Today’s Menu: Fried Lake Perch w/ Rice A Roni and Sliced Carrots
Well were back to a cloudy and chilly day outside again. They say just for a day or so I just hope their right ! Busy all day just doing little things in the house and running errands. I had no clue on what to have for dinner right up to the time it was time to prepare it. I ended up preparing a Fried Lake Perch w/ Rice A Roni and Sliced Carrots.
The Lake Perch was from the Kroger Seafood Department that I had purchased yesterday. I seasoned them with Sea Salt and Ground Black Pepper and rolled them in Progresso Italian Style Bread Crumbs. I then skillet fried them in Canola Oil to a golden brown. Perch is just good eating! It’s good baked but in my opinion you just can’t beat golden brown fried fish.
For side dishes to go with the Perch I had Rice A Roni (Chicken Flavored), a small can of Sliced Carrots, and Healthy Life Whole Grain Bread. The Rice A Roni was in a microwavable cup. Just heat for 3 1/2 minutes and it’s ready. For dessert/snack later tonight, while watching one of my favorite shows “Grimm“, a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Beautiful day out today, about 45 degrees and sunny! tried another new one for dinner tonight, ChickenTenders w/ Rice, Sweet Peppers, Mushrooms, and Garlic Bread. New recipe and some new ingredients.
Chicken Tenders w/ Rice, Sweet Peppers, Mushrooms, and Garlic Bread tonight for dinner. As I said I tried a couple of new ingredients to prepare dinner tonight. The Chicken Tenders were Weight Watchers Chicken Tenders. I purchased them at Walmart and haven’t seen them elsewhere yet. They come frozen and preweighed at 2 oz. Each tender is 99% fat-free and only 60 calories and 0 carbs. You can bake them or prepare them by stove top, which is how I made them. To prepare them I seasoned the chicken with sea salt and pepper. In a large skillet, heated 1 tablespoons of the oil. Then sautéed the chicken over medium-high heat, turning once, until gold on both sides, about 8 minutes total. Transferred the Chicken to a plate.
Now to prepare the rest of meal I needed 1 tablespoons Extra Virgin Olive Oil, 2 cups thinly sliced mixed Red, Yellow, Orange and/or Green Bell Peppers, Small Package of Baby Bella Sliced Mushrooms, 1 large garlic cloves, finely chopped, 1/4 cup chopped fresh basil, 1 tablespoons high-quality Balsamic Vinegar, and 1 Serving of Rice A Roni (Chicken Flavor).
Using the same skillet as the Chicken was fried in add the remaining 1 tablespoons of oil to the skillet and reduce the heat to medium. Cook the bell peppers, stirring often, until just softened, about 4 minutes. Add the garlic and cook, stirring, for 1 minute, Stir in about half of the basil and the vinegar. Return the chicken and any accumulated juices to the skillet. Reduce the heat to medium-low, add the sliced mushrooms. Simmer until the chicken is cooked through, about 3 minutes. Stir in the remaining basil and season with salt and pepper. As this was finishing I prepared the Rice A Roni, microwaved for 3 1/2 minutes and served. I also baked some Walmart Bakery Garlic Knot Bread. This makes one delicious chicken dish! The sweet peppers and Balsamic Vinegar are a great pairing with the chicken. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
Chicken Tenders w/ Rice, Sweet Peppers, Mushrooms
Makes 4 servings
Ingredients:
3 skinless, boneless Chicken Tenders
Sea Salt and freshly Ground Pepper
2 tablespoons Extra Virgin Olive Oil
2 cups thinly sliced mixed Red, Yellow, Orange and/or Green Bell Peppers
Small Package of Baby Bella Sliced Mushrooms
1 large garlic cloves, finely chopped
1/4 cup chopped fresh basil
1 tablespoons high-quality Balsamic Vinegar
1 Serving of favorite Rice
Directions:
Cook the rice according to package instructions.

Today’s Menu: Chicken Breast w/ Rice A Roni, Mushrooms, Sugar Snap Peas, and Mini Carrots.
Sometimes just some very basic ingredients, herbs, and a Dutch Oven can result in a very delicious and hearty meal. I got to put my new Dutch Oven into use tonight to prepare dinner. For dinner tonight I prepared Browned Chicken Breasts w/ Rice A Roni, Mushrooms, and Mini Carrots.
