INGREDIENTS:

5 lbs. Wild Idea Buffalo Short Ribs
Cooked broccoli rabe, (2-3 bunches)
1~3 tablespoons olive oil
1 3/4 cups low sodium beef broth
1⁄4 cup red wine
1~2 sweet white or red onion
4~6 smashed garlic cloves and red potatoes
2 tablespoons raw honey
2 tablespoons dark brown sugar
1⁄2 teaspoon coarse Himalayan salt
1 teaspoon black pepper

DIRECTIONS:

1 – Heat oil in heavy pan then brown short ribs (cut up)
2 – Put short ribs in slow cooker on HIGH
3 – Add red wine, beef broth, onions (sliced thick)
4 – Add garlic & potatoes (chopped), honey, brown sugar, salt and pepper
5 – Warm up to high, mine is aluminum, so it heats up fast!
6 – Cook at high for two hours and check for doneness
7 – Let settle down and cook naturally — do not open slow cooker until it’s completely done then add broccoli rabe and cook until done, about 1/2 hour

SHORT RIB, FENNEL, SQUASH and SWEET POTATO STEW
When I read the title of this recipe for Eintopf, a German name for a one pot stew in the New York Times, I was intrigued. Although all the ingredients are some of my favorites, I fell in love at fennel. My approach to other people’s recipes is to use them as a guide and then change them up to your likening without (mostly) changing the technique. My rendition is not a Eintopf, as it requires one pan & one pot, made of course with Buffalo Short Ribs and a whole lot more vegetables. You can get the original NYT recipe here. And, even though we are in Spring, you will love the season-less flavors, and the vegetables could easily be switched up. Carrots, peas or cauliflower might be good….

Ingredients: (serves 6 to 8 based on hunger level)

1 – 3 lb. package of Wild Idea Buffalo Short Ribs
1 – tablespoon salt
1 – tablespoon olive oil
1 – onion, chopped
6 – garlic cloves, smashed and peeled
1 – fennel bulb & tender greens, trimmed, halved & sliced thin (reserve fronds for garnish)
3 – teaspoons fennel seeds, crushed
1½ – teaspoons ground turmeric
1 – teaspoon coarse black pepper + more to taste
1 – 28-ounce can whole peeled tomatoes
4 – cups chicken stock
2 – sweet potatoes or yams, peeled and cut into pieces
½ – butternut squash, seeds removed, peeled and cut into pieces
2 – 13½ -ounce cans full-fat coconut milk
1 – teaspoon coarse black pepper + more to taste
1 – 1-inch piece fresh ginger, peeled and grated
4 – cups spinach, chopped

Preparation:

1 – Place oven rack in the center and preheat the oven to 500°. Rinse ribs, and pat dry with a paper towel. Cut the ribs in between the bones, place on a baking sheet and rub with salt. Brown the ribs for 10 to 15 minutes in the pre-heated oven. Remove & reduce oven temperature to 350°.
2 – While the ribs are browning, in a heavy pot over medium high heat, add the olive oil, onions, garlic, sliced fennel and dry seasonings and sauté until tender, about 10 minutes.
3 – Stir in the tomatoes and smash the tomatoes with the back of your spoon. Add chicken stock and bring to a full boil.
4 – Place the browned rib sections into the pot, pushing into the liquid. Cover and place in the oven and braise for 2.5 hours.
5 – Remove the pot from the oven and increase the heat to 375°.
6 – Stir in the coconut milk and fresh ginger, and add the yams, squash. Cover the pot and return to the oven for about 45 minute or until vegetables are tender and the meat is falling off the bone.
7 – Remove from the oven and stir in the chopped spinach.
8 – Season to taste, garnish with fennel fronds and serve with warm crusty bread or naan.

CARIBBEAN BEEF BURGERS WITH MANGO SALSA
Recipe for Caribbean Beef Burgers with Mango Salsa from our Main Dishes recipe section.

Ingredients

1-1/2 pounds 95% lean ground beef
2 tablespoons Caribbean jerk seasoning
Salt
* Bun or Toast of your Choice

Mango Salsa:

1 large mango, peeled, coarsely chopped (about 1 cup)
1 tablespoon chopped fresh cilantro
1 tablespoon chopped green onion
1 tablespoon finely chopped seeded jalapeno pepper
1 tablespoon fresh lime juice

Directions

1 – Combine Ground Beef and jerk seasoning in large bowl, mixing lightly but thoroughly. Shape into four 3/4-inch thick patties.
2 – Place patties on grid over medium, ash-covered coals. Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, covered, 13 to 14 minutes), until instant-read thermometer inserted horizontally into center registers 160F, turning occasionally. Season with salt, as desired.
3 – Meanwhile, combine salsa ingredients in medium bowl, mixing lightly. Serve burgers with salsa.
Note: Cooking times are for fresh or thoroughly thawed Ground Beef. Color is not a reliable indicator of Ground Beef doneness.

