Scalloped Potatoes and Ham
Full of flavor with 270 calories per serving? That’s comfort food with a nutritious twist. And whether you serve up this classic as a side or one-pot meal, every bite is full of melty cheese, delicious potatoes, and the rich, full flavor of JENNIE-O® Turkey Ham. It’s easy to make, and even easier to love. Full tummies guaranteed!

INGREDIENTS
4 tablespoons butter
¼ cup all-purpose flour
½ teaspoon black pepper
¾ cup milk
1 cup shredded Cheddar cheese
2 tablespoons diced onion
¼ cup diced green pepper
2½ cups potatoes, sliced
1¼ cups JENNIE-O® Turkey Ham, diced

DIRECTIONS
1) Heat oven to 350°F.
2) Grease 8 x 8-inch baking dish.
3) In saucepan, over low-heat, melt butter. Blend in flour and pepper. Cook for 5 minutes. Gradually stir in milk. Cook until sauce starts to thicken. Stir in cheese until melted and sauce is smooth. Add onion and peppers.
4) Layer potatoes and ham in prepared baking dish. Top with sauce. Cover and bake 45 minutes. Uncover bake 20 to 30 minutes or until potatoes are tender and golden brown.

Today’s Menu: Pulled BBQ Pork Rib Sandwich w/ Baked Fries

 

 

To start this morning off I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had that morning cup of Bigelow Decaf Green Tea. I may have to give my Tea up! The cheapest I can find it now is at Walmart. They are at $2.88 a box while other places are at $2.99 – $3.22 a box! When I started drinking Tea it was $2.17 a box, such a shame! Partly cloudy and 85 degrees outside today. I went to make my Tea this morning and the Microwave stopped working. So after Breakfast we went to Best Buy and purchased a new one, cheaper to buy one than repair it. So that will be delivered next Tuesday! Not a lot going on today. For Dinner tonight its a Pulled BBQ Pork Rib Sandwich w/ Baked Fries.

 

 

No way I was going to let those Leftover Ribs go to waste! Those were some of the best Ribs we had ever had, thank you Meijer! So I pulled all the Rib Meat from the bones last night after Dinner.

 

 

 

 

 

To reheat them I used a small sauce pan. I sprayed it with Pam Cooking Spray and added the Rib Meat. I added some JB’s Fat Boy Haug Waush BBQ Sauce and heated the Ribs on medium low heat, stirring often. Oh man these heated up so good, it was tough not eating the Ribs before it was made into a Sandwich! I served it on a Aunt Millie’s Whole Grain Bun and topped it with a bit more of the BBQ Sauce. The Sandwich was so good, the Rib Meat along with the JB’s Fat Boy Haug Waush BBQ Sauce are perfect together!

 

 

 

 

To go with my Sandwich I baked some Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert later a bowl of Skinny Pop – Pop Corn along with a Diet Peach Snapple.

PUMPKIN-MAPLE CRUSTLESS CHEESECAKE
Ingredients

3 (8 ounce) packages fat-free cream cheese, warmed in a microwave for 15 seconds
1/3 cup Splenda Brown Sugar Blend
3 large eggs
1 (15 ounce) can pumpkin puree
1/2 cup low-fat maple or vanilla yogurt
2 tablespoons all-purpose flour
1-1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon imitation maple or rum flavoring
1 teaspoon vanilla extract
1/4 cup thinly sliced crystallized ginger (garnish)

Directions

1 – Preheat oven to 350 degrees F. Coat the bottom and sides of a 9-inch spring form pan with non-stick cooking spray.
2 – Using an electric mixer, beat cream cheese and Splenda Brown Sugar Blend until smooth. Beat in eggs one at a time. Blend in pumpkin, yogurt, flour, cinnamon, ground ginger, maple flavoring, and vanilla.
3 – Pour filling into prepared pan. Bake until outer rim is puffy and center is slightly wobbly, about 1 hour and 10 minutes. Remove from oven and run a butter knife around the inner edge but do not remove the pan side. Let stand at room temperature 30 minutes. Refrigerate warm cake, uncovered, until cold. Then cover with foil and refrigerate at least 4 hours (or up to 3 days). Remove 1 hour before serving.
4 – When ready to serve, carefully remove side of pan. Cut into 12 wedges with wet knife wiped clean between cuts. Garnish with crystallized ginger, if desired.