So I preheated up my Dutch Oven on medium with a couple of tablespoons of Canola Oil. For my Chicken Breast I seasoned them with Sea Salt, Ground Black Pepper, Dried Rosemary, and Dried Thyme. First time I used a Dutch Oven and I was real happy the way it heated up and retained it’s heat. The Chicken Breast browned up beautifully. The added Rosemary and Thyme gave a wonderful taste to the Chicken.
As my Chicken was browning I boiled my Mini carrots and sliced up the Baby Bella Mushrooms. i removed the Chicken from the Dutch Oven when it was done and I deglazed the pan with a 1/4 cup of Swanson Chicken Stock. Took a wooden spoon and got all the great Chicken remains and crust mixed in with the stock and added my Mushrooms. Just added a couple of shakes of Sea Salt and in about 5 minutes the Mushrooms were done. I then took two Rice A Roni Microwavable Single Servings and heated them up in the microwave for 4 minutes each. When done added both to a bowl and stirred in the Mushrooms. To finish the meal preparation I microwaved a bag of the Market Side (Walmart) Sugar Snap Peas.
To serve I put a bed of the Rice A Roni/Mushrooms on a plate and topped it with one of the Chicken Breasts and added the Mini Carrots and Sugar Snap Peas as sides. This meal turned out fabulous! I’m so glad Rice A Roni has come out with these easy to fix single servings Of microwavable Rice a Roni! Plus adding Mushrooms to it makes it even better. The meal just looked good, you got the Orange of the Carrots, the bright Green of the Sugar Snap Peas, along with yellow and brown of the Rice and Chicken. Delicious meal! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Another beautiful day outside again. They say 66 degrees for Thanksgiving Day then a lot cooler, high of 42 Saturday! Ah Ohio weather. Anyway for dinner I had a Red Snapper fillet left in the freezer. After it thawed I rinsed it with water and patted dry with a paper towel. Then I seasoned it with Sea Salt and Ground Black Pepper and then put a light coat of Progresso Italian Style Bread on both sides. I pan fried it Canola Oil, about 3 1/2 minutes per side, until golden brown on both sides! I could eat Fish and Seafood 7 days a week.
For side dishes tonight I had Rice A Roni, Green Beans and Whole Grain Bread. The Rice A Roni Chicken Flavor comes in a 1 serving microwavable cup. Just add the seasoning packet and add water. Microwave for 3 1/2 minutes, cool for 1 minute and stir and serve! The Green Beans was a single serving of Del Monte Cut Green Beans and also had Healthy Life Whole Grain Bread. For Dessert later a Jello Sugar Free Chocolate Pudding.

Today’s Menu: Italian Herbed Pork Chops w/ Steamed Asparagus, Rice A Roni, and Whole Grain Bread
I had Italian Herbed Pork Chops with Steamed Asparagus, Rice A Roni, and Whole Grain Bread for dinner tonight. I used Kraft Free Italian Dressing to marinate the Chops and used Thyme, Chives, Basil, and Oregano as my herbs. I’ve used this recipe several times and really like it. The Italian Dressing combined with Herbs makes the Chops tender and moist with a fantastic flavor.
For sides I had Steamed Asparagus, Rice A Roni (Chicken Flavor), and Whole Grain Bread. The Asparagus is Walmart Marketside Asparagus. It comes in a microwavable bag and you just heat it for 2 minutes and it’s done. Really a very easy and quick way to have some good steamed Asparagus! The Rice A Roni Chicken Flavor was the first time I’ve had Rice A Roni in years. It’s new one that comes in a 1 serving microwavable cup. Just add the seasoning packet and add water. Microwave for 3 1/2 minutes, cool for 1 minute and stir and serve! It came out great and tasted like the Rice A Roni I remember. They have 2 or 3 different kinds and look forward to trying them. This one was 190 calories, 41 carbs, and 1 gram fat. i also had Healthy Life Whole Grain Bread.
Ingredients:
4 pork loin chops, 3/4-inch thick
1 cup reduced fat Italian dressing
4 tablespoons fresh herbs, chopped (any combination – chives, basil, oregano, rosemary)
Cooking Directions:
Place chops in a resealable plastic bag. Add dressing and herbs; seal and refrigerate 3 to 8 hours. Remove chops from marinade; discard marinade. Fry chops over medium heat (or broil 4 inches from heat) for 8 to 9 minutes, turning once until internal temperature on a thermometer reads 145 degrees Fahrenheit, followed by a 3-minute rest time.
