Today’s Menu: Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread

To start the morning off I made a Breakfast Sandwich. I used Egg Beater’s Egg Whites, Johnsonville Turkey Sausage Patties, a slice of Boar’s Head Yellow Vermont Cheddar, and served it all on a toasted Thomas Light English Muffin. I also had my morning cup of Bigelow Decaf Green Tea. Very good Breakfast to start the day! Mostly sunny and 52 degrees out today, still a bit windy. Did a load of laundry after Breakfast. Later I got my face cover on and got the cart out of the shed and took a quick ride around the neighborhood. I only saw 2 people out, like the other day. They delivered our bags of Wood Chips for the flower beds today. It just has to dry out so we can get them spread in the flower beds. I just hope this virus finally runs its course or they come up with a vaccine. For Dinner tonight I prepared a Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread.

Really looking forward to this meal tonight! So for Dinner tonight I’m preparing a Smoked Turkey Sausage and Shrimp Gumbo. Using the Zatrain’s Gumbo Mix, Butterball Hardwood Smoked Turkey Sausage, and a bag of Meijer Frozen Shrimp (Large Size). Add all together and I’ve one Delicious Meal coming!

To prepare it I got a large saucepan and sprayed it with Pam Non Stick Cooking Spray. Then added 6 cups of Water, bite sized sliced 1 1/2 Sausages of the Butterball Smoked Turkey Sausage, and the Gumbo Mix. Mixed until well blended together. I brought it to a boil; covered and simmered for 25 minutes.

Next as the Gumbo was cooking I got the Shrimp out of the fridge washed then and let then drain in a colander. Then with 15 minutes of cooking time left I added the Shrimp to the Gumbo, stirring again until well mixed. Continued for 15 minutes. Removed the pot from the heat and let it stand for 5 minutes before serving.

This made one excellent Gumbo Dish! The Mix itself was flavored perfect, spicy but not over powering. Then with the added Sausage and Shrimp, it just capped everything off! I added a few shakes of Frank’s Hot Sauce to the Dish also. Lots of delicious leftovers for tomorrow!

Then I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Perfect Bread with any Dish! For Dessert later a Sugar Free Dark Cherry Jello Cup.

ZATARAIN’S® GUMBO MIX WITH RICE
In New Orleans, there are as many different varieties of gumbo as there are people who make it. Zatarain’s Gumbo Mix with Rice is a flavorful foundation, making it easy to create classics like shrimp and okra or chicken and sausage gumbo – or to invent a new signature gumbo of your own!

Gumbo is the quintessential dish of New Orleans, a city of diverse influences that formed a new culture greater than the sum of its parts. Those same influences are reflected in every bowl of gumbo. The dish is a rich and flavorful melting pot, just like its hometown.

Gumbo can be prepared with your choice of 1 lb. of cooked chicken, smoked sausage or seafood, cut into bite-size pieces.

STOVE TOP DIRECTIONS
1. MIX 6 cups water and Gumbo Mix in 4-quart saucepan until well blended.
2. For Chicken or Sausage Gumbo: Stir in chicken or sausage. Bring to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender.
For Seafood Gumbo: Bring to boil. Reduce heat to low; cover and simmer 15 minutes. Stir in seafood. Cover and simmer 10 minutes longer or until rice is tender.

MICROWAVE DIRECTIONS
1. MIX 6 cups water and Gumbo Mix in 4-quart microwavable bowl until well blended.
2. For Chicken or Sausage Gumbo: Stir in chicken or sausage. Cover. Microwave on HIGH 30 minutes or until rice is tender, stirring occasionally.
For Seafood Gumbo: Cover. Microwave on HIGH 20 minutes, stirring occasionally. Stir in seafood. Cover. Microwave on HIGH 10 minutes longer or until rice is tender, stirring occasionally. Let stand in microwave 5 minutes.

Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast

For Breakfast this morning I Scrambled a couple of Eggs and toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread that I topped with I Can’t Believe It’s Not Butter Light. I also had a cup of Bigelow Decaf Green Tea. We had a freeze warning for this morning, 29 degrees out. 52 degrees and cloudy with showers moving in late. My Sinuses have let up a little so I was able to function better! Did a load of laundry after Breakfast. Later on I got the vacuum out and attached the long hose to it. Then I went around to all the heating vents and removed them from the floor. I then got the sweeper and used the long hose to vacuum the dust out of them. I was amazed at all the dust that came out of the vents. I’ll have to start doing this more often. For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

We love Spaghetti and Meatballs! So it’s Spaghetti and Meatballs tonight! And you can always make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For the Meatballs I’m using Meijer Turkey Meatballs. These Meatballs are 150 calories and 5 carbs per serving (6 Meatballs). For the Spaghetti I’ll be using Ronzoni Healthy Harvest Whole Grain Spaghetti.

I’ll be cooking the Meatballs in LaRosa’s Original Pasta Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a small Sauce Pan, sprayed it Pam Non Stick Cooking Spray, added the sauce to it, and heated on medium low heat. As the sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Cooked them for 7 minutes and then reduced the heat to low until I was ready to use them.

