Today’s Menu: Buttermilk Marinated Thin Sliced Chicken Breasts w/ Fried Potatoes and Green Beans

 

I skipped Breakfast this morning. I got up around 6:30 this morning and got a few things done around the house including a load of laundry. Then it was off to Kroger for Mom and our neighbor. Then I went to Meijer for everything else. I noticed that Kroger is back to mandatory face mask to enter, so far Meijer isn’t. There seems to be a lot of people in the hospital with it. Sure hope it gets better soon. For Dinner tonight I prepared Buttermilk Marinated Thin Sliced Chicken Breasts w/ Fried Potatoes and Green Beans.

 

For the Chicken; I started at Noon today. I grabbed a large Hefty Bag and added a 1/2 Pint of Buttermilk to the bag. I then added several shakes of Frank’s Hot Sauce to it and shook the bag to blend it together. I then added my Chicken Breasts and let it Marinate in the fridge until it was time to use. I used my favorite, Katie’s Best Chicken.

 

To prepare the Thin Sliced Chicken Breast I grabbed a Cast Iron Skillet. Sprayed with a coat of Pam Non Stick Cooking Spray. Then I started heating the skillet on medium heat. Next I added a tablespoon and a half of Olive Oil Cooking Oil. As the skillet heated I got the Chicken out of the fridge and removed it from the bag of Marinade, shaking off the excess. Then I grabbed a pie pan and added Flour to it and seasoned the Flour with Paprika. Took the Chicken Breast and rolled them in the Seasoned Flour until well covered.

 

Added the Chicken Breasts to the heated Skillet. I cooked the Chicken for 4 minutes and then flipped them over and cooked them for 4 more minutes, until golden brown and the meat thermometer read 165 degrees. The Chicken turned out so very good! Cooked up perfect, nice crust, and love the seasoning! Served it with Kraft Hickory Smoked BBQ Sauce for dipping.

 

For one side we had Fried Potatoes! I’m using Medium Size Red Potatoes. To prepare them; first wash the Whole Potatoes and dry them with a paper towel. Then slice each Potato into thin slices and slit each slice at least 4 times. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on medium high.

 

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

For a 2nd side I prepared a quart jar of our canned Green Beans. So glad to have so many quarts of canned Green Beans. Just heat them up and they taste like they were just picked, delicious! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Coke Zero to drink.

Turkey Cobb Sandwich
Kick off the day the tasty way – shredded turkey, slices of bacon, on bed of tomato and guacamole, topped with a fried egg and crumbled blue cheese.

Total Time – 15 minutes
Serving Size – Makes 1 Serving

Ingredients
2) tablespoons WHOLLY® GUACAMOLE Chunky Guacamole

1) brioche bun, split and toasted

2) thin slices tomato

3) slices cooked HORMEL® BLACK LABEL® bacon

4) ounces leftover cooked JENNIE-O® turkey, warmed

1) egg, fried

1) tablespoon crumbled blue cheese

Directions
1) Spread guacamole on bottom bun half. Top with tomato slices and bacon. Place turkey and egg on top of tomato. Sprinkle with blue cheese. Cover with bun top.

To start today off I had a cup of Bigelow Decaf Green Tea. 84 degrees, a bit more humid and passing rain showers out today. Not a lot going on today. Caught up on few things around the house and outside. I had the cart out just riding around and a man around the corner had an almost new push mower he had sitting at the end of his driveway, he had a sign on it free. He told me it was like new and started real easy. So I took it on home. Of course being in a wheelchair I can’t use it. But the guy that mows our grass came up and took it. He mowed our yard with it and it ran great! The blades were really sharp on it. So that was my good deed for Sunday! So for Dinner tonight I prepared Buttermilk Marinated Thin Sliced Chicken Breasts w/ Fried Potatoes and Green Beans.

 

For the Chicken; I started at Noon today. I grabbed a large Hefty Bag and added a 1/2 Pint of Buttermilk to the bag. I had a cup of Bigelow Decaf Green Tea to start the morning off. 86 degrees and mostly sunny out today. I had to go to Meijer to pick up a few items for tonight’s Dinner. I stopped by Wendy’s and picked up Breakfast for Mom. Then I stopped by the Bank ATM and then on home. Got the cart out of the shed along with the lawn tools and finished up the yard work, which seems to be never ending! I don’t mind though I love doing it. My Tomato and Pepper plants are doing great, all are full. Picked my first 2 Jalapenos yesterday. For Dinner tonight I prepared, Buttermilk Marinated Thin Sliced Chicken Breasts w/ Loaded Potato Casserole and Shellie Beans.

For one side dish I prepared a box of Idahoan Loaded Potato Homestyle Casserole. I love all the Idahoan Potato Products. A very quick and easy way to prepare some delicious piping hot Potato Dishes.

 

For a 2nd side I prepared a can of Libby’s Shellie Beans. I had picked up a couple of cans at Meijer. I opened 1 can and added them to a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. I brought the beans to a rolling boil and reduced the heat to low until heated through. These are so good! Shellie Beans are Green Beans with added Pinto Beans. For Dessert later I had a Jello Sugar Free Dark Cherry Jello.

