Individual Oven Baked Spaghetti Recipe for Diabetics

Ingredients
Preparation time: 10 minutes
Baking time: 15 minutes

Cooking spray
1 cup cooked spaghetti
1 cup spaghetti meat sauce
2 dashes black pepper
1 tablespoon grated Parmesan cheese
1/2 cup sliced fresh mushrooms
1/8 cup finely diced onion
1/8 cup diced green pepper
1/4 cup finely shredded, reduced-fat, mild Cheddar cheese

Directions
Yield: 1 serving
Serving size: Whole recipe

1 – Preheat oven to 350°F. Coat an individual casserole dish or pie pan with cooking spray and set aside. If using leftover spaghetti or sauce, warm them, separately, in a saucepan or microwave. In a small bowl, combine spaghetti, pepper, and Parmesan cheese; toss to coat spaghetti. Spoon into baking dish. Top evenly with sauce. Sprinkle with mushrooms, onion, and green pepper, and then with Cheddar cheese. Cover with foil and bake for 15 minutes, or until cheese is melted and casserole is heated through.

2 – If you don’t have a favorite homemade spaghetti sauce, try adding browned and drained ground round (about 2 ounces meat per 3/4 cup spaghetti sauce) to a spaghetti sauce low in fat and sodium (such as Healthy Choice). This recipe also works with meatless sauce.

Today’s Menu: Buffalo Cheese Burger w/ Baked Fries

 

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I got the leaf blower out and cleaned up around the deck and driveway areas. It’s another beautiful day out here, 82 degrees and mostly sunny! Headed out to Meijer, they had some items on sale I needed. Dad did good his first day back home. So for Dinner tonight I prepared a Buffalo Cheese Burger w/ Baked Fries.

 

 

 

Time to satisfy that Buffalo Burger craving! I used the Wild Idea Buffalo Buffalo Burgers. I always have a couple of packages of them in the freezer so I grabbed one of the patties and let it thaw overnight in the fridge. To prepare it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, on medium heat, in Extra Light Virgin Olive Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. After I flipped it, I topped it with a slice of Kraft Sharp Cheddar Cheese and then served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. Lean and delicious, love these Buffalo Burgers!

 

 

 

Then for a side I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Then I prepared some Simply Potatoes Shredded Hash Browns along with frying up a couple of Jennie – O Turkey Breakfast Sausage Links. Also had a cup of Bigelow Decaf Green Tea. Had a brief morning passing shower but it went through quickly. Got the leaf blower out and cleaned up around the deck and driveway areas. After Lunch headed over to see Dad for a while. For Dinner tonight I prepared a Buffalo Cheese Burger w/ Baked Fries.

For Breakfast this morning I fried up some Simply Potatoes Shredded Hash Browns, heated 2 Jimmy Dean BreakfastBuffalo Cheese Burger w Baked Fries 010 Turkey Sausage Links, toasted 1 slice of Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. After Breakfast I headed out to McDonald’s to pick up Breakfast for Mom. In the 20’s to start the day but the sun came out and it warmed up to a high of 60 degrees! Stayed home all day today and caught up on some laundry, cleaning the house, and got out the leaf blower and cleaned up the deck and driveway areas. Beautiful afternoon out! Got everything done so I kicked back and watched some shows I had recorded. For Dinner tonight I prepared a Buffalo Cheese Burger w/ Baked Fries.

Salami, Onion, & Jalapeno Sandwich

This sandwich received national attention on NPR, during Dan O’Brien’s book review for Stolen Horses. In the book the sandwich is constructed with great attention to detail and is a laugh out loud scene. The sandwich is as delicious as the novel! Serve with milk, to balance the jalapeño heat, or use pickled jalapeños to avoid the heat.

 

Ingredients: (per sandwich)Salami, Onion, & Jalapeno Sandwich
2 – slices sourdough bread, cut on the bias
4 to 6 – slices Wild Idea Buffalo Salami, cut on the bias
1 or 2 slices – Vidalia onion, cut on the bias
1 – fresh jalapeño, sliced very thin
Dijon Mustard

 

Preparation:
1) Prepare all ingredients as suggested above.
2) Generously spread the Dijon mustard on both slices of sourdough.
3) Nestle the salami slices into the mustard, as many as you like, on top of one of the mustard covered bread slices.
4) Top with one or two slices of the Vidalia onion, and desired amount of thinly sliced jalapeno.
5) Cover with the other mustard covered bread slice and cut in half.

Another cool Fall morning outside, 28 degrees with a cold breeze. For Breakfast I toasted a Healthy Life Whole Grain English Muffin to make a Breakfast Sandwich with. Then I lightly fried some Boar’s Head Deluxe Ham, added a slice of Sargento Ultra Thin to the Ham as it finishing cooking. Layered it on the English Muffin, and done! Also had a cup of Bigelow Decaf Green Tea. After Breakfast I headed out to McDonald’s to pick up Breakfast for Mom and Dad. Not a whole lot going on today. Sort of tired i think I have my late Fall Sinus Infection. So I rested a lot today. For Dinner tonight I prepared a Buffalo Cheese Burger w/ Baked Fries.

Another beautiful Fall morning outside, not quite as chilly. For Breakfast I toasted a Healthy Life Whole Grain English Muffin that lightly buttered with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I headed out to Meijer to pick some ingredients for a new recipe for Wednesday. I’m going to be making. Can’t wait to try this one! Anyway back home not a lot going on today, caught up on everything. So I ran some scans on the computer and added some updates. Then kicked back and got caught up on some programs I had recorded. Nice relaxing day. For Dinner tonight its my favorite Burger Night. I prepared a Buffalo Cheese Burger w/ Baked Fries.

I used the Wild Idea Buffalo 1/3 lb. Buffalo Burger. I always have a couple of packages of them in the freezer so I grabbed one of the patties and let it thaw overnight in the fridge. To prepare it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, on medium heat, in Light Virgin Olive Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. After I flipped it, I topped it with a slice of Kraft Sharp Cheddar Cheese and then served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. Lean and delicious, love these Buffalo Burgers!

Then for a side I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a bowl of Dole Sliced Peaches.

Today’s Menu: Buffalo Cheese Burger w/ Baked Fries

For Breakfast this morning I prepared a Breakfast Sandwich. I toasted a Healthy Life Whole Grain English Muffin and topped it with Boar’s Head Sliced Deluxe Ham and a 1/2 slice of Kraft Sliced Sharp Cheddar Cheese. After Breakfast did the usual cleaning for the day, inside and outside. Outside another hot and humid day, seems to be the norm anymore. Kicked back the rest of the afternoon and watched a few programs I had recorded. For Dinner tonight I had my favorite, Buffalo Cheese Burger w/ Baked Fries.

Had my favorite Burger, the Wild Idea Buffalo 1/3 lb. Buffalo Burger. I had a package of one in the freezer so I grabbed it and let it thaw overnight in the fridge. To prepare it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Extra Virgin Olive Oil about 4 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Kraft Sharp Cheddar Cheese and served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. Just love these Burgers, and combine it with Fries and this my Comfort Food meal!

Then for a side I baked some Alexia 98% Fat Free Roasted Straight Cut Fries with Sea Salt. I’m such a Potato Freak, I could have Fries or some type of Potato Dish every day. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 18 minutes. They bake up beautifully and seasoned just right, excellent Fries! Plus they are only 100 calories and 18 net carbs. For dessert later a Jello Sugar Free Dark Chocolate Pudding.