Today’s Menu: Crock Pot Pork Back Ribs w/ Mashed Potatoes, Green Beans, and Texas Toast (Light)

 

 

 

For Breakfast this morning I Scrambled a couple of Eggs, toasted a Thomas Light English Muffin, and had a cup of Bigelow Decaf Green Tea. 89 degrees, partly cloudy, and less humid outside today. After Breakfast I got my Ribs in the Crock Pot and got them going. Got the cart out later and did some yard work. I’ve been working on the back yard flower bed. I tilled the dirt and added some fresh soil. Put down some weed prevention also on it. Hopefully next year I’m going to add some plants and put down some dark wood chips. Tonight its Mom’s favorite, Crock Pot Pork Back Ribs w/ Mashed Potatoes, Cut Green Beans, and Texas Toast (Light).

 

 

Mom loves Ribs so I always try to have them from time to time for her. I purchased the Ribs from Meijer yesterday evening and couldn’t wait to have them! Last night before I went to bed I put half racks in a Hefty Gallon Plastic Bag then seasoned it JB’s Fat Boy All Purpose Rub and then covered it in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray and added a 1/4 cup of water. Got the Ribs out of the fridge, discarded the Hefty Bags, and put the racks in the Crock Pot where I let it cook and simmer, on low, for about 7 hours. Long up in the afternoon the aroma of the Ribs and BBQ Sauce start to fill the air!

 

 

After 7 hours the ribs are ready and now for the hard part of cooking them, getting them out whole without breaking them up! They’re that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time. And as always I would like to send out a big thank you to whom ever invented the Crock Pot Liners! I always use them when using the Crock Pot.

 

 

 

For a side dish I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Next I heated up a can of Del Monte Cut Green Beans. Then I also baked some slices of New York Bakery Light Texas Toast, It’s fewer calories, carbs, and fat than normal Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Half and Half Snapple to drink.

Potato Pie – Buffalo Wing Style “doesn’t taste like chicken” (serves 8)
Ground Buffalo sautéed with carrots, celery and onion and seasoned with “buffalo wing sauce” and then baked into a pie with golden potatoes and cheese. Yup – it’s pretty tasty.

Ingredients:

1 – pound Ground Buffalo
1 – tablespoon olive oil
3 – tablespoons Jill’s Chili Seasoning (or other chili seasoning)
2 – cups celery, chopped
1 – cup carrots, chopped
4 – green onions, chopped
1 – cup wing sauce
8 – potatoes, pre-cooked and chopped
8 – ounces Mexican blend cheese
4 – ounces blue cheese, crumbled
2 – eggs, beaten
¼ – cup cream

Preparation:

1 – In a sauté pan over medium high heat add the oil and crumble in the ground buffalo meat.
2 -Add the chili seasonings and stir in to incorporate, breaking up the meat with a spatula as you stir.
3 – Add the carrots celery and green onions and continue to cook until meat is browned and vegetables are slightly tender.
4 – Remove meat/vegetable mix from heat and allow the meat mixture to cool a bit, about 10 minutes.
5 – Lightly oil into a deep-dish pie pan.
6 – In a bowl mix the meat, potatoes and cheeses together.
7 – Whisk the eggs with the cream and fold into the mixture.
8 – Press the mixture into a deep dish pie-pan and cover with foil.
9 – Bake at 375° for 30 minutes. Remove the foil and palace under broiler until top is browned and crusty.
10 – Remove from heat and serve.

Serve with wing sauce and additional blue cheese crumbles or dressing. Note: If making ahead of time and refrigerating for baking later increase cooking time by 10 minutes.
