Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked French Bread

 

 
For Breakfast this Saturday morning I prepared some Glier’s Turkey Goetta, been too long since I’ve had Goetta. I whole-wheat-spaghetti-and-turkey-meatballs-003also prepared some Simply Potato Shredded Hash Browns, toasted 2 slices of Healthy Life Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Love a good Breakfast! Overnight we got some freezing rain but my about 5:00 this morning it started warming up and it was all rain for the rest of the day. You got to love this Ohio weather! The last two days snow and below zero with the wind chill. Today Thunderstorms, rain, and a high in the 50’s! Then Sunday back to 25 degrees and snow flurries. Don’t like the weather here in Ohio,stick around 10 minutes it will change! For Dinner tonight its Whole Wheat Spaghetti and Turkey Meatballs w/ Baked French Bread.

 
You just can’t go wrong with Spaghetti and Meatballs! And you can make it healthier by using Whole Wheat Spaghetti and Meatballs 002Spaghetti and Turkey Meatballs. I used Ronzoni Healthy Harvest Whole Wheat Spaghetti and Turkey Meatballs along with Honeysuckle White Turkey Meatballs. I always use Ronzoni Healthy Harvest Pasta. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. The Honeysuckle White Turkey Meatballs are some of the best I’ve found, fantastic taste and their 190 calories and 6 carbs for 3 Meatballs. For my Pasta Sauce I used Ragu Mushroom Sauce and topped with some Kroger Private Selection Shaved Parmesan Cheese. I also baked a loaf of Pillsbury French Bread.

To prepare the dish; I cooked the Spaghetti as to the package instructions. In a sauce pan I add my Meatballs and Ragu Sauce, heated on medium low until heated through. In a large bowl I added the finished Spaghetti, the Sauce and Meatballs and mixed and served. Topped the Spaghetti with the Shaved Parmesan Cheese and served it with the baked French Bread. For Dessert later a Breyer’s 100 Calorie Chocolate Ice Cream Cup.

Today’s Menu: Leftovers – Cheesy Stuffed Turkey Sausage Pasta Bake w/ Baked French Bread

 
For breakfast I toasted up a couple of Eggo’s w/ Nutrigrain along with a couple of Jennie – O Turkey Breakfast Sausage Links. A change in the weather again, 56 degrees and sunny yesterday to 39 and cloudy today. They say we have some more single digit weather coming back in for next week also. Not much going on today, did some light cleaning around the house and swept up around the deck and the car port. After that an afternoon of some College Basketball. For dinner tonight it’s all about the Leftovers! I reheated the Cheesy Stuffed Turkey Sausage Pasta Bake w/ French Bread.

Tonight it was all leftovers! The new recipe I prepared last night, Cheesy Stuffed Turkey Sausage Pasta Bake, was so good it’s the leftovers for tonight’s dinner! This is one delicious recipe I cam across and is now in the “Keeper Recipes”. So I reheated the dish in a small baking dish that I covered with foil, reheated in the oven at 300 degrees until heated through. I also heated up the leftover Pillsbury French Bread. Everything heated up to perfection! This one delicious dish, if you’re looking for a great Pasta Dish you have to try this one out. I left last night’s post with the recipe and instructions below. Enjoy!

 

 
I came across this recipe idea in the latest issue of the Food Network Magazine in an ad for Jimmy Dean Sausage. The recipe calls for; 1 package Jimmy Dean® Regular Flavor Pork Sausage Roll, 1 pound rigatoni or penne pasta, 1 24-ounce jar spaghetti sauce, 2 teaspoons dried Italian seasoning, 1/4 teaspoon salt, 1 container ricotta cheese, 2 cups shredded mozzarella cheese (divided), 3 tablespoons grated Parmesan cheese, and 2 tablespoons chopped fresh parsley (optional).

 
But to save on calories, fat, and carbs I made some substitutions. Instead of the Jimmy Dean® Regular Flavor Pork Cheesy Stuffed Turkey Sausage Pasta Bake w Baked French Bread 002Sausage Roll I used a 1 lb. roll of Jennie – O Ground Turkey Breakfast Sausage, replaced the rigatoni or penne pasta with Ronzoni Healthy Harvest 100% Whole Grain Penne Rigate Pasta, for the ricotta cheese I used Meijer Low Fat Ricotta Cheese, for the shredded mozzarella cheese I used Sargento Reduced Fat Shredded Mozzarella Cheese, and replaced the grated Parmesan cheese with Kraft Reduced Fat Grated Parmesan Cheese. With these switches I shaved a lot of calories, fat, and carbs. Cut them where you can!

