GRILLED 14 OZ. RIBEYE WITH GORGONZOLA PORT SAUCE 14 oz. Grilled Ribeye Steaks

With the size of this steak you will want to increase your grilling time. Here’s what I did.

1) Rinse steak and pat dry. Rub generously with olive oil and season with salt and pepper, or seasonings of your choice.
2) Allow steak to rest at room temperature for an hour or two. Before grilling place the seasoned steak in the freezer for 20 minutes. *This is a new trick that I tested out and it works. It allows the outside and the inside to cook more uniformly. This is optional however – not necessary.
3) Insure your grill is clean and preheat to high, 500° to 550°.
4) Place steak on hottest part of grill, close the lid and grill for 3 minutes.
5) Turn steak and repeat above step
6) Turn steak again, placing on the grill for a nice scoring pattern and grill for an additional 2 minutes.
7) Remove the steak from the grill and cover with foil and allow to rest for 5 minutes. This will give you a beautiful medium rare steak. *If making the Gorgonzola Port Sauce to serve with the steak, I sprinkled gorgonzola or blue cheese crumbles on top of scored side of steak, before covering it with foil.

Buffalo Steaks with Grogonzola Port Sauce
*Pan sear or grill steaks according to buffalo steak cooking instructions.

Ingredients:
2 – tablespoon butter
1 – tablespoon garlic clove, minced
1 – tablespoon crushed peppercorns
1/2 – cup Port
1/3 – cup Gorgonzola, crumbled
1/3 – cup heavy cream

Preparation:
1) In sauce pan over medium heat, melt butter
2) Add garlic and peppercorns, and saute for about 4 minutes
3) Deglaze the pan with the port.
4) Wisk in Gorgonzola and cream until well incorporated and allow the sauce to come to a gentle boil. Continue whisking until the sauce is to your desired consistency. *About 5 minutes.
5) Serve immediately or remove from heat, cover and reheat when needed. Delish!

Today’s Menu: Buffalo Ribeye Steak w/ Cheesy Hashbrown Potatoes and Cut Green Beans

 

 

For Breakfast I prepared some Glier’s Turkey Goetta. I also prepared some Simply Potato Shredded Hash Browns, toasted 1 slice of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Love a good Breakfast! After Breakfast I went with Mom to the Hospital to see how a family friend was doing. She had exploratory surgery to see if they could find what was giving her stomach pains. She’s one of Mom’s best friend and someone I’ve known for as long as I can remember. Hope that they find what’s wrong she’s a fine lady! A lot of heavy rain and thunderstorms on and off all day, also very muggy out. For Dinner tonight it’s a Buffalo Ribeye Steak w/ Cheesy Hashbrown Potatoes and Cut Green Beans.

 

Used the Wild Idea Buffalo 10 oz. Ribeye Steak, and what a beautiful cut of meat these Ribeyes are! It’s about 1 1/2″ thick with just enough of marbling to make it perfect. To prepare it I preheated the oven on 400 degrees. I then rubbed the Ribeye with a light coat of Extra Light Olive Oil and then seasoned it with a sprinkle of Garlic Powder, a shake of Ground Roasted Cumin, and McCormick Grinder Sea Salt and Peppercorn Medley.

 

 

 

 

To start I pan fried it, using a Cast Iron Skillet on medium heat about 3 minutes per side. Then I put the Skillet in the oven and roasted it until it had internal temperature of 145 degrees for a medium rare, and it came out perfect, love using Cast Iron Skillets; from the stove to the oven! After removing it from the oven I put the Ribeye on a plate and lest it rest for 5 minutes before serving. These Steaks are so moist and tender and have that distinct Wild idea Buffalo flavor. The juices off the Steak was just incredible! Way to big for one meal, I’ll have the leftover for breakfast or lunch tomorrow. Love that Wild Idea Buffalo!

 

 

For one side I prepared some Idahoan Cheesy Hash Brown Potatoes. I love all the Idahoan products and this one no different. As the others its baked in a casserole dish. To make the dish I’ll need 1 box of the Idahoan Premium Steakhouse Cheesy Hashbrown Potatoes, 2 Tbsp Blue Bonnet Light Butter, 1 3/4 cups boiling water, and 1/2 cup 2% Milk.

 

 

 

To prepare it; Preheat the oven on 450°F . Then in a 1 1/2 qt casserole dish, combine potatoes, contents of sauce pouch, 2 Tbsp butter, and 1 3/4 cups boiling water. Add the 1/2 cup milk and stir to combine. Bake uncovered at 450°F for 25 minutes. Sprinkle crunchy onion topping on top of potatoes. Let stand 5 minutes, then serve. Well seasoned and Cheesy. Goes great with Buffalo Ribeye.

