time cooking.

When going “Meatless”…………..

Choose vegetables with meaty textures—squashes, cabbages, potatoes, mushrooms, aubergines, beetroots—and combine them with lighter greens such as spinach and leek, as well as tasty reds: peppers and tomatoes.

Healthy Herb and Spice Recipes
Find healthy, delicious herb and spice recipes from the food and nutrition experts at EatingWell.

Lentil and Root Veggie Soup
French green lentils and black lentils hold up well to long, slow cooking without becoming mushy. Save the rinds from used-up blocks of Parmesan in a resealable plastic bag or tightly sealed container in the refrigerator. They give soup broths a rich, savory flavor………

Chicken with Tomato-Balsamic Pan Sauce
Fennel seeds give this tomato and balsamic sauce an extra kick, but if you don’t have them on hand, try using cumin or coriander seeds, or 1 teaspoon of a ground herb or spice. Serve this easy chicken breast recipe with whole-wheat spaghetti or crusty bread to sop up the sauce. Save the unused chicken tenders in an airtight container in your freezer for up to 3 months. Once you have enough, thaw them out for another use……..

Creamy Vegan Butternut Squash Carbonara
Carbonara, traditionally bathed in eggs, gets a vegan makeover using roasted and pureed butternut squash instead to make it ultra-creamy. A topping of ground almonds, garlic and sage gives it texture and an herby, savory flavor in place of the cheese and bacon……….