Then while the oven was heating up I cooked pasta and removed Cheesy Stuffed Turkey Sausage Pasta Bake w Baked French Bread 012it from the heat 1 minute before suggested cook time; drained and set aside. Next for the Jennie – O Turkey Sausage; cooked and stirred the sausage in large skillet over medium-high heat 12 minutes or until thoroughly cooked. Stir in sauce (I used LaRosa’s Sauce), McCormick Italian seasoning, Sea Salt and the cooked pasta. Layer half of pasta mixture in a greased 13×9-inch baking dish. Mix the ricotta and 1 cup of mozzarella and Parmesan cheese. Spread over pasta. Top with remaining pasta and mozzarella cheese. Sprinkle with parsley. Baked for about 30 minutes, until hot and cheese melted. What a dish! This is one excellent “Keeper Recipe”! Fantastic flavor and just a filling Comfort Food Dish. Jenny’s Cheesy Stuffed Sausage Pasta Bake

Prep Time: 15 minutes
Cook Time: 30 minutes

Ingredients
1 package Jimmy Dean® Regular Flavor Pork Sausage RollCheesy Stuffed Turkey Sausage Pasta Bake w Baked French Bread 013
1 pound rigatoni or penne pasta
1 24-ounce jar spaghetti sauce
2 teaspoons dried Italian seasoning
1/4 teaspoon salt
1 container ricotta cheese
2 cups shredded mozzarella cheese, divided
3 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley, optional
Directions
Preheat oven to 350°F. Cook pasta and remove from heat 1 minute before suggested cook time; drain and set aside.
Cook and stir sausage in large skillet over medium-high heat 8 to 10 minutes or until thoroughly cooked. Drain and return to skillet. Stir in sauce, Italian seasoning, salt and cooked pasta. Layer half of pasta mixture in a greased 13×9-inch baking dish.
Mix ricotta and 1 cup of mozzarella and Parmesan cheese. Spread over pasta. Top with remaining pasta and mozzarella cheese. Sprinkle with parsley.
Bake for 30 minutes or until hot and cheese is melted.

It was Jennie – O Turkey sausage, Pioneer White Peppered Gravy, and a Toasted Slice of Healthy Life Whole Grain Bread for Breakfast this morning. Outside it’s been a cloudy and rain on and off all day, so not a lot going on. I did go look at a used car that was about 3 blocks away, but after seeing it up close it wasn’t in very good shape so I passed on it. Had to have our next door neighbor come over and replace a window shade and rod that broke this morning. Another little frustrating thing that’s difficult to do being an amputee. Thank goodness I’ve got such great neighbors! For dinner tonight a new recipe. I prepared a Cheesy Stuffed Turkey Sausage Pasta Bake w/ Baked French Bread.

After Breakfast early this morning I followed Mom as she had to drop her car off at the mechanics. Time for a tune up and few things that needed to be done, my car is next. From there we went to Kroger and back home. It’s no fun outside today, very muggy and humid! Cooler weather moving in over the weekend, highs in the 70’s. Back home just did a few things around the house. For dinner tonight a new recipe, Bay Scallops and Baby Clams w/ Linguine.

 

 

 
I seen a version of this recipe in a cooking magazine while waiting in a check out line at Kroger. It had 2 of my favorites in it with Seafood (Bay Scallops and Baby Clams) and Pasta (Linguine) so that sealed the deal to give this one a try! I did change a couple of things to lighten it up; Ronzoni Healthy Harvest Whole Grain Linguine and Kraft Reduced Fat Grated Parmesan Cheese. I also added 2 items to top the finished dish with; Shaved Parmesan Cheese and Sliced Green Olives.