 

 

 

For a second side I had some Fresh Cut Green Beans. Mom had purchased some 1/2 Runner Green Beans from Jungle Jim’s the other day. There was a couple of servings left so I reheated those. I can never have enough Green Beans! I also baked a loaf of La Brea Multi-Grain Bread. For Dessert later a Breyer’s 100 Calorie Vanilla Cup.

Today’s Menu: Buffalo Bone in Ribeye Steak w/ Mushrooms and Scalloped Potato Casserole

Cold morning to start the day (5 degrees) but lots of sunshine all day but only a high in the teens. Started off with a Breakfast Sandwich; I Egg Sunnyside Up, a Jennie – O Turkey Sausage Pattie (made from the Jennie – O Ground Breakfast Sausage), a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese, on a Healthy Life Whole Grain Muffin. Healthy and delicious! From that a good house cleaning, a small load of laundry, and took apart 3 fans we had in the house and cleaned the insides of them up. Got the big gun of Wild Idea Buffalo out for dinner tonight! I prepared a Buffalo Bone in Ribeye Steak w/ Mushrooms and Scalloped Potato Casserole.

 
Used the Wild Idea Buffalo 16 oz. Bone-In Ribeye Steak (Cowboy Steak), And what a beautiful cut of meat these Ribeyes are! It’s about 1 1/2″ thick with just enough of marbling to make it perfect. Served it with some Sauteed Steak Cut Mushrooms, could have made a meal out of these! Seasoned with Ground Roasted Cumin, Dried Thyme, Dried Rosemary, and Sea Salt.

I prepared a box of Idahoan Scalloped Potato Casserole. Another easy to prepare and delicious dish. A breeze to make just mix the ingredients and bake at 450 degrees for 25 minutes and you have some delicious Scalloped Potatoes. Plus their only 160 calories and 20 carbs.

Idahoan SCALLOPED HOMESTYLE CASSEROLEIdaho Scall

Product Description
There’s no better way to start a hearty Scalloped homestyle casserole than with world-famous Idaho® potatoes, which is why you’ll taste only 100% grown-in-Idaho potatoes in this rich & creamy side. For family meals or for special occasions, this creamy, delicious dish is sure to please.

Baking Instructions

PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

Cold and windy out today, and today was gift delivery day this afternoon. I dropped off Buckeyes and Fudge to the neighbors and dropped off assorted gifts along with Buckeyes and Fudge to some of the family (Cousins, Aunts , and Uncles), and friends. I love doing stuff like this! Monday I have another couple of cases of Green Beans, Corn, and Stuffing for our local Free Food Store. For dinner tonight I broke out the big guns! I prepared a 16 oz. Bone-In Ribeye Steak (Cowboy Steak) w/ Sliced New Potatoes, Kicked – Up Chili Beans, and Wheat Bread.

 

 

 

I had ordered a Wild Idea Holiday Package of Buffalo, which included 2 – T-Bone Buffalo Steaks, 2 – 16 oz. Bone-In Ribeye Steaks, 2 Packs of 1/4 lb. Buffalo Burger Patties, and a 1 lb. Package of Buffalo Brats. I got the order earlier in the week and was anxious to try the Ribeye! What a beautiful cut of meat this is! It was about 1 1/2″ thick with just enough of marbling to make it perfect. To prepare it I rubbed it with Extra Virgin Olive Oil and then seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried it using a Cast Iron Skillet that I preheated on medium heat. When it was ready I placed the Ribeye in the pan and on the first side fried it about 4 1/2 minutes then flipping it to the other side for another 4 minutes. I then removed it from the pan and let it set covered with foil for 7 minutes. I had it an internal temperature of 136 degrees for a medium rare, and it came out perfect. So moist and tender and with that distinct Wild idea Buffalo flavor. Way to big for one meal, I’ll have the leftover for breakfast or lunch tomorrow. This was one incredible Ribeye Steak!

 

 

 

For a side I heated up a can of Del Monte Sliced New Potatoes, I was all out of fresh Potatoes. Then I also made some Kicked Up Chili Beans, hadn’t had those in quite a while. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few (or more) dashes of Frank’s Red Hot Sauce. I also had a couple of slices of Klosterman Wheat Bread. It was one delicious dinner! For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Popcorn.