To start today off I toasted a Thomas light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam and had a cup of Bigelow Decaf Green Tea. 91 degrees, humid and passing thunder storms out today. A friend of mine called and wanted me to take her out to Ross to the produce markets they have out there. They have 2 large produce markets within a mile of each other. Mom wanted a few things also. I was raised and went to High School out in Ross. So it’s always good to go back there. Back home did a few things outside around the house. For Dinner tonight I prepared Buttermilk Marinated Thin Sliced Chicken Breasts w/ Hash Browns and Shellie Beans.

Mozzarella Pesto Turkey Franks
When you think of turkey frank toppings, you might not think of melted mozzarella cheese, roasted bell peppers, pesto and marinara… but you will after you try this recipe! Mozzarella Pesto Turkey Franks are under 500 calories per serving.
Total Time – 30 Minutes
Serving Size – 4 Servings

Ingredients
4 JENNIE-O® Bun Length Uncured Turkey Franks
4 hot dog buns, split
½ cup marinara sauceMozzarella
½ (8-ounce) ball fresh mozzarella cheese, torn
½ cup roasted red bell peppers strips
⅓ cup basil pesto

Directions
1) Prepare grill for medium heat. Grill franks according to package direction. Grill buns, cut side down until golden brown.

2) Spread inside buns with marinara sauce.

3) Add mozzarella and bell peppers. Place on grill, close lid. Grill 2 minutes or until cheese is melted.

4) Remove from grill. Add franks. Top with pesto.

Individual Oven Baked Spaghetti Recipe for Diabetics

Ingredients
Preparation time: 10 minutes
Baking time: 15 minutes

Cooking spray
1 cup cooked spaghetti
1 cup spaghetti meat sauce
2 dashes black pepper
1 tablespoon grated Parmesan cheese
1/2 cup sliced fresh mushrooms
1/8 cup finely diced onion
1/8 cup diced green pepper
1/4 cup finely shredded, reduced-fat, mild Cheddar cheese

Directions
Yield: 1 serving
Serving size: Whole recipe

1 – Preheat oven to 350°F. Coat an individual casserole dish or pie pan with cooking spray and set aside. If using leftover spaghetti or sauce, warm them, separately, in a saucepan or microwave. In a small bowl, combine spaghetti, pepper, and Parmesan cheese; toss to coat spaghetti. Spoon into baking dish. Top evenly with sauce. Sprinkle with mushrooms, onion, and green pepper, and then with Cheddar cheese. Cover with foil and bake for 15 minutes, or until cheese is melted and casserole is heated through.

2 – If you don’t have a favorite homemade spaghetti sauce, try adding browned and drained ground round (about 2 ounces meat per 3/4 cup spaghetti sauce) to a spaghetti sauce low in fat and sodium (such as Healthy Choice). This recipe also works with meatless sauce.

Today’s Menu: Buffalo Cheese Burger w/ Baked Fries

 

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I got the leaf blower out and cleaned up around the deck and driveway areas. It’s another beautiful day out here, 82 degrees and mostly sunny! Headed out to Meijer, they had some items on sale I needed. Dad did good his first day back home. So for Dinner tonight I prepared a Buffalo Cheese Burger w/ Baked Fries.

 

 

 

Time to satisfy that Buffalo Burger craving! I used the Wild Idea Buffalo Buffalo Burgers. I always have a couple of packages of them in the freezer so I grabbed one of the patties and let it thaw overnight in the fridge. To prepare it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, on medium heat, in Extra Light Virgin Olive Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. After I flipped it, I topped it with a slice of Kraft Sharp Cheddar Cheese and then served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. Lean and delicious, love these Buffalo Burgers!

 

 

 

Then for a side I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Buffalo Cheese Burger w/ Baked Fries

 

 


For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Then I prepared some Simply Potatoes Shredded Hash Browns along with frying up a couple of Jennie – O Turkey Breakfast Sausage Links. Also had a cup of Bigelow Decaf Green Tea. Had a brief morning passing shower but it went through quickly. Got the leaf blower out and cleaned up around the deck and driveway areas. After Lunch headed over to see Dad for a while. For Dinner tonight I prepared a Buffalo Cheese Burger w/ Baked Fries.

 

Time to satisfy that Buffalo Burger craving! And like most of the time I used the Wild Idea Buffalo Buffalo Burger. I always have a couple of packages of them in the freezer so I grabbed one of the patties and let it thaw overnight in the fridge. To prepare it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, on medium heat, in Extra Light Virgin Olive Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. After I flipped it, I topped it with a slice of Kraft Sharp Cheddar Cheese and then served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. Lean and delicious, love these Buffalo Burgers!

 

 


Then for a side I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a bowl of Smart Pop – Pop Corn and a Diet Peach Snapple.

After Breakfast I headed out to Meijer and Kroger to pick up a few items for Mom and myself. Then stopped at McDonald’s to pick up Breakfast for Mom. Back home had Lunch and afterward headed over to see Dad. He’s not looking too good at all right now, only pray that he gets better. For Dinner tonight I prepared a Buffalo Cheese Burger w/ Baked Fries.
