Woke up to a beautiful Fall-Like Morning, sunny and around 42 degrees. As I went out and got the morning papers there was 2 flocks of Geese heading South, is that a sign? Had to go to Walmart and pick up a few items for my dinner tonight and back home for the day. Plus today is NFL Football, when the Cincinnati Bengals play I stay (home). I ran across a site called Platter Talk, and it’s packed full of great ideas and recipes (http://www.plattertalk.com/)! And that’s where tonight’s recipe comes from. I prepared Italian Turkey Sausage Skillet, makes your mouth water just saying it!

Jennie O Italian Turkey Sausage

I saw this recipe and I had to try it ASAP! To prepare it I’ll need the following; Egg Noodles (I used Ronzoni Healthy Harvest Whole Grain Extra Wide Noodles), Jennie – O Italian Turkey Sausage, Extra Virgin Olive Oil, White Onion (diced), 1 Garlic Clove, 2% White Milk, 2 cans Creamy Tomato Soup, 1 tablespoon McCormick Italian Seasoning, 1 teaspoon fresh Parsley chopped, ¼ cup grated Kraft Reduced Fat Parmesan Cheese, and Sea Salt and Pepper to taste. And all this is going to combine into nothing but good!

To prepare it start by Preheating the oven to 350 degrees F. I then cut Sausage links into 1 inch pieces. Heat the Olive Oil in 10 inch cast iron skillet over medium high heat and brown the sausage, without fully cooking it. Yes Cast Iron Skillet, my favorite Skillet! Add the Onion and Garlic (I minced my Garlic), stir and saute with sausage until soft. Stir in the Italian Seasoning, Salt, Pepper, and Parsley, set aside. I prepared egg noodles in boiling water, as directed, and drained. And now the good part! Combine the Sausage Mixture and Noodles in a mixing bowl, add the Tomato Soup (I used Amy’s Organic Low Fat Creamy tomato Soup) and stir well. Reserve the skillet for baking. Stirred in the Parm Cheese and 2% Milk and transferred back to skillet. Into the preheated oven and bake for 25-30 minutes, you can add additional Milk to prevent from drying out, if necessary. Allow to stand for 5 minutes after removing from oven. Garnish with additional Parmesan Cheese and Parsley if desired. And when this is ready to serve be prepared for one delicious dish! It’s just one huge flavor explosion! The Italian Turkey Sausage combined with all the other ingredients is so good, and if you like Pasta like I do you’ll love this. ITALIAN TURKEY SAUSAGE SKILLET

 

 

INGREDIENTS
6 oz egg noodles
1 lb. Italian Turkey Sausage
2 tablespoons olive oil
1 small white onion, diced
1 garlic clove, thinly sliced
½ cup milk
2 cans cream of tomato soup
1 tablespoon Italian seasoning
1 teaspoon fresh parsley chopped, plus more for garnish
¼ cup grated Parmesan cheese, plus more for garnish
salt and pepper to taste
INSTRUCTIONS
Preheat oven to 350 degrees F.
Cut sausage links into 1 inch pieces.

Stir in Italian seasoning, salt, pepper, and parsley, set aside.
Prepare egg noodles in boiling water, as directed, and drain.
Combine sausage mixture and noodles in mixing bowl, add tomato soup and stir well. Reserve skillet for baking.
Stir in cheese and milk then transfer back to skillet.
Bake for 25-30 minutes, add additional milk to prevent from drying out, if necessary.
Allow to stand for 5 minutes after removing from oven. Garnish with additional Parmesan cheese and parsley if desired.

Today’s Menu: Turkey Breast Tenderloins w/ Noodles

Started the morning off with a Scrambled Egg topped with a sprinkle of Sargento Reduced Fat Shredded Cheddar, Jennie – O Turkey Lean Breakfast Sausage Links, a couple of slices of buttered Klosterman Wheat Bread, and a cup of fresh Brewed Bigelow Decaf Green Tea. How did your morning start off? Been another gorgeous day out again, be nice if it stayed like this year around! Dinner tonight; Turkey Breast Tenderloins w/ Noodles.

When it’s a Turkey Dish it’s usually Jennie – O Turkey. I’ll be using Jennie – O Extra Lean Boneless Turkey Breast Tenderloins. To prepare it I’ll need; Turkey Breast Tenderloins, Low Sodium Soy Sauce, Swanson Low Sodium Chicken Broth, Sea Salt, Ground Pepper, Hungarian Paprika, Oregano, Parsley, Mushrooms (sliced), Ronzoni Healthy Harvest Extra Wide Noodles (100% Whole Grain), and I Can’t Believe It’s Not Butter.

I started by boiling some water for the Healthy Harvest Noodles, and cooked those by the package instructions. I had went to Meijer earlier this morning and purchased the Jennie – O Turkey Tenderloins. I took 2 of the Tenderloins and put them in a Hefty Zip Plastic Bag and added some Low Sodium Soy Sauce to marinate and put them back in the fridge for about 2 hours. Removed them from the bag and shook off the excess Soy Sauce. I then seasoned them with Sea Salt, Pepper, and Hungarian Paprika. Then pan fried them by the package instructions on medium heat. As the Tenderloins were finishing up I added my sliced Mushrooms and the Parsley. As all that was finishing up, my Noodles were just finishing also. To serve I made a bed of the Noodles, topped with a bit of Butter, and topped it with the Turkey Breast tenderloins and Mushrooms and topped that with Oregano Flakes and Kraft Reduced Fat Grated Parmesan Cheese. I put together the recipe last night when I was thinking about what to have for Dinner, and it turned out as one delicious and healthy recipe. The Jennie – O Turkey Tenderloins were delicious! Tender, moist, and seasoned just right. I left the Jennie – O Turkey Tenderloins product info at the end of the post for complete instructions on pan frying the tenderloins. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Cooking Instructions:
STOVETOP METHOD:
Sray skillet with nonstick cooking spray or add 1 to 2 teaspoons oil.
Preheat skillet over medium-high heat.
Place tenderloins in hot skillet.
Brown on both sides.
Add 1/3 cup liquid.
Reduce heat to medium-low.
Cook, covered, 35 to 40 minutes.
Always cook to well-done, 165º F. as measured by a meat thermometer.

OVEN METHOD:
Preheat oven to 350°F.
Spray 9×9 or 11×17-inch pan with nonstick cooking spray.
Place tenderloins in pan.
Add 1/3 cup liquid.
Cover with foil.
Cook 30 minutes.
Remove foil.
Cook 20 to 30 minutes more, basting occasionally if desired.
Always cook to well-done, 165º F. as measured by a meat thermometer.