Today’s Menu: Buttermilk Marinated Thin Sliced Chicken Breasts w/ Fried Potatoes and Green Beans

 

 

For Breakfast this morning I prepared some Simply Potatoes Southwestern Style Hash Browns along with 2 Johnsonville Turkey Breakfast Sausage Links and a cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer, they had a sale on several items I needed. One item being Pork Butt. I picked up a 5.2 lb. one. Back home I put up the groceries and then got the Pork Butt in the Slow Cooker. I’ll let that simmer on low until later tonight. Next I had to get the Chicken Thighs ready for tonight’s Dinner. So for Dinner tonight I we’ll be having the Buttermilk Marinated Thin Sliced Chicken Breasts w/ Fried Potatoes and Green Beans.

 

For the Chicken; I started at Noon today. I grabbed a large Hefty Bag and added a 1/2 Pint of Buttermilk to the bag. I then added several shakes of Frank’s Hot Sauce to it and shook the bag to blend it together. I then added my Chicken Breasts and let it Marinate in the fridge until it was time to use. I used my favorite, Katie’s Best Chicken.

 

To prepare the Thin Sliced Chicken Breast I grabbed a Cast Iron Skillet. Sprayed with a coat of Pam Non Stick Cooking Spray. Then I started heating the skillet on medium heat. Next I added a tablespoon and a half of Olive Oil Cooking Oil. As the skillet heated I got the Chicken out of the fridge and removed it from the bag of Marinade, shaking off the excess. Then I grabbed a pie pan and added Flour to it and seasoned the Flour with Paprika. Took the Chicken Breast and rolled them in the Seasoned Flour until well covered.

 

Added the Chicken Breasts to the heated Skillet. I cooked the Chicken for 4 minutes and then flipped them over and cooked them for 4 more minutes, until golden brown and the meat thermometer read 165 degrees. The Chicken turned out delicious! Cooked up perfect, nice crust, and love the seasoning! Served it with Kraft Hickory Smoked BBQ Sauce for dipping.

 

For one side we had Fried Potatoes! I’m using Medium Size Red Potatoes. To prepare them; first wash the Whole Potatoes and dry them with a paper towel. Then slice each Potato into thin slices and slit each slice at least 4 times. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on medium high.

 

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

 

 

For a 2nd side I prepared a quart jar of our canned Green Beans. So glad to have so many quarts of canned Green Beans. Just heat them up and they taste like they were just picked, delicious! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Coke Zero to drink.

To start today off I had a cup of Bigelow Decaf Green Tea. 44 degrees, windy and mostly cloudy outside. So I couldn’t rake the yard, I tried but it was useless with the wind! Good thing I guess I’ve been fighting bad Phantom Pains since around 4:00 this morning. Those continued till about 6:00 this evening. So I rested most of the day as these Phantom Pains just drain me. So for Dinner tonight I prepared Buttermilk Marinated Thin Sliced Chicken Breasts w/ Fried Potatoes and Green Beans.

 

For the Chicken; I started at Noon today. I grabbed a large Hefty Bag and added a 1/2 Pint of Buttermilk to the bag. Early morning so no Breakfast. I had to be at the Dermatologist this morning for my yearly check up. He said everything was good and nothing new anywhere. Which made me happy! Another cold one around here. It was 29 degrees this morning. We had a high of 49 degrees and it sunny out all day. Back home I caught up on some sleep. I’m always restless the night before I go to the doctor’s. Did a few small chores around the house. For Dinner tonight I prepared Buttermilk Marinated Thin Sliced Chicken Breasts w/ Fried Potatoes and Green Beans.

 

For the Chicken; I started at Noon today. I grabbed a large Hefty Bag and added a 1/2 Pint of Buttermilk to the bag. Then I went to Meijer for everything else. I noticed that Kroger is back to mandatory face mask to enter, so far Meijer isn’t. There seems to be a lot of people in the hospital with it. Sure hope it gets better soon. For Dinner tonight I prepared Buttermilk Marinated Thin Sliced Chicken Breasts w/ Fried Potatoes and Green Beans.

