Fridge odors……………..

Eliminate lingering odors in your vegetable bins by putting a crumpled piece of a brown paper grocery bag inside and leaving it for 48 hours. The paper will absorb the odor. A clean fridge is a happy fridge!

Today’s Menu: Fried Oysters w/ Long Grain and Wild Rice and Baked Multi Grain Loaf Bread

 

 

For Breakfast this morning I prepared a packet of Pioneer Peppered White Gravy, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated 2 Johnsonville Turkey Sausage Links, and had a cup of Bigelow Decaf Green Tea. That’s the way to start the day! Sunny and 38 degrees outside today. After Breakfast I went to Kroger for Mom and then stopped by McDonald’s and picked up Breakfast for her. I had picked up a bottle of Spray Invisible Fence the other day at Meijer. They say the odor will drive dogs away from your yard. Myself and a couple of neighbors yard’s are being used by other people dog’s as their personal dump centers! They are supposed to be picking up after their dogs but someone is too lazy to do it. So I bought enough spray for 3 of yards. I got the cart out of the shed and went around and sprayed our yards. Hope it works!! For Dinner tonight I prepared Fried Oysters w/ Long Grain and Wild Rice and Baked Multi Grain Loaf Bread.

 

As usual I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, my favorite. To prepare them; Place shucked oysters in a colander rinse in cold water and drain. Dredge drained Oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. An easy way to coat the oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

 

 

 

Next, heat the Extra Light Olive Oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot. Fry oysters until golden brown on one side, then turn over each Oyster carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately. Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce. I served mine with some McCormick’s Tarter Sauce with a side of my favorite hot sauce Frank’s Hot Sauce. These are so delicious, golden brown and with an incredible fresh flavor.

 

 

To go with my Oysters I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love that Rice! Then I also baked a loaf of La Baguetterie Multi-Grain Oval Bread. For Dessert later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

 

 

 

 

 

Pan-Fried Oysters Recipe:
Ingredients:

12 large-medium Oysters, shucked
1 tablespoon Flour
1 Eggs, beaten or 1/4 cup egg Beater’s
1 cup Shake and Bake Seasoned Panko Bread Crumbs
Sea Salt and Pepper, to taste
2 to 3 tablespoons Extra Light Olive Oil
Lemon Wedges, optional
Hot sauce, optional
Seafood Cocktail Sauce, optional

Preparation:

Fried fish is a popular dish in the weeks leading up to Easter.

Most Catholic churches in the Cincinnati area hold at least one fish fry during the Lenten season; the majority hold them weekly. Parishioners and public alike can socialize and fellowship together, and funds raised help charitable causes. Some other groups and businesses also hold fish fries during Lent.

Goat Cheese Turkey Meatball Wedges
Here’s a gourmet (yet easy) pizza snack that you don’t have to think twice about, featuring fresh veggies, tasty goat cheese and home style turkey meatballs. Ready in under 30 minutes!
Ingredients
10 JENNIE-O® Fully Cooked Home Style Turkey Meatballs
1 (6.5-ounce) package pizza dough mix
4 ounces goat cheese, softened
1 cup red and yellow cherry tomatoes, halved
½ cup freshly grated Parmesan cheese
fresh basil leaves

Directions
1 – Heat oven to 400°F. Cook meatballs according to package directions. Cut into quarters; set aside.

2 – Make dough according to package directions. Place on baking sheet. Spread with goat cheese.

3 – Top with meatballs, tomatoes and Parmesan cheese. Bake 12 minutes or until golden brown. Top with basil leaves. Cut into wedges.

Sweet Barbeque Turkey Flatbread
Bring more pizzazz to pizza night with deliciously inspired flatbreads. They’ve got all the flavor with less than 400 calories and are as fun to make as they are to eat.
Ingredients
2 whole wheat flatbread or 1 (10-inch) prepared pizza crust
⅓ cup sweet barbeque sauce
1 ½ cups shredded JENNIE-O® Slow Roasted Turkey Breast Roast, grab-n-go dinner from the service deli
¼ cup thinly sliced red onion
⅓ cup sliced green pepper
⅓ cup sliced red pepper
⅓ cup diced peaches
1 cup shredded Jalapeño Jack cheese

Directions
1 – Heat oven according to pizza crust package instructions. Place pizza crust on pizza pan and spread with barbeque sauce.

2 – Add turkey, onion, peppers, peaches and cheese. Bake according to package directions or until cheese is melted and crust is hot and golden brown.

Making a homemade pizza……………………

Here’s a tip that really kicks up the flavor of your pizza. Simply pour extra virgin olive oil into a dish and add minced garlic. Then, before adding any other toppings, brush your crust with it, making sure to get some pieces of garlic on your crust as well. Love these Pizza Nights!

Today’s Menu: Baked Clam Strips/Whole Grain Mac and Cheese and Baked Multi Grain Bread Loaf

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 17 degrees this morning and 31 for a high and mostly cloudy out today. I struggled overnight with Phantom Pains. They were bad through out the night. They started about 10:00 last night and continued to almost 10:00 this morning! So little to no sleep or rest. I went back to bed about 11:00 this afternoon and rested and slept till almost 4:00 this afternoon. I needed it! I wanted a good hot meal that was easy to prepare. I went with Baked Clam Strips/Whole Grain Mac and Cheese and Baked Multi Grain Bread Loaf. Couldn’t get much easier!

 

 

For the Clam Strips; I had bought a box of Sea Best Oven Ready Breaded Clam Strips at Meijer last week and had it in the freezer. To prepare them; I first preheat the oven to 425°F. Remove breaded clams strips from package and arrange in single layer on a foil lined baking sheet. Placed the sheet on middle rack of oven and baked for 15 minutes until they were golden brown and internal temperature reached 145°F. These made one good Clam Strip Meal! They browned up perfect and they had just the right amount of Breading. I’ll be buying more of these for sure.

 

 

 

To go with these Delicious Clam Strips I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack later tonight a bowl of Skinny Pop – Pop Corn along with a Coke Zero to drink.

 

 

 

 

 

 

 

Sea Best Oven Ready Breaded Clam Strips
Hand-Shucked Clams, Lightly Breaded
Sea Best hand-shucked clam strips are sweet and mild flavored with a texture that fries up crispy on the outside and tender on the inside.

Hot Fudge Cake
Nothing says Valentine’s Day quite like chocolate, and nothing says chocolate quite like this decadent cake!

Ingredients
Preparation time:
10 minutes
Baking time:
30 minutes
1 cup all-purpose flour
1/2 cup sugar
6 teaspoons Sweet’N Low brown sugar substitute
2 tablespoons plus 4 tablespoons cocoa
2 teaspoons baking powder
1/8 teaspoon salt
1/2 cup skim milk
2 tablespoons corn oil
1 teaspoon vanilla extract
1/4 cup packed brown sugar
1 3/4 cups hot water
Light whipped topping (optional)

Directions
Yield: 9 servings
Serving size: 1/9 of cake

* Preheat oven to 350°F. Place flour, sugar, brown sugar substitute, 2 tablespoons cocoa, baking powder, and salt in a medium bowl; stir to combine. Stir in milk, oil, and vanilla extract (batter will have small lumps). Spread batter in an ungreased 8-inch square baking pan; set aside. In a small bowl, combine brown sugar and remaining 4 tablespoons cocoa; sprinkle over batter. Pour hot water over all; do not stir. Bake for 30 minutes, or until crust forms on top and filling is bubbly. Portion into 9 equal servings. Serve while warm with light whipped topping, if desired.
