Today’s Menu: Salmon Pesto Pasta and Baked Garlic Loaf Bread

 

 

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. I went to McDonald’s to pick up Breakfast for Mom. Mom went on to Church and I went to the Cemetary to put flowers on Dad’s Grave for Father’s Day. Happy Father’s Day to all the Dad’s out there! I decided to take a ride over to our old house in Ross, Ohio. When we left Ross back in the early 80’s it was just starting to grow. And now it’s still growing! A ton of changes compared to how it was back then. Still a beautiful small town though! Back home did a couple of loads of laundry and did a little cleaning outside. But it is hot and humid out. 99 degrees and a heat index well over 100 degrees today. For Dinner tonight I prepared a Salmon Pesto Pasta and Baked Garlic Loaf Bread.

This recipe was inspired by a recipe I came across on a WordPress Blog (The Cooking Diaries) and it sounded and looked delicious. Plus it looked light and fresh, which is how I like hot weather dishes! I needed a few items to make the dish so I went to Jungle Jim’s International Market yesterday. They are the only store in area anymore that carries the Ronzoni Smart or Ronzoni Healthy Harvest Pasta Products. I love shopping at Jungle Jim’s! They carry Anything and Everything, I’m serious! You could spend an entire day in there. The Deli, Produce, and Seafood Departments are my favorites.

 

 

 

So to make the Dish I’ll need; 1 can Pink Salmon (Fresh or Canned), Extra Light Olive Oil, McCormick Grinder Sea Salt and Grinder Peppercorn Medley, Lemon Juice, Ronzoni Garden Delight Trio Italiano Pasta, Sliced Black Olives, a few small Anchovy Slices in Olive Oil, Kraft Reduced Fat Grated Parmesan Cheese, and 1 tube Just Add Basil Pesto. I added a few Ingredients and dropped an Ingredient from the original recipe, the original recipe and the web link are at the end of the post.

 

 

To prepare it; I first made my Pasta. Boil the Pasta according to the box; drain the Pasta and let it cool. Once cooled add the Pasta to a large bowl and add all the ingredients and fold in everything including the can of Pink Salmon. You can warm the Salmon if you prefer before adding it. Put the Pasta Salad in a large plastic bowl with a lid and set it in the fridge until your ready to use it.

 

 

 

 

The Pasta, Salmon, and Pest went great together! Everything tasted light and fresh. Excellent Dish. I also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Salmon Pesto Pasta
Ingredients
-1/3 pound salmon

-1 tsp olive oil

-1 tsp seasoning salt

-1/3 cup frozen or fresh peas

-pinch of salt and pepper

-a few squeezes of lemon juice (1-2 tsp)

-1/2 cup pesto

-1 1/2 cups rotini pasta

-shredded parmesan for toppings

Directions
1 – Cook pasta according to directions while doing the following steps.
2 – Heat oil in a pan on medium heat. Salt salmon with seasoning salt.
3.Add salmon skin side up and let cook for 3 minutes (salmon will look golden). Flip and cook on other side for 3 more minutes (skin will crisp up).
4 – Remove salmon and break it up (removing the skin).
5 – Add peas to same pan and a little bit of water (to cover the peas). Cook for 3-5 minutes and add some salt.
6 – Drain peas and add salmon back to pan. pour cooked and drained pasta into pan along with pessto and mix well. it’s okay to add more pesto if you think it needs more too!
7 – Squeeze lemon over the top and serve. Enjoy!

Dinner Tonight Italian Pasta Salad w Kielbasa Turkey Sausage 001
For Breakfast this morning I had some Simply Potatoes Hash Browns (sprinkled with Sargento Shredded Cheddar Cheese), 1 Fried Egg, 2 slices of toasted Klosterman Wheat Bread, and it wouldn’t be complete without my morning cup of Bigelow Decaf Green Tea. We had a lot of rain overnight and through out the day, warm though at 64 degrees. We were even under a Tornado warning toward the late afternoon! December and Tornado warnings aren’t a regular occurrence around here. Finished up some laundry and did some house cleaning for my day. For dinner tonight a personal favorite, Italian Pasta Salad w/ Kielbasa Turkey Sausage.