2) tablespoons WHOLLY® GUACAMOLE Chunky Guacamole

1) brioche bun, split and toasted

2) thin slices tomato

3) slices cooked HORMEL® BLACK LABEL® bacon

4) ounces leftover cooked JENNIE-O® turkey, warmed

1) egg, fried

1) tablespoon crumbled blue cheese

Directions
1) Spread guacamole on bottom bun half. Top with tomato slices and bacon. Place turkey and egg on top of tomato. Sprinkle with blue cheese. Cover with bun top.

Today’s Menu: Buttermilk Marinated Thin Sliced Chicken Breasts w/ Fried Potatoes and Green Beans

 

 

To start today off I had a cup of Bigelow Decaf Green Tea. 84 degrees, a bit more humid and passing rain showers out today. Not a lot going on today. Caught up on few things around the house and outside. I had the cart out just riding around and a man around the corner had an almost new push mower he had sitting at the end of his driveway, he had a sign on it free. He told me it was like new and started real easy. So I took it on home. Of course being in a wheelchair I can’t use it. But the guy that mows our grass came up and took it. He mowed our yard with it and it ran great! The blades were really sharp on it. So that was my good deed for Sunday! So for Dinner tonight I prepared Buttermilk Marinated Thin Sliced Chicken Breasts w/ Fried Potatoes and Green Beans.

 

For the Chicken; I started at Noon today. I grabbed a large Hefty Bag and added a 1/2 Pint of Buttermilk to the bag. I then added several shakes of Frank’s Hot Sauce to it and shook the bag to blend it together. I then added my Chicken Breasts and let it Marinate in the fridge until it was time to use. I used my favorite, Katie’s Best Chicken.

 

To prepare the Thin Sliced Chicken Breast I grabbed a Cast Iron Skillet. Sprayed with a coat of Pam Non Stick Cooking Spray. Then I started heating the skillet on medium heat. Next I added a tablespoon and a half of Olive Oil Cooking Oil. As the skillet heated I got the Chicken out of the fridge and removed it from the bag of Marinade, shaking off the excess. Then I grabbed a pie pan and added Flour to it and seasoned the Flour with Paprika. Took the Chicken Breast and rolled them in the Seasoned Flour until well covered.

 

Added the Chicken Breasts to the heated Skillet. I cooked the Chicken for 4 minutes and then flipped them over and cooked them for 4 more minutes, until golden brown and the meat thermometer read 165 degrees. The Chicken turned out so very good! Cooked up perfect, nice crust, and love the seasoning! Served it with Kraft Hickory Smoked BBQ Sauce for dipping.

 

For one side we had Fried Potatoes! I’m using Medium Size Red Potatoes. To prepare them; first wash the Whole Potatoes and dry them with a paper towel. Then slice each Potato into thin slices and slit each slice at least 4 times. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on medium high.

 

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

 

 

 

For a 2nd side I prepared a quart jar of our canned Green Beans. So glad to have so many quarts of canned Green Beans. Just heat them up and they taste like they were just picked, delicious! For Dessert later a Jello Sugar Free Dark Cherry Jello.

I had a cup of Bigelow Decaf Green Tea to start the morning off. 86 degrees and mostly sunny out today. I had to go to Meijer to pick up a few items for tonight’s Dinner. I stopped by Wendy’s and picked up Breakfast for Mom. Then I stopped by the Bank ATM and then on home. Got the cart out of the shed along with the lawn tools and finished up the yard work, which seems to be never ending! I don’t mind though I love doing it. My Tomato and Pepper plants are doing great, all are full. Picked my first 2 Jalapenos yesterday. For Dinner tonight I prepared, Buttermilk Marinated Thin Sliced Chicken Breasts w/ Loaded Potato Casserole and Shellie Beans.

For one side dish I prepared a box of Idahoan Loaded Potato Homestyle Casserole. I love all the Idahoan Potato Products. A very quick and easy way to prepare some delicious piping hot Potato Dishes.

 

For a 2nd side I prepared a can of Libby’s Shellie Beans. I had picked up a couple of cans at Meijer. I opened 1 can and added them to a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. I brought the beans to a rolling boil and reduced the heat to low until heated through. These are so good! Shellie Beans are Green Beans with added Pinto Beans. For Dessert later I had a Jello Sugar Free Dark Cherry Jello.