As I said I’m using Ronzoni Healthy Harvest Whole Grain Spaghetti. It’s my favorite and I use all the Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. To prepare the Spaghetti; I cooked the Spaghetti as to the package instructions. I used a large Sauce Pan and filled it 1/2 way up with water. Turned the burner on high and brought the water to a rapid boil. Added the Spaghetti and stirred, returning it to the rapid boil. Cooked it uncovered, stirring it occasionally. Cooked it for a total of 8 minutes and done! Love this Pasta so tender and tasty. As the Spaghetti was cooking I baked the New York Bakery Light Texas Toast. For Dessert/Snack tonight I had a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast

For Breakfast this morning I made an Egg White ham and cheese Omelet. I used Egg Beater’s Egg Whites, Meijer Cubed Ham, and Sargento Off the Block Cheddar Cheese. I also toasted a slice of Aunt Millie’s Light Whole Grain Bread that I topped with I Can’t Believe It’s Not Butter. I also had a cup of Bigelow Decaf Green Tea. Partly cloudy, windy ,and 56 degrees out today. After Lunch I got the cart out of the shed and got a few things done outside. I had enough wood skirting to replace part of the trim around the shed. Then I got a long handled brush and I cleaned part of the deck. Hopefully some day I can afford to have a new deck built, hopefully soon! For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Texas Toast

For Breakfast this morning I had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s and picked up Breakfast for Mom. For dinner tonight I prepared Spaghetti and Meatballs w/ Light Texas Toast. Mostly sunny and 80 degrees out, low humidity again! I had to wear a surgical mask when outside today as the ragweed count was sky high! Got the cart, rake, and leaf blower out of the shed and got some yard work done. I raked a neighbors yard for them. They are an older couple and his wife has been in rehab and he’s been there with her most of the day. So I got that done for him. Everything done I took a spin around the neighborhood and enjoyed the beautiful day. For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

Spaghetti and Meatballs tonight, we love Spaghetti and Meatballs! And you can always make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For the Meatballs I’m using Meijer Turkey Meatballs. I bought a bag of these a few weeks ago for the first time. I’ve always used Honeysuckle White Turkey Meatballs but I can no longer find them at any of the stores. These Meatballs are 150 calories and 5 carbs per serving (6 Meatballs).

I’ll be cooking them in LaRosa’s Original Pasta Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. Cooked it for a total of 8 minutes and done! Love this Pasta so tender and tasty. As the Spaghetti was cooking I baked my New York Bakery Light Texas Toast.

To serve I used a bowl and made a bed with Spaghetti. added a little Morton’s Lite Salt and Kraft Reduced Fat Grated Parmesan Cheese. I then topped with Sauce and Meatballs. Wow these Turkey Meatballs are so good. I’ve found a new Turkey Meatball to use! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

For Breakfast this morning I prepared a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg Whites, Shredded Cheddar Cheese. Also had my morning cup of Bigelow Decaf Green Tea. 58 degrees and partly cloudy out today. After Breakfast I went to McDonald’s and picked up Breakfast for Mom. Cloudy with passing showers, high around 57 degrees. Not a lot to do today which is fine since it was one of those long nights again, had to deal with Phantom Pains! So a lot of rest today. Don’t know why these have been so often lately! For dinner tonight I prepared Spaghetti and Meatballs w/ Light Texas Toast.

Spaghetti and Meatballs tonight, we love Spaghetti and Meatballs! And you can make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For Breakfast this morning I made a Breakfast Sandwich I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Also had that morning cup of Bigelow Decaf Green Tea. One chilly morning out there today at 13 degrees, but at least it’s not snowing. The sun came out for a short time and a high of 30 degrees. I had to measure a few of the windows for measurements for new window shades. I had a shade crack in my bedroom so I’m just going to replace a few of them. Also did a load of laundry. For dinner tonight I prepared Spaghetti and Meatballs w/ Light Texas Toast. Spaghetti and Meatballs really sounded good for Dinner tonight!

It’s Comfort Food tonight with Spaghetti and Meatballs! And you can make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For the Meatballs I’m using my favorite, Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are some of the best I’ve found, fantastic taste and they’re 190 calories and 6 carbs for 3 large Meatballs.

I’ll be cooking them in LaRosa’s Original Pasta Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a small Sauce Pan, sprayed it Pam Cooking Spray, added the sauce to it, and heated on medium low heat. As the sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Cooked them for about 7 minutes and then reduced the heat to low until I was ready to use them.

I’m using Ronzoni Healthy Harvest Whole Grain Spaghetti.

Wow this was so good, I’m very glad Kroger started stocking the Honeysuckle White Meatballs again. For Dessert later a Weight Watchers Peanut Butter Caramel Ice Cream Candy Bar. I haven’t had one of these in a while. Good little Bar, 80 calories and 7 net carbs.

Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Texas Toast

For Breakfast this morning I Scrambled a couple of Eggs, heated up 2 Johnsonville Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Outside for the couple of days, Rain. And lots of it. Lots of local flooding around our area. They say we’ll get 3-5 inches in the next day or so. I’ll be glad when this is over! Mom keeps getting better, so glad! I cleaned and straightened the pantry and then the freezers. For dinner tonight I prepared Spaghetti and Meatballs w/ Light Texas Toast. Spaghetti and Meatballs really sounded good for Dinner tonight!