Then for the Turkey Sausage I used Butterball Kielbasa Turkey Sausage. I normally use the Butterball Everyday Smoked Turkey Sausage but while at Meijer the other day I seen that they had the Kielbasa in stock so I grabbed a package of that. I took 1 i/2 of the Sausages and cut it in to bite size pieces. I took a medium size skillet and sprayed it Pam Cooking Spray. Added a 1/2 tablespoon of Extra Virgin Olive Oil, and heated it on medium heat. When the skillet was heated up I added the Turkey Sausage pieces. I cooked them about 12 minutes, stirring them frequently until browned and heated through.

Then to go with the Sausage I had prepared some Italian Pasta Salad, made about noon today. It always taste even better after chilled for a while. A Light and tasty dish that includes Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Green Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Grinder Italian Seasoning, and topped with fresh Shaved Parmesan Cheese. Boiled the Pasta according to the box and added all the ingredients and tossed until well mixed. Then refrigerated until ready to use.

Added the Pasta Salad to a bowl and topped it with the sliced Turkey Sausage, and chowed down! The Pasta Salad and Sausage are a perfect combination. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Wow, a normal day around the house today! No one had a doctor’s appointment or check-up, no repairman, and a nice peaceful day. I needed a day like this today. After Breakfast and my morning workout I went to Kroger for a few items and got gas for the car. Gas prices around here have shot up to anywhere from $2.89 – $3.00 a gallon! Have to make every trip count at this rate. Back home just cleaned up a bit outside around the house. i didn’t last long though as it got real humid out. For dinner tonight I prepared a Sweet Italian Turkey Sausage w/ Italian Pasta Salad.

I used a Jennie – O Sweet Italian Sausage. I had them in the freezer so I sat them in the fridge overnight to thaw. To prepare it, using a medium size skillet sprayed with Pam Cooking Spray, I pan fried it. Cooked for a total of about 17 minutes, turning several times. When done you have one plump and juicy Sausage. As all Jennie – O Products it’s fresh and delicious. After it cooled a bit I sliced it into bite size slices and set aside in a bowl.

Then to go with the Sausage I had prepared some Italian Pasta Salad, made about noon today. Jumped in the car last night, about 9:15, and went up the road to a local country club that sits on a huge hill. It’s one of the tallest points here in the area. Parked the car and watched several different Firework Shows going on. From up there you could see 5 or 6 Shows going on at the same time. It was a clear night so it was a great show! For my breakfast this morning I had an Egg Beater’s Egg White Cheese Omelet, Healthy Life Whole Grain English Muffin, and my morning cup of Bigelow Decaf Green Tea. Now this is the way to start the day! Not much going on today. Did a few chores here around the house and that was about it. Sofa City with the remote after that. For dinner tonight I prepared an Italian Pasta Salad w/ Polska Kielbasa Turkey Sausage.

I made this after Breakfast, it’s always better to prepare it and let it chill in the fridge for as long as possible. To make this I’ll need; Butterball Polska Kielbasa Turkey Sausage (1 sausage sliced into bite size pieces), Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Green Olives, Kalamata Olives, Hormel Turkey Pepperoni (1 serving 17 slices), Anchovies (4 canned fillets chopped), Kraft Reduced Fat Shredded Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Grinder Italian Seasoning, Sea Salt, and Texas Toast Cheese and Garlic Croutons (for topping).

To prepare the Pasta; Boil the Pasta according to the box; drain the Pasta and let it cool. Once cooled add the Pasta to a large bowl and add all the ingredients and fold in everything but the Sausage. Put the Pasta Salad in a plastic bowl with a lid and set it in the fridge until your ready to use it.

 

 
When it was getting time for dinner I cooked the Sausage. To prepare the Butterball Polska Kielbasa Turkey Sausage; In a large skillet coated with cooking spray add 1 tablespoon Extra Virgin Olive Oil, heat on medium heat. As the skillet is heating slice the sausage into bite size pieces. Add the sausage to the heated skillet and cook, turning the slices several times to get even cooking. Cook a total of about 12 minutes. I love these Butterball Turkey Sausages, always delicious with just an incredible seasoning. Remove the sausage from the pan into a bowl and set aside.

Got the Pasta Salad out of the fridge and put all into a medium size bowl. Added a couple of shakes of the Kraft Zesty Italian Fat Free Dressing and a sprinkle of Kraft Reduced Fat Shredded Parmesan Cheese. To serve make a bed of the pasta Salad in a bowl and top with Croutons and the Butterball Polska Kielbasa Turkey Sausage. Really enjoy this Pasta Salad, refreshing and so easy to make and with the added Kielbasa Turkey Sausage kicks it another notch! For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.
