Cool and rainy morning to start. Had a light Breakfast and headed out to Kroger to pick up a couple of items for tomorrow night’s dinner. Back home did some laundry and then some house cleaning. Then we still had a couple of chairs and outside table that I moved into the shed for the Winter, it’s getting to be that time of year! For dinner tonight I prepared a Cubed Steak Sandwich w/ Cut Italian Green Beans and Whole New Potatoes.

I rarely use Beef anymore but when I do it’s usually my favorite Cubed Steak, Meijer Cubed Steak. When I go to Meijer I always pick up a package or two. The best Cubed Steak I have ever found by far. They’re good size patties so I’m able to cut them in half and get 2 meals out 1 pattie. I had a package in the freezer so I let it thaw overnight in the fridge. To prepare them I seasoned them with Sea Salt and Ground Black Pepper and I then dusted them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Extra Virgin Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy. Served it on toasted Aunt Millie’s Light Whole Grain Bread and topped it with some Heinz Mushroom Brown Gravy. I’ll have the other half for breakfast in the morning.

Then for one side dish I heated a can of Allens Cut Italian Green Beans. My Aunt had grown some in her garden and brought us over some last Summer and loved them. Then just the other day while at Kroger I came across the Allens Cut Italian Green Beans, so I bought 4 cans of them. Prepared 1 can the other night. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea salt and it’s ready! I could have Beans every day and never get tired of having them.

Then for another side I heated up the leftover Del Monte Whole New Potatoes from the other night’s dinner. Just reheated and serve, seasoned with McCormick Grinder Sea Salt and Black Peppercorn Medley, Parsley, and I Can’t Believe It’s Not Butter. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Cube steak is a cut of beef, usually top round or top sirloin, tenderized by fierce pounding with a meat tenderizer, or use of an electric tenderizer. The name refers to the shape of the indentations left by that process (called “cubing”). Many professional cooks insist that regular tenderizing mallets cause too much mashing to produce a proper cube steak, and insist on either using specialized cube steak machines, or manually applying a set of sharp-pointed rods to pierce the meat in every direction. This is the most common cut of meat used for chicken fried steak.

 

In Canada as well as in some parts of the United States, cube steak may be called a minute steak, because it can be cooked quickly.
Others distinguish minute steak as:
* simply referring to the cut, which is not necessarily tenderized;
* thinner than cube steak (hence does not need tenderizing);
* cut from sirloin or round, while cube steak cut is from chuck or round.
The term “minute steak” is also used in the United Kingdom, where the term “cube steak” is little known.

We have another extremely humid day out there again! I’ll be glad when this weather breaks, don’t mind the heat but can’t stand that humidity. For Breakfast this morning I had a Simple Truth Turkey Sausage Patty, Egg White, Cheddar Cheese, on English Muffin Breakfast Sandwich. I’ve really found a winner in these sandwiches, I bought a box of Simple Truth Breakfast Sandwich but with Canadian Bacon it instead of the Turkey Patty, 20 fewer calories also. I went to Kroger this morning for myself and Mom and back home. Cleaned up outside from last night’s rain and wind. Finished up a load of laundry for Mom and then did a few things around the house. For dinner tonight I prepared Lightly Breaded Chicken Strips w/ Roma Beans and Baked Potato.

While at Kroger I picked up a package of PERDUE® SIMPLY SMART® Lightly Breaded Chicken Strips. I love using these but always forget about them because they are in the Organic Section of Kroger and never think to look for them. They come fresh and lightly breaded and fully cooked. So to prepare them I preheated the oven on 425 degrees. Grabbed a cookie sheet and lined it in foil and sprayed a light coat of Pam Cooking Spray w/ Olive Oil on it. Lined the Chicken Tenders on it and baked for 8 minutes. Removed the sheet from the oven and flipped the Strips over and continued baking for another 8 minutes. Removed from the oven let stand for 3 minutes and served! Golden Brown, moist and tender, and just flat out delicious. Just love the seasoning and breading on these Chicken Strips makes a very good meal. Served with a side JB’s Fat Boy Sticky Stuff BBQ Sauce.

For one side I had a small Russet Baked Potato, topped that with McCormick Grinder Sea Salt and Pepper Medley and I Can’t Believe It’s Not Butter. Then I also reheated some leftover Roma Green Beans, one of my new favorites! I also had a slice of Klosterman Wheat Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

The overnight skies were lit up last night, one impressive thunderstorm moved through. A lot of heavy rain with some local flooding, and more on the way. Very humid this morning and cloudy. For breakfast had a couple of Jennie -O Turkey Breakfast Sausages, Healthy Life Whole Grain English Muffin, and a cup of Bigelow Decaf Green Tea. Add the Sunday Paper to that and it’s a good way to start the day. Did a load of laundry for Mom and swept up outside and done for the day. Sofa city for the afternoon. For dinner tonight I prepared Fried Walleye w/ Cut Roma Beans and Baked Roasted Fingerling Potatoes.

I had went to Costco yesterday morning and couldn’t pass up the beautiful Walleye Fillets they had. So I’m having one for dinner tonight. I rinsed them off in cold water and patted dry with paper towel. Seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put them in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till all fillets were well coated. I then fried them in Canola Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor. Along with Crappie their my favorite Fresh Water Fish to eat.

For one side dish, something new. My Mom’s cousin gave her some Roma Beans, a type of Pole Green Bean. It’s a large pod with flat beans in it. I left a little info on the Roma at the end of the post. We cleaned them and broke them up like regular Green Beans. Then just boiled them in water until fork tender. Drained and seasoned them with Sea Salt and a very light pour of Extra Virgin Olive Oil. And wow what a fantastic Bean! I love these, the only challenge will be trying to find a store that sells them! I’ll call Jungle Jim’s International Market next week, they’ll have them if anyone does.

 
Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area, only 1 store around here locally that sells them (Thank you Jungle Jim’s). For dessert later a bowl of Del Monte No Sugar Added Sliced Peaches.