So to make this delicious dish I’ll need; Sea Salt, 6 ounces Ronzoni Healthy Harvest Whole Grain Linguine, 1/4 cup Extra Virgin Olive Oil, plus more for drizzling, 1 cloves garlic, Minced, Red Pepper Flakes (to taste), 1/2 can of a 10 -ounce can Bumble Bee Fancy Whole Baby Clams (drained and juice reserved), 5 ounces Bay Scallops, The juice of 1/2 Lemon, 1/4 cup chopped fresh Parsley, 1/4 cup Kraft Reduced Fat Grated Parmesan Cheese (plus more for topping), Shaved Parmesan Cheese, Sliced Green Olives, and Freshly Ground Pepper. This amount will serve 2, I left the original recipe below which serves 4.

 

Then to prepare it I started by bringing a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserved 1/2 cup cooking water, then drain. Meanwhile, heat the olive oil in a large skillet over medium heat.Bay Scallops and Baby Clams w Linguine 005 Add the garlic, red pepper flakes and 1/2 teaspoon salt; cook until the garlic is lightly golden, about 2 minutes. Add the clams, scallops and lemon zest. Cook, stirring, until the scallops are just cooked through, about 2 minutes. Add the pasta, reserved clam juice, lemon juice, parsley and Parmesan to the skillet; cook, tossing to coat, 1 minute, adding the reserved cooking water as needed to loosen. Season with salt and pepper. Drizzle each serving with olive oil and top with shaved Parmesan and sliced green olives. Now we have another “Keeper Recipe.” This is one delicious Seafood and Pasta Dish! The sweetness and fresh taste of the Scallops and Clams, the Pasta (Just Because it’s Pasta), and the Parmesan Cheese and Garlic to top it off! Really a good dish. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

 

Bay Scallops and Baby Clams w/ Linguine

Ingredients
Sea Salt
12 ounces Ronzoni Healthy Harvest Whole Grain LinguineBay Scallops and Baby Clams w Linguine 001
1/4 cup Extra Virgin Olive Oil, plus more for drizzling
2 cloves garlic, Minced
1/4 teaspoon Red Pepper Flakes
1 10 -ounce can Bumble Bee Fancy Whole Baby Clams, drained (juice reserved)
8 ounces Bay Scallops, thawed if frozen
The juice of 1 Lemon
1/2 cup chopped fresh Parsley
1/4 cup Kraft Reduced Fat Grated Parmesan Cheese, plus more for topping
Freshly Ground Pepper

 

Directions
1 – Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.

2 – Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic, red pepper flakes and 1/2 teaspoon salt; cook until the garlic is lightly golden, about 2 minutes. Add the clams, scallops and lemon zest. Cook, stirring, until the scallops are just cooked through, about 2 minutes.

3 – Add the pasta, reserved clam juice, lemon juice, parsley and Parmesan to the skillet; cook, tossing to coat, 1 minute, adding the reserved cooking water as needed to loosen. Season with salt and pepper. Drizzle each serving with olive oil and top with more Parmesan

Today’s Menu: Cincinnati Style 4 Way – Spaghetti, Turkey Chili w/ Beans, and Cheese

 
It heated up outside today! Sunny and a high around 87 degrees, and as usual with the heat comes the humidity. A Cincinnati Style 4 Way 014very good day to have the Central Air going. Tried a new product for Breakfast, and I’ve come across a winner! I found this at Kroger yesterday, Smithfield Anytime Hickory Smoked Boneless Sliced Ham. The Ham is precooked so it’s a breeze to prepare. Heat it up in a skillet on medium high heat for just 30 seconds a side, or until heated through. I cooked it 30 seconds and it was heated. Lean, flavorful, and delicious. I’ve got a great new Breakfast Item. Had a Sunnyside Egg and Wheat Toast with it, and my morning cup of Bigelow Decaf Green Tea. Did some laundry for Mom and while her and Dad was out cleaned the house. For dinner tonight it’s Comfort Food Extreme! I prepared a Cincinnati Style 4 Way – Spaghetti, Turkey Chili w/ Beans, and Cheese

 
Being from and living in the Cincinnati area all my life I’ve been around and prepared the local cuisine, and love it! Sausages, Goetta, and the Chili are just endless in varieties around here. And tonight I’m preparing one of my favorites, Cincinnati Style 4 Way – Spaghetti, Turkey Chili w/ Beans, and Cheese. For the Spaghetti I’ll be using my regular Pasta that I use, the Ronzoni Healthy Harvest Whole Grain Spaghetti. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta.

 
For the Chili I went with Hormel Turkey Chili with Beans. It’s my favorite canned Chili hands down. It’s a nice thickCincinnati Style 4 Way 002 Chili made with Turkey and seasoned just right with plenty of Beans. It’s also a perfect Chili for making Chili and Cheese Nachos. Then for my Cheese I used Sargento Reduced Fat Shredded Sharp Cheddar. I boiled the Spaghetti according to the box instructions and in a sauce pan I heated 1 can of the Hormel Turkey Chili w/ Beans. I added a few shakes of the Frank’s Red Hot Sauce to the Chili. To serve I used a bowl and made a bed of Spaghetti, topped it with the Turkey Chili with Beans, and topped everything with Sargento Cheese. Some mighty fine food! Some people like adding fine diced Onions also, which makes it a 5 Way. So the 4 Way – Spaghetti, Chili, Beans, and Cheese and there you have it! Wow I almost forgot one of the most important parts, Oyster Crackers! Chili Spaghetti is always served with a bowl of Oyster Crackers, why who knows they go great with pasta and chili. I used Skyline Chili Oyster Crackers with a side of Frank’s Red Hot Sauce. To properly eat an Oyster Cracker you have to put a couple of drops of Hot Sauce on it!

As the Spaghetti was finishing up I seen we had a 1/4 loaf of Pillsbury Rustic French Bread Loaf leftover from the other night. I preheated the oven to 400 degrees. I sliced the loaf into 5 thin slices, added some fresh sliced Mozzarella Cheese, and topped it with McCormick Grinder Italian Seasoning. Placed it on a small cookie sheet and baked it until the Cheese was melted. Made a perfect side with Spaghetti. For dessert later a bowl of Del Monte Sugarless Peach Slices.

I’m back to playing nurse, Mom and Dad both have the flu that’s going around. I’ve been lucky so far ans have avoided it. Mostly cloudy out today and windy, rain moving in later this evening. Went to Kroger this morning, I had planned o go to walmart but I got a late start. If you’re not at Walmart by 7:30 in the morning all the Electric Carts are in use or all ready battery dead. So at Kroger I got the basic flu survival kits; Kleenex, Cough Drops, and Cough and Congestion Medicine. Hopefully the folks won’t have this long. For dinner tonight I prepared a Smoked Turkey Sausage Alfredo w/ Sourdough Bread.

I had seen this recipe in several Cooking Magazines. So I decided tonight was the night to try it out, Sausage Alfredo. The original recipe calls for the Beef or Pork Smoked Sausage, I opted to go with one of my favorites Butterball Hardwood Smoked Turkey Sausage. I’ll needed the following ingredients to make the dish; Butterball Hardwood Smoked Turkey Sausage, 8 oz., Ronzoni Healthy Harvest 100% Whole Grain Penne Rigate (diagonally cut into 1/4” slices, Cooked and Drained), 2 cups Heavy Cream, 2 teaspoons Cajun Seasoning, and 1/2 cup grated Parmesan Cheese. Smoked Turkey Sausage Alfredo w Sourdough Bread 003

To prepare it I prepared the Pasta according to package directions; drained and set aside. Saute the Sausage in a large skillet over medium-high heat for 6 minutes, turning occasionally. Add Cream and Cajun Seasoning; bring to a boil. Reduce heat; simmer gently for 3-4 minutes or until mixture begins to thicken. Remove from heat, stir in Parmesan Cheese. Add pasta to sauce and toss. Then I enjoyed one new and delicious dish! Another Keeper Recipe. I served with a Baked Sourdough Loaf of Bread. For dessert later a Jello Sugar Free Dark Cherry Jello.

 

 

 

 

 

HILLSHIRE FARM® SAUSAGE ALFREDO

Recipe Details
Ingredients
1 pkg. Hillshire Farm® Smoked Sausage, diagonally cut into 1/4” slices
8 oz. pasta, cooked, drained
2 cups heavy cream
2 teaspoons Cajun seasoning
1/2 cup grated Parmesan cheese
Directions:
PREPARE pasta according to package directions; drain and set aside.
SAUTE sausage in a large skillet over medium-high heat for 5 minutes, turning occasionally.
ADD cream and Cajun seasoning; bring to a boil. Reduce heat; simmer gently for 3-4 minutes or until mixture begins to thicken. Remove from heat, stir in Parmesan cheese. Add pasta to sauce and toss.
Cook’s Tip: For added fresh flavor add 1 cup frozen green peas in last 3-4 minutes of cooking pasta. Continue as directed. For added visual appeal, garnish with chopped tomato and sliced green onion, if desired.

Well my Dad is back in the hospital. It looks as though he’ll be there a couple of days. He was having a hard time breathing again, they said that he had fluid built up around his heart and lungs. They have him on a couple of prescription drugs to clear it up before it goes to pneumonia. Hopefully he’ll be home soon. Mom ate with Dad at the hospital so it was solo cooking for dinner. Tonight one of my favorites, Spaghetti and Meatballs.

 

 

 

 

 

Honeysuckle White Fresh Italian Style Turkey Meatballs
I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. Cooks up great and an excellent tasting Pasta. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are good size, meaty, and have a fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. I almost always use Jennie -O when using Turkey but no store in this area sells Jennie – O Turkey Meatballs. On a Jennie – O Turkey note, Kroger has started selling Jennie – O Turkey Bacon now. For my Pasta Sauce I used LaRosa’s Original Sauce. A local favorite and still one of the best Sauces I’ve had. The night before I had prepared Meatballs in the Larosa Sauce to make a Meatball Sub, so I made extra so I just reheated that for my Meatballs and Sauce. For dessert/snack later a I bought a new Item, Hormel Snackers Chili and Cheese Dip. Just microwave for 1 minute and it’s ready. So I’ll try that and have some Tostito’s Multi-Grain Scoops with it.

 

 

 

 

 

Ronzoni Healthy Harvest Spaghetti

Spaghetti LaRosa Sauce
Humid and hazy out today. Went and seen Dad this morning, looks as though he may come home around September 10th. Came home and repaired Mom’s Sweeper for her. Then watched College Football for the afternoon, first weekend of Football! Love Football starting but that also means that the Summer is almost over! It went quick this year. Mom ate with Dad at the rehab center so it was solo cooking for dinner. Tonight one of my favorites, Spaghetti and Meatballs.

Here’s a good hint on a healthy product to keep in your pantry if you or a loved has Diabetes. And even if you don’t have Diabetes, why not eat healthier!

 
Whole grain pastas are a must. Make sure the pasta is labeled “whole wheat,” as opposed to just plain “wheat,” to get the real benefit. Also, brown rice, oats and barley are good staples to have in the kitchen.

Today’s Menu: Cincinnati Style 4 Way – Spaghetti, Turkey Chili, Beans, and Cheese

Being from and living in the Cincinnati area all my life I’ve been around and prepared the local cuisine, and love it! Sausages, Goetta, and the Chili are just endless in varieties around here. And tonight I’m preparing one of my favorites, Cincinnati Style 4 Way – Spaghetti, Turkey Chili, Beans, and Cheese. For the Spaghetti I’ll be using my regular Pasta that I use, the Ronzoni Healthy Harvest Whole Grain Spaghetti. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta.

 

 

 
I had wanted to use some of the Buffalo Chili that I prepare but as I searched the freezers I found out that I was all out of it, I will be preparing more of that soon. So I went with Hormel Turkey Chili with Beans instead. It’s my favorite canned Chili hands down. It’s a nice thick Chili made with Turkey and seasoned just right with plenty of Beans. It’s also a perfect Chili for making Chili and Cheese Nachos. Then for my Cheese I used Sargento Reduced Fat Shredded Sharp Cheddar. To serve I used a bowl and made a bed of Spaghetti, topped it with the Turkey Chili with Beans, and topped everything with Sargento Cheese. I also added a few shakes of Frank’s Red Hot Sauce to the Chili as it was being heated. Some mighty fine food! Some people like adding fine diced Onions also, which makes it a 5 Way. So the 4 Way – Spaghetti, Chili, Beans, and Cheese and there you have it! Wow I almost forgot one of the most important parts, Oyster Crackers! Chili Spaghetti is always served with a bowl of Oyster Crackers, why who knows. I used Skyline Chili Oyster Crackers with a side of frank’s Red Hot Sauce. To properly eat an Oyster Cracker you have to put 2 or 3 drops of Hot Sauce on it! For dessert later a Weight Watchers Snack Size Dutch Chocolate and Vanilla Bean Ice Cream Sandwich.
